dining | RECIPE By Michel Menna, chef/owner Seafood Al Cartoccio ‘Al cartoccio’ is the Italian way of saying ‘cooked in a bag.’ In this recipe we will cook the salmon and seafood in a foil pouch. This is one of the best ways to cook fish. Cooking “al cartoccio” is quick with an easy clean up. ingredients (serves 4) 4 - 4oz Salmon fillets 1lb Shrimp 12 Calms 12 Mussels 12 Cloves of garlic, sliced 1tsp Salt 1tsp Oregano 1 Pinch red pepper flakes 4 Tomatoes, diced 1oz Extra virgin olive oil 1cup White wine 1cup Fish broth 1cup Marinara sauce 12 Basil leaves julienned Juice of 1/2 lemon directions Preheat oven to 450 degrees. Using a large sheet of aluminum foil, line a baking dish. Place all fish in the center and brush with olive oil. Combine remaining ingredients and pour over fish. Fold the foil to form a pocket and hold in all liquid. Bake in oven 7 minutes, or longer for a well done fish. Remove from oven and let rest for 5 minutes. Open pouch carefully to avoid steam. Serve with crusty bread and pasta al dente.
