Editor’s letter
With the coming of Mother’s Day, a
certain gratitude springs forth. Reminiscing
about how much my mother
touched my life — teaching me to
appreciate classical music, Europe’s cornucopia of manmade
and natural beauty, and to respect other people
and cultures — my trips down memory lane tumble
through my mind like a motion picture memoir, savoured
once again.
But sinking into nostalgia and reflecting on the past,
questions of life’s mysteries rise up — have I made the
right choices? And, inevitably — which is it — fate or free
will that’s shaped my life?
In this issue, we’re given a gift of uncommon answers
to life’s common questions, coming from virtuosos as
varied as their perspectives. Alain Ducasse, a chef with 21
Michelin stars, defies death in a plane crash while flying
across the Alps, returning enlightened to reinvent his
business and French cuisine.
One of the world’s top bel canto singers, who, surprisingly,
is Chinese, believes her voice and personal
character must be cultivated together to better inspire
her audience.
World-renowned architect designers Robert Couturier

Timothy Corrigan’s interior design philosophy is elegant
in its simplicity: surround yourself with beauty
that can be cherished and appreciated every single day.
“What’s the point of having a beautiful room if you
don’t use it on a regular basis because, despite its beauty,
it doesn’t fit the way you live?” he asks. “We all respond
to visual clues throughout the day without necessarily realizing
it. So any time you stop to appreciate something
— a piece of art, a beautiful fabric, a flower arrangement
— you are in essence practicing gratitude. That is what
art has the ability to do, and how I strive to live each day.”
It’s a philosophy that’s brought Mr. Corrigan global
acclaim to be one of the world’s premier tastemakers. As
founder of Timothy Corrigan Inc., he’s the first American
designer honoured by the French Heritage Society
for his restoration work of landmark buildings in France,
and one of only nine designers named on Architectural
Digest’s international list of top 100 architects/designers
for nine consecutive years.
Yet there’s an almost boyish charm to Mr. Corrigan’s
smile when he says his ah-ha moment came after he realized
his “night job” designing houses was far more interesting
and satisfying than his first career, in advertising.
“I was so removed from the creative process that I could
have been selling paper clips,” he says, laughing at the
recollection. “It’s easy to let yourself slip into an autopilot
way of living, and when you do that, you stagnate. Exposing
yourself to new ideas or putting yourself in situations that
feel unfamiliar stretches you as a person.”
A fan of the classical elegance of European design, Mr.
Corrigan says he’s also drawn to the laidback ease of the
California lifestyle. Mixing the two periods and styles,
then adding a generous dash of playfulness, has created
the lively, inviting style that’s become his signature look.
“We’ve all been in formal, uptight spaces that scream
‘Look, but don’t touch.’ Adding an unexpected touch of
whimsy counteracts that feeling and immediately helps set
people at ease. After all, no one wants to live in a museum.”
A self-confessed auction junkie, Mr. Corrigan typically
spends at least half an hour each day combing through art
catalogues, either in person or online, for unique treasures
that will breathe life into his designs. “Each style of art
creates a different ambience,” he says. “For example, landscapes
are calming, portraits are intriguing and modern art
is exciting. A stark white room comes to life with a pop of
colourful modern art, while classical art can make a space
feel elegant and sophisticated.”
Art, he stresses, also needs to be fluid to be fully
appreciated. “Don’t ever feel you have to keep everything in
the same place forever. We actually stop “seeing” an object
when it stays in the same place too long, so moving your
pieces around means you’ll actually enjoy them more.”

Corrigan's Favourite Things:
Corrigan’s classical tastes walk hand-in-hand
with antique treasure hunting, with two of
his dearest fids being a massive 1940s table
by Jean-Charles Moreaux in his French
chateau, and a c. 1975 mahogany cabinet
depicting, in porcelain, 32 great Greek
gods and philosophers, in his Los Angeles
study. Though Corrigan boasts a diverse art
aesthetic, classical artist John Singer Sargent
currently takes the spotlight. A furniture fave
is the simple Saltworks chair he designed for
Schumacher, along with the icy “Cap Ferrat”
fabric he used to drape the walls of his Paris
bedroom. At home, the designer loves to kick
back with a book: “My favorite is George
Eliot’s novel Middlemarch about maintaining
one’s humanity in the face of an increasingly
technological world,” or entertain with his
Timothy Corrigan Star Collection for Royal
Limoges. Going out may mean seeing a play
— Barry Lyndon is a love for its beautiful
set design, or perhaps jetting off to Paris for
inspiration, or the French countryside, where
his soul-soothing home, the Château du
Grand-Lucé, awaits.

few short weeks ago, had I been jetted off to Paris
A in search of a new “it” bag, I likely wouldn’t have
ended up here.
Like every other purse fanatic, I’d be browsing
through quilted chain bags and monogrammed logos
as ubiquitous as Parisian baguettes.
Standing amidst the lacquered walls of Moynat, I
realize how much I would have missed.
Framed in their niches are the bags: irresistibly
touchable gems, punched with the signature metal
closures descended from the luggage of well-heeled
19 th -century travelers. Known for its automobile-fitted
trunks, Moynat’s heritage may go back centuries;
but, like myself, few would’ve heard of France’s oldest
trunkmaker until the recent present.
“I am very proud of the revival of Moynat and love
both the small leather goods and limited edition trunks,”
says Arnaud de Lummen with a smile. In 2011, he
resurrected the 1800s-era atelier, now a luxe Rue
Saint-Honoré boutique, which ceased production in
the 1970s. “I absolutely love the trunk which matches
the Jaguar F-type perfectly.” Gracious and impeccably
attired, de Lummen himself could easily have stepped
out of post-Revolution Paris.

In a ruthlessly fickle industry, de Lummen is reversing
couture’s direction: reaching into fashion history’s
depths to breathe new life into long-extinct fashion
houses that for years have languished
in slumber. Moynat is one of
the bygone-era brands that drew the
Harvard Law graduate and vintage
aficionado to the classic past.
“The heritage and the history of
old brands are what makes them
unique,” says de Lummen, whose
portfolio of “sleeping beauties,” as he
calls these previously dormant brands, includes Vionnet
and Paul Poiret. “I look for historical significance
and artistic relevance in today’s world. I believe there is
no luxury without some part of nostalgia.”
Born into a family of artistic lineage — an ancestor’s
paintings appeared at the Orsay — and a home that

closed her doors in 1939, to become his first sleeping
beauty half a century later. Now an act of dramatic,
flowing forms headed by designer Goga Ashkenazi,
Vionnet’s renaissance of its Roaring Twenties glory
began as a pro-bono project, when de Lummen was
called upon to secure the trademarks and a distribution
agreement with Barneys New York for the cult brand’s
followers.
“Reviving Vionnet opened a world of possibilities.
It basically established
that it was possible to
wake up a brand which
had been dormant for
more than 50 years,”
says de Lummen. “I was
lucky to be the first to
do it and to be one step
ahead to identify the
next ones to revive.”
The project would
lay the groundwork for
what would become a
series of brand resurrections, a process as demanding
as it is rewarding. The hardest part, says de Lummen, is
finding an investor. “In a way, I am like a screenwriter
and movie director; I may have the property rights and
a wonderful script, but each time I still need to find the
producers who believe in the project and provide the
resources to make it real.”
What makes it all worth it? “When a dead brand that
was unknown to many comes back to life and generates
a new following,” he says.
Invigorated with fresh vision, the vintage brands
brought back by de Lummen have gotten snapped up
by major luxury groups: Moynat, for instance, has been
sold to the French Groupe Arnault, while Paul Poiret
made it all the way to South Korea, recently acquired
by Shinsegae International.

The international success of these resurfaced designers
is partly a product of the natural respect and appreciation
we tend to feel for the past. Steeped in history,
the designs captivate with the enchantment of a different
time. Luxury brands, according to de Lummen, are
“addicted to their past” — and aren’t we all?
Those in the know await with bated breath the next
sleeping beauty to awaken under de Lummen’s magic
touch. Gears are spinning for the regal fashions of Rose
Bertin, dressmaker to
Queen Marie-Antoinette,
and trunkmaker
Au Départ, which “certainly
deserves to be
brought back to life,”
de Lummen says. It’s
not all French designers
either. “I am still
trying to revive Herbert
Levine, the most
influential American
shoe designer ever,
who was copied and revered by Manolo Blahnik and
Christian Louboutin.”
Under Moynat’s curved ceiling, a trio of gorgeous
steamer trunks makes me think of lace gloves and
steam-shrouded platforms. I can see why the historic
luggage holds such a special place for de Lummen,
whose own collection of vintage trunks is rivaled only
by the self-proclaimed audiophile’s limited-edition
vinyls. Another love is travel — with trunks in tow,
of course. “I would love to travel around the world in
80 days, the Phileas Fogg way, bringing along my old
Au Départ trunks.”
For now, “there are still great brands that I feel I
have a mission to bring back,” he says, coming back
to reality. “I probably have ten years of work in front
of me!”

耿 皓 藍 的 說 法 印 證 了 意 大 利 十 九 世 紀 最 偉 大 的 作 曲 家
之 一 Gioachino Rossini 曾 經 的 哀 嘆 :「 唉 ! 對 我 們 來 說 , 美
聲 唱 法 已 經 遺 失 了 。」 意 大 利 語 美 聲 唱 法 「Bel canto」 一 詞 的
原 意 是 「 神 聖 的 歌 聲 之 美 」, 這 種 唱 法 起 始 於 十 六 世 紀 的
佛 羅 倫 薩 。 作 為 文 藝 復 興 的 巔 峰 時 期 , 當 時 的 意 大 利 文 化

She stands on stage alone, a vibrant jade dress framing
her regal figure, arms open wide, inviting the
world into her heart and holding the audience — gentle,
unwavering. Long legato tones riding a wave of tender
vigour pour from her mouth with an ease and effortlessness
I had never seen before, nor heard, despite my
many trips to the Met for opera. Something was different,
something special.
Shen Yun Performing Arts’ young soprano Haolan
Geng — whose “delicious”
singing has blown away
other Metropolitan Opera
soloists year after year —
is unexpectedly Chinese,
belting out bel canto in her
native tongue. Presumably,
the transition from a
romance language’s smooth
interplay of vowels and
consonants to a more abrupt language void of round
sounds, such as Mandarin, should be unpleasing. Oddly
enough, I found the opposite — a lightness and silkiness
as beautiful as bel canto in Italian.
Experiencing such ageless poise and vocal purity, I
couldn’t fathom how this Chinese soloist could harness
such a unique sound at half the age of most singers of
opera, an artform touted for its demand of decades of
dedicated training. Was she simply blessed from above?
Or had she unearthed a secret? As I spoke with Geng
about her life, insight as surprising as her voice unfolded.
Inspired
It’s hard to hear Geng sing and question whether this
was what she was born to do.
“I loved to sing ever since I was very young,” Geng
recalls. “When I heard singing on the radio, I knew I
wanted to learn as well.” Raised in a traditional family in
China that believed in the importance of the arts, Geng
joined choirs starting at the city then provincial levels,
expanding her skill along with the size of the stage.
She humbly admits there seemed to be an element
of “tian fen” — “something the heavens give you” — or

in layman’s terms, a God-given talent. But she says her
youthful exuberance drove her more than any sense of
preordained purpose, at least at first.
To hone her craft, at age 16, the prodigal student
enrolled in the Guangzhou Conservatory of Music. “I
mostly focused on how to improve myself technically
and how to better express and
interpret the song in order to
touch people,” she says.
Her artistic devotion did not
go unnoticed. She won the gold
medal at the First Music Competition
of the Guangdong Arts
Festival in 2007 and then earned
critical acclaim a year later for
her graduation recital, opening
the doors for her to star in the
Guangdong Opera Company.
After a year of mesmerizing
audiences in China, a trip to
the US would alter her course
of life for good. In 2009, she
participated and won a New
York-based Chinese TV network’s
global singing competition,
enthralling the judges.
An international spotlight now
shone down on the young star.
The TV network — NTDTV
— also sponsors the cultural phenomenon
Shen Yun Performing
Arts, a classical Chinese dance
and cultural troupe that has inspired
millions across multiple
continents over the last decade.
Naturally, the director of
Shen Yun asked Geng to join
them. Geng thought joining
the famous troupe would be the
perfect way for her to take her
artistry to new heights. What
she failed to foresee was that
she wouldn’t be simply building on what she had already
learned, she’d be starting over.
Authenticity
Once at Shen Yun, Geng learned that ancient Chinese
theatre and European opera shared the same bel canto

technique, a far superior singing methodology to her
contemporary training in China.
While the greatest composer of the 19 th century —
Gioachino Rossini — made bel canto famous, the singing
style’s Western origins started much earlier. In the 1500s,
a circle of Italian intellectuals — Galileo’s father among
them — would gather at the palace of Count Giovanni
Bardi of Florence in hopes of reviving classical Greek
thought and art. From
this assembly of Italian
dignitaries arose the
search for “divine vocal
beauty,” and eventually
the development of bel
canto, literally meaning
“beautiful singing.”
Bel canto vocalizes
and articulates from a
different vocal position
— an acoustic dome
high up in the head —
which acts as a massive amplifier so that singers could
reach thousands of people at both high and low volumes
without distortion or microphones, since the technology
hadn’t been invented.
“It was only after I came to Shen Yun that I realized
that my previous vocal placement was incorrect,” says
Geng. In fact, a true bel canto soloist can easily overpower
a 50-person symphonic orchestra if needed, all without
losing any tonal quality.
But “along with social changes that brought about
the waning of traditional culture and arts, this genuine
technique had been lost,” explains Geng. The original
bel canto “differs from the bel canto you hear today, which
has diverged from its earliest form.” Her words confirmed
what my ear already knew — her vocal purity and power
were indeed tangibly different from other bel canto singers
I’d heard. But it wasn’t technique alone that separated her.
Higher vibrations
After she joined Shen Yun, Geng was reintroduced to
a traditional meditation system that her grandparents

practiced — called Falun Dafa — since many of the
other Shen Yun artists also practiced it. With the seeds
having already been planted in her youth, Geng naturally
gravitated towards its meditative exercises and principles
of truthfulness, compassion and tolerance.
“To reach a higher realm as an artist, I think morality
plays a vital role,” Geng reveals. “It’s about leading a life
of integrity. If you go about pretentiously offstage, you
won’t be able to express
any sincerity on stage.
When the sounds and
feelings you let out are
pure, your song will be
able to truly touch your
listener.”
Through meditation
and letting go of
her character flaws,
such as fear and pride,
fewer stray thoughts
interfered with her on
stage, placing her mind and heart in a more tranquil
space. “I no longer purposefully try to emotionally touch
the audience one way or another. Without pursuit, these
things actually happen naturally, and in a more powerful
way. It’s a priceless experience.”
Cultivating ren — forbearance — has also been an
integral part of her inner and outer journey, because
Shen Yun’s 100-city tour is as demanding physically as
it is emotionally. But solace and strength rest within the
lyrics she sings.
“This music is about the meaning of life, a path to
Heaven, truth, awareness, and enlightenment. Be it for
the audience or for us musicians — it truly speaks to
your inner world.”
She smiles softly, equally adult, child and angel,
a culmination of walking a destiny handed to her, a
marriage of gift and gumption filling her with gratitude.
“If the theatre is bright enough, I can see the audience
wiping away tears when I’m on stage. I’ve witnessed this
many times. It’s so stirring to see it happening right
before me.”

Before the front door opens to Robert Couturier’s
Regency-style commission just outside Atlanta,
Georgia, two things are evident: its sophistication
matches European manors, but its easy charm is as
thick as thieves. Roman columns and statues stand
before the immovable
facade. Swirling around
them in the hot, humid
air is the smell of cut
grass, horses, and dry
hay. Couturier’s Parisian
accent blends in with a
hearty Southern welcome,
and once we’re in the entry
hall, serves to remind us of and connect us to “the
houses that we descended from, all those European
houses.”
“I love this home, it’s beautiful,” Couturier says as we
enter the grand living room, with its signature French
beauty — delicate side tables, a daybed, generous,
columned panelling and formal drapery — light and
unlined for summers here — and chaise lounges fit for
Botticelli’s Venus.
“The fireplace is English, 18 th -century,” Couturier
says. “The mirror, Italian, 18 th -century. We found

four Italian antique statues, each one representing a
different season, and placed the spring- and summerthemed
statues in this room. The winter- and fallthemed
statues are downstairs.”
Only one thing, well, two things, were certain about
the living room from
the start. “Those two
incredible shell-shaped
chaises were one of the
first choices that we
made, and they decided
what sort of furniture
we were going to put
there. If I had decided
something different for the centre of the room, then it
would have changed how the room looked.”
Imagining a continent’s worth of antiques to chose
from, I ask how he arrives at a design like this.
“The complete space is a result of waves of choosing
things,” he says. “We choose 15 percent, then another
wave drops another 20 percent, then another wave
drops 10 percent... There’s never a presentation with all
the things in the room. It happens touches by touches,
bit by bit. That’s more interesting. I change my mind
up a lot because life changes, life changes you, it changes

The French doors open onto a veranda as wide as
the entire 20,000-square-foot house, and we peer
across five green acres before entering one of the most
elegantly whimsical dining rooms in the South. As he
tells me the story of its contents, I realize I’m wrong:
it’s one of the most elegantly whimsical dining rooms
in the world, thanks to Couturier’s four decades’ worth
of European design knowledge, exclusive sources of
materials, and after a childhood in Parisian manors, an
innate sense of what the most elegant, well-lived life
should look like.
The chandelier in the shape of a ship is from 1940s
France, as is the table. The chairs have the same
pedigree but were made a decade earlier. The antique
mirror hearkens back to the time of France’s royalty,

but the glass art below it is modern Italian — Chihuly.
Couturier may have been raised amidst mid-century
privilege, but he is not bound by it. The colourblocked
cotton drapes are proof of his deftness at
planting an ornate room like this square in the realm
of “comfortable” and “now” without sacrificing an
ounce of beauty.
The next room we visit has a distinctly different feel
than anywhere else we’ve been. At a glance, it’s more
carefree than the upper rooms, and I half expect the
esteemed designer to dismiss it. Instead, the opposite
happens; his voice becomes molasses, he relaxes, and it
seems Couturier doesn’t want to leave this downstairs
den, with its low, time-weathered ceiling made of simple
beams, its majestic fireplace, and rawhide laid over
a reclaimed tile floor.
“All the other rooms could be anywhere, and they
are very American in the way that they are conceived.
I think this room is so French. I spent time in rooms
like this growing up. Maybe not quite as pristine, but
these are the kind of rooms that so many of us had
in the country that we lived in — perfect when the
weather’s bad, because you don’t need to see that the
weather’s bad. It’s warm, cosy, inviting. It has this incredible
character. It makes you feel at home.”
At home in this room is where the family of five
spend a lot of their time in the winters, he tells me. All
they asked for was a space with more character than
the empty basement it was — they didn’t expect this
room right out of a 17 th -century French castle in the
countryside, but they’re delighted with it. Resting deep
in their home is a place that came from deep in Couturier’s
heart, equal in charm as it is in elegance, a place
that can be felt as much as seen.

Centuries of scorching sun and lashing
winds turn the stone of Europe’s
bygone-era facades a whitewashed
shade of nude, the sun-bleached brick
taking on the faintest rose tint. The
faded hue is a natural choice for summer’s
delicate pieces, showing up in
barely-there-pinks and tawny peaches,
on everything from romantic frocks to
palazzo pants. Accessories come in as
soft taupe leathers and rose golds. In
a particularly remarkable inspiration,
the Galleria Vittorio Emanuele II in

Two hundred sixty-one years — it’s a long time
to be in business. Then again, when time is your
business, it’s only fitting that your brand should be
known for its longevity as much as anything else.
Such is the case with Vacheron Constantin, one
of the world’s most prestigious luxury Swiss watchmakers.
Recently, the luxury Swiss company brought
its 2016 collection to Vancouver, showing off both its
masterful design and its mechanical prowess. Taste of
Life was happy to attend an exclusive evening of fine
food, fine wine, and fine conversation that was almost
as stunning as the timepieces on offer. (Almost.)
The first course: pieces from the Maison’s 2016
Patrimony Collection. Each one showcased a sleek,
minimalist aesthetic, with well-balanced lines and a
decidedly clean, understated design. The overwhelming
idea was a sense of harmony, with nothing that doesn’t
need to be there, everything in its place, and all
perfectly in balance and proportion.
Some might consider the Maison’s Traditionnelle
Collection to be the “main course” of the evening.
Clearly constructed to delight those who revel in
Vacheron Constantin’s reputation for finest craftsmanship,
many of the pieces on display offered transparent
casebacks, the better to appreciate and marvel at the
multitude of complications and exceptional finishing.
Much like the dinner itself, the best came last,
with the limited edition Métiers d’Art Collection
— a celebration of the avant-garde expressed in the
language of time. The Savoirs Enluminés featured a
brilliantly-coloured animal from the Aberdeen Bestiary,
an illustrated volume dating from 12 th -century
Scotland. A patented dragging-hours display moves
over a hand-textured base of 22k gold, featuring text
from the manuscript. Truly the kind of timepiece to
savour every time you check the time.

taste what’s truly important…
“We need to reconnect with nature,” declares legendary
French chef and restaurateur Alain Ducasse.
“Consumers — and citizens as well — throughout
the world have to understand that the resources of
the planet are not endless. For us cooks, we must put
nature at the center of our cuisine.”
With this virtuous heart, Ducasse decided to take
significant culinary risks in 2014 with a new menu at
Plaza Athénée Hotel in Paris. To start, he removed
the French staples of meat, cheese and bread, calling
it “Cuisine de la Naturalité” — Cuisine of Naturalness.
“I’m detail-obsessed,” says Ducasse. With “Cuisine
de la Naturalité,” he desires “to make dishes that are
evident, just right in their seasoning, their temperature
— the harmony between content and container.”
His perfectionism plainly plays out with the menu’s
three simple yet specifically sourced types of food: organic

“This cuisine is better for the planet and our health,” he
notes. “The pleasure is what you came to savour, what you
came to eat, what you came to drink, on a simple wooden
table, for delicious moments.”
Sprouting up
Considered the chef of chefs, Ducasse is the holder of 21
Michelin stars and the first restaurateur to own three restaurants
that each have the top rating of three Michelin stars.
Though his dishes beguile foodies from Paris to Saint-Tropez,
London, Monte-Carlo and Hong Kong, his journey began
far from city lights.
“Becoming a chef was a very early call. I was born on a
farm in the southwest of France. My grandmother used to
cook for the family. I can still remember the taste and flavor
of the roast chicken she prepared for Sunday lunches.” To
help her, Ducasse would pick ripe vegetables in the kitchen
garden, cultivating a mindset and skill that would pay off
later. “This experience taught me a very important lesson:
before cooking, there is nature.”

“A cook is an intermediary between nature and the eaters,”
explains Ducasse. “The role of the cook is to choose
the best possible produce, to prepare it with a lot of respect
and bring their authentic tastes to the plate.”
While Ducasse was born with creativity you can’t teach,
master chefs like Roger Verge and Alain Chapel helped
shape his craft. Chapel always reminded him, “cooking is
much more than recipes.” Years later, he realizes, “this is
very true: cooking conjures up an entire vision of life.”
And nothing could be more true with the art of fine
French cuisine.
French formula
A master chef must master boiling, steaming, roasting,
sauteing, simmering and
braising, often blending
these methods within
the same recipe. “The
techniques give French
cuisine its complexity
yet also its subtlety,” says
Ducasse.
Secondly, savoury sauces
characterize French cuisine.
With time, they’ve become
lighter and lighter, until now, where they’re simply just
concentrated juices. The structure of the multi-course meal,
a well-matched wine and casual hobnobbing also play a
vital part.
As Ducasse mastered his art, he received his first two
Michelin stars. But with these initial tastes of success came
something unexpected and more grueling than few can
ever understand.
Resurrection
In 1984, a 27-year-old Ducasse was flying over the Alps with
his staff when the Learjet crashed into a mountain. Thrown
from the plane, Ducasse laid wide awake in the snow until
a rescue team arrived six hours later. No one else survived.
It took 15 operations on his back, legs and eyes, plus another
three years before he could walk again unaided. But while
sentenced to his bed, he conjured up new recipes and menus.

to keep cooking without needing to be present in the kitchen,”
says Ducasse. “This helped me reconsider my trade.”
Haute cuisine
Today, Ducasse’s vision is global, and each of his 24 delectable
restaurants is a “genuine creation,” he declares. “I don’t
duplicate.”
Ducasse’s obsessive creativity extends past the kitchen, as
he perfects elements such as lighting and decor. “I feel like an
art director, as I devote as much time creating the ambiance
of the venue as I do the menu. And I spend as much energy
making sure the restaurants evolve as I do launching them.”
Much of his success comes from attention to the delicate
details of the customers’ lifestyle. “I love to deal with cultural
differences! Most of
them relate to local eating
habits. For instance,
Americans tend to expect
larger portions. Asians
prefer fish cooked for a
shorter time. However,
the pleasure of eating
remains universal.”
Cooking up an awardwinning
menu is as
exciting for Ducasse as it time-consuming. It can take up
to 18 months, during which time he sources food locally
to ensure only the purest ingredients, and he studies his
surroundings. He wants to elevate his patrons’ lives here
and now, paying special heed to intangible qualities like
“the spirit of the venue, the way that people live, what they
like, and the vibrations of the urban neighborhood.”
A sage is a rare individual who can harmonize opposites,
keeping an eye on infinite detail and grand horizons at the
same time. As Ducasse experimented with the cookpot, a
casserole of local and seasonal slowly simmered vegetables,
a philosophy emerged that displays his life’s legacy. “Glocal:
a local execution of a global concept. The components vary
according to the place and season, yet the structure of the
dish remains unchanged.” Intimately personal yet universal,
innovative yet traditional. As he guides us back to our
nature, it’s unmistakable that Ducasse’s uncommon craft is
the gift of a guru.

Rome may have an army of racing vespas and
Milan its high speed trains, but Sicily moves at
a gentle and more romantic pace, begging you to walk
its beautiful cities and landmarks. It is an island to be
appreciated through ambles and strolls, conversing with
the colourful locals, meandering through markets, taking
in the piazzas, and exploring the ruins of centuries of
history. Here we’ll take a walk seemingly through time
in some of the most spectacular, hidden spots of Sicily.
Syracuse:
3000 years of history in a a few kilometers
Syracuse, the city-state that famously defeated Athens
and was home to the mathematician Archimedes, is a
stunning reminder of both the height of Greek culture
and classic Baroque Italian architecture. The town can
be seen in a day, if you split it into two parts:
The Archeological site is well worth a morning of
exploration. Although the ruins are expansive, the
centrepiece is the massive Greek Theatre, the largest
of the ancient Greek world. Constructed in the
5 th century B.C. and reconstructed under Hieron
II in the 3 rd century B.C., it has remained largely
unchanged since then. It has 67 rows and could hold
15,000 spectators for plays, and later, circus games.
The perfect time to experience its magnitude now is
during the Greek Theatre Festival, which takes place
in the middle of May to the end of June, and this year
features Electra by Sophocles and Alcestis by Euripides.
The second part is the island of Ortygia. Recharge
from your historic morning by indulging in an al fresco
espresso at a café in the Piazza Duomo. Make sure also to
venture to the Piazza Battisti Cesare, known for its fresh
fish from the nearby marina, and make sure to stock up
on cheeses and prosciutto from the famous I Sapori dei
Gusti Smarriti (literally, the flavours of lost tastes).
Mt. Etna:
Imposing landscape you can climb or ski
Known as Mongibello to the locals, Etna is the largest
and highest active volcano in Europe and is well
worth the vertical trek. For the intrepid, you can hike
from the base camp at 1,800m. Or you can journey up
the mountainside in a funicular and then a specialized

four-wheel-drive bus closer to the peak, where you can
take in a series of craters that look more like a lunar landscape
than a mountaintop. Even in the summer, it’s important
to wear layers, as at 2,800m (where the 4x4 bus
stops), the winds pick up. The total round trip with the
cable car and bus
takes two hours.
Even with constantly
changing
terrain thanks to
frequent eruptions,
Etna is host
to a lauded DOC
winery and a nofrills
ski resort.
Taormina:
A ritzy resort town steeped in history
A jewel of the Mediterranean, Taormina is a chic
resort town beloved by artists and celebrities such
as Goethe, Gustav Klimt, Elizabeth Taylor, Francis
Ford Coppola, Oscar Wilde, and Greta Garbo. It
sits atop a bluff on the eastern coast, with sweeping
views of the Gulf of Naxos and Mt. Etna. Taormina
has become the most popular summer destination on
Sicily ever since the Europeans discovered it on their
Grand Tour in the 18 th century. The town is replete
with streets of high-end boutiques, cafés, restaurants
and medieval churches, and you can stroll the Corso
Umberto and then take a cable car down to small
beaches on the seaside below. Those in the know stay
at the lavish Grand Hotel Timeo and visit the Greek
Theatre, which adds a historic depth to the property.
Make sure to sip an Aperol spritz on the veranda
as you behold the sunset. The perfect time to visit
Taormina is after the summer crush, in September
and October when the weather is still mild but the
crowds have gone.

Palermo:
European capital with an Arabic flair
Palermo, the stunning seaside capital, was formed over centuries
by the confluence of diverse cultures, from the Carthaginians
and Greeks, Romans, Arabs, Normans, to the French and
Spanish (to name a few), and this is evidenced in the wideranging
architectural styles and local dishes.
The best way to see Palermo is by walking the streets of the
old city, which gives you a feel for the centuries of history. Start
in the Quattro Canti (four corners) and visit the Norman Palace
constructed in the Arab-Norman-Byzantine style and then take
a stroll through the loud and colourful Ballarò Market, which
evokes the Arabic influence with narrow labyrinthine streets full
of stalls and vendors selling the freshest fish and produce. Here
you must sample the famous Sicilian arancini, a ball of rice stuffed
with meat and tomato sauce covered with breadcrumbs and fried.
And finally, no trip to Palermo is complete without ascending
to the hilltop Cathedral of Monreale. The church boasts a
modest facade that belies an exquisite interior that lights up
thanks to a glittering, nearly 70,000 square feet of celestial
gold mosaic depicting biblical scenes, kings, saints, and angels,
culminating with a tremendous Christ the Pantocrator in the
triple-apsed choir.

A announce a new day at the foothills of the ancient
mountains of Belize. An alarm clock is a trivial possession
here in the Cayo District, where creatures great and small
sing homage to Kinich Ahau, the Mayan sun god, as the
first golden rays slice through the dense jungle.
Through morning mist, there’s a glimpse of El Castillo,
the castle-like pyramid atop a distant limestone ridge.
The mystery of the ancient Mayan site, Xunantunich
(pronounced shoo-nahn-too-nitch), which surrounds the
pyramid, enticed us to trek here, where the Mayan Empire
was at the height of its power 2,000 years ago.
In the period between 300 and 900 A.D., the Maya
built hundreds of enormous cities and sacred sites deep
in the tropical lowlands of Belize, in northern Central
America. While speculation exists, no one knows for sure

what caused the Maya to mysteriously abandon their colossal temples,
leaving them to be swallowed up by the encroaching jungle until they
became the lost cities of legend.
The ancient ceremonial centre Xunantunich was discovered by a
hunter in 1881, and as excavation continues today, altars, artefacts and
stone friezes are being unearthed alongside a fragmented story of humanity’s
past.
“For every relic unearthed, there’s a thousand questions, and for every
question answered there’s a hundred more questions,” says William,
our tour guide — a local rancher and horse handler who grew
up exploring the ancient caves around the nearby village of San Jose
Succotz. “So much mystery shrouds the Maya. How could they build
pyramids without iron tools, wheels or animal power?”
The road leading to this ancient site weaves along the Mopan River,
through a jungle canopy of fragrant allspice and gumbo-limbo trees.
While the idea of riding horseback through the rainforest gets some
pushback from our teenage sons, as we cross the river on a small platform
propelled by a hand-cranked pulley, their hesitation transforms
to wonder as we enter Mayan territory.
Far richer, fascinating and more exciting than anything Hollywood
could dream up, the actual reality of Mayan life is amazing. This was once
the capital of an autonomous ancient kingdom — spreading out with 26
stone structures and multiple plazas, many yet to be uncovered. Nearly
200,000 Maya once lived beneath the shadows of the pyramid, with its
giant stone steps ascending to a summit 40 metres above the jungle floor.
Its assembly of stone rooms and vaulted buildings suggests it was
once a royal palace or residence of an elite family closely related to the
rulers. Like an emperor surveying his kingdom, the view is astounding
— stretching across the horizon from the lush forest greens and farms
around San Ignacio to Guatemala.

It’s a half day horseback ride to the ruins through the jungle beside the banks of the Mopan River.
It’s remarkable to think that where we now stand
once served as a sacred space to honour the gods —
echoed by the intricate stone friezes and masks that
adorn the east and west of the pyramid. Various motifs
and symbols of Mayan astronomy and cosmology are
etched in limestone, including Chaac, the god of rain,
and Ix Chel, the moon goddess.
This ancient royal retreat is complete with a ball
court, although from hieroglyphics discovered on
neighboring Mayan sites, the game known as pok-tapok
took an intense twist with the sacrificial death of
the winner — the perfect gift to win favour from the
gods. Next to the excavated sports court is a lonely
sapodilla tree — its chicle sap used to make rubber
balls for this game, and in generations to follow, dental
floss and chewing gum.
This real, in-your-face Mayan history has ignited our
curiosity! Perhaps we’ll continue onto Altun Ha, north
of Belize City, where an exquisite piece of ancient Mayan
art, the Jade Head, was discovered in a large tomb, or
onto Ambergris Caye and the 2,000-year-old Marco
Gonzalez archaeology site in the early days of discovery.
As we ride back to the stables, our minds are opened
to life’s deeper meaning. A legacy seems more than
what’s left when we’re gone, but what we can each
give, create, impact and contribute today while we’re
here. Taking the rough road often leads to the height
of greatness.
