Peach <strong>Pie</strong><br />
National Peach <strong>Pie</strong> day is August 24,<br />
just in time for peaches, ripe for the<br />
picking.<br />
Ingredients:<br />
1 cl<strong>as</strong>sic pie crust, unbaked<br />
Filling:<br />
5 cups peaches, peeled and sliced<br />
2 tablespoons lemon juice<br />
½ cup white sugar (use less if the<br />
peaches are really sweet)<br />
1 te<strong>as</strong>poon ground cinnamon<br />
¼ te<strong>as</strong>poon ground nutmeg<br />
¼ te<strong>as</strong>poon salt<br />
1 tablespoon butter<br />
Prepare cl<strong>as</strong>sic pie crust recipe. Do not bake.<br />
Mix all filling ingredients in a large bowl. Place in pie crust. Dot the peaches with butter.<br />
Pat the remaining crust mixture loosely on<strong>to</strong> the peaches, forming a crumb <strong>to</strong>pping, covering the filling<br />
completely.<br />
To keep the crust <strong>from</strong> burning, cover the edges with aluminum foil.<br />
Bake in 350ºF oven for 35-40 minutes. It's done when the juices are bubbling and the crust is golden<br />
brown.
