Kremer III Contributing Editor If there is a black sheep in the family whose role is to party all night and sleep all day — and many families have one — then there must be a white sheep that sets the tone for the early risers and the get-morestuff-done-before-9 a.m. crowd. Such is the case for The White Sheep, which opened in August on LaGrange Road in Orland Park, the sister restaurant of The Black Sheep, not far away on 159th Street. While the latter caters mostly to the late-night crowd, the former offers everything that the early-morning/brunch crowd needs to get the day started. “We’re not trying to be cookie-cutter omelettes and eggs; you can pretty much get that anywhere you go,” area manager Nicole Paxton said. “[For] different, unique items that you can only get from The White Sheep, we want you to crave us.” The craving is designed to start at the entrance, when customers walk through the door and immediately are greeted by the sights and smells of White Sheep’s in-house bakery and coffee bar, The fruit bruschetta ($10) is topped with cream cheese and seasonal fruit, along with a honey glaze and mint garnish. There is even an oldfashioned orange press for freshly squeezed OJ. Diners are seated at expansive, family-style tables or roomy booths ready to be the canvas on which White Sheep’s diverse menu items will be laid out artfully. After all, people are there to eat, and it is the hope of executive chef Mat Carlson that the dining experience will forge memories in patrons’ minds. “I want to bring something unique to the breakfast world besides your basic scrambled eggs, pancakes, waffles — something that when you go get breakfast or brunch, it’s memorable,” Carlson said. “That’s the whole thing, for me, about going out to eat, is making memories. Some of the best memories I have from growing up are from sitting around the breakfast or dinner table.” To that end, White Sheep’s menu items offer a plethora of palate experiences rich in cultural diversity. Take, for example, the chilaquiles ($12), a traditional Latin American dish served in a skillet with tortilla chips, salsa verde, chihuahua cheese, cilantro lime crema, avocado and fried eggs. For those who may have spent a night over at The Black Sheep and need some help to get going, there is the hangover sandwich ($14), made with chicken tinga, rosemary bacon syrup, bacon, house sauce, egg and cheddar cheese, served on brioche bread and with a side. The “evolution” of White Sheep grew out of a personal “maturity” of The avocado toast (with egg $10, without egg $9) tops brioche bread with avocado, garlic, pickled red onion and radish. White Sheep in Orland Park features its own in-house bakery and coffee bar, where a variety of pastries, doughnuts, cupcakes, muffins and coffee drinks are made. the Pappas brothers, both in terms of the restaurants’ and the brothers’ styles. “To be good at what you do, you have to enjoy it,” said Dionisios Pappas, a co-owner with his brother Anthony. “We wanted to satisfy 100 percent of the market; therefore, we opened The White Sheep to fulfill the remaining demographics to get a little Sheep in them.” White Sheep also offers some “traditional” breakfast and brunch items, such as biscuits and gravy ($12), with the biscuits made fresh in White Sheep’s inhouse bakery and the gravy made from scratch, as opposed to canned gravy. For those looking for something a little more adult beverage-y to start the day, White Sheep has that covered, too, with a variety of signature cocktails — some borrowed from Black Sheep; some unique to White Sheep. And The Sheep’s Mimosa ($9) is made with Flor Prosecco and freshsqueezed orange juice or inhouse strawberry mash. “[The White Sheep] is in a category of its own, where the diversity of the menu and the contemporary environment is [different from] many of our surrounding competitors,” Pappas said. “It is a onestop shop.”
