d) Bulk density<br />

The bulk density depends on the nature <strong>of</strong> the solid material as well as the amount <strong>of</strong> air<br />

space within the product. In case <strong>of</strong> extrusion cooking process, a highly expanded<br />

product with plenty <strong>of</strong> air space has significantly lower bulk density than a product with a<br />

little air inclusion. Bulk density is very important from the view point <strong>of</strong> correct volume<br />

<strong>of</strong> product in the pack and product texture(Sharma et al.,2000).<br />
