We’ve discovered a new fine-dining gem and it’s worth raving about!<br />
Hidden in the leafy suburbs of<br />
Waterkloof Ridge, Tribute Restaurant<br />
at the Apogee Boutique Hotel & Spa is<br />
an absolute gem … a restaurant that<br />
sets high, higher, highest standards in<br />
terms exceptional food and service.<br />
We admit, for a moment, we did find<br />
ourselves debating whether to keep it<br />
a secret or tell everyone we know!<br />
Headed up by chef Clayton Prescott,<br />
Tribute’s new a la carte menu is what<br />
food dreams are made of. With a<br />
decade and a half of experience under<br />
his toque, this executive chef and his<br />
equally brilliant team would like their<br />
‘culinary philosophy, inspiration, and<br />
passion to reflect with each dish they<br />
present’. And it sure does.<br />
Some of the creations on the menu<br />
that scream order-me-order-me are<br />
the grilled aged rib eye served with<br />
crayfish ravioli alongside pickled fennel,<br />
oyster mushroom, pea purée and beef<br />
jus; the cannelloni filled with springbok<br />
loin ragout, glossed with a rich sage<br />
and red wine jus and topped with<br />
teriyaki mushrooms and kale crisps;<br />
and the smoked trout terrine, dressed<br />
with a Dashi and chive vinaigrette with<br />
a herbed blood orange bruschetta,<br />
which is, trust us, absolutely to die for!<br />
The vegetarian options are simply<br />
exquisite … think pickled pineapple<br />
and cilantro Dim Sum with yuzu puree<br />
and a cranberry tuille filled with a<br />
Roquefort crema; chardonnay-braised<br />
leeks, whipped feta, poached pear,<br />
toasted hazelnuts served with sumacdusted<br />
pani puri of crispy ricotta<br />
fritters served with a light green curry<br />
sauce ... veggie yum!<br />
For a sweet ending, we really<br />
recommend the apple Tart Tatin<br />
served with vanilla Chantilly cream,<br />
or the almond and cocoa crumble<br />
topped with 70 per cent dark Callebaut<br />
Cremieux, caramelised hazelnut ice<br />
cream and a butterscotch sauce.<br />
Regardless of whether you’re in the<br />
mood for a hearty or light dish, you<br />
should find something to suit. Local<br />
flavours and ingredients are given a<br />
fresh new twist and the attention to<br />
detail … on point every time.<br />
Chic, minimalist interior, strategically<br />
placed, hand-picked local art and<br />
beautiful views of the city ... definitely,<br />
our go-to option if you want to<br />
