Style Magazine - November 2023

As someone who enjoys cooking—and the economical, health, and therapeutic benefits that come with it—dining out is a real rarity. It’s also a real treat, particularly for my two future foodies who think restaurants are (almost) as cool as Christmas. When I do depart my own kitchen, however, I crave dishes that are challenging (for me) to replicate at home—recipes that require ample ingredients and effort (croissants, curry, sushi, etc.). I also gravitate toward “happy meals”—not the kind from the Golden Arches—but food (and an ambiance!) that’s fun, encourages interaction, and gives people permission to play. After all, food—just like life—shouldn't be taken too seriously. Curious which cuisines allow this type of experiential eating and where, locally, you can savor the flavors? Turn to “The Hot List” (page 86) for some can’t-miss meals, including molcajete (a tastier, more filling version of fajitas), hot pot (the ultimate winter warmer) and fondue (yes, please, to melted cheese!). If you’re seeking some more traditional dishes and dining destinations, check out “Where the Chefs Eat” (page 62) for a roundup of restaurant recommendations courtesy of our region’s most accomplished epicureans. From fast-casual finds the whole family will love to more upscale establishments, plus some cool cafés and beloved breweries, I’m confident you’ll discover plenty of places to check out. Finally, in “Homeless for the Holidays” (page 16), contributor Caroline Kings tackles the tough topic of homelessness by shining a light on area organizations dedicated to supporting the multilayered, complicated cause. She also shares some simple, selfless ways we can help the unhoused, like simply acknowledging their existence. Speaking of serving others, November’s the prime time to do so. It is Thanksgiving and National Gratitude Month, after all! Whether it’s smiling and making small talk with a stranger, donating outgrown outerwear to a coat drive, or tipping generously the next time you receive five-star service, no random (or intentional) act of kindness is too trivial to try. Cheers!

What’s
your go-to
snack?
“Red grapes with pepper jack cheese. The
grapes must be crunchy though, and I
prefer the pepper jack to be super spicy.
Anyone who knows me, knows I love my
spice!”—Emiley Mohr
“I don't leave home without a piece of fruit!
My go-to is a mandarin, because they’re
easy to peel and give me a nice boost
of energy. I have a mandarin tree in my
yard and look forward to the home-grown
harvest every year.”—Melissa Strand
“If I’m feeling healthy, in-season peaches.
Yum! The not-so-healthy version? La
Panzanella Mini Croccantini with La Terra
Fina Spinach Artichoke & Parmesan Dip.
So indulgent!”—Wendy Sipple
I love all kinds of cheese! My youngest
son and I are always trying something
new.”—Theresa Arnold-Hale
“Salami, cheese, and olives—but I try to
balance out all that good stuff by eating
my body weight in raw almonds!”
Locally based health club California
Family Fitness (californiafamilyfitness.
under one name. Set to take effect
next month, both businesses—which
collectively operate 63 gyms throughout
the state—will be known as In-Shape
Head to Downtown Placerville and partake
in the Miners on Main Scavenger
Hunt (eldorado.com/miners-on-main),
where 10 miners—who all had an impact
on Placerville and El Dorado County
during the Gold Rush—are hidden
throughout the district. Each miner has
a QR code on their medallion, which
will take you to a webpage about them.
More than 1,800 volunteers joined
together at Folsom’s Lakeside Church
on September 16 for the 10th annual
Community Service Day. After
receiving an official event T-shirt,
enjoying breakfast, and listening to
encouraging words spoken by several
community leaders—including
Community Service Day Chair Justin
Raithel and City of Folsom Mayor
Rosario Rodriguez—the group eagerly
headed to their respective projects.
Assignments included assembling
care packages for active-duty military
service members, collecting and
sorting food donations, and assisting
local nonprofits. For more info, visit
executive director for CASA El
Dorado, Pooley’s vision for the
Foundation includes elevating
philanthropy, supporting nonprofits,
and helping to ensure a vibrant future
for El Dorado County. Her role will
Folsom residents and made from materials collected from the curbside
green organics bin. For more info, visit folsom.ca.us/organics.
GIVING BACK
Homeless
for the
Holidays
by CAROLINE KINGS
L
et me introduce
you to John, 55
years old, from Folsom. Last
Thanksgiving, he sat around the dinner table
with his children and their families, enjoying turkey and
pecan pie. He and his wife were going through a divorce,
he had an okay job that paid the bills (just), and lived
alone, shopping at Walmart and WinCo. He was a bit of
a loner but liked watching the 49ers at a bar every now
and again, and he sometimes drove to Tahoe to hike. His
parents passed away, and his siblings live on the other
side of the country. He’s not very close to them.
This Thanksgiving, he’s spending it in a drop-in center
for the homeless. The divorce became acrimonious, and
his children slowly started to ignore his text messages and
voicemails; as a result, John became depressed. On top of
all that, he lost his job. Without
much in savings, the unpaid bills
mounted, and he moved into his
car. At his age and now with untreated, ongoing depression,
he found it difficult to find a new job.
John’s story may sound unbelievable, but becoming
homeless can and does happen that quickly—sometimes
much quicker. And although we may think that it stems
from addiction, the number one reason for people
becoming homeless is poor mental health. This is closely
followed by economic reasons, just like John: the loss of a
job and the cost of living. It’s when people are on the streets
that they start to “self-medicate” with drugs and alcohol—to
survive—for escapism.
It’s hard to know exactly how many people are living
without a home of their own, so statistics
counts are taken one night a year,
like a census, but often these are not
accurate. Plus, those without a home
are nomadic, moving from county to
The numbers should be seen as “fluid,”
as people are transient; and sadly, the
numbers are growing.
Fortunately, in our local area, there
are ample organizations working to
Dr. Wynter
Phoenix
Monahan Vein Clinic
Welcomes
OUR NEWEST DOCTOR
Wynter Phoenix, M.D.
Monahan Vein Clinic has welcomed Dr. Wynter Phoenix
to our practice and to Northern California!
Dr. Phoenix has included vein treatment in his practice as a general surgeon for over
10 years. Originally from Southern California, Dr. Phoenix recently moved from the
Reno area. He shares a common philosophy on caring for patients with Dr. Monahan.
Dr. Daniel Monahan has been in practice for over 30 years and is active in national
societies focused on venous disease. The doctors have been friends since meeting
at a scientific conference several years ago. Our practice stands out for being the
only practice in the Sacramento area dedicated entirely to treatment of vein disease.
Monahan Vein Clinic treats patients with varicose veins, spider veins, blood clot issues,
and the range of problems in venous and lymphatic disease. Focusing the practice
has provided greater experience creating special expertise. Advanced techniques
and technology enable superior cosmetic vein treatment. As Dr. Monahan will
continue caring for his patients, we are preparing to provide expert vein care for the
Sacramento region for many years to come.
Both surgeons are anticipating providing enhanced quality of care for vein disease
as they share knowledge and experience. Most varicose vein treatment is covered by
insurance. Spider vein treatment, known as sclerotherapy, is considered cosmetic, and
estimates can be given in appointments with our nurses.
Call today for an appointment, (916)791-8346. Appointments not available online.
The holidays can
sometimes feel
heavy, as you carry
the load of balancing
your physical, mental,
and financial health.
We consulted with
local experts on
thoughtful ways to
support your needs
and keep your head
up this season.
PHYSICAL HEALTH
Staying active in the winter and
during holidays can feel daunting, as
it gets darker earlier, schedules are
full, and your couch calls to you. Get
creative and build a plan that fits the
season, while having some fun!
Bring the Fun Indoors
“Getting the kids involved in
some indoor fun is always a good
time. Children love animals, so
incorporate animal name exercises,
such as frog hops, bear crawls, bird
dogs, and lizard pushups. See how
many [the whole family] can do in
30 seconds, then repeat to see who
can beat their previous record. Or
Turn Up the Music
“Don’t want to go anywhere? Turn
on your favorite music then dance,
do basic exercises, or vacuum for
20 minutes.” Lisa Packheiser, Fitness
Director, Spare Time Sports Clubs,
sparetimesportsclubs.com
Boost Your Immune System
“Keeping your immune system
and spirits in top shape can
become more difficult in winter;
thankfully, there are many excellent
supplements that help. Make sure to
incorporate a good probiotic, since
your immune system and serotonin
levels are created in the gut. As
the days get shorter, it’s harder to
maintain adequate vitamin D levels,
so a supplement can be helpful. Less
daylight can also have a negative
effect on your mood; [taking the]
MENTAL HEALTH
The mental load of packed calendars,
extra costs, and less daylight can lead
to burnout. Make sure to prioritize
time for YOU to adjust and unwind.
Validate Your Feelings
“Give yourself a permission slip that
says, ‘Both things are true.’ If you
feel overwhelmed by stress but still
want to enjoy something important
to you, both things can be true.
This permission slip supports the
winning mindset that even though
you feel blue or stressed, you can
still enjoy a situation simply by
showing up or giving yourself grace.”
Jenifer Novak, Empowerment Coach,
fullyexpressedliving.com
Schedule Time for You
“Establishing a morning or nightly
routine consisting of things to look
forward to will help your emotional
health. This could look like journaling
for five minutes each morning or night
to clear clutter from your thoughts.
If holidays are particularly stressful
[for you], consider simplifying your
commitments. Being proactive about
what boundaries you would like to set
will help keep your calendar feeling
more manageable and help you to
be more present.” Ashlee Janzen, MS,
LMFT, ashleejanzenlmft.com
Just Say “No”
“It’s okay to say ‘no.’ If you find yourself
saying ‘yes’ to everything during
the holiday season, it can become
overwhelming. Make sure you take
care of YOU; you are worthy.” Wanda
Gaines, Wanda Gaines Coaching,
wandagainescoaching.com
FINANCIAL HEALTH
Managing finances during a season
full of giving can feel like an uphill
battle, but having a toolbox of tips
when the wish lists and holiday
marketing campaigns hit can help you
navigate holiday spending wisely.
Plan Ahead
“Communicate realistic expectations
with your family and friends ahead
of time. We don’t want sad faces
on Christmas morning when the
pony isn’t under the tree. It could
be as simple the four-gift rule (from
Dave Ramsey): something they want,
something they need, something to
wear, and something to read.” Clint
Herndon, CPA, CFE, Next Peak CPA,
nextpeakcpa.com
Stick to a Budget
“Write down an actual budget of
income and expenses to see what
you can afford. It’s okay to say no to
additional spending and gift within
your financial means or find other
low-cost ways to show loved ones
that you’re grateful for them. Protect
your stress levels and happiness over
Take a Hike
Smittle Creek Trail
by RYAN MARTINEZ
LOCATED NEAR:
Capay (Lake Berryessa Recreation
Area).
DISTANCE:
4.7 miles (out and back).
DIFFICULTY LEVEL:
Moderate.
KNOW BEFORE YOU GO:
This trail was unmaintained when I
visited, and the bridges were down;
there are rumored to be ticks, so
bring bug spray and wear pants,
long sleeves, and closed-toe shoes
with traction. Don’t forget water;
and, as always, Leave No Trace.
Ticks & Lyme
Disease
While ticks are arguably
some of the grossest
in the insect world
(technically, though,
they’re arachnids like
spiders—not insects),
they shouldn’t deter
you from getting
outside. Here’s what
you need to know.
• Lyme disease is caused
by a bacteria carried by
the deer tick.
WHY WE LOVE IT:
With beautiful views of Lake
Berryessa, easy terrain for the
whole family, lake access (in warmer
temps), and tons of wildflowers
come springtime, this trail is an
under-the-radar favorite.
1
• A tick must feed for
approximately 36 hours
for the disease to be
transferred.
• The overall risk of
infection is estimated at
1-3%, even in areas where
the disease is present.
FUEL UP:
There’s nothing better than a bowl
of comforting curry and buttered
naan to warm you up after a winter
2
• A rash, fever, facial
paralysis, and arthritis
indicate infection, usually
appearing 3-30 days after
exposure.
HOW TO PREVENT
TICK BITES:
➊
Know where to expect
ticks.
➋
Use repellent on clothing.
hike. Yeti Restaurant (davisyeti.
com) boasts a huge menu of classic
and traditional Indian fare for
vegetarians and omnivores alike—
including Nepalese momo (steamed
dumplings with meat or
veggies mixed with
Himalayan spices),
“thali” (a sampling
of different
dishes), crispy
samosas, sizzling
tandoori chicken,
and more.
➌
Wear layers and
appropriate outdoor
attire.
➍
Check thoroughly for ticks
after hiking in areas where
ticks may be present,
especially between folds
of skin and joints; have a
partner help.
Yes to Vests!
The latest trend I’m seeing this
season are different types of
vests—unique vintage vests,
pinstripe suit vests, fuzzy warm
vests, and leather vests! Vests
are a great way to add interest to
an outfit with a bonus of keeping
you warm; plus, they jazz up an
otherwise simple look. Like many
things in fashion, styles come back
around, and this retro look is up for
a new iteration. Happy layering!
ASK THE
EXPERT
by BELLA NOLEN
Q: WHEN SHOULD I CONSIDER
REMODELING MY HOME?
Photo ©Andy Dean - stock.adobe.com.
A: It's advisable to consider
remodeling your home after 12-15
years of living in the residence. If
you’re planning a full remodel with
the intention to sell, it's advisable
to do so by the 10th year, allowing
potential buyers to live in it for a
few years before they decide to
remodel themselves. Alternatively,
you can opt for gradual
remodeling over the years, which
keeps your home fresh and
reduces the need for a large,
one-time financial investment. An
experienced interior designer can
help you decide which spaces to
prioritize to create a long-term
plan for upgrading your home.
Finally, for those whose house
is almost paid off, remodeling
can be more cost-effective than
buying a new property—and an
opportunity to create the home of
your dreams.
Hotel Dreams
FIVE-STAR COMFORT AT HOME
| home & garden |
by NELLY KISLYANKA
Have you ever wondered how your favorite hotel gets
their beds so comfy or their pillows so fluffy and wished
you could uncover their secrets? You’re in luck! Two local
hotels shared their tricks of the trade, so you can create
your own hotel-quality escape at home.
Mattresses Matter
The most important part of a bedroom is, not
surprisingly, found in its name: the bed. Creating
a comfortable and sumptuous bed is key to
creating a retreat you can’t wait to escape to.
That's why Michelle Croft, marketing manager at
Sacramento’s Kimpton Sawyer Hotel (sawyerhotel.
com), advises you to “invest in your bedding.”
What’s the first step in creating the comfiest
bed? The star of the show, the mattress, of course!
Nothing can replace a quality mattress for a good
night’s rest; that’s why highly rated hotels, like
Kimpton Sawyer and The National Exchange Hotel
(thenationalexchangehotel.com) in Nevada City
invest in quality mattresses.
If you want to melt into your bed, take a page
from Kimpton Sawyer’s book and purchase a
memory foam mattress, which molds to your
body and provides support right where your
individual body needs it. It's also an excellent
choice for those who struggle to get sleep because
of their body temperature. Memory foam is
manufactured using temperature-sensitive material,
so it adjusts to your body’s heat, helping you sleep the
whole night through.
The secret to The National Exchange’s luxurious
beds? Beautyrest Black mattresses. If you want
comfort and cooling but share a bed with a partner
prone to tossing and turning, this top-tier mattress
is just what your sleep needs. Beautyrest Black
mattresses have motion separation—coils that
absorb energy and reduce motion.
Bedding Basics
If the mattress takes center stage, then luxurious
linens and pillows are the supporting cast that pull
the show together. How do you create a bed that
begs you to run and jump into it? Top it with a duvet
and the right pillows. The National Exchange’s beds
are kitted out in down pillows and duvets sourced from DOWN
inc., while Kimpton Sawyer dresses their beds in down-alternative
pillows and duvets.
A pro tip for the plushest bed of your dreams is to double-stuff
your pillows (and duvet—if you feel so inclined). The key? Buy
pillows in the size down from your bed’s scale. For example, if you
have a king-sized bed, stuff two queen-sized pillows in the king-sized
pillowcases.
Opt for crisp-looking white or soft, neutral bedding, suggests
Croft. “If you really want that hotel look, shop for a duvet cover with
black embroidery design,” she says. The National Exchange uses
handcrafted Mascioni Italian linens to give their rooms elegance
and luxury. A bedding tip from Craft is to steam or iron your sheets
after each wash. Pressing your sheets may sound like more work
than you care for without a professional housekeeping team at your
disposal, but it’s the key to a luxe look, according to Croft. “Plus, it
feels amazing,” she says.
“The bed is the dominating feature in the room.” That’s why
Croft stresses the importance of making your bed every morning.
Doing so maintains cleanliness and presentation so that your room
feels like a sanctuary from the chaos of life. “Since you likely don’t
have room service to make your bed at home (although that would
be awesome!), keep your bedding style simple,” she says.
A tip to achieving a hotel room aesthetic when making
your bed is to fold down the duvet one-fourth of the way
from the head of the bead. Tucking in the duvet cover
corners finishes off the look.
Dim the Lights
Mood lighting is everything for a bedroom retreat.
Kimpton Sawyer likes to set the tone for a warm welcome
using soft, dimmable lights. The National Exchange also
furnishes its rooms with lighting that can be adjusted for
reading and atmosphere. By installing dimmer switches
to overhead lighting in your main suite, you can control
the brightness. Dimmers allow you to set the mood for a
romantic evening or winding down for bed. "If that’s not
an option, get matching dimmable bedside lamps or wall
lamps,” recommends Croft.
Scented Secrets
Never underestimate the power of scent in setting a mood.
Kimpton Sawyer and The National Exchange employ this
strategy to help their guests relax and unwind—and so
can you! Fragranced candles and diffusers are relatively
inexpensive and accessible to all. Pick up a candle in your
favorite scent, and for extra atmosphere, choose one with
a wooden wick to crackle as it burns. Croft recommends
choosing “scents like lavender, honey, or eucalyptus for a
calm, spa-like feeling.”
OLD SPACES, NEW PLACES
by JENNIFER MARAGONI
Buildings dating back to the Gold Rush dot our local landscape, and
many of them are still used today. Ever enjoyed a meal or perused a
shop in an old building and wondered about its past life? Here’s a thenand-now
glimpse at 10 historic buildings.
Bubbling with History
Built in 1852, the stone structure that
houses the Fountain & Tallman Museum
is the oldest building on Main Street
in Placerville. Formerly Fountain &
Tallman Soda Works, it provided
bottled spring water to miners (the
river and creek water were undrinkable
due to pollution from mining). The
building, later owned by Pacific Gas
& Electric, is now dubbed the “Biggest
Little Museum in the West.” 524 Main
Street, Placerville, 530-626-0773,
eldoradocountyhistoricalsociety.org
Grillin’ & Chillin’
Have a hankering for BBQ? Head to
Poor Red’s Bar-B-Que in El Dorado. The
roadhouse along Highway 49 was built
as a Wells Fargo weigh station in the mid-
1800s, then served up drinks as Kelly’s
Bar from 1927-1945. But since the 1950s,
it’s been known for its BBQ and Gold
Cadillac cocktail. As the story goes, “Poor
Red” won the bar in a dice game and took
over ownership with his wife “Rich Opal.”
In 1952, the bartender created a special
drink, the Gold Cadillac—Galliano liqueur,
white crème de cacao, and cream—at
the request of newlyweds passing through
town in, you guessed it, a gold Cadillac.
Poor Red’s, which reopened under
new ownership in 2016, still has
1940s-era murals on its walls —
and BBQ and Gold Cadillacs
on its menu. 6221 Pleasant
space. Constructed in 1853,
the building, then known as
“3 Mile House,” served as a
stagecoach stop, general
store, hotel, post office,
and community hall for 135
years. The opening to the
Blue Lead (Gold) Mine can
be seen in the cellar. 2021 Smith
Hammer Time
While much changes, some things
remain the same. Placerville
Hardware—the oldest hardware
store west of the Mississippi—has
been a mainstay on Main Street
since the 1850s (albeit under a few
names). The store—where you can
buy everything from tools and fishing
poles to candles and cast iron pans—
has been operating under its current
moniker since 1907 and owned by the
Fausel family since 1952. Notice the
original hardwood floors, nail and
screw bins, and rolling ladders. 441
Beer in the Block
Built in 1856, the Block Building
in Auburn’s Old Town Plaza
served as the American Hotel, a
hub of social activity during the
Gold Rush and construction of
the Transcontinental Railroad. It
then housed the beloved Shanghai
Restaurant & Bar, which served
townsfolk for over a century. The
building, which barely survived
numerous fires over the years, is
now occupied by Auburn Alehouse,
whose owners took great care during
renovation to preserve its “original
fabric and patina.” Fun fact: Disney
filmed Phenomenon, starring John
Travolta, in Auburn; the building was
prominently featured as the Elkhorn
Bar. 289 Washington Street, Auburn,
530-885-2537, auburnalehouse.com
Dive In
Belly up to the oldest bar in Placer
County at West House in Roseville.
Built in 1907, the building was later
leased and then sold to Avano Frediani
as a hotel and tavern, and has been
continuously operated by the Frediani
family for over a century. The lively
neighborhood dive bar boasts TVs,
pool tables, and a jukebox. 347
A High Note
For live music in a historic venue,
visit Roseville’s Opera House
Saloon. The nightclub is located
in the McRae Building, built in 1908.
In the 1920s, the second floor was the
town’s main social hall, used for meetings,
plays, and dances. In the 1930s, it was
used as a movie house, roller rink, and
for boxing matches, and later as the
offices of the Press Tribune. The first
floor has housed the McRae Insurance
offices, a Piggly Wiggly grocery store, the
Roseville Register, and the post office. 411
Hop Back in Time
Hop Sing Palace has been serving
Chinese food on Sutter Street in
Folsom since 1957, but the building
that houses the restaurant has
served the community since 1909.
Originally Imhoff’s General Store,
where locals could buy everything from
kitchenware to hardware, it was later
used as a sheet metal shop. Fun fact:
Journalist Lisa Ling’s grandfather opened
Hop Sing’s, the first Chinese restaurant in
Folsom, and owned it until the mid-1980s.
La Dolce Vita
Built in 1926, the Murer House brings
a taste of Italy to Folsom with cooking
and language classes, bocce ball
tournaments, and special events. The
pale pink home that backs up to
Folsom Boulevard was designed
and built by Giuseppie “Joe” Murer,
a carpenter who immigrated to
San Francisco and later found
his way to Folsom. 1125 Joe Murer
Raise the Curtain
Auburn State Theatre opened to
an overflow crowd the day after
Christmas in 1930 with an orchestra,
balcony, and 1,350 seats. The iconic
marquee and “State” sign were added
in 1937. The building has undergone
several renovations—and uses—over
the years. The 350-seat theater
now serves as a venue for live music,
performing arts, film screenings, and
educational experiences. Fun fact: The
red velvet seats came from Grauman’s
Chinese Theater in Los Angeles. 985
HOW LONG HAVE YOU BEEN A CHEF? 20 years.
FAVORITE THING TO MAKE AT YOUR RESTAURANT:
Right now, I'm loving our handmade tagliarini
with stewed heirloom tomatoes, basil, and
parmesan. I look forward to it every summer.
TOP COOKING TIP: Taste your food and season
throughout the cooking process, to achieve
consistency and develop flavors.
YOUR MOTTO WHEN IT COMES TO COOKING: Start with the best
ingredients, keep it simple, and cook [what’s] in season.
TOP LOCAL SPOTS TO EAT AND/OR DRINK: When my
husband and I are craving a date night, we enjoy
Restaurant Josephine (josephineauburn.com).
Chef-Owners Eric and Courtney are truly talented,
and I appreciate their efforts to source local
ingredients, many from their own farm. It’s unique
to find a spot where traditional, time-honored
techniques are used to create layered flavors; not to
mention, Courtney's collection of glassware makes it a
special spot to enjoy a craft cocktail.
My kids’ favorite is Moksa Barrel House
(moksabarrelhouse.com), which we opened
in collaboration with Moksa Brewing Co. Their
food is casual but made with superior products.
The kiddos can indulge in chicken tenders, and I
know it's high-quality chicken!
by MEGAN WISKUS
My family recently enjoyed a lovely meal at Nixtaco
(nixta.co). We tried lots of items, and everything was
delicious! The menu has grown quite a bit over the past
few years, so if you haven't been in a while, I'd recommend a visit.
I love grabbing a croissant and carefully crafted cappuccino at local coffee
shops and often make the drive to Faria Bakery (fariabakery.com/folsom)
or The Pour Choice (thepourchoice.com); both are yummy options. Granite
Bay has a new café, The Grove (@thegrovecoffeehouse916), that makes
lovely cappuccinos and serves coffee from Chocolate Fish.
FAVORITE
THING TO
MAKE
AT YOUR
RESTAURANT:
Croissants.
TOP
COOKING TIP: Use
quality ingredients
if you want to make quality
products, and don’t take
shortcuts.
YOUR MOTTO WHEN IT COMES
TO COOKING: Practice makes
perfect.
TOP LOCAL SPOTS TO EAT AND/
OR DRINK: I enjoy Farmhaus
(farmhausgb.com) because they
always use fresh, in-season
ingredients and have
quality chefs,
as well as an
amazing
front-ofhouse
staff.
My favorite
dish right now
is their pork
chop.
Everything at
Nixtaco (nixta.
co) is made
from
scratch and
executed
perfectly.
I love their
burger (when
they have it), or
the al pastor tacos!
Back Bistro (backbistro.com)
is in an excellent location (at
the Palladio) and has a great
atmosphere; plus, the
staff is always
incredibly kind.
You can’t beat
their steak
and potatoes
appetizer.
HOW LONG HAVE YOU BEEN A CHEF? 37 years.
FAVORITE THING TO MAKE AT
YOUR RESTAURANT? A
16-ounce New York
strip steak cooked
Pittsburgh-style—
where it’s seared on
an iron plate, placed
in the back of our
top-fired broiler (where
it’s hottest), and cooked
medium rare with a perfect
crust.
TOP COOKING TIP: When it comes to flavor,
don't be afraid to season your food properly
and generously. People tend to underseason;
indulge and live life daily—you only
die once.
YOUR MOTTO WHEN IT COMES TO COOKING:
Meals that are balanced with the five flavors
of bitter, sweet, salty, acidic, and umami pair
well with almost any wine.
TOP LOCAL SPOTS TO EAT AND/OR DRINK:
I love going to Aji
Japanese Bistro
(ajibistroedh.
com) for their spicy
chicken ramen with
crunchy garlic and
kimchi; the chicken
is chargrilled, which
adds a nice smokiness to
the homemade broth. It’s
especially tasty on a cold, rainy
day.
I’ve tried cheese
enchiladas all
over town, and
the version
at La Cascada
(lacascadaedh.com)
are by far the best. The
sauce is flavorful and
not too tomatoey like
some tend to be. I always
ask for chopped green onions on
top to add even more flavor and texture.
If you’re a Volkswagen aficionado like me,
Red Bus Brewing Company (redbusbrew.
com) is a must! They have VW-themed décor
and cleverly named
brews, including my
favorite: Jetronic—a
hazy IPA that’s light,
refreshing, and
not too hoppy. It’s
great for sipping…or
chugging!
HOW LONG HAVE YOU BEEN A
FAVORITE THING TO MAKE
AT YOUR RESTAURANT?
Lamb shepherd pasty.
TOP COOKING TIP:
Enjoy the process, and
always brown your butter!
YOUR MOTTO WHEN IT COMES TO
COOKING: Allow yourself to engage all five
senses. It's not just about the result, but how
you feel while creating your meal. Food is a
conduit of energy. Have fun, be creative, and
use it as a modality of expression.
TOP LOCAL SPOTS TO EAT AND/OR DRINK:
Timmy’s Brown Bag (timmysbrownbag.
com) has a creative, unique menu that
pulls you out of your comfort
zone to discover fireworks
of flavor with every bite.
The owner’s risk-taking
ingredients are inspiring,
and the delivery of it
in sandwich form is the
best part. My go-to is
the spam and kimchi
sandwich.
The boscaiola (add Italian
sausage) from The Place
(thatlittleitalianplace.com)
is simple and elegant.
The thyme cream sauce
complements the earthy
portabellas and crimini
mushrooms, along with
the saltiness of the sausage.
Nothing overpowers any other
flavors; it’s creamy, aromatic harmony!
I love the history and ambiance
at Smith Flat House
(smithflathouse.com);
plus, they support our
community by using
ingredients from local
farmers. The Black
& White (filet mignon
served with grilled prawns,
demi-glace, béarnaise sauce,
roasted garlic mashed
potatoes, and slowroasted
baby heirloom
carrots) is my favorite,
along with any of their
wood-fired pizzas.
Fresh, simple, classics
with a creative spin!
FAVORITE THING TO MAKE AT
YOUR RESTAURANT:
Burgers, of
course!
TOP COOKING
TIP: Never stop
learning. I’ve
been in the
industry for a
long time and am
always excited to try
something new or experiment with a
different way of doing something that
I’ve done 100 times before.
TOP LOCAL SPOTS TO EAT AND/OR
DRINK: My favorite casual place is
7’Yen Sushi (7yensushi.com). Andy is
a great sushi chef and creates some
of the most unique rolls you’ll find.
My favorite is
the Firefly:
spicy tuna
and cucumber
topped with
salmon and
thinly sliced
lemon. It seems
normal until you
take your first bite;
trust me, you’ll be hooked
for life!
For a more upscale meal, my go-to
is Q1227 (q1227restaurant.com). Chef
Q has an incredible menu and makes
everything with
heart and soul.
I’m obsessed
with the fried
chicken (served
with mashed
potatoes) and
the meatloaf.
After working long
hours, I enjoy going
to the Almond Tree Grill & Lounge
(almondtreelounge.com). You won’t
find better prices or customer service
anywhere else; if
you’re looking
for a cold beer
and friendly
bartenders, it’s
the place to be.
HOW LONG HAVE YOU BEEN A CHEF? 10 years.
FAVORITE THING TO MAKE AT YOUR RESTAURANT:
Honestly, anything that customers enjoy—from an order
of fries to one of the chef’s specials. I just love feeding
people and seeing them happy, no matter the dish.
TOP COOKING TIP: Keep swinging. With repetition and
failure comes understanding and a chance to improve.
YOUR MOTTO WHEN IT COMES TO COOKING: Cook with
purpose; the end goal is full bellies and happy faces. In
food and life, I always try to do better than the day before.
TOP LOCAL SPOTS TO EAT AND/OR DRINK: Liu Mandarin
Kitchen (liumandarinkitchen.net) has amazing, super
fresh food with a staff that makes you feel like family.
The Singapore-style noodles are a must, though you
can’t really go wrong with any of
their dishes. The atmosphere is
perfect for a date night.
Mezcalito Oaxacan Cuisine
(mezcalitocuisine.com) has a
small, cozy feel and serves up
mouthwatering molotes, queso
fundido, el pastor tacos, and
micheladas with shrimp.
When it comes to grabbing
a beer, you can’t beat the
chill atmosphere and variety of
(constantly rotating) brews
at Moonraker Brewing
(moonrakerbrewing.com)—both
at “The Pub” in Auburn and the new
HOW LONG HAVE YOU BEEN A CHEF? 14 years.
FAVORITE DISH TO MAKE AT YOUR
RESTAURANT: Shrimp
ceviche. It represents
all the fresh flavors of
Mexico.
TOP COOKING TIP: Dive
into flavor fearlessly!
Boundaries are meant
to be stretched for tasty
revelations. Go all in—even if
it means a flavor explosion now
and then.
YOUR MOTTO WHEN IT COMES TO COOKING:
Enjoyment is key. Your tastes, your happiness. Food
is all about personal joy. If it tastes good to you and
brings you a smile, that's what truly counts!
TOP LOCAL SPOTS TO EAT AND/OR DRINK:
My all-time favorite is Curry Leaves
(thecurryleavesrestaurant.com). Every
visit leaves me smiling and
amazed by the exceptional
cooking. Having a
restaurant that prepares
dishes I couldn't even
master at home brings
me joy. I don't leave
without getting a
masala dosa stuffed
with potatoes and an order
of paneer chilli (fried cheese cubes
smothered in a heavenly sauce).
Kathrin’s Biergarten (kathrinsbiergarten.
com) is an absolute blast; there’s nothing like
a massive stein to elevate your day! And guess
what? You might even run into Kathrin herself!
The ownership is fantastic, and
the sausages are
simply irresistible. My
friends and I always
order the Oktoberfest
Sampler, so we can try
bites of everything. The
giant “bretzle” is worldclass,
too.
After leaving the city and
experiencing Japan, my craving
for incredible ramen—with its rich pork broth,
zesty miso butter, and melt-in-your-mouth
chashu—became insatiable. I’ve scoured high
and low for a go-to ramen
spot, and Fukumi Ramen
(fukumirestaurantgroup.
com/fukumi-roseville)
nails it. Their namesake
Fukumi Ramen is my
favorite, but they have so
many different options.
FAVORITE THING TO MAKE AT YOUR
RESTAURANT? The Western Burger, with
TOP COOKING TIP: Always cook a meal as
if your mother were the guest. Trust me—
people will be able to taste the extra love
you put into the food.
YOUR MOTTO WHEN IT COMES TO COOKING:
Experiment! Try new ways, methods, and exciting
ingredients, because why not?
TOP LOCAL SPOTS TO EAT AND/OR DRINK: You can never go
wrong with pizza from Wally’s Pizza Bar (wallyspizzabar.
com). Flavorful—from crust to sauce—with fresh
ingredients plus a fun ambiance, it’s a great place
to spend a Friday night.
Breakfast food is often overlooked, but no matter
how you want your eggs cooked (sunny side up,
over easy, over medium, basted etc.), the chefs
at The Mimosa House (mimosahouseca.com)
always cook them to perfection; plus, the house
potatoes are seasoned with lots of love. It’s a
perfect spot to cure a long night out, especially with
their full-service bar and morning cocktail selection.
The staff at Peet’s Coffee (peets.com) is always
friendly and inviting. My days are long, and my
current go-to is their Havana cappuccino. Dark,
savory, it hits just right—no need to add sugar,
sweeteners, or sprinkles. It’s exactly what I need out
of a coffee shop: polite, fast service and strong coffee!
TOP LOCAL SPOTS TO EAT AND/
OR DRINK: For a relaxing
daycation, Casino Mine
Ranch (casinomineranch.
com). The drive there
is beautiful, the staff is
friendly, and their wines
are amazing; plus, I heard
they have Chavious pop-ups
occasionally.
To celebrate a special occasion, Hawks
(hawksrestaurant.com) can’t be beat. Mike,
Molly, and Ed have created a classic that’s all
about the technique and details. Everything
is not just beautiful to look at but tastes
amazing, too.
After a run on the river, Sunflower Drive In
(sunflowerdrivein.cafe) is my spot. Their food
has enough sprouts to make you an instant
hippie, but the vegan nutty taco is heaven. Oh,
and the #5 smoothie!
Following a hike on the trails or after “fun-yaking,”
I always stop at Argonaut Farm to Fork Café
(argonautcafe.com). It’s in a historic, super
cozy building next to Sutter’s Mill and the
Gold Discovery Museum and has a dog-friendly
porch with delicious coffee and pastries.
C. Knight’s brings a
classic approach to the
American tradition of
the “old school steakhouse”
offering Prime beef, craft
cocktails, and local wines.
The steakhouse holds a special place in our hearts.
Charles Knight met his stepfather, a true cowboy, in a
steakhouse. He later worked as a cook and bartender
in that same steakhouse. That steakhouse in Colorado
became the destination for all the Knight celebrations,
and the place where special family memories were made.
We hope to do the same for those who come to our
restaurant. We want to provide our patrons a memorable
dining experience and keep them coming back for more
experiences to share with family and friends.
Our vision is to be one of the top steakhouses in
Northern California and become a long-standing
community presence.
Open for lunch and dinner, Ecstatic Hour Monday
through Friday 3-5pm...and don't forget: we're
serving all of your Ruffhaus Hot Dog Co. favorites
daily for lunch.
We also offer catering through C. Knight’s Steakhouse
and the Ruffhaus DOGVDUB for any special event. The
DOGVDUB, a vintage Volkswagen Bus converted to a
Mobile hot dog truck, is the perfect way to enhance any
event and will surely impress your guests.
Rocker
Oysterfeller’s
Eastside
by RYAN MARTINEZ | photos by TAYLOR ALLRED
A
t the crossroads of
Southern comfort,
farm-to-table fare and
coastal California cuisine
sits Rocker Oysterfeller’s,
a newly opened kitchen
and saloon destined to
become a local foodie
favorite.
Inspired by
restaurateurs Brandon
Guenther and Shona
Campbell’s own fusion of
cultural and professional
backgrounds, they’ve
infused Placerville with
the flavors of Shona’s
South Texas upbringing
alongside Brandon’s
coastal favorites and Le
Cordon Bleu training.
The result is a refreshing
maritime twist on a
markedly Southern
menu with locally and
sustainably sourced
ingredients.
The El Dorado
County, “Eastside,”
location launched in
July 2023, and is the
sister establishment
to their original Valley
Ford locale, sited just 10
minutes from Bodega
Bay in a historic sevenroom
hotel. The vision
for both restaurants is
rooted in the couple’s
years spent, collectively,
in catering and events—
including gigs at
both non-pretentious
Molasses & Bourbon Pork
Volcano Shank
“
The seafood is all sustainable
and wild caught, meats are
free-range and locally farmed,
eggs are from pasture-raised
chickens, and the vegetables
are mostly organic.
HEADS-UP: Weekend brunch; happy hour served
Tuesday-Friday from 2-5 p.m.; occasional live music;
ample vegetarian and gluten-free options; outdoor
seating; seafood is all sustainable and wild caught,
meats are free-range and locally farmed, eggs are
from pasture-raised chickens, and the vegetables are
mostly organic; private event space can accommodate
up to 100 people
hangouts and upscale venues. Estimated
to open this month, Placerville’s event
space will accommodate up to 100 people
for everything from public concerts to
weddings and private events.
At the heart of the cozy community
establishment is a greater mission,
however: to provide delicious food while
supporting local farmers and sustainable
harvesting practices. With the belief that
“supporting local [farming] is a lifeline
for all of us,” Shona walked me through
the restaurant’s ethos. The seafood is all
sustainable and wild caught, meats are
free-range and locally farmed, eggs are
from pasture-raised chickens, and the
vegetables are mostly organic. Brandon
went on to explain that even the grits are
harvested immediately upon ordering and
cold shipped the next day from heirloom
corn in South Carolina.
After finding a table on their outdoor
patio, Tracy Fanara—veteran server and
manager of Rocker Oysterfeller’s—walked
me through the menu and recommended
a few appetizers. The Dirty South was
first on her list—hand-cut Kennebec fries
covered with house-made pimento cheese,
pickled jalapeños, Texas-style brisket, and
a healthy drizzle of crema. I’m not a huge
French fry fan, but this will be repeated.
Tip of the hat on this one.
In spirit of the 2-5 p.m. happy hour
(served Tuesday-Friday), I decided to indulge
in the “Bar Snack” deviled eggs. Though
left with some FOMO on the main menu’s
deviled eggs (whose rendition comes
topped with applewood bacon and fried
oysters), my version—with Vital Farms eggs,
Cajun spices, and herb salad—was tasty, too.
After hearing the oysters are
sustainably grown and harvested in
Tomales Bay, I couldn’t resist trying the
namesake Rocker Oysterfeller—chargrilled
with wilted arugula, cream cheese, toasted
fennel, applewood bacon, and cornbread
crust—and the Louisiana Hot—chargrilled
with Louisiana hot sauce and garlic butter.
Both were served on a bed of rock salt and
decorative seaweed, reminding me of the
dish’s simple yet sophisticated origins.
I accompanied all this with the Cheesy
Jalapeño Pull-Apart Bread, a sweet, panbaked
bread with melted Monterey Jack,
garlic butter, and pickled jalapeños—the
perfect vessel to soak up the hot sauce
from the oysters. Yum.
Next, it was time to dive into the main
Rocker Oysterfeller Oysters
course. Firstly, a chicken thigh blackened
with Cajun spices alongside seared summer
squash, toy box tomatoes, and Cajun cream
sauce served over cavatappi pasta. You could
taste the freshness of the ingredients, though
my palate would’ve preferred a touch more
cream and a pinch more salt.
The real star of the show was the
Molasses & Bourbon Pork Volcano Shank.
As I dug into the tender shank, the meat
literally fell off the bone. No knife needed.
The menu’s description—a “monstrous
two-pound pork shank braised tender in
a rich jus; served over Carolina cheese
grits, baby carrots, and turnips; and topped
with haystack onions”—was spot on, and
infused with all the decadence of Southern
cuisine you could ask for. The grits
were (understandably) delicious and the
carrots simply masterful. Thanks for the
recommendation, Tracy.
While stuffed to the gills, I couldn’t
dare depart before tasting the Bread
Pudding. The butter praline sauce,
brown sugar pecans, and fresh
cream marked a sweet end
to a beautiful Placerville
escape. After saying my
goodbyes, I walked down
Main Street into the
sunset; trust me, a nice
(long) walk was needed
after this one!
Hibachi Town
@hibachi.town
crisp and flavorsome with a delicious dipping sauce. Win. For the main course,
I opted for NY Steak. The entrée arrived with a sufficient serving of juicy steak, grilled
veggies, and fried rice (steamed rice was also an option). Eat it as-is or punch up the flavor,
and fun factor, with their signature sauce. Other protein options include chicken, salmon,
shrimp, scallops, tofu, and even lobster—all accompanied by grilled veggies and rice.
You can even double (or triple!) up and go with the “Surf & Turf,” “Chicken & Steak,”
“Steak & Lobster,” or “Hibachi Trio.” For those counting carbs who may not want
THE
Hot
by SHARON PENNY
LIST
Play with Your Food
INTERACTIVE EATS
Level up your next meal out and play with your food;
think peak social interaction, capital “E” experiences,
and eating with your hands but in grown-up ways.
From fondue and hot pots, to hibachi, molcajete,
and more, anything is on the table—as long as it’s
memorable, enjoyable, and delicious.
Taqueria La Nueva Vallarta
MOLCAJETE IS MUY BUENO
Nothing says “abracadabra” like molcajete—a traditional stone bowl, heated and piled high with
grilled meats, vegetables, and much (much!) more, plus tortillas (and oftentimes beans and
rice) on the side. Think of it as a bigger, better version of fajitas, where you can build-your-own
delicious bite. The version at Taqueria La Nueva Vallarta comes with steak, chicken, shrimp,
nopales, and chorizo (10305 Fairway Drive, Roseville, 916-749-3791, taqueria-la-nueva-vallarta.
business.site); Vallarta Mexican Restaurant & Cantina serves their rendition with chicken,
steak, shrimp, and a creamy chipotle sauce (263 Placerville Drive, Placerville, 530-626-0841,
vallartarestaurantplacerville.com); El Agave Taqueria has both a meat molcajete—topped with
grilled cheese and nopales—and a seafood version with El Agave’s specialty sauce (1285 Grass
Valley Highway, Auburn, 530-823-8292, elagavetaqueria.com); while the crowd-pleasing bowl at La
Calle is chock-full of marinated carne asada and grilled queso fresco (6608 Folsom-Auburn Road,
Suite 1, Folsom, 916-293-9677, lacallefolsom.com). Wherever you order it, we guarantee everyone in
the restaurant will want to have what you’re having.
LOST & FONDUE
Does your love language include romantic walks through the cheese
department? Are your restaurant decisions motivated by questions like:
“Where’s the fondue?” Enchanted Forest Dining Experience is indeed an
“experience” and offers a dedicated four-course fondue menu (gasp!)
alongside a true fairy tale setting (complete with foliage and twinkly lights).
Your adventure begins with cheese fondue, followed by the main course
(meatballs, chicken, shrimp, and filet mignon in a seasoned broth, plus
dipping sauces), and ends on a sweet note with chocolate fondue (372
Main Street, Placerville, 530-303-3078, enchantedforestdining.com). C’mon get
happy at Friar Tuck’s Restaurant & Bar with their cheese fondue—a special
only offered during happy hour—that comes complete with pickled carrots,
local pork sausage, and baguette (111 North Pine Street, Nevada City, 530-265-
9093, friartucks.com).
Vallarta Mexican
Restaurant & Cantina
Tao’s HotPot & Shabu
HURRAY FOR HOT POT
A huge bowl of seasoned broth with a
medley of meats, seafood, vegetables,
and condiments, all bubbling away at your
table…what’s not to love? Tao's HotPot &
Shabu has an all-you-can-eat option (aka,
the dream); try the spicy tonkotsu broth
and Australian lamb (510 Natoma Station
Drive, Suite 100, Folsom, 916-510-1745,
taoshotpot.com). Tasty Pot serves a set
menu; the kimchi dumpling hot pot is the
ultimate winter warmer (1020 Pleasant Grove
Boulevard, Suite 170, Roseville, 916-749-4236,
tastypotusa.com). At Hotpot Express, you
can choose your own broth (we love their
chef’s special lemongrass) and add selfserve
meats and vegetables (6456 Antelope
Road, Citrus Heights, 916-735-8512).
Looking to live out your
the rodizio grill fixed
menu with a multitude
of mouthwatering meats
like picanha (marinated
Board at Warfighter Overwatch, and Terry Carroll, publisher and CEO at STYLE Magazine.
Warfighter Overwatch—whose
motto is, “We don’t know them
all, but we owe them all”—is an
all-volunteer nonprofit based in Folsom
that serves veterans and first responders
around the U.S. by providing programs
specifically designed to address their
individual and familial mental health
needs, while encouraging connection,
resilience, and camaraderie.
Last year alone, the organization
paid for over 477 hours of mental health
therapy for our nation's bravest and their
families—and received the 2022 Nonprofit
of the Year Award by Congressman Kevin
Kiley for District 6.
Under their Atlas Project, Warfighter
Overwatch supports departments by
funding fully trained therapeutic K-9s
to aid them in Critical Incident Stress
Debriefings and other occurrences that
can negatively impact a first responder
and community member’s mental health.
They currently have six dogs placed
within departments across the region,
with more on the way.
Via their SQUAD Recon program, they
reunite post-9/11 combat squads who
survived traumatic deployments and
have been impacted by veteran suicide.
Utilizing peer-to-peer support, physical
activity, and social connectedness, the
nonprofit helps rebuild resiliency skills
that were once innate to the warfighters
“[Our] mission is to ensure veterans
and first responders have no barriers to
mental health treatment for themselves
or their loved ones,” says Executive
Director Faun O’Neel.
