A <strong>tavola</strong> nel Gar<strong>da</strong> Trentino: <strong>al</strong>le radici del gusto<br />

Olio extravergine d'oliva D.O.P. Gar<strong>da</strong> Trentino<br />

La produzione di olio nell'<strong>Alto</strong> Gar<strong>da</strong> Trentino ha<br />

come protagonisti i terrazzamenti e i pendii su cui<br />

sono collocate le antiche olivaie. Cas<strong>al</strong>iva è la varietà<br />

autoctona più importante e maggiormente diffusa,<br />

che prospera in questo angolo di Mediterraneo<br />

producendo un olio di gran pregio, color verde-oro,<br />

<strong>da</strong>l profumo delicato con sentori di mandorla e un<br />

sapore leggero e fruttato. Non c'è <strong>al</strong>tro luogo <strong>al</strong><br />

mondo di tradizione olivicola a questa latitudine.<br />

Nel 1998 c'è stato il riconoscimento della D.O.P.<br />

(denominazione di origine protetta) Gar<strong>da</strong> Trentino<br />

<strong>da</strong> parte della Comunità Europea. Con le molche,<br />

le particelle più fini residue <strong>da</strong>lla spremitura delle<br />

olive, si re<strong>al</strong>izza il pane di molche, che ha origini<br />

antichissime. Nella gastronomia loc<strong>al</strong>e le molche<br />

vengono utilizzate anche per primi piatti e dolci.<br />

Olivenöl extravergine D.O.P. Gar<strong>da</strong> Trentino<br />

Die Ölproduktion vom Hochgar<strong>da</strong>see steht auf den terrassenförmig<br />

angelegten Hängen im Mittelpunkt, wo die Cas<strong>al</strong>iva <strong>al</strong>s die wichtigste und<br />

verbreiteste Bodenständige Olivensorte gezüchtet wird und in diesem<br />

mediterranen Fleckchen Erde gedeihet. Das Ergebnis ist ein köstliches,<br />

goldgrünes Öl, mit feinem Duft, der zart an Mandeln erinnert, und leichtem,<br />

fruchtigem Geschmack. Es gibt keinen anderen Ort auf Erden, in dem<br />

Olivenöl auf dieser Höhenlage erzeugt wird. Das im 1998 veranlasste die<br />

Europäische Union dem Olivenöl <strong>da</strong>s D.O.P.-Gütezeichen (Geschützte<br />

Ursprungsbezeichnung) zuzuteilen. Aus den „Molche”, d. h. aus den<br />

Rückständen der gepressten Oliven, die beim Filtern des zurückfließenden<br />

Wassers aufgefangen werden, wird seit ur<strong>al</strong>ten Zeiten <strong>da</strong>s „Molche-Brot”<br />

zubereitet. In der Gastronomie werden die „Molche“ auch zur Zubereitung<br />

von warmen Vorspeisen und Backwaren verwendet.<br />

Gar<strong>da</strong> Trentino extra-virgin olive oil D.O.P.<br />

Oil is produced on Upper Lake Gar<strong>da</strong> on the terraces and slopes which<br />

are planted with every kind of olive tree. The Cas<strong>al</strong>iva ist the most important<br />

native and widespread variety thriving in this Mediterranean microclimate,<br />

yielding an excellent oil, golden-green in colour, which has a delicate<br />

aroma with notes of <strong>al</strong>mond and a light fruity flavour. There is no other<br />

place in the world where olive oil is produced at this latitude. This is the<br />

reason for the D.O.P. certification (protected denomination of origin) that<br />

has been recognized in 1998 by the European Union. The molche, the<br />

residue from the olive pressing collected by filtering the water used in the<br />

process, is used to make a speci<strong>al</strong> bread, pane di molche, which goes<br />

back to ancient times. In loc<strong>al</strong> culinary tradition, the molche are <strong>al</strong>so used<br />

in the preparation of first courses and desserts.<br />
