I can’tsend any meaningful donationat this time, so I’ve taken out atwo-year membership. Hopethis helps! I’m also writing tosay “thank you” for yourexcellent editorial in theAutumn 2020 issue. As youknow, here in Hamilton wehave almost weekly issues withpeople needing a rescue fromone of our waterfall areas. It’sso selfish and thoughtless ofthese selfie-seeking noncompetenthikers. The risksthey put the rescue respondersin just for the sake of a thrillor a photo is unconscionable. You make this very clear in ano-nonsense tone. Here’shoping people read andinwardly digest yourcomments.Trudi Down, HamiltonA friend passed on yourmagazine which wethoroughly enjoyed, the July,August, September one. Pleasestart [the subscription] withthe next copy. The photos inthe magazine are beautiful.Valerie McAvoy, BurlingtonYour magazine is one Ialways picked up at Decew/Morningstar Mill when Iwas a docent for the Miller’sHouse. Sadly this season theMill is closed, in fact fenced offto any visitors of the house, millor Bruce trail. The magazineis brilliant! Informative, interesting and full ofwonderful photography. Yoursummer 2020 issue with yourheartfelt hope of continuingwas particularly poignant, butdirect and on point. We wish tomake a donation and purchase a2 year subscription for our son. Please send details of wherethat donation and request forsubscription should be mailed.Gail Coy and Frank Coy,by emailSee what influence your articles have on us readers! Here is whathas happened today. We have several buckthorns on the property, apparently, which I was unaware of until my husband, Jock, pointedthem out to me and started digging holes. But tell me please whatis a farm jack and cable puller. He loves your magazine so when mygrace period with my B&B, now closed due to the virus, is over, Iwill be taking out a subscription to your magazine and thank youfor such informative articles. Nice picture of Mike working there.Sandy Proudfoot, Farmer’s Walk B&B, MonoAs per the recent Escarpment Views, Brampton Heart LakeRotary would be delighted to invite Spencer to speak at ourAugust 6th weekly meeting - via Zoom at 7:30pm for 15 minutes.Syd Harmon by emailI am enjoying the new issue, and the apple pie cookies inthe Foodland ad on page 7sound delicious, but surelyit requires baking. Thebottom crust would surelydisintegrate in no time fromthe apple juices unless it wasstrengthened by the baking. Now I may be wrong, althoughI did win the apple-pie bakingcontest on my street manyyears ago. Can you inquirewith your advertiser if it forgotthe baking instructions?Doug Yonson, NepeanFoodland’s response:The reader is correct, theywould be soggy cookies. The baking instructionswere omitted from the ad.I have added the correctbaking instructions:4. Brush remaining egg washover lattice tops. Cover andrefrigerate cookies 30 min.Meanwhile, preheat oven to375°F (190°C). Bake 25 to 30min., until cookies are goldenbrown and filling is bubbling.Cool completely on wire rack.FoodlandI made the apple pie cookiesfrom the Autumn 2020NEViews. Found no oventemp or time and an extratbsp cinnamon, but I managedto make awesome cookies byreading thru and correctingthese and baked for 17minutes at 425F. It might bebetter if someone reviewed therecipes before publishing, asa non-baker would struggle, and wonder what to dowith the extra cinnamon, orhave really spicy cookies.Patricia Virag, by email6 Niagara Escarpment Views • Winter 2020-21
