Carne s<strong>al</strong>a<strong>da</strong><br />
- 2 kg Rindernuss<br />
- 100 g grobes S<strong>al</strong>z<br />
- 8 Lorbeerblätter<br />
- 5 Wacholderbeeren<br />
- 6 Knoblauchzehen<br />
- 20 schwarze Pfefferkörner<br />
- etwas Rosmarin<br />

Von der gut abgehangenen Rindernuss<br />
<strong>al</strong>le Sehnen und <strong>da</strong>s Fett entfernen, <strong>da</strong>nn<br />
in drei Teile schneiden und in der<br />
Würzmischung aus grobem S<strong>al</strong>z (50 g<br />
pro kg Fleisch), Lorbeer, Pfefferkörnern,<br />
Wacholderbeeren, zerdrückten<br />
Knoblauchzehen und etwas Rosmarin<br />
wälzen. Fleisch in einen hohen Steingut-,<br />
Terrakotta- oder Glastopf geben, pressen<br />
und mit einem Deckel verschließen. Auf<br />
den Deckel kommt ein Gewicht, <strong>da</strong>mit<br />
sich der austretende Fleischsaft mit den<br />
Gewürzen vermischt. Nach etwa 10<br />
Tagen ist <strong>da</strong>s “Carne s<strong>al</strong>a<strong>da</strong>” zum Verzehr<br />
bereit. Der Erfolg dieser Spezi<strong>al</strong>ität hängt<br />
zum Großteil von den hauchdünnen<br />
Scheiben (am besten mit der<br />
Wurstschneidemaschine) ab. Das Fleisch<br />
kann entweder in dünnen Scheiben <strong>al</strong>s<br />
Carpaccio oder in dickeren Scheiben<br />
gegrillt und mit Bohnen - angemacht mit<br />
Olivenöl extravergine des Gar<strong>da</strong> Trentino,<br />
S<strong>al</strong>z und Pfeffer - serviert werden.<br />

Einlegezeit: 10 Tage<br />

- 2 kg of rump steak<br />
- 100 g coarse s<strong>al</strong>t<br />
- 8 bay leaves<br />
- 5 juniper berries<br />
- 6 cloves of garlic<br />
- 20 black peppercorns<br />
- a little rosemary<br />
Take the well hung rump steak with<br />
<strong>al</strong>l the skin and fat removed and cut<br />
it into three pieces, dredging it in a<br />
mixture of s<strong>al</strong>t (50 g for every kilo of<br />
meat), bay leaf, black peppercorns,<br />
juniper berries, crushed garlic and<br />
rosemary. Put the meat in a cylindric<strong>al</strong><br />
glass or terracotta container, and<br />
squash it with a lid on which a weight<br />
has been placed (this operation serves<br />
to press the meat so that the water<br />
drains out of it and the flavours are<br />
absorbed). After about 10 <strong>da</strong>ys, the<br />
“carne s<strong>al</strong>a<strong>da</strong>” is ready to serve.<br />
The success of the dish depends to<br />
a large extent on cutting the meat into<br />
very thin slices (if possible, using a<br />
meat slicing machine). The meat can<br />
be tasted raw, thinly cut as carpaccio,<br />
or grilled, not so thinly cut, and served<br />
with boiled borlotti beans, dressed with<br />
extra virgin olive oil from Gar<strong>da</strong><br />
Trentino, s<strong>al</strong>t and pepper.<br />
