ORGANIC<br />
Organic wines are made from grapes grown without the use<br />
of fertilisers, fungicides, and synthetic herbicides. Some use<br />
cover crops to provide a habitat for beneficial insects that are<br />
the natural enemy of problem species, or have sheep graze<br />
between the vines, eating the grass and weeds.<br />
The laws differ from country to country but in principle,<br />
they work with nature to increase their vineyard’s biodiversity.<br />
A number of our wine producers farm organically but have<br />
not applied for organic certification. See our Organic range<br />
of wines on page 125.<br />
NATURAL<br />
Natural Wines are farmed organically (biodynamically)<br />
and produced without adding or removing anything in<br />
the cellar. No additives or processing aids are used, and<br />
‘intervention’ in the naturally occurring fermentation<br />
process is kept to a minimum. As such neither fining nor<br />
filtration are used and the result is a living wine -<br />
wholesome and full of naturally occurring microbiology.<br />
De Martino produce a natural wine called Viejas<br />
Tinajas. The wines are aged in old Amphorae and only<br />
use natural yeasts, no sulphur and is bottled unfiltered.<br />
ORGANIC & BIODYNAMIC<br />
BIODYNAMIC<br />
Biodynamic farming is based on the principles of Rudolf<br />
Steiner, an Austrian philosopher scientist (1861 - 1925). The<br />
core idea is that the land and vineyard is a self-sustaining,<br />
closed system, while the philosophy also considers astrological<br />
influences and lunar cycles. Pesticides and fertilisers are<br />
banned and replaced by special soil preparations to enhance<br />
nutrients. We have some fantastic Biodynamic producers in<br />
our portfolio including: Domaine Dujac, Domaine Vacheron,<br />
Sepp Moser, and selected d’Arenberg wines.<br />
