Rest home serves up a<br />

fruitcake fit for the king<br />

A REST home has created a<br />

special fruitcake to celebrate the<br />

royal birthday on Monday.<br />

For King Charles III’s birthday,<br />

Arvida Rhodes on Cashmere’s<br />

cook Margaret Hogan enlisted<br />

resident Thea Artz to help create<br />

a fruitcake fit for a king – and all<br />

for a very good cause.<br />

The king is a well-known fan<br />

of fruitcake – he chose one for<br />

his 1981 wedding to the late<br />

Princess Diana, and then again<br />

when he married Queen Camilla<br />

in 2005, as well as at his coronation<br />

celebration last year – and<br />

Margaret reckons this cake is a<br />

real winner.<br />

She used a recipe belonging to<br />

a resident that had been passed<br />

down for generations and had<br />

always been a success with her<br />

family.<br />

The cake, which is a simple<br />

‘melt and mix’ recipe, is packed<br />

with fruit and has a generous<br />

dash of vanilla.<br />

“You should always be using<br />

real vanilla extract,” Margaret<br />

explained.<br />

“The cake goes very well with<br />

custard and ice cream.”<br />

Margaret was helped in the<br />

kitchen by keen royalist Thea,<br />

who has a passion for baking and<br />

keeps up-to-date with royal news<br />

– something she’s done for years.<br />

“I’m a royalist – I always have<br />

been,” Thea said.<br />

“I think King Charles has<br />

been a brave man, going out and<br />

working after his recent cancer<br />

In a sweet move, the kindhearted<br />

staff and residents at the<br />

rest home resisted the urge to<br />

tuck into the cake and have instead<br />

decided to deliver it to the<br />

local Cancer Society office for<br />

the hard-working team to enjoy.<br />

“It’s a cause that’s close to<br />

our hearts and something that<br />

is important to our residents,”<br />

Margaret said.<br />

Rose winner honouring her heritage<br />

A FATHER’S love for his Irish<br />

homeland motivated the national<br />

winner of the Rose of Tralee to<br />

enter the event.<br />

Keely O’Grady, 21, was awarded<br />

the <strong>2024</strong> title in Invercargill on<br />

Saturday night after years of<br />

encouragement from her father<br />

“to stay connected to her Irish<br />

culture”.<br />

Surprised by her win, the Canterbury<br />

representative credited her<br />

father’s persistence for exploring<br />

her Irish identity.<br />

The Rose of Tralee celebrates<br />

young women of Irish heritage in<br />

New Zealand.<br />

“As soon as I turned 18, I was<br />

messaged by my dad every year to<br />

enter but the timing’s never been<br />

quite right because of my university<br />

studies,” O’Grady said.<br />

“I finally entered and was inspired<br />

by my dad and just wanted<br />

to make him proud of me.”<br />

O’Grady will complete her<br />

bachelor of speech and language<br />

pathology degree from Canterbury<br />

University while undertaking<br />

her Rose of Tralee duties.<br />

She was chosen from 10 other<br />

hopefuls to represent New Zealand<br />

at the International Rose<br />

of Tralee festival held in Tralee,<br />

Ireland in August.<br />

The festival was formed in 1959<br />

and is held annually in Ireland. It<br />

celebrates women and appoints<br />

a female ambassador for Irish<br />

culture and heritage.<br />

“10 new friends that were some<br />

of the smartest and most talented,<br />

kind girls that I’ve met in my life”<br />

made the competition a “meaningful<br />

experience”, she said.<br />

O’Grady was thankful for<br />

being selected and vowed to use<br />

the opportunity to promote “selfdevelopment<br />

and confidence” to<br />

young girls.<br />

We turned to Cameron as we wanted the high profile that we knew would come<br />

from listing with him. What we didn’t realise prior to dealing with him and his<br />

amazing team is how geniune he is. Everything happened when it was meant to<br />

Fruitcake for all<br />

• From page 1<br />

Ingredients<br />

500g sultanas and raisins<br />

(2 1/2 cups)<br />

250 ml water (1 cup)<br />

250 g butter cut into cubes<br />

385 g sugar (1 3/4 cups)<br />

260 g plain flour (1 3/4<br />

cups) sifted<br />

1 tsp baking powder sifted<br />

1 tsp vanilla extract<br />

3 eggs lightly beaten<br />

Instructions<br />

1. Preheat oven to 160°C.<br />

Grease and line a 20 or<br />

22cm square cake tin.<br />

2. Place sultanas and<br />

water in a large saucepan<br />

and bring to the boil<br />

over high heat. Boil for 8<br />

minutes until sultanas are<br />

plump and most of the<br />

liquid has been absorbed.<br />

3. Remove from the<br />

heat and add the cubes of<br />

butter. Stir through until all<br />

the butter is melted. Add<br />

the sugar and stir in well.<br />

Set mixture aside to cool<br />

for 20-<strong>30</strong> minutes. If you<br />

want the mixture to cool<br />

quickly, place the base of<br />

the saucepan into a sink<br />

filled with some iced water.<br />

4. While the mixture is<br />

cooling, sift the flour and<br />

baking powder together in<br />

a bowl. Once the mixture<br />

has cooled down, add the<br />

sifted flour and baking<br />

powder and stir together<br />

with a large spoon. Add<br />

the lightly beaten eggs and<br />

vanilla extract and continue<br />

to stir until everything is<br />

combined and there are<br />

no flour pockets left in the<br />

batter.<br />

5. Pour the batter into the<br />

prepared baking tin. Bake<br />

for 1 hour 10 minutes to 1<br />

hour 25 minutes, or until<br />

the middle is cooked and<br />

a skewer inserted into the<br />

centre of the cake comes<br />

out clean. You will need<br />

to cover the top of the<br />

cake loosely with foil halfway<br />

through the baking<br />

time once the top is nice<br />

and golden (at the 35-45<br />

minute mark), otherwise<br />

it will darken too much.<br />

Once cooked, remove from<br />

the oven and allow to cool<br />

in the tin for 15-20 minutes.<br />

Invert onto a wire cooling<br />

rack to continue to cool<br />

completely.<br />

6. Once cooled, cover<br />

the cake with cling wrap<br />

and place in an airtight<br />

container. Cake will keep<br />

for five days. This cake can<br />

also be frozen for up to one<br />

month – wrap well in cling<br />

film, then wrap again in<br />

aluminium foil and place<br />

in an airtight container or<br />

sealed glad bag and place<br />

in the freezer.<br />

Enjoying scents and sensibilities<br />

hearty, herby butter<br />

beans and a frangipane<br />

tart add fragrance to a<br />

chilly day<br />

Butter beans, cannellini<br />

and cavolo nero<br />

Serves 2<br />

Beans in jars are more plump<br />

and juicy than those in tins,<br />

but either works well here. It is<br />

essential to include some of the<br />

aquafaba – the bottling liquor.<br />

It adds a creamy quality without<br />

the need for any dairy products.<br />

Ingredients<br />

150g cavolo nero<br />

200g hispi (pointed) cabbage<br />

2 plump cloves garlic<br />

2 Tbsp olive oil<br />

2 Tbsp dill<br />

400g butter beans<br />

250g cannellini beans<br />

1 lemon<br />

Method<br />

• Trim the tough ends of the<br />

cavolo nero stalks, then place<br />

the leaves on top of one another,<br />

roll tightly, then slice them into<br />

wide shreds, like pappardelle.<br />

Repeat with the pointed<br />

cabbage. Have a bowl of iced<br />

water to hand.<br />

• Put a pan of water on to<br />

boil and, when boiling, dunk<br />

the cavolo nero in, leave for 2<br />

minutes, then lift it out and<br />

transfer to the iced water. When<br />

the water returns to the boil,<br />

repeat with the cabbage.<br />

• Peel the garlic, then crush<br />

to a paste with a good pinch of<br />

salt – use a pestle and mortar,<br />

but the flat side of a knife and a<br />

chopping board works too.<br />

• In a wide sauté or frying<br />

pan, warm the oil and garlic<br />

paste. You don’t want the garlic<br />

to colour, so stir as it warms and<br />

softens. Finely chop the dill and<br />

stir into the garlic.<br />

• Tip the butter beans and<br />

cannellini together with their<br />

liquor into the pan and stir<br />

to coat them with the oil and<br />

garlic. Leave over a moderate<br />

heat, covered by a lid, for a few<br />

minutes until the beans are hot.<br />

Finely grate the lemon zest and<br />

squeeze the juice.<br />

• Season the beans generously<br />

with salt and black pepper, then<br />

stir in the lemon zest and, if you<br />

wish, a little of the juice. Drain<br />

the greens thoroughly, stir them<br />

into the beans and heat through<br />

briefly before spooning on to<br />

deep plates.<br />

Prune, chocolate and<br />

orange frangipane<br />

Serves 8<br />

I have been tweaking the old<br />

frangipane fillings since I<br />

made my first in the late 1970s.<br />

This latest version has barely a<br />

sprinkling of flour in it and I feel<br />

is better for it.<br />

Ingredients<br />

For the pastry:<br />

200g plain flour<br />

90g butter<br />

1 egg yolk<br />

1-2 tbsp iced water<br />

For the filling:<br />

150g butter<br />

100g caster sugar<br />

Finely grated zest of 1 orange<br />

75g dark chocolate<br />

2 eggs<br />

150g ground almonds<br />

2 Tbsp self-raising flour<br />

150g, stoned soft prunes<br />

2-3 Tbsp flaked almonds<br />

Method<br />

• You will need a 20cm tart tin<br />

with a removable base. Make<br />

the pastry: put the flour and<br />

butter into a food processor<br />

and process to fine crumbs.<br />

(Alternatively, do it by hand, rub<br />

the butter into the flour with<br />

your fingertips until it resembles<br />

breadcrumbs.) Mix in the egg<br />

yolk, then a little iced water (a<br />

tablespoon or two will do) and<br />

mix to a thick, rollable dough.<br />

• Tip the dough on to a lightly<br />

floured board and pat into a<br />

thick disc, wrap it in baking<br />

parchment, then rest it in the<br />

fridge for <strong>30</strong> minutes.<br />

• Set the oven at 190°C and<br />

place a baking sheet in the oven.<br />

You will bake the tart on this.<br />

• Remove the pastry from the<br />

fridge and place on a floured<br />

board. Roll it out to roughly<br />

3mm thick, then lower into the<br />

tart tin, pushing it gently into<br />

the corners and up the sides.<br />

• Trim any overhanging<br />

pastry, then rest the pastry a<br />

second time, in the fridge or<br />

freezer, for 20 minutes.<br />

• Fill the case with baking<br />

parchment and baking beans,<br />

then place on top of a hot baking<br />

sheet already in the oven.<br />

• Bake for about 20 minutes,<br />

then carefully lift out the paper<br />

and beans. If the pastry isn’t<br />

dry to the touch, return it to the<br />

oven for a few minutes, then<br />

remove and set aside. Turn the<br />

oven down to 160°C.<br />

• While the pastry is baking,<br />

make the filling: put the butter,<br />

caster sugar and the orange zest<br />

into the bowl of a food mixer.<br />

Beat until pale and fluffy.<br />

• Chop the chocolate into<br />

small nuggets, no bigger than a<br />

hazelnut.<br />

• Beat the eggs in a small bowl,<br />

then add to the sugar and butter,<br />

a little at a time (if it shows<br />

any sign of curdling, drop in a<br />

couple of tablespoons of flour).<br />

Introduce the flour and then,<br />

lastly, the chocolate and the<br />

ground almonds.<br />

• Transfer the mixture to<br />

the tart case. Add the prunes<br />

without pressing them too<br />

deeply into the batter.<br />

• Scatter the flaked almonds<br />

over the top and bake for an<br />

hour, maybe a little longer, until<br />

the filling is golden and lightly<br />

set.<br />

Helping Your Cat Live Their Best Life<br />

Is your athletic kitty bounding around the house from<br />

benchtop to shelves, leaping onto fences, and scaling<br />

trees during outdoor adventures? Or are they curled up<br />

inside, basking by the fire? As winter sets in, it’s easy<br />

to assume that cats prefer the warmth and comfort of<br />

indoors. But what if there’s more to their behaviour than<br />

just a seasonal shift? Your feline friend might be hiding<br />

some aches and pains that make moving around less<br />

appealing.<br />

Arthritis in cats is more common than you might think.<br />

By age seven, about <strong>30</strong>% of cats show signs of arthritis,<br />

and by age twelve this jumps to 90%. Unlike humans, cats<br />

rarely display obvious signs of pain. Instead, they exhibit<br />

subtle changes in behaviour. Here’s what to watch for:<br />

Early Signs of Arthritis:<br />

• Reluctance to jump onto countertops, fences,<br />

or climb stairs<br />

• Decreased agility, grooming, and activity levels<br />

• Less inclination to hunt, play, and run<br />

• Changes in preferred sleeping spots<br />

• Spending more time sleeping<br />

Advanced Signs of Arthritis:<br />

• Inability to jump onto high surfaces and reduced<br />

overall activity<br />

• Difficulty grooming, resulting in an unkempt coat,<br />

especially around the back<br />

• Irritability when stroked or handled<br />

• Toileting outside the litter tray or preferring the litter<br />

tray to going outside<br />

• Seeking isolated sleeping spots and reduced<br />

interaction with owners<br />

Lameness is often not a common sign, as multiple joints<br />

might be affected, making them equally uncomfortable on<br />

both sides.<br />

How Can We Help?<br />

Managing your cat’s weight and encouraging moderate<br />

activity are essential, but pain management is crucial. Cats<br />

are sensitive to many medications, limiting our options.<br />

Traditionally, anti-inflammatory medications (NSAIDs) like<br />

meloxicam have been used with good results, but they<br />

come with potential side effects, especially with long-term<br />

use.<br />

A newer treatment, Solensia, is available as a monthly<br />

injection. This is an antibody that targets and blocks<br />

nerve-growth factor (NGF), a protein which is involved in<br />

chronic pain and increases in arthritic joints.<br />

Whilst nutritional supplements marketed for helping with<br />

arthritis in pets, may be a helpful additional tool in some<br />

cases, none of them are a suitable substitute for effective<br />

pain management.<br />

Hybrid S-Cross a pleasing performer<br />

THESE DAYS, the Suzuki<br />

S-Cross compact SUV is charting<br />

a cleaner, greener and more fuelefficient<br />

course as a hybrid-only<br />

model.<br />

Almost two years ago, a<br />

heavily revised version of the<br />

S-Cross arrived here. Suzuki had<br />

done a fine of reinventing and<br />

modernising a model that had<br />

been part of their SUV catalogue<br />

for more than a decade.<br />

A major overhaul of the styling<br />

ensured a convincing start in<br />

getting this model back on the<br />

radar of compact SUV buyers.<br />

There was decent dash of<br />

sophistication added to the visual<br />

mix with a raised bonnet, and<br />

hexagonal gloss piano-black grille.<br />

Engineered in Japan and built<br />

Motoring with Bob Nettleton<br />

in Hungary, the new S-Cross in<br />

its pre-hybrid days was offered in<br />

price leading JX trim and more up<br />

market JLX grades.<br />

Now, with both feet firmly<br />

planted in the hybrid camp, the<br />

range has been trimmed back to<br />

a couple of generously appointed<br />

JLX variants, a $43,990 2WD<br />

with another $3k for the AWD<br />

provided for this road test.<br />

The test vehicle has a four<br />

3D opening view, allowing you to<br />

check the vehicle surroundings,<br />

while the fascia runs Android<br />

Auto, wireless Apple CarPlay, and<br />

voice recognition.<br />

The S-Cross features a host<br />

of ever-vigilant safety tech that<br />

is constantly working to keep<br />

you safe, including autonomous<br />

emergency braking. This assesses<br />

the risk of a collision with an<br />

obstacle in front of the vehicle,<br />

while collision mitigation brake<br />

assist increases the driver’s<br />

braking force and automatic<br />

braking.<br />

The suspension is fairly lowtech<br />

affair but does a good job<br />

and seems well set-up to see off<br />

most challenges served up by our<br />

demanding roads, terrain, and<br />

weather.<br />

Suzuki has played it safe with<br />

the suspension tune, opting<br />

for comfort over outright<br />

road holding. The handling is<br />

competent and well balanced, but<br />

less at ease when pushed with a bit<br />

of purpose through tight corners.<br />

However, savvy drivers quickly<br />

learn this isn’t the vehicle’s happy<br />

place, and adjust their driving<br />

times of whānau stress or crisis. On<br />

average just 17 of these beds are filled<br />

due to resourcing constraints.<br />

Every empty bed is a missed<br />

opportunity to support a child in need.<br />

Cholmondeley Children’s Centre provides<br />

short term emergency or planned respite care<br />

for tamariki when they need extra support due<br />

to complications at home.<br />

Cholmondeley is an independent charity<br />

and costs just under $3,000,000 per year to<br />

run. 20% of this figure is met by Government<br />

funding, and the remaining 80% comes from<br />

the generous support of the Canterbury<br />

community.<br />
