Fluff up the pillows and rest<br />

"What the mind conceives, the body achieves."<br />

This optimistic statement expresses the philosophy<br />

<strong>of</strong> the current power-<strong>of</strong>-positive-thinking<br />

school <strong>of</strong> self-improvement.<br />

The goal <strong>of</strong> this movement is to harness and direct<br />

the immense, untapped potential <strong>of</strong> the human<br />

mind The power <strong>of</strong> the mind to effect physical<br />

change has been the subject <strong>of</strong> a great deal <strong>of</strong> interest<br />

and study in recent years although this is an<br />

ancient phenomenon.<br />

An indication <strong>of</strong> popular fascination with this<br />

mental-physical connection was the sequence in<br />

"The Empire Strikes Back" in which Luke<br />

Skywalker, under the tutelage <strong>of</strong> the ancient Yoda,<br />

learns to move physical objects through mental<br />

concentration.<br />

The mind, however, works on the subconscious as<br />

well as the conscious level, and .our subconscious<br />

may desire what the conscious mind would reject.<br />

There are those, for example, who would hold that<br />

succumbing to a cold or flu may not be entirely a<br />

physical occurrence.<br />

The subconscious may wish to be sick. Illness<br />

may <strong>of</strong>fer a chance to rest, to escape responsibility,<br />

to obtain sympathy<br />

COLD AND FLU germs surround us. Why, at a<br />

particular time, do we fall victim 0 Why will one<br />

person pick up a bug while someone else, similarly<br />

exposed, will.not? The intervention <strong>of</strong> the subconscious<br />

<strong>of</strong>fers an intriguing possibility.<br />

Taking sensible preventative measures is beneficial<br />

whether one subscribes to this theory <strong>of</strong> the<br />

subconscious or to a pure germ theory. Simply<br />

focusing one's conscious thoughts on remaining<br />

healthy should help the body achieve that end.<br />

Dressing and eating right should enable the body<br />

to carry out the mind's bidding.<br />

Eating to ward <strong>of</strong>f colds or flu means basically<br />

following a normal, prudent diet, with attention to<br />

obtaining adequate amounts <strong>of</strong> vitamin C. Good<br />

winter sources <strong>of</strong> vitamin C are citrus fruits, tomatoes,<br />

cabbage and Brussels sprouts.<br />

If these precautions fail and you do succumb,<br />

give in and pamper yourself.<br />

FLUFF UP the pillows and take to your bed for<br />

the duration, armed with mountains <strong>of</strong> light reading<br />

and tissues. Plan to drink plenty <strong>of</strong> fluids<br />

preferably hot and loaded with vitamin C. Meals<br />

should be light. The body is too busy repairing itself<br />

to be digesting heavy meals.<br />

Fortunately, appetites usually wane when one is<br />

ill. The problem is more likely to be working up<br />

some interest in eating anything when food can't be<br />

tasted due to congestion,<br />

If this is a problem, try Breakfast Tortillas from<br />

As the name <strong>of</strong> the book indicates, this can be<br />

served for the first meal <strong>of</strong> the day. It is equally<br />

good, however, at any other time <strong>of</strong> the day. If you<br />

are able to taste anything at all, the flavors <strong>of</strong> these<br />

tortillas should come through loud and clear.<br />

The hot peppers in the sauce might even clear<br />

your nose and sinuses and incinerate a few germs<br />

along the way. The tomatoes in the sauce should<br />

provide a vitamin C boost.<br />

Folk wisdom has long held — and'medical science<br />

is now concurring — that you should eat hot<br />

soup (traditionally chicken) when you are sick. Soup<br />

provides the extra liquid your body requires and at<br />

the same time imparts a beautifully warm sensation.<br />

In keeping with this eminently sensible tradition,<br />

then, you should have soup. Why not a traditionla<br />

Greek soup — Lemon Rice? Not too heavy or rich<br />

and with the Vitamin C <strong>of</strong> the lemon, this is a perfect<br />

meal for convalescing.<br />

BREAKFAST TORTILLAS<br />

12 to 16 strips bacon, crisply cooked, drained,<br />

crumbled (or substitute imitation bacon bits)<br />

2 cups (8 oz.) shredded sharp Cheddar cheese<br />

8 green onions, thickly sliced<br />

1 can (about 7 oz.) red chile salsa<br />

2 firm, ripe avocados<br />

1 tbsp. lemon juice<br />

4 eggs<br />

1 tsp. salt<br />

1 tbsp. milk<br />

about 2 tbsp. butter or margarine<br />

8 flour tortillas<br />

Place bacon, cheese, onions and salsa in individual<br />

bowls. Dice avocados; coat with lemon juice and<br />

place in a bowl.<br />

In a pie pan, beat together eggs, salt and milk. In<br />

a wide frying pan over medium heat, melt 1 tsp. <strong>of</strong><br />

the buttet\ Dip a tortilla in egg mixture, drain<br />

briefly over dish, then fry in butter for about 1 minute<br />

on each side or until golden brown. Repeat for<br />

all tortillas.<br />

Serve tortillas hot at table; pass condiments to<br />

spoon onto them. Roll up to eat. Makes 4 servings<br />

<strong>of</strong> 2 each.<br />

1 Mi cups cooked long-grain rice<br />

lemon slices<br />

Season broth to taste with salt and pepper, adding<br />

a little strained potato pulp if you wish. Beat<br />

the eggs with the juice <strong>of</strong> one lemon. About 5 to 10<br />

minutes before you serve the soup, add some <strong>of</strong> the<br />

hot broth to the beaten eggs — stirring vigorously<br />

— then return it to the p<strong>of</strong>, still stirring, and heat<br />

for a few minutes this way until the egg mixture is<br />

smoothly bound into the broth. Add the cooked rice<br />

and serve at once, garnishing each bowl with a paperthin<br />

slice <strong>of</strong> lemon.<br />
