Rest home serves up a
fruitcake fit for the king
• By Claire Reid
A REST home has created a
special fruitcake to celebrate the
royal birthday on Monday.
For King Charles III’s birthday,
Arvida Rhodes on Cashmere’s
cook Margaret Hogan enlisted
resident Thea Artz to help create
a fruitcake fit for a king – and all
for a very good cause.
The king is a well-known fan
of fruitcake – he chose one for
his 1981 wedding to the late
Princess Diana, and then again
when he married Queen Camilla
in 2005, as well as at his coronation
celebration last year – and
Margaret reckons this cake is a
real winner.
She used a recipe belonging to
a resident that had been passed
down for generations and had
always been a success with her
family.
The cake, which is a simple
‘melt and mix’ recipe, is packed
with fruit and has a generous
dash of vanilla.
“You should always be using
real vanilla extract,” Margaret
explained.
“The cake goes very well with
custard and ice cream.”
Margaret was helped in the
kitchen by keen royalist Thea,
who has a passion for baking and
keeps up-to-date with royal news
– something she’s done for years.
“I’m a royalist – I always have
been,” Thea said.
“I think King Charles has
his coronation celebration.
been a brave man, going out and
working after his recent cancer
diagnosis.
“I wish (him) the happiest of
birthdays and very good health
for the year ahead.”
In a sweet move, the kindhearted
staff and residents at the
rest home resisted the urge to
tuck into the cake and have instead
decided to deliver it to the
local Cancer Society office for
the hard-working team to enjoy.
“It’s a cause that’s close to
our hearts and something that
is important to our residents,”
Margaret said.
Rose winner honouring her heritage
• By Nina Tapu
A FATHER’S love for his Irish
homeland motivated the national
winner of the Rose of Tralee to
enter the event.
Keely O’Grady, 21, was awarded
the 2024 title in Invercargill on
Saturday night after years of
encouragement from her father
“to stay connected to her Irish
culture”.
Surprised by her win, the Canterbury
representative credited her
father’s persistence for exploring
her Irish identity.
The Rose of Tralee celebrates
young women of Irish heritage in
New Zealand.
“As soon as I turned 18, I was
messaged by my dad every year to
enter but the timing’s never been
quite right because of my university
studies,” O’Grady said.
“I finally entered and was inspired
by my dad and just wanted
to make him proud of me.”
O’Grady will complete her
bachelor of speech and language
pathology degree from Canterbury
University while undertaking
her Rose of Tralee duties.
She was chosen from 10 other
hopefuls to represent New Zealand
at the International Rose
of Tralee festival held in Tralee,
Ireland in August.
The festival was formed in 1959
and is held annually in Ireland. It
celebrates women and appoints
a female ambassador for Irish
culture and heritage.
ROSY GLOW: Keely O’Grady, of Canterbury, was awarded the national Rose of Tralee title in
Invercargill on Saturday.
“Over there you will have every
country’s Rose represented and
it’s a massive celebration of Irish
culture and Irish heritage.
“This is an amazing opportunity,”
she said.
Her father’s family hailed from
County Wicklow and she attributed
a childhood “growing up
OFF ABROAD: Keely
O’Grady will now head to
Ireland in August to take
part in the Rose of Tralee
festival with other winners
from around the world.
around Irish sport, Irish music,
and especially Irish dance” to
them.
Irish dance had been a huge part
of her life since she was six.
“One day my dad showed me a
video of Riverdance and from then
on my heart was hooked and I’m
still Irish dancing at 21.”
Being chosen to represent New
Zealand was an honour, and gaining
“10 new friends that were some
of the smartest and most talented,
kind girls that I’ve met in my life”
made the competition a “meaningful
experience”, she said.
O’Grady was thankful for
being selected and vowed to use
the opportunity to promote “selfdevelopment
and confidence” to
young girls.
We turned to Cameron as we wanted the high profile that we knew would come
from listing with him. What we didn’t realise prior to dealing with him and his
amazing team is how geniune he is. Everything happened when it was meant to
and he held us together when we needed it. I also felt listened to and at no time
ever did I feel spoken down to, something I know a lot of agents can do.
Sam, who works as part of his team, was truely amazing and if she ever changes
her career should consider politics.
All in all I cannot encourage you enough to consider Cameron when you sell
Fruitcake for all
• From page 1
Ingredients
500g sultanas and raisins
(2 1/2 cups)
250 ml water (1 cup)
250 g butter cut into cubes
385 g sugar (1 3/4 cups)
260 g plain flour (1 3/4
cups) sifted
1 tsp baking powder sifted
1 tsp vanilla extract
3 eggs lightly beaten
Instructions
1. Preheat oven to 160°C.
Grease and line a 20 or
22cm square cake tin.
2. Place sultanas and
water in a large saucepan
and bring to the boil
over high heat. Boil for 8
minutes until sultanas are
plump and most of the
liquid has been absorbed.
3. Remove from the
heat and add the cubes of
butter. Stir through until all
the butter is melted. Add
the sugar and stir in well.
Set mixture aside to cool
for 20-30 minutes. If you
want the mixture to cool
quickly, place the base of
the saucepan into a sink
filled with some iced water.
4. While the mixture is
cooling, sift the flour and
baking powder together in
a bowl. Once the mixture
has cooled down, add the
sifted flour and baking
powder and stir together
with a large spoon. Add
the lightly beaten eggs and
vanilla extract and continue
to stir until everything is
combined and there are
no flour pockets left in the
batter.
5. Pour the batter into the
prepared baking tin. Bake
for 1 hour 10 minutes to 1
hour 25 minutes, or until
the middle is cooked and
a skewer inserted into the
centre of the cake comes
out clean. You will need
to cover the top of the
cake loosely with foil halfway
through the baking
time once the top is nice
and golden (at the 35-45
minute mark), otherwise
it will darken too much.
Once cooked, remove from
the oven and allow to cool
in the tin for 15-20 minutes.
Invert onto a wire cooling
rack to continue to cool
completely.
6. Once cooled, cover
the cake with cling wrap
and place in an airtight
container. Cake will keep
for five days. This cake can
also be frozen for up to one
month – wrap well in cling
film, then wrap again in
aluminium foil and place
in an airtight container or
sealed glad bag and place
in the freezer.
STODDART Cottage in Diamond
way women’s roles in society, and
as artists, have been defined and
It weaves together work
from women and non-binary
artists from a spectrum
SH75 speed limits
BANKS Peninsula MP Vanessa
After recent
reporting on
the issue by
Bay Harbour
has received
increased
feedback from
the public which
has encouraged
“It’s something we were
planning on doing anyway
closer to the review process,
but sometimes you have to go
with the timing of things when
people’s eyes are on an issue,” she
said.
The online survey can be
accessed through the QR code.
It asks for views on the speed
limit from Halswell to Little
River and from Little River to
“A lot of the feedback I’ve
had is that some sections of
it part by part. I think that’s
If the survey has a high
will present the results during
the review process.
The results will not wholly
Enjoying scents and sensibilities
Nigel Slater finds
hearty, herby butter
beans and a frangipane
tart add fragrance to a
chilly day
Butter beans, cannellini
and cavolo nero
Serves 2
Beans in jars are more plump
and juicy than those in tins,
but either works well here. It is
essential to include some of the
aquafaba – the bottling liquor.
It adds a creamy quality without
the need for any dairy products.
Ingredients
150g cavolo nero
200g hispi (pointed) cabbage
2 plump cloves garlic
2 Tbsp olive oil
2 Tbsp dill
400g butter beans
250g cannellini beans
1 lemon
Method
• Trim the tough ends of the
cavolo nero stalks, then place
the leaves on top of one another,
roll tightly, then slice them into
wide shreds, like pappardelle.
Repeat with the pointed
cabbage. Have a bowl of iced
water to hand.
• Put a pan of water on to
boil and, when boiling, dunk
the cavolo nero in, leave for 2
minutes, then lift it out and
transfer to the iced water. When
the water returns to the boil,
repeat with the cabbage.
• Peel the garlic, then crush
to a paste with a good pinch of
salt – use a pestle and mortar,
but the flat side of a knife and a
chopping board works too.
• In a wide sauté or frying
pan, warm the oil and garlic
paste. You don’t want the garlic
to colour, so stir as it warms and
softens. Finely chop the dill and
stir into the garlic.
• Tip the butter beans and
cannellini together with their
liquor into the pan and stir
to coat them with the oil and
garlic. Leave over a moderate
heat, covered by a lid, for a few
minutes until the beans are hot.
Finely grate the lemon zest and
squeeze the juice.
• Season the beans generously
with salt and black pepper, then
stir in the lemon zest and, if you
wish, a little of the juice. Drain
the greens thoroughly, stir them
into the beans and heat through
briefly before spooning on to
deep plates.
Prune, chocolate and
orange frangipane
Serves 8
I have been tweaking the old
frangipane fillings since I
made my first in the late 1970s.
This latest version has barely a
sprinkling of flour in it and I feel
is better for it.
Ingredients
For the pastry:
200g plain flour
90g butter
1 egg yolk
1-2 tbsp iced water
For the filling:
150g butter
100g caster sugar
Finely grated zest of 1 orange
75g dark chocolate
2 eggs
150g ground almonds
2 Tbsp self-raising flour
150g, stoned soft prunes
2-3 Tbsp flaked almonds
Method
• You will need a 20cm tart tin
with a removable base. Make
the pastry: put the flour and
butter into a food processor
and process to fine crumbs.
(Alternatively, do it by hand, rub
the butter into the flour with
your fingertips until it resembles
breadcrumbs.) Mix in the egg
yolk, then a little iced water (a
tablespoon or two will do) and
mix to a thick, rollable dough.
• Tip the dough on to a lightly
floured board and pat into a
thick disc, wrap it in baking
parchment, then rest it in the
fridge for 30 minutes.
• Set the oven at 190°C and
place a baking sheet in the oven.
You will bake the tart on this.
• Remove the pastry from the
fridge and place on a floured
board. Roll it out to roughly
3mm thick, then lower into the
tart tin, pushing it gently into
the corners and up the sides.
• Trim any overhanging
pastry, then rest the pastry a
second time, in the fridge or
freezer, for 20 minutes.
• Fill the case with baking
parchment and baking beans,
then place on top of a hot baking
sheet already in the oven.
• Bake for about 20 minutes,
then carefully lift out the paper
and beans. If the pastry isn’t
dry to the touch, return it to the
oven for a few minutes, then
remove and set aside. Turn the
oven down to 160°C.
• While the pastry is baking,
make the filling: put the butter,
caster sugar and the orange zest
into the bowl of a food mixer.
Beat until pale and fluffy.
• Chop the chocolate into
small nuggets, no bigger than a
hazelnut.
• Beat the eggs in a small bowl,
then add to the sugar and butter,
a little at a time (if it shows
any sign of curdling, drop in a
couple of tablespoons of flour).
Introduce the flour and then,
lastly, the chocolate and the
ground almonds.
• Transfer the mixture to
the tart case. Add the prunes
without pressing them too
deeply into the batter.
• Scatter the flaked almonds
over the top and bake for an
hour, maybe a little longer, until
the filling is golden and lightly
set.
Helping Your Cat Live Their Best Life
Is your athletic kitty bounding around the house from
benchtop to shelves, leaping onto fences, and scaling
trees during outdoor adventures? Or are they curled up
inside, basking by the fire? As winter sets in, it’s easy
to assume that cats prefer the warmth and comfort of
indoors. But what if there’s more to their behaviour than
just a seasonal shift? Your feline friend might be hiding
some aches and pains that make moving around less
appealing.
Arthritis in cats is more common than you might think.
By age seven, about 30% of cats show signs of arthritis,
and by age twelve this jumps to 90%. Unlike humans, cats
rarely display obvious signs of pain. Instead, they exhibit
subtle changes in behaviour. Here’s what to watch for:
Early Signs of Arthritis:
• Reluctance to jump onto countertops, fences,
or climb stairs
• Decreased agility, grooming, and activity levels
• Less inclination to hunt, play, and run
• Changes in preferred sleeping spots
• Spending more time sleeping
Advanced Signs of Arthritis:
• Inability to jump onto high surfaces and reduced
overall activity
• Difficulty grooming, resulting in an unkempt coat,
especially around the back
• Irritability when stroked or handled
• Toileting outside the litter tray or preferring the litter
tray to going outside
• Seeking isolated sleeping spots and reduced
interaction with owners
Lameness is often not a common sign, as multiple joints
might be affected, making them equally uncomfortable on
both sides.
How Can We Help?
Managing your cat’s weight and encouraging moderate
activity are essential, but pain management is crucial. Cats
are sensitive to many medications, limiting our options.
Traditionally, anti-inflammatory medications (NSAIDs) like
meloxicam have been used with good results, but they
come with potential side effects, especially with long-term
use.
A newer treatment, Solensia, is available as a monthly
injection. This is an antibody that targets and blocks
nerve-growth factor (NGF), a protein which is involved in
chronic pain and increases in arthritic joints.
Whilst nutritional supplements marketed for helping with
arthritis in pets, may be a helpful additional tool in some
cases, none of them are a suitable substitute for effective
pain management.
At Kōwhai Vet, we aim to improve the quality of life for
our patients, ensuring you enjoy a happy, healthy pet for
longer. We know that treating chronic pain with regular
medications such as meloxicam has a positive impact and
our cat owners have reported significant improvements
with Solensia, such as increased activity levels, ease in
jumping onto beds or couches, more enjoyment of being
stroked, and better grooming habits.
If your feline friend isn’t quite themselves, bring them in
for a check-up. Let’s discuss how we can help them keep
living their best life.
Fresh from the sea
The family owned and operated
business Oceans North Seafood has
earned a reputation as a top-choice
wholesaler, supplying premium,
sustainably sourced seafood to
restaurants and food service
establishments across New Zealand.
In addition, they cater directly to
discerning Kiwis, who are seeking
the freshest and most flavourful
seafood varieties through their online
marketplace, and most recently
through the newly opened shop in
Beckenham Central.
The new shop has provided Oceans
North Seafood with the opportunity
to broaden its range to encompass
not only specialised seafood, but also
sought-after items such as cheeses, wild
game pies, artisan condiments, and
more.
This extensive selection adds to
the offerings of the adjacent organic
vegetable and butcher shops, all of
which is very fortunate for local
residents, and the food aficionados that
come from around the city to shop at
Beckenham Central.
Organic veggies an inspiration
Untamed Earth at Beckenham
Central is a veggie shop with a
difference – it’s a farm and a shop. All
the vegetables come straight from the
organic certified growers to the shop,
so they are always fresh and nutritious.
The large range includes root
vegetables such as potatoes and carrots,
cauliflower, Romanesco cauliflower, an
attractive vegetable that tastes a bit like
broccoli, spinach, leeks and more.
The shop also brings in organically
certified fruit from around New
Zealand. Business owner Oliver Platt
says good-quality produce such as
this is an inspiration for customers,
and to inspire them further, there is a
selection of recipe cards for cooking
seasonal produce.
Untamed Earth opened exactly one
year ago, and since then Oliver has
seen a growing interest in vegetables
– even children get excited about
the bright and vibrant colours of the
freshly grown produce in this special
Beckenham shop.
Hybrid S-Cross a pleasing performer
THESE DAYS, the Suzuki
S-Cross compact SUV is charting
a cleaner, greener and more fuelefficient
course as a hybrid-only
model.
Almost two years ago, a
heavily revised version of the
S-Cross arrived here. Suzuki had
done a fine of reinventing and
modernising a model that had
been part of their SUV catalogue
for more than a decade.
A major overhaul of the styling
ensured a convincing start in
getting this model back on the
radar of compact SUV buyers.
There was decent dash of
sophistication added to the visual
mix with a raised bonnet, and
hexagonal gloss piano-black grille.
Engineered in Japan and built
Motoring with Bob Nettleton
in Hungary, the new S-Cross in
its pre-hybrid days was offered in
price leading JX trim and more up
market JLX grades.
Now, with both feet firmly
planted in the hybrid camp, the
range has been trimmed back to
a couple of generously appointed
JLX variants, a $43,990 2WD
with another $3k for the AWD
provided for this road test.
The S-Cross scores the same
hybrid system Suzuki developed
for its smaller sibling the Vitara.
This smartly engineered,
compact hybrid system comprises
an integrated starter generator,
engine control module, and an
auxiliary power module. This uses
a lithium-ion battery and sensors
and a DC/DC (48V to 12V) power
Ratings out of 10: Performance 7; Handling 7; Build Quality
6; Comfort 6; Passenger and Load Space 6; Styling 6; Value
for money 7; Safety – Five Star ANCAP crash rating.
Overall points out of 10: 7
converter. In its hybridised state,
the system’s combined output is
95kW of power at 5500rpm and
235Nm of torque ready to apply its
low speed heft at 2000-3000rpm.
Automatic stop/starting saves
fuel while the lithium-ion battery
powers all the electrics
The hybrid’s integrated starter
generator uses braking energy to
efficiently recharge the battery.
In spite of the improvement
in fuel consumption and less
emissions, the hybrid turbo is
energetic enough with good
low-speed pulling power tuned to
flourish over our hilly roads and
debilitating hill climbs.
It’s smoother and more refined
than the now departed 1.4-litre
turbo motor on its own. A quick,
accurate, and sweet shifting sixspeed
automatic is an agreeable
gear-changing companion for this
hybrid power plant.
Front seats offer a generous
929mm of legroom and 814mm in
the rear – excellent for a smallish
SUV.
Up to 440 litres of boot space
is available with the 60/40 split
folding rear seats upright.
The test vehicle has a four
camera view system linked to
a nine-inch display, the largest
ever factory head unit offered
on a Suzuki passenger car. This
provides a 360-degree view and
3D opening view, allowing you to
check the vehicle surroundings,
while the fascia runs Android
Auto, wireless Apple CarPlay, and
voice recognition.
The S-Cross features a host
of ever-vigilant safety tech that
is constantly working to keep
you safe, including autonomous
emergency braking. This assesses
the risk of a collision with an
obstacle in front of the vehicle,
while collision mitigation brake
assist increases the driver’s
braking force and automatic
braking.
The suspension is fairly lowtech
affair but does a good job
and seems well set-up to see off
most challenges served up by our
demanding roads, terrain, and
weather.
Suzuki has played it safe with
the suspension tune, opting
for comfort over outright
road holding. The handling is
competent and well balanced, but
less at ease when pushed with a bit
of purpose through tight corners.
However, savvy drivers quickly
learn this isn’t the vehicle’s happy
place, and adjust their driving
accordingly.
We need your help to fill our beds.
Cholmondeley Children’s Centre has
23 beds for tamariki to stay during
times of whānau stress or crisis. On
average just 17 of these beds are filled
due to resourcing constraints.
Every empty bed is a missed
opportunity to support a child in need.
Donate today to give Canterbury
tamariki a safe place to sleep.
Cholmondeley Children’s Centre provides
short term emergency or planned respite care
for tamariki when they need extra support due
to complications at home.
Cholmondeley is an independent charity
and costs just under $3,000,000 per year to
run. 20% of this figure is met by Government
funding, and the remaining 80% comes from
the generous support of the Canterbury
community.
