Perry. The Texas State Blue Lacy is considered a
breed of working dog which is indigenous to Texas,
and originally discovered back in the middle of

discovered its location origin designated this blue
lacy a true Texas dog breed according to Senate

Health & Wellness:
SuperFoods
Health and wellness are profoundly impacted by the food we choose to eat. One of the most spectacular scientific advancements of modern medicine
has been the recognition that the majority of chronic diseases are directly linked to diet – both in terms of cause and prevention. Diet-related chronic
diseases include all forms of cardiovascular disease (heart attacks, strokes, high blood pressure, high cholesterol), metabolic syndrome, type 2 diabetes,
osteoporosis, obesity, many forms of cancer (1/3 of all cancers are directly relate to diet). This is a 2-pronged issue – meaning some foods promote
disease (trans fats, saturated fats, refined carbs, excess sugar, excess sodium, etc.), while some foods provide powerful disease protection (fruit, veggies,
whole grains, beans, nuts, olive oil, oily fish, etc.).
Health and wellness promoting diets should include the following superfoods:
Blueberries - Considered one of the healthiest
fruit you can eat. Believe it or not, the diminutive
blueberry is power packed full of life-preserving
agents. They contain more than a dozen
vitamins and minerals, but are most special
because of the spectacular array of diseasebusting
phytochemicals they provide. They are
the reigning world champion antioxidant food,
beating out 49 other fruits and vegetables and
have potent anti-inflammatory power too.
Servings – Strive for a serving of berries daily!
Frozen are just as nutritious as fresh. ½ cup is a
standard serving.
Wild Alaskan Salmon - This superstar protein
is one of the best dietary sources of omega
3 fats. This very special class of polyunsaturated
fat is an essential nutrient critical for maintaining
a healthy cardiovascular system, controlling excess
inflammation and having a healthy brain.
The lack of omega 3 fats in the standard American
diet is one of the most serious but unrecognized
nutritional problems this country faces.
Salmon is also loaded with vitamin D – the new
superstar vitamin that plays a key role in broad
spectrum disease protection. Unlike its farm
raised counterpart, wild Alaskan salmon is very
low in environmental contaminants.
Servings – Have 2-3 servings a week for best results.
Almonds - Almonds are a fantastic source
of a vegetable protein, fiber, and heart-healthy
fats. In addition, they contain a special form of
vitamin E, called gamma tocopherol, thought
to play an important role in preventing cancer
and heart disease. Compelling medical studies
have revealed that having an ounce (a small
handful) of nuts, 5 or more days a week can reduce
your cardiovascular risk by 30-50%!
Servings – A small handful of almonds (about 1
oz.) 5 or more days a week.

Kale - This superstar dark leafy green is without
a doubt one of the healthiest foods you can
eat, providing more nutrition per unit calorie
than almost any other food. Kale tops the list
of the most potent antioxidant vegetables and
provides 17 essential nutrients including 100% of
the adult RDA for vitamin A and vitamin C in a
single serving. It is an especially rich source of
the phytochemicals lutein and zeaxanthin now
famous for promoting eye and vision health.
Servings – The more the better! Strive for a serving
of dark leafy greens daily. A serving is 1 cup
in the raw form.
Red Onions - Although they quite literally
bring us to tears, the organosulfur phytochemicals
unique to onions and the other members
of the allyl food group (garlic, leeks, chives, and
scallions) are truly medicinal in their power to
protect our health. These compounds provide
potent anticancer properties along with valuable
blood-thinning effects useful for maintaining
healthy heart and arteries. Red onions
also provide one of the richest food sources of
quercitin, with well know antioxidant and antiinflammatory
power. The health benefits of red
onions are optimized when eaten raw or lightly
steamed.
Servings – As regularly as possible – optimal to
include daily. There is plenty of goodness in a
couple of slices.
Green Tea - Considered the beverage of
choice in many cultures around the world, this
superstar provides one of the easiest and quickest
ways to infuse our bodies and brains with
antioxidants. Antioxidants are special chemicals
that protect our bodies from cancer, heart disease,
cataracts, arthritis, skin wrinkling, and even
the aging process itself. Brewed tea has more
antioxidant power than any other fruit or vegetable.
When I need a mental and physical lift, I
enjoy a cup of freshly brewed green tea.
Servings – 2-3 cups daily.
Oranges - This refreshing fruit is a great source
of vitamin C, folate, and fiber – a terrific trio for
heart health. In addition, this special food contains
every known class of natural anticancer
compounds making them nature’s perfect “anticancer
package”.
Servings – Consume a piece of citrus daily. Any
citrus will do, but oranges are the superstars.
Whole Oats - This whole grain is a rich source
of several important minerals, B vitamins, and
vitamin E. Oats are naturally low in calories, provide
healthy vegetable protein, and are one
of the best dietary sources of soluble fiber. The
special type of soluble fiber found in oats, called
beta glucan, is a very effective cholesterol lowering
agent and has been shown to help stabilize
blood glucose and insulin levels in type 2

Broccoli - Like other non-starchy vegetables, broccoli
is filled with health promoting vitamins, minerals, and fiber.
It is naturally low in calories and contains over 150 health
promoting phytochemicals, including sulfurophane, now famous
for its potent cancer protective powers.
Servings – Consume at least 1 cruciferous veggie daily.
Broccoli is certainly one of the healthiest of the bunch. 1/2
cup is a serving.
Extra Virgin Olive Oil - This highly
flavored oil protects the heart and arteries
through four separate mechanisms.
It contains a potent class of
antioxidant phytochemicals called
polyphenols that can actually dilate
arteries. It is not surprising that cultures
that consume lots of olive oil have
lower rates of cancer, Alzheimer’s disease,
and heart disease.
Servings – Daily. This should be the oil of choice for all. For
optimal results, use in cold foods, room temperatyre foods or
low-heat dishes. 2-4 TBS daily.

science reveals that this sweet indulgence

dramatically enhance blood flow.
The better your blood flow, the
healthier you’ll be.
Servings – ½ to 1 oz. daily. Best to be 60% or higher cocoa
content.

The Texas Pecan Tree
The Pecan Tree or Carya illinoinensis became
the state tree for the state of Texas in 1919
thanks in large part to the Texas State Legislature.
Texas is considered the largest producer
of pecan tree and they are in fact indigenous
to the state. The Governor of the state
of Texas, James Hogg had a great love and
admiration for these trees that he requested
in his will that a pecan tree be planted at his
gravesite.
The pecan tree grows in most cases will only
grow to reach a height of 100 feet in height.
However, a hybrid of this species grown in
both Texas and the state of Georgia will grow
as tall as one hundred fifty feet. The trunk of
these Texas Pecan Trees grows roughly up to
two meters in diameter. Its leaves grow fortyfive
centimeters in length. Their pinnate has
nine to seventeen leaflets with each leaflet
measuring up to twelve centimeters. Their
flowers are considered wind pollinated and
are monoecious with pistil late catkins all on
one tree.
The Texas Pecan Tree is a part of the Hickory
family and the pecans that form are actually
considered fruits and not nuts. These fruits are
produced with a husk from its exocarp tissue
of its flower when the fruit is developed. The
fruit is brown in color and oval shaped. They
measure roughly three centimeters broad.
These fruits are completely edible and have
a rich almost buttery texture. They are often
used in dessert dishes or eaten plain. It is this
fruit that is used in creating praline candies
and pies during the holiday seasons. The
wood from these pecan trees are used for
making wood floor covering and furniture.
Commercial growing of these pecan trees
and their fruit began in the 1880’s. The major
producers of pecans for commercial use
include: Texas, Georgia, New Mexico, and
Oklahoma. As a precious commodity these
Texas Pecan trees as well as those in other
areas of the United States are quite fruitful
and a worthy investment. Once planted and
cared for these pecan trees will bear fruit for
as many as three hundred years.
Austin and Northwest
Railroad
The blue bonnet became the state flower of
the As stated earlier, the Austin and Northwest
Railroad constructed in 1881 was the connection
between Lampass and Burnet, Texas
to the Texas state capitol building. Initial construction
started April 20, 1881 near the rail
line located in Austin, which is in the direction
of Llano. It was originally a narrow gauge line
that design plans indicated would connect
at the Texas and Pacific Railway located in
Abilene.
The aforementioned connection to Burnet
came along in 1882 and then extended
throughout Granite Mountain in 1885. Both
railway systems were utilized to haul the pink
granite indigenous to Granite Mountain, which
is located within Marble Falls, Texas. With these
connections the railway system could connect
in Marble Falls at the Granite Mountain
and Marble Falls City Railroad, which is also
a tourist town. As you may already know the
pink granite which makes up Granite Mountain
was used in the construction of the Texas
State Capitol building. With this connection
additional communities could be reached
via the Austin and Northwest Railroad. This influx
of connections increased the economy
of the state of Texas in that the exportation of
the granite would reach out to a wider spectrum
within its market.
Capital Metro, which is an Austin transit authority,
is the current owner of the Austin and
Northwest Railroad and it is now operated on
their behalf by the Austin Western Railroad.

Texas Largemouth Bass
The largemouth bass is the most prominent
species of fish resident to the Highland Lakes of
Texas. These fish grow up to sixteen inches within
the first three years of their lives. This particular
species of fish has a life span of sixteen years.
The female of the species grow in length up to
29 inches in their lives and are often larger than
full grown males. The largest largemouth bass in
history weighed 25 pounds.
Spawning of these aquatic treasures starts in the
spring season in the state of Texas between the
end of February to May. It is the responsibility
of the male largemouth bass to provide nests.
The females lay up to 43,000 eggs each every
spring. The eggs hatch in as little as 5 days, while
guarded by the male largemouth bass.
The diet of the newborn of these freshwater fish
consists mostly of smaller fish such as shad and
in some cases small shrimp. The adults who
dwell in deeper waters consume larger fish
and amphibians such as frogs, crawfish, and
baby alligators in some areas. The prey of this
dominating fish species can be up to 35% of
its body mass. Of all species in these waters the
largemouth bass is considered to be the apex
predator.
The Micropterus salmoides and the Micropterus
salmoides flordaus are two species of large
mouth bass that are native to Texas. It is the
breed of fish that accounts for a large portion of
freshwater seafood in this area. Catfish is a close
second to this apex predator. Fishing for Texans
is not simply a sport but also a way to supply
food to their families in a poor economy.
With the popularity of bass fishing comes also
the occurrence of bass fishing tournaments.
These tournaments are conducted yearly in the
Texas Lake region. One such tournament is the
Bass Champs Tournament Trail held every May
on the Highland Lakes. A majority of participants
in these tournaments practice catch and release
in order to refrain from depleting the fish
population. These tournaments are required to
follow strict state regulations and guidelines.
The Blue Bonnet
The blue bonnet became the state flower of the
state of Texas in 1901. This was thanks to former
Vice President John Nance Garner, who was a
State Representative at this time. This accomplishment
was thanks also to the help of a special
group of Texan women. This special group of
women, a Texas chapter of the Colonial Dames
of America called upon the aid of a painting
created by Miss Mode Walker. The painting was
presented to Governor Joseph D. Sayers and
other lawmakers backing up Mr. Garner’s state
flower suggestion. This painting captured the
rare beauty that is the Texas blue bonnet and
making a quite compelling argument all its own.
To commemorate the brilliant decision to
choose these blue bonnets as the state flower;
the state of Texas began the Blue Bonnet Festival
in June of 1997. Within this festival are hundreds
of arts and crafts booths amid the blue bonnets.
Live entertainment and children’s activities, as
well as, a food court are provided.
This event is sponsored by the Chappell Hill Historical
Society. This group of volunteers is dedicated
to preserving history of Texas and its historical
buildings.
The festival itself is held every April in the Chappell
Hill, Texas area. People of all ages are welcome.
Enjoy!
