物 品 , 是 一 件 越 來 越 難 以 理 解 的 事 情 。 製 作 艱 辛 , 產<br />
量 稀 少 , 使 手 工 藝 品 甚 至 打 上 了 奢 侈 品 的 標 籤 。 但 手 工 藝 的 價 值 可<br />
以 僅 僅 通 過 商 業 角 度 去 衡 量 嗎 ? 當 然 不 是 。 作 為 動 輒 傳 承 了 數 百<br />

寶 製 作 加 工 , 從 美 味 的 巧 克 力 到 時 髦 的 復 古 女 帽 。 我 們 很 高 興 地 看<br />
到 , 直 到 今 天 依 然 有 這 麼 多 人 在 堅 持 著 那 些 古 老 的 技 藝 , 並 樂 於 付<br />

逆 流 而 上 , 堅 持 用 自 己 的 雙 手 一 點 一 滴 完 成 一 頂 華 麗 的 帽 子 或 是 一<br />
個 色 彩 絢 爛 的 陶 瓷 花 瓶 。 在 這 個 問 題 上 , 來 自 神 韻 藝 術 團 的 領 舞 演<br />
員 周 歌 給 出 了 自 己 的 答 案 。<br />
當 周 歌 在 加 拿 大 觀 看 到 神 韻 藝 術 團 的 演 出 , 並 得 知 中 國 的 傳<br />
統 文 化 目 前 已 經 幾 乎 被 破 壞 殆 盡 的 時 候 , 她 決 定 要 去 學 習 舞 蹈 , 日<br />
後 登 上 「 神 韻 」 的 舞 臺 , 用 舞 蹈 語 言 展 示 中 國 傳 統 文 化 的 美 好 和 神<br />
聖 。 她 說 , 自 己 有 生 以 來 第 一 次 感 到 了 身 上 一 半 中 國 血 統 的 召 喚 ,<br />
讓 她 有 決 心 去 實 現 這 樣 一 個 宏 大 又 有 著 特 殊 意 義 的 目 標 。 而 我 們 要<br />
說 , 這 並 不 應 當 僅 僅 是 周 歌 或 是 神 韻 藝 術 團 的 使 命 , 更 應 該 是 每 個<br />
華 夏 兒 女 時 刻 都 應 當 銘 記 在 心 的 終 身 使 命 。<br />

Editor’s word<br />
To me, tea is one of nature’s most delectable<br />
edible designs. Rich, subtle, complex<br />
flavours, aromas, feelings, enrapturing the<br />
body’s senses. Somehow when growing<br />
up, my mom’s tea tasted best. Scooping leaves with a<br />
wooden spoon, pouring water into a little pot and then<br />
the elixir into tiny cups — her perfunctory preparation<br />
never made much of a mark on me. But maybe I was<br />
missing characteristics that weren’t in plain sight —<br />
well-honed timing and brewing, the tasteful alchemy<br />
when using traditional methods and materials (and not<br />
an expedient machine). Sipping a cup of Oolong now,<br />
nostalgic, Chinese wisdom brews in my mind.<br />
“One minute’s spotlight on stage is the result of efforts<br />
from ten years of hard work off stage.” Beyond my<br />
mom’s tea, this philosophy speaks to the artisans and<br />
artists that fill the pages of this issue, with poetry taking<br />
shape in many art forms.<br />
Our poet in motion — a Canadian dancer born of an<br />
Italian father and Chinese mother — whose strong will,<br />
wisdom and inward growth are so noticeable and true<br />
that you feel union of mind and body, audience and<br />
performer, earth and heaven.<br />
That magical external beauty seems rooted in tradition,<br />
passion, heart and hard work, a foundation that transcends<br />
form — common threads of the four outstanding artists<br />
we explore from the Circle Craft Show.<br />

Ponterio’s interior transformations are as diverse as<br />
the spaces he works on. Contemporary residences,<br />
turn-of-the-century restorations, gardens and golf<br />

for architectural arts and buildings’ historic bones.<br />
Known for his impeccable vision delivering<br />
an old-world European elegance, the Chicagobased<br />

If poetry could come to life, you’d find Miranda Zhou-Galati<br />
dancing. As one of Shen Yun Performing Art’s lead dancers,<br />
her craft sings like a sonnet composed from her soul — authentic,<br />
innocent, noble, merry. Like an ageless poet whose words<br />
transcend time, Zhou-Galati’s fine art highly heightens reality.<br />
She lives in the moment, perfectly present, both here and not<br />
here, guiding the audience on a similar voyage — seated in the<br />
theatre, yet awake somewhere else far away.<br />
“Being humble is extremely important,” says Zhou-Galati,<br />
the 2014 adult and 2010 junior champion of NTD Television’s<br />
International Classical Chinese Dance Competition.<br />
“You can learn a lot from ancient Chinese culture and other<br />
traditional cultures, like the way poets walk and talk reflects<br />
their character.”<br />
An artist’s focus on inner nature, called bearing, or the yun<br />
of Shen Yun, is the core distinction between classical Chinese<br />
dance and other forms. Yun has a different starting point —<br />
it’s a journey inside-out. Zhou-Galati’s connection to her<br />
spirit while dancing is so clear, true, unmistakable, I was<br />
surprised to hear it didn’t begin that way.<br />

的 。」 從 小 生 長 在 西 方 的 周 歌 似 乎 第 一 次 感 受 到 了 身 上 那 一 半<br />
中 國 血 統 的 召 喚 。<br />
當 周 歌 前 往 位 於 梵 蒂 岡 的 西 斯 廷 教 堂 和 其 它 歐 洲 古 老 的 教<br />
堂 觀 光 時 , 她 深 有 感 慨 :「 我 覺 得 意 大 利 文 藝 復 興 時 期 留 下 的 文<br />
化 和 中 國 的 傳 統 文 化 有 些 類 似 , 都 像 是 在 表 達 人 與 上 天 的 聯 繫 。<br />
看 到 那 裏 牆 上 繪 製 的 神 靈 的 壁 畫 , 他 們 的 頭 上 都 有 光 環 。 你 會 感<br />

可 是 周 歌 的 意 大 利 父 親 起 初 卻 無 法 接 受 寶 貝 女 兒 的 這 個 決<br />
定 。 作 為 一 位 成 功 的 律 師 , 他 不 想 自 己 成 績 全 優 的 女 兒 去 追 求 舞<br />
蹈 事 業 , 還 準 備 加 入 一 個 那 時 還 默 默 無 聞 的 表 演 團 體 。 好 在 周 歌<br />
得 到 了 媽 媽 的 支 持 , 最 後 成 功 地 開 始 了 她 的 中 國 古 典 舞 生 涯 。<br />
Born in Toronto to an Italian father and Chinese mother,<br />
yun was a new concept for Zhou-Galati, who studied ballet<br />
in her youth.<br />
She recalls the first time seeing Shen Yun (and classical<br />
Chinese dance). “Oh, I loved it!” she says. “It was so beautiful<br />
and had much more meaning in the physical art form — it<br />
had this righteous energy to it.”<br />
Since that first experience, Zhou-Galati has learned the<br />
deeper roots of Shen Yun and its mission. “The culture is being<br />
destroyed in modern-day China by the Communist Party, and<br />
it’s very important for Shen Yun to revive this culture, not<br />
only for the present but for the future.”<br />
Though worlds apart in distance, she saw her Western and<br />
Asian heritage as being much closer in essence.<br />
“I feel like the Italian Renaissance was similar to classical<br />
Chinese culture, where people had more of a connection to<br />
the heavens,” she says, especially when soaking in the Sistine<br />
Chapel and Basilica. “You can see that through their paintings<br />
— if they’re pointing upwards or when you see a halo<br />
behind someone’s head. Faith, belief and connection to the<br />
divine were obvious in ancient times, though not too much in<br />
modern times.”<br />

邀 請 自 己 眾 多 朋 友 一 同 去 觀 賞 神 韻 晚 會 。<br />
提 升 舞 蹈 內 涵<br />
看 到 周 歌 今 天 取 得 的 成 就 , 我 們 不<br />
禁 想 到 了 中 國 的 一 句 俗 語 :「 臺 上 一 分<br />
鐘 , 臺 下 十 年 功 。」 那 周 歌 在 學 舞 的 過 程<br />
中 , 又 遇 到 過 那 些 困 難 和 艱 辛 呢 ?「 最 初<br />
真 的 是 有 點 難 , 作 為 團 裏 少 有 的 只 有 一 半<br />
中 國 血 統 的 中 國 古 典 舞 舞 者 , 我 很 難 體 會<br />
到 其 中 『 身 韻 』 的 涵 義 。」 如 今 觀 眾 看 到<br />
的 周 歌 特 別 擅 長 的 「 身 韻 」, 卻 曾 是 她 在<br />
學 舞 過 程 中 遇 到 的 最 大 的 挑 戰 。<br />
在 中 國 古 典 舞 中 , 有 一 個 關 鍵 的 術<br />
語 叫 做 「 身 韻 」, 指 的 是 一 位 舞 蹈 演 員<br />

and the troupe’s mission, she applied to<br />
the New York-based Fei Tian Academy<br />
of the Arts, where many Shen Yun dancers<br />
take their first “fluttering” steps — the<br />
magical way classical Chinese dancers<br />
glide across the stage. Her father, a successful<br />
lawyer in Canada, wasn’t thrilled<br />
to have his daughter — a straight-A<br />
student — pursue a career in dance. But<br />
Zhou-Galati couldn’t ignore her calling,<br />
and with her mom’s support, left home.<br />
(Of course, later when Mr. Galati saw his<br />
daughter dance, he became her biggest<br />
fan — and marketer — inviting many<br />
friends to the show every year.)<br />

“At the beginning, it was a bit tough<br />
because being one of the few non-fully<br />
Chinese dancers, I had to look for that<br />
inner bearing,” says Zhou-Galati. “That<br />
was one of my biggest challenges.”<br />

涵 。」 周 歌 告 訴 我 們 :「 尤 其<br />
在 扮 演 一 個 舞 劇 中 的 角 色 時 , 我 要 去 查 閱 她 的 故 事 , 是 甚 麼<br />

眾 理 解 到 中 國 傳 統 文 化 的 美 好 和 珍 貴 。<br />
周 歌 為 我 們 講 述 了 一 段 自 己 演 繹 古 典 人 物 的 經 歷 。 她 在<br />
2010 年 參 加 新 唐 人 電 視 台 舉 辦 的 「 全 世 界 中 國 舞 舞 蹈 大 賽 」<br />
時 , 參 賽 劇 目 叫 《 木 蘭 歸 》。 周 曉 所 表 演 的 是 木 蘭 勝 利 後 還 鄉<br />
的 情 境 。 舞 蹈 的 背 景 音 樂 是 河 南 豫 劇 《 花 木 蘭 》 中 的 唱 段 , 木<br />
蘭 身 著 藍 白 相 間 的 衣 褲 和 靴 子 , 輕 盈 靈 動 , 矯 捷 跳 躍 。 開 始 時<br />
歸 心 似 箭 , 騎 馬 奔 赴 故 鄉 , 後 面 的 表 演 則 展 現 其 恢 復 女 兒 身 後<br />

「 中 國 古 典 舞 舞 者 身 上 的 那 種 『 身 韻 』, 真<br />
是 非 常 美 妙 。 它 可 以 讓 舞 者 完 美 地 演 繹 出 幾 乎<br />
任 何 角 色 , 任 何 情 境 , 連 面 部 表 情 都 會 因 不 同 的<br />
情 感 而 自 然 發 生 變 化 , 這 和 芭 蕾 太 不 一 樣 了 。」<br />
Though cultivating yun tested the young dancer, it was also<br />
the component of classical Chinese dance that intrigued her<br />
most. “A performer’s inner bearing is really amazing,” she says.<br />
“Chinese classical dance can be used to portray almost anything,<br />
any character, even different emotions with different<br />
facial expressions, which I think is very, very different from<br />
ballet. I think that these<br />
two art forms are extremely<br />
different, actually.”<br />
Cultivating yun often<br />
began with books. “I<br />
would try to learn more<br />
about Chinese culture,<br />
Chinese classical dance<br />
and the history behind<br />
it,” says Zhou-Galati.<br />
“When portraying a certain character, I’d learn what makes<br />
that character unique, how she holds herself, and what her<br />
emotions were at the time.”<br />
What always rang true in learning these legends was that<br />
“people really stressed moral values and moral characteristics —<br />
a very important part of Chinese classical dance and culture.”<br />
Once she understood the context of the character, she’d<br />
integrate mind with movement. “I would try different movements<br />
and seek the meaning behind them.” She’d ask herself,<br />
“What is this movement trying to reflect, or what kind of<br />
expression is it trying to reflect at that moment?”<br />
Zhou-Galati would then integrate the intellectual and<br />
physical preparation, adopting the perspective that she didn’t<br />
simply represent the character — she was the character herself,<br />
as any pretending would be disingenuous.<br />
With Zhou-Galati’s soft, graceful demeanour, it’s easy to<br />
see why “flowy fairy-like heavenly characters” come so<br />
naturally to the delightful dancer. But one legendary character<br />
from ancient China (and even in today’s pop culture) didn’t.<br />
Mulan.<br />

“Mulan has more strength and portrays courage and a warrior-like<br />
field,” says Zhou-Galati, who spent endless hours in<br />
the library and in front of a mirror practicing this stalwart heroine.<br />
“It was more challenging not only for the inner bearing and<br />
feelings, but from the artform as well — the movements for<br />
Mulan showed great strength and were more crisp, fast and<br />
strong, which I wasn’t used to.”<br />
As a major competition neared, Zhou-Galati was faced with<br />
one more hurdle, something only the heart of Mulan could<br />
help her overcome. “During rehearsal, I did a jump, and when<br />
I landed, I twisted my<br />
ankle,” she says. “I was<br />

on their faces. For the audience, it’s<br />

Refusing to give in to injury, Zhou-Galati entered the competition<br />
as Mulan. “I could feel the bone and the muscle were still<br />
strained. But I thought I should be more selfless, stop thinking<br />
about my own pains, just tolerate, persevere and get through it,<br />
because what we’re doing is just so meaningful,” she says, reflecting<br />
on Shen Yun’s mission to revive classical Chinese dance.<br />
She went on stage, and the pain subsided when she devoted<br />
herself to a single thought: “I need to give the audience the best<br />
performance I can.” She did and took home gold.<br />
Over the years, despite pain, fatigue, and other hardships, nothing<br />
compares to her bond with the theatre-goers. “I definitely try<br />
to connect with the audience while I’m on stage,” she says. “If<br />
they feel touched, I can see them crying, or if they’re happy, I can<br />
see huge smiles on their faces. For the audience, it’s something<br />
very grand — it feels like some sort of hope for humanity.”

For five days in November, starry-eyed crowds flock to<br />
Vancouver’s annual Circle Craft market, immersing<br />
themselves in the legacy and beauty of fine craft. Over<br />
300 vendors exhibit their gorgeous wares at Vancouver’s<br />
135,000-square-foot Convention Centre West — quite a<br />
departure from the show’s beginnings as an artisan co-op<br />
at Vancouver East Cultural Centre in 1973.<br />
“These original shows were warm intimate affairs,” founder<br />
and organizer Paul Yard tells us. Today, Circle Craft still<br />
operates as a cooperative of BC craftspeople, whose specialties<br />
range from woodwork and metals to fashion and<br />
food. A jury reviews vendor submissions, selecting artisans<br />
with a strong personal style and exceptional quality.<br />
“In many ways, the up-and-coming artists of today are<br />
very similar to their counterparts of 40 years ago,” says<br />
Yard. “They are passionate idealists making things with<br />
their hands.”<br />
As always, the 2016 show brings fresh new talent — this<br />
year, we can look forward to retro industrial-style lighting<br />
creations, colourful glass gem-studded serveware, and exquisite<br />
handmade collectible dolls, to name a few. Among<br />
other returning exhibitors, there were four “veterans” whom<br />
Taste of Life had a chance to chat up: history-savvy potter<br />
Gordon Hutchens, Italian-Canadian jeweller Roberto<br />
Fioravanti, chocolate connoisseur Paul Dincer of Koko<br />
Monk Chocolates, and milliner Karyn Gingras of Toronto’s<br />
Lilliput Hats. We delve behind the booths to uncover their<br />
creative paths, inspirations, and stories.<br />

Roberto Fioravanti’s training may have its roots in Italy, but<br />
the earthy rings, cuffs, and pendants laid out in his studio<br />
have little in common with the ornate, heavily embellished<br />
pieces associated with the country’s jewellery tradition — except<br />
for the meticulous craftsmanship. His textured metals<br />
and rough gems appear almost primitive in their raw-edged<br />
simplicity — the imperfect, organic forms barely hinting at<br />
the touch of a human hand.<br />
“There are very few artists left who still work the precious<br />
metals in the old traditional way, from scratch, and making their<br />
pieces from beginning to end,” says Fioravanti, who has been part<br />
of Circle Craft for seven years. The Italian-born jeweller has been<br />
hand-crafting, hammering, and hand-forging the pieces in his<br />
collection in his East Vancouver studio since 1987, but his love<br />
affair with the art of jewellery goes back much further — to a<br />
studio on Milan’s Via Montenapoleone, where he began his apprenticeship<br />
as an eager 15-year-old boy, learning the craft from<br />
seasoned old-school master Nonno Gigi.<br />
“When I first arrived in Canada, people would ask me to<br />
create Italian-style jewellery, and it really puzzled me that<br />
they had expectations for me to represent what Italy was for<br />
them,” says Fioravanti. “Classical Italian jewellery is based<br />

on symmetry and highly polished shiny gold. I like to stray from this<br />
paradigm. Maybe that centrepiece prefers to be on the side, maybe the<br />
gemstone will reveal her deep personality if it is set in pure gold over<br />
textured and darkened silver.”<br />
Working with everything from his signature 18k gray and orange gold,<br />
to soft stones, wood, even bone and hair, his primary inspiration is the<br />
gem, to whom he attributes a female persona. “I like to imagine listening<br />
to it, as to how she would like to be presented,” he says. Wearability and<br />
comfort are also key factors. “Some pieces are meant to be worn for a few<br />
hours, some for days, and some all the time, like a wedding ring, but all<br />
should leave you with a smile on your face, like a good pair of shoes or a<br />
contented spouse!”<br />
Amidst ever-faster production, Fioravanti dubs his approach “slow<br />
jewellery.” He talks of taking the time to create something more than<br />
just a wearable accessory: a memento, a family heirloom to be passed<br />
down through generations.<br />
“To create with our hands is something magical and deeply rooted in<br />
our species,” he says. “It is one of the things that make us human, and we<br />
will never part from it because we need beauty in our lives.”<br />

There are some experiences so pivotal, they permanently<br />
alter your life course.<br />
For Gordon Hutchens, that experience was a trip to Japan<br />
when he was 14, where he first observed potters at work in<br />
their studios.<br />
“I was impressed at the importance that aesthetics, art, and<br />
fine craftsmanship played in everyday life in this culture,” says<br />
Hutchens. The artist has been with Circle Craft since 1974,<br />
then a small artisan cooperative. Today, the Vancouver-based<br />
potter spends his days resurrecting long-lost ceramic techniques<br />
in his secluded studio on Denman Island.<br />
“I strive for the balance between control and spontaneity, traditional<br />
and contemporary, technique and creativity,” Hutchens<br />
tells us. He is one of the few potters who still mixes his own clay<br />
bodies, blending different types to achieve his desired result.<br />
“Every clay has its own unique character.” Kaolin from England,<br />
for instance, is ideal for fine white porcelain, while Denman<br />
Island’s iron-rich clay gives earthenware a deep chocolate hue.<br />
Each of Hutchens’ exquisitely detailed vessels tells a story: of<br />
ancient cultures and bygone traditions carried on by dexterous<br />

hands. His studies of Song and Ming Dynasty ceramics sparked<br />
a love of copper-red glazes; a line of uniquely textured works fired<br />
with salt ash has its roots in Europe’s medieval pottery; Art Nouveau<br />
ceramics inspired vibrant, vitreous-lustre earthenware.<br />
“I feel closely tied to history, studying it, reading about it,” he<br />
says. His admiration for Japanese art gave rise to his “Hokusai<br />
Series,” inspired by the “Great Wave off Kanagawa” woodblock<br />
print and the Salish Sea view from his studio. The forms are<br />
painted with layered “slips,” clay mixtures diluted to a paint-like<br />
consistency. They are then fired in a Tozan anagama kiln he has<br />
built into a hillside, where mineral-rich ash forms a one-of-akind<br />
finish on each piece. The modern version of a 17th-century<br />
kiln from Japan’s Himeji region, known for producing wares for<br />
the Himeji Castle, the finest surviving example of Japanese castle<br />
architecture of that period, Hutchens’ kiln was custom-designed<br />
by master potter and kiln builder Yukio Yamamoto.<br />
Another favourite method resurrects a 19th-century technique<br />
of crystalline glazed porcelain, in which a mix of minerals<br />
such as copper, cobalt, and titanium create brilliant colours<br />
and form iridescent crystal motifs in the glazed surface.<br />
“Technique is useless if you don’t have an idea to express<br />
with it, and a brilliant idea is useless if you haven’t the technical<br />
skill to bring it to fruition,” says Hutchens. “My work is a<br />
combination of inspiration and perspiration, ideas and struggle<br />
toward their execution. I have found my passion, and 45 years<br />
later, I still feel that passion in my work.”<br />

Hippocrates tells us “Let food be thy medicine and<br />
medicine be thy food,” though when it comes to<br />
chocolate, we don’t exactly need convincing that the sweet<br />
indulgence has therapeutic qualities.<br />
Paul Dincer of Koko Monk Chocolates, however, has<br />
taken that concept to a whole other dimension.<br />
“When you look at the origin of cacao in Mesoamerica,<br />
there was no medicine without cacao in them,” says Dincer.<br />
“Authentically, cacao has nothing to do with candy, and<br />
we follow that direction. We see chocolate as one of the<br />
healthiest superfoods.”<br />
Sourcing its cocoa beans from Central and South America,<br />
Koko Monk works exclusively with raw, single-origin<br />
heirloom cacao, processed as little as possible. “We don’t<br />
roast, we don’t Dutch process, and we don’t even use white<br />
sugar in our chocolate bars,” says Dincer. “The result of<br />
this preservation on the palate is unbeatable, and nothing<br />
comes close to describing it.”<br />
Tasting a Koko Monk bonbon means dispensing with any<br />
preconceived notion of what to expect from a chocolate. “We<br />
make post-modern style couture chocolate, meaning you trespass<br />
the borders of sweet and savoury, of intellect and taste<br />
buds,” says Dincer. Wood smoke, miso, parsnip, and taro root<br />
are just a few of the unlikely ingredients to find their way into<br />
his creations. Two personal favourites are a dark, smoky<br />
applewood chocolate made with 12-year-old single malt<br />
scotch; and the Blue Moon, infused with blue cheese and pear.<br />
“Imagine your flavour experience like a vocabulary,”<br />
Dincer says. “Guaranteed that this flavour does not exist in<br />
your vocabulary yet.”<br />
A self-proclaimed “patisserie monster” since childhood,<br />
Dincer trained as a pastry chef in Australia while also<br />

publishing two books as a professional film critic and writer.<br />
In fact, it was a passion for film, philosophy, and art that led<br />
him to the world of chocolate.<br />
“I approached recipe creation as a thematic, artistic work,<br />
like writing a poem or a short story — because that was what<br />
I did all my life,” says Dincer. “Soon I was creating flavour<br />
fusions heavily built on avant-garde art theories, and on my<br />
personal analysis of some of my favourite works.” Literature<br />
and chocolate may seem to have little to do with one another,<br />
but to Dincer, it’s a natural transition.<br />
“Flavours are pretty much like words,” he says, giving the<br />
example of a blue-and-white-glazed, watermelon-and-sea-salt<br />
bonbon that he sees as an edible interpretation of Hemingway’s<br />
“The Old Man and the Sea,” playing on the themes of<br />
seawater and man’s impossible quest against nature. “Most<br />
of the time, new flavours show up themselves in a variety of<br />
unexpected ways. It can be in the form of a story, film, an<br />
emotional state.”<br />
Dincer believes that drastic shifts in the global food supply<br />
will inevitably impact chocolate. “The future of chocolate will<br />
be dramatically different than the past,” he says. “It will return<br />
to its default origin of sacred, medicinal food.” But today, he<br />
keeps on amazing his customers.<br />
“The happy shock on their face is what makes it all worth it.<br />
They leave our shop happier than before they walked in, with<br />
a totally new perspective.”<br />

Set unassumingly in Toronto’s Little Italy neighbourhood,<br />
the Lilliput Hats storefront has the quaint air of a different<br />
time. Beyond the red-framed door and retro window displays<br />
is a shop that has become a local institution. A funky colourful<br />
interior sets the stage for the stars: old-fashioned hat molds and<br />
of course, the fanciful headdresses themselves — a glimpse into<br />
an era of unabashedly ladylike elegance.<br />
Going on her eighth year with Circle Craft, Lilliput Hats owner<br />
Karyn Gingras, whose impressive client list includes names<br />
such as Rachel McAdams and Whoopi Goldberg, stumbled into<br />
the art of millinery by chance. “I signed up for a tap-dance class<br />
in 1988 and it was full; go figure,” she says with a laugh. “I took<br />
the hat-making class instead.” First considering it a hobby, something<br />
to do while completing her social-work degree, she began<br />
making hats for high-end stores, dropping them off on consignment<br />
by bike. “The hats sold well, and then I started doing small<br />
craft shows and custom work. The rest is history.”<br />
History is what guides Gingras in her present-day work as well.<br />
Relegated today to mainly the most formal of occasions, hats and<br />
the craft of millinery may seem to be a relic of the past, but<br />

according to the designer, the lost art is enjoying a comeback.<br />
“There is a big resurgence of handmade and vintage-inspired<br />
fashion. People love something that harkens back to a simpler<br />
time,” says Gingras, displaying an assortment of her vintage-hat<br />
molds, some of which date back to the early 1920s. “I reinvent<br />
vintage styling with a modern twist. They are classic in styling,<br />
and reflect current colour trends, but the stretching and steaming<br />
and shaping have not changed in hundreds of years.”<br />
Gingras’ whimsical designs range from dainty cloches to mysterious<br />
fascinators, masculine fedoras, and everything in between.<br />
Rabbit and beaver felts cozy up winter hats, while veils, flowers,<br />
and ribbons sourced from Europe embellish lighter styles.<br />
“I get inspired by many things, old movies, the way a fabric<br />
drapes,” says the designer. Her client base is varied, she tells<br />

“Breaking down luxurious textiles, dyeing — the design process<br />
is very organic and there are styles I experiment with that become<br />
happy accidents.”<br />
One of Gingras’ most memorable projects was a hat worn by<br />
Gord Downie of the famed band The Tragically Hip on a recent<br />
Canadian tour. “It ended with over 11 million viewers watching<br />
the last live broadcast,” she recalls. “It was an honour to be part<br />
of Canadian music history.”<br />
As the nature of the craft evolves in the digital age, Gingras says<br />
it will take keeping up with new platforms such as Etsy to stay<br />
relevant, but she is dedicated to preserving the art of millinery.<br />
“It’s a beautiful artisanal process rooted in women’s independence<br />
— the second oldest profession,” she says with a wink.<br />

We take it for granted that modern technologies have all but taken<br />
over the manufacturing industry. No longer requiring the skill<br />
of a human hand, sophisticated machinery and equipment now largely<br />
produce the objects we surround ourselves with. Yet there are certain<br />
aspects of craft that technology simply cannot replace — intricate works<br />
that still require the dexterity, technique, and talent of an experienced<br />

building parts, which made for strong, enduring<br />
construction without the need for nails or adhesive.<br />
Today, the mortise and tenon is still a popular<br />
method among furniture designers, used to<br />
create distinctive lines and forms in a variety of<br />
furnishing styles.<br />

Carved florals<br />
Even with today’s extraordinarily advanced machinery,<br />
elaborately carved motifs on wooden furniture remain exclusively<br />
a manual technique. The fine craft of wood carving<br />
is an artistic process, requiring a high level of skill and multiple<br />
steps that utilize a plethora of specialized tools: from<br />
a gouge for curved edges, such as leaves and petals in traditional<br />
floral patterns, to an angled skew chisel for trimming<br />
seams or sculpting subtle designs.<br />

Gold leaf<br />
Gold leafing is common on classical European<br />
furniture, created by inserting a fine layer of<br />
gold or silver between two pieces of thick<br />
leather, and then hammering them into paperthin<br />
sheets. Gold leaf is fragile and breaks<br />
easily on contact, so a brush is often used to<br />
apply the gold similarly to paint, held on with<br />
static electricity. A final step of polishing and<br />
burnishing completes the dazzling effect.<br />

Near the Royal Ontario Museum in Toronto’s culture district,<br />
there is a haven, 17 stories in the air, for a private<br />
collection of paintings, statues, and antiques amassed over<br />
the lifetimes of one empty-nested couple. Toronto designer<br />
Jeffrey Douglas spent four years completing the new residence,<br />
having begun while steel beams were being erected.<br />
The internationally award-winning designer feels that<br />
beginning while a condo is still a concrete slab “is certainly<br />
the best. You get much more of the bespoke quality when<br />
you do that. This is a growing trend in Toronto; people buy<br />
an empty suite and work with a designer to finish it.” These<br />
clients were so looking forward to their pièce de résistance of<br />
an abode that they invested in the building in its early<br />
stages, giving them insider access and a hand in the building’s<br />
success.<br />

This home begins and ends with its treasured collection. To<br />
do the items justice, Douglas surrounded them with “old-world<br />
grace and elegance while keeping things modern at the same<br />
time.”<br />
“When a client has a really good collection, you position those<br />
good things in spots that have peace, solitude. They can occupy that<br />
space but create a focal point and drive what happens around<br />
them. It’s extremely important to collect good things.”<br />

Opposite: A mixture of darks and lights, Chinese coromandel panels and Biedermeier-style<br />
furnishings combine to create Hollywood glamour on the masculine end of the<br />
spectrum. All carpets in the home are bespoke pure silk. Above: Douglas loves how<br />
in this bedroom, “the bed is very pale, celadon and silver, and yet we allow the Italian<br />
19th-century commode to be different in the space, to punctuate the space to add a<br />
little bit of spice.” Right: Irish regency chairs ensure diversity and liveliness and play off<br />
of the rest of the furniture to keep things fun yet sophisticated. Yellow throw pillows are<br />
delightfully unexpected and help move the eye around the room.<br />

One of the antiques they’ve owned the longest is a set of Chinese<br />
coromandel panels hanging in one of the apartment’s two bedrooms.<br />
To Douglas, “this is a particularly beautiful one.” He took care<br />
not to lose any of the action or characters that are part of the story<br />
being illustrated on the panels when he decided its position and<br />
sketched the room’s custom furniture.<br />
He designed this room’s nightstands in the Biedermeier style,<br />
a restrained, semi-classical style developed in Europe between<br />
1815 and 1848, which often adjoins a pale wood and a black<br />
wood. The bed’s soft, padded upholstery is covered in leather and<br />
wool for richness and durability.<br />
“Always in a bedroom, you want some sort of peace, calm. Very<br />
often when I do homes, it’s about balancing a little bit of “his”<br />
and “hers” in the master bedroom. Here, we did things differently.<br />
We made one bedroom masculine, one feminine.”<br />
Many homes today are a beautiful mashup of time periods and<br />
design styles. But if these things are no longer unifying factors,<br />

and goes pure modern, whereas most of the rest of the home harmonizes past and present styles.<br />

what is? Again and again Douglas described tone, texture, and<br />
qualities bordering on emotion as his palate. And within qualities,<br />
Douglas sees dimensions.<br />
“You can choose to be soft and light or soft and rich. The two<br />
bedrooms have that difference. One is soft and light, the other,<br />
with the coromandel panels, is soft and rich.”<br />
Another part of the answer to the riddle “How does a room<br />
become unified?” is that too much of one thing is boring. As<br />
we toured the other rooms, Douglas pointed out elements that<br />
punctuate, surprise, and move the eye around the room, to<br />
help the space feel more alive. In every room, there should be<br />
variety. And, he warned, the tonal quality from room to room<br />
shouldn’t stay the same either.<br />
“Like wines, or like a meal, you would stage different pairings<br />
for their flavour and complexity and richness and depth. You<br />
would consider how the flavours will marry as you go along,<br />
and they’d become increasingly flavourful as you go through<br />
the meal. You would not start at the fullest, you would start at<br />
the lightest then you would get to the fullest by the end of it. In<br />
a way, you treat a home like that. Some areas are richer, some<br />
areas are quieter, like a palate.”<br />

Guy Savoy is a lucky type of legend. A chef ’s work can only be<br />
judged moments after he creates it, which is why, unlike Keats,<br />
Vermeer, or Bach, he and his fans didn’t have to wait decades to<br />
become acquainted. The dishes would have been cold then anyway.<br />
But maybe none of that matters, because Savoy refuses the title of<br />
artist. His is the “work of a craftsman,” he says. If that sounds like a<br />
humblebrag, forgive him. His beginnings are rather humble — his<br />
father was a gardener and his mother owned a tap room in Bourgoin-Jallieu,<br />
France. He has also won the right to brag. His Restaurant<br />
Guy Savoy was awarded its third Michelin star in 2002 and kept<br />
it since; Savoy stood on the committee in support of the inclusion of<br />
the “French gourmet meal” on UNESCO’s Representative List of<br />
the Intangible Cultural Heritage of Humanity, (in 2010 UNESCO<br />
ruled in favour of the proposal); to date, he has published 10 books<br />
and produced a film, A Four Season Feast, to introduce France’s culinary<br />
regions and intrepid food suppliers to a wider audience.

One of Savoy’s signature dishes, “artichoke soup with black truffle;<br />
layered truffled mushroom brioche,” is an experience that stays<br />
with you. Inspired by the memory of fruit brioche that has stuck<br />
with him since childhood, this unassuming-looking soup is full<br />
of earthy, mouth-watering flavours: the brioche is meant to be<br />
dipped to soak up the artichoke cooked in truffle jus. A guest once<br />
likened this dish’s ingredients to three aspects of Savoy himself:<br />
“This dish... the artichoke is your modest origins, the truffle is your<br />
quest for excellence, and the brioche is your childlike soul.” Savoy<br />
thinks the definition fits him perfectly.<br />
Iced poached oysters are another innovation unique to Restaurant<br />
Guy Savoy. The shell is lined with a lightly creamed purée of<br />
oyster; a raw oyster is laid upon it and covered with a jelly of oyster<br />
jus. A strip of sorrel, a touch of pepper and a brunoise of lemon<br />
finish the dish.<br />
Rhubarb isn’t an ingredient often seen outside of country<br />
roadhouses, and hardly ever in Parisian dining rooms. But Savoy<br />
does not treat inexpensive ingredients differently than expensive<br />
ones, he says. All ingredients deserve to be treated and cooked<br />
with care. Whether carrot, lobster, or foie gras, they are produced<br />
through the harvester’s hard labour. As long as the cook<br />
is willing to take as much effort as the farmers do, even simple<br />
ingredients can have unlimited possibilities, he believes.<br />
That’s what makes his rhubarb dessert so popular. Crisp strips of<br />
rhubarb are accentuated with a bonbon of rhubarb and vanilla sorbet.<br />
Rhubarb compote, honey and a vanilla jelly rest on a bed of<br />
meringue. Rhubarb has moved uptown.<br />
Savoy’s career path was inspired by his mother. One day, when<br />
he was young, he watched his mother bake langue de chat cookies.<br />
Common ingredients, flour, eggs, sugar, and butter, suddenly transformed<br />
into crisp, delicious dessert. He still remembers his surprise.<br />

of feedback does Savoy want most?<br />
“I don’t need to hear praise; a smile is plenty. If I’m healthy enough,<br />
my dream is to always be a chef and do well at what I do now even<br />
when I’m 100 years old. The wish is my motivation: turning ingredients<br />

When the fog rolls in over the undulating<br />
emerald fields of the Val d’Orcia, obscuring<br />
the tall cypress trees and medieval stone towers,<br />
time stands still. You cut into a thick steak, you<br />
sip a rich, bold super Tuscan, and breathe in the<br />
inviting Italian air, just as Michelangelo, Galileo<br />
Galilei, Dante Alighieri, Brunelleschi, and Puccini<br />

Tuscany has drawn tourists for centuries for<br />

Art<br />
Just strolling through the towns of Lucca, Pisa, and Siena,<br />
stepping into the beautiful churches, you’ll feel like you’re<br />
surrounded by art at all times. But a trip into the capital city<br />
of Florence is essential to visit the Uffizi to see such masterpieces<br />
as Botticelli’s The Birth of Venus, and the Accademia<br />
Gallery for Michelangelo’s David. Not until you see this<br />
massive five-meter-tall statue in person do you understand<br />
its significance. The statue depicts biblical David just before<br />
his legendary battle with Goliath, which is evidenced<br />
by him holding a slingshot in his left hand and a rock in<br />
his right. As for Botticelli’s work, it’s interesting to note<br />
that The Birth of Venus is one of the first Tuscan paintings<br />
painted on canvas, at a time when most popular works were<br />
being painted on wood, like the Mona Lisa. November is<br />
a perfect time to visit these great works as you can skip the<br />
lines at both museums and avoid the crowds.<br />

November marks the harvesting of olive oil —<br />
which is never as good as it is straight off the<br />
press. And it also marks the opening of the wild<br />
hare and boar season. So when you visit in November,<br />
you’re getting the best of the Tuscan<br />
foods fresh to your plate. The region is also famous<br />
for its bistecca alla fiorentina, a super thick<br />
bone-in T-bone steak that comes from the loin<br />
of a young steer in the Chianti region. The distinctive<br />
taste comes from a cut that’s cooked over<br />
coals, turned only once with the use of tongs (instead<br />
of a fork or instrument that might pierce<br />
the flesh of the meat) and is traditionally served<br />
with cannellini beans and fresh olive oil.<br />

Long gone are the days of straw-covered bottles of Chianti<br />
being the cheapest and most uninspired of the Italian wines.<br />
Tuscany today boasts some of the most famous appellations of<br />
Italian wine. The sangiovese grape is king here with Brunello<br />
di Montalcino, Chianti Classico, Nobile di Montepulciano,<br />
and Vernaccia di San Gimignano making up some of the finest<br />
wines in Europe. Look for the black rooster (gallo nero)<br />
on the seal on the neck of the bottle to show that the wine<br />
comes from Tuscany in the Chianti area. Super Tuscans, the<br />
bold reds made up of sangiovese and cabernet grapes, have<br />
become some of the trendy wines on the international scene<br />
as well. Look for standouts Sassicaia and Tignanello.<br />

Scenery<br />
The charming towns of Tuscany that dot the rolling<br />

the Arno River. Florence, the capital of the region,<br />
