WHYHOTDISH?W R I T T E N B Y C A S S I E R O G E R SMinnesota’s unofficial state dish hit the heartlandfollowing the Great Depression as a clever onedishmeal that stretched a pound of meat to feed ahungry family. With strong ties to Scandinavian,Irish, and German immigrant farmers, hotdish is astory of adaptation, survival, and yes, whiteness.As the masthead for Minnesotan food, hotdishanchors Eurocentric identities but usually fails torepresent nonwhite communities that callMinnesota home today.At the same time, hotdish is soul food. The truebeauty of this entrée is that anything goes, so longas it is served hot and in a dish, as the namesuggests. In times of scarcity, hotdish maximizespantry scraps, such as a forgotten can of soup orveggies past their prime. Whatever the filling, theonly essential ingredients are convenience,affordability, and nostalgia.We need to reconcile this symbolic food with thediverse communities and food scenes that are herenow.
