Cooking processes can be more complex then you think. Due to
our many years of experience and intensive research we have been
able to perfectionize major aspects of cooking processes. Innovative
Delta-T cooking programs based on time and continued surveillance of
core temperature have been developed in order to optimize F- and
C- values, to save energy costs and to reduce weight loss and ensure
a gentle treatment of the product. Production units from 1 to 10 trolleys
are available and based on availability the heat source of the units can
be electric, gas, oil or low pressure steam.

Intensive cooling units can be offered as pure cooling or combined
cooking and cooling units.
Cooling takes place either through a free programmable combination of
showering with cold water and cold air circulation or if required through
product specification through cold air circulation only. Hence our intensive
cooling units are the perfect choice for all types of applications where
brine can not be used.
