Strawberry Rhubarb Crumble<br />
This recipe comes <strong>from</strong> the home of U.S. Amb<strong>as</strong>sador <strong>to</strong> Austria Alexa L. Wesner. This recipe<br />
is great if you don’t have time <strong>to</strong> make a pie crust. It should be baked in a deep, gl<strong>as</strong>s baking<br />
dish, either square or round.<br />
Ingredients:<br />
Filling:<br />
14 ounces rhubarb 1/2 inch thick slices (If necessary, remove<br />
<strong>to</strong>ugh strings)<br />
14 ounces hulled and halved strawberries<br />
½ cup brown sugar*<br />
½ cup white sugar<br />
¼ cup cornstarch<br />
1 te<strong>as</strong>poon cinnamon<br />
¼ te<strong>as</strong>poon salt<br />
lemon zest <strong>to</strong> t<strong>as</strong>te<br />
Topping:<br />
1 ¼ cup fl<strong>our</strong><br />
½ cup oats<br />
1 cup brown sugar*<br />
½ cup unsalted butter (softened)<br />
¾ te<strong>as</strong>poon cinnamon<br />
¼ te<strong>as</strong>poon nutmeg<br />
generous pinch of salt<br />
There is no need <strong>to</strong> prepare a crust for this recipe.<br />
In a bowl, combine the filling ingredients and mix until they are coated.<br />
In a second bowl, mix <strong>to</strong>pping ingredients with a fork until crumbly and dry (don’t over mix).<br />
Spoon filling in<strong>to</strong> baking dish. Sprinkle <strong>to</strong>pping mixture evenly on <strong>to</strong>p - don’t press the <strong>to</strong>pping in.<br />
Bake 375 ºF for 45 minutes. Let cool for 10 minutes. Serve with vanilla ice cream.<br />
