THE ART OF FINE LIVING
The world’s biggest holiday — Chinese New Year —
was always a special time for me growing up. In our
family, we didn’t have the tradition of giving presents
to each other, though we did enjoy the holiday
in meaningful ways to wish in good fortune for the coming year.
On chuxi — New Year’s Eve — we’d gather at my grandparents’
to spend time with family members we didn’t see often enough,
to celebrate a year of hard work and to wish loved ones
prosperity going forward. And, of course, all of the merriment
revolved around one very important thing — eating.
The last meal before the New Year was the most important
dinner of the year for good reason — it would ring in good tidings,
packed with symbolism in every course. My grandparents would
prepare for many days, sometimes even weeks, to make sure
our year started off on the right foot.
My grandfather’s responsibility was the eight-treasure ricecake
dish called nian gao — “nian” sharing the same phonetic
sound as “year,” and “gao,” the same sound as “high up.” So
eating the symbolic dish would encourage us to rise higher
each year.
My father would rein in prosperity by cooking fish — yu —
which sounds like “surplus” or “abundance.” The good luck
would continue with good company, as we poured tea for our
elders, offering our sincere blessings.
Shousui, or “staying up all night,” was a customary act of filial
piety, a chance for me to wish my parents a long and healthy
life, a custom I enjoyed while watching fireworks and making
dumplings.
It was as exhausting as enjoyable — the elders put their heart
and soul into cooking, and the kids fought off food coma to
stay awake. It’s a holiday that fills me with gratitude and
hope, inspiring me to be a better daughter or granddaughter
(regardless of my age), and with a renewed source of support
and love, to go live life to the fullest. We hope you feel that same
feeling of warmth and prosperity reading this Chinese New Year
edition, and that this same spirit fills you for the rest of the year.

As a very young girl, I would visit my
grandmother, and if I wasn’t wearing
jewellery, she would joke and ask if I was in
mourning,” Coomi Bhasin remembers with a
smile. Growing up in Bombay, India, the jewellery
designer’s love affair with precious metals and gems began early.
“As far back as I can remember, I’ve always had a passion for jewellery and creating tangible
beauty,” says Bhasin, recalling Indian women wearing “incredible pieces from their foreheads
down to their feet” on a daily basis. An art history graduate, she traversed the realms of
architecture and landscape design before launching her namesake jewellery collection. Her
diverse experience is evoked in her designs: a mix of both modern and ancient, executed
with engineering precision. Inspired by everything from the ornate forms of her birthplace
to the dynamic energy of urban skyscrapers, Bhasin’s distinctive pieces have been Hollywood
darlings, gracing the likes of Sara Paxton, Tyra Banks, and Jessica Alba.
“There is an Eastern feeling in the motifs, which all have spiritual meaning and symbolism,”
says Bhasin. “I believe that only when jewellery is worn on the body, that it is complete.”

She may play with the finest of gold and
diamonds in her masterpieces, but Bhasin’s
own style tends towards the sweet, simple, and
sentimental. An eclectic glass charm necklace, a
cherished gift from loved ones, adds a colourful
statement to her low-maintenance getup of dark
jeans and a white shirt — with a decadent wink
of a red studded Valentino pump, admittedly.

地 方 , 道 約 有 飛 天 藝 術 學 可 以 學 , 就 想 去 一 下 。」

As the face of Shen Yun Performing Arts’ poster for the
past two years, Hsiao-Hung Lin still seems unaware of
her stardom. “That’s just a photo,” she says. “I’m not like that in
daily life.” She laughs.
Leaps and bounds
Born in Taiwan, the youngest child, with an older brother and
two older sisters, Lin started to learn dance at the age of 11. “I
remember I often quarreled with my sisters when I was young,”
says Shen Yun’s leading lady. “It’s probably because we were too
noisy; I was then sent to learn dance.”
After learning some basic skills of ballet, Lin wanted to take
the next leap in dance at age 14. “I had seen the performance of
Shen Yun Performing Arts in Taiwan,” she says. “I wanted to be
like them, but there was no place teaching professional classical
Chinese dance in Taiwan. I knew Fei Tian Academy of the Arts
in New York teaches it. So I gave it a try.”

After passing the academy entrance exam, Lin set off
to study abroad by herself, and despite her young age, she
wasn’t worried about being homesick. “There were a lot of
people at home, so I felt pretty good to leave home at that
time,” she says. “Maybe my response was somewhat slow.
After staying in New York for three years, I seemed to
suddenly realize that I was abroad all by myself.”
Her optimism and carefree personality helped her adapt
to the new environment
more easily than other
students. However, the
arduous professional
dance training and busy
schedule of the world
tour took her focus away
from any difficulties,
such as the language barrier and different eating habits.
“Once you pursue a professional dancing career, it’s not
something playful anymore,” she says. “Dancing is different
from singing. If a person is talented in singing with a
particularly good voice, they can sing well even if they don’t
practice much. But it’s not the case for dance. Even if you are
talented, you have to practice diligently. If you don’t practice,
you simply can’t do the technique. You can’t do it well.”
Lin’s physical strength was good for dance, she said,
but she wasn’t flexible enough. She often regrets that she
didn’t practice more when she was little. “If I stretched my
legs more then, I wouldn’t need to work so hard later.”
Now a veteran, Lin explains that she’s fortunate to be able
to share her experiences with the junior dancers.
“I’ve performed about 900 performances in the eight
years since 2008 when I joined the world tour of Shen
Yun Performing Arts — it’s even hard for me to believe
sometimes,” she says. “I was the youngest child at home, so
I didn’t know how to take care of myself. But now I’m not
only independent, I also have to take care of others.”

“When you dance, you have to imagine the
scenes of the dance piece. The feeling of seeing
a mountain is different from that of seeing the
sea. Different feelings will make different movements.
Classical Chinese dance is dancing from
the heart, so what you feel is very important.”

After only one year away from home, when she first returned to
Taiwan, her parents almost didn’t recognize her at the airport. “I
looked completely different,” Lin says. “I was really much more
mature than before.”
Sea of change
Growing up in Taiwan, Lin was raised amidst traditional Chinese
culture, so learning “bearing” — the unique element of classical
Chinese dance where all expression initiates first from the
spirit — came naturally to her. “Our teacher often told us that
imagination is very important for dancing,” she says. “When you
dance, you have to imagine the scenes of the dance piece. The
feeling of seeing a mountain is different from that of seeing the
sea. Different feelings will make different movements. Classical
Chinese dance is dancing from the heart, so what you feel is very
important.”
Lin’s gold medal performance at the 2012 Junior International
Classical Chinese Dance Competition called By the Waterside
illustrates her sentiment. The piece is choreographed from “The
Reeds” in Classic of Poetry:
The reeds are luxuriant,
The white dew is turned to frost;
The one in my heart,
Is somewhere by the waterside.
“I read the poem first and then imagined myself in the scene:
I was at the beautiful waterside, breathing the fresh air,” the star
says. “I had to express the feelings of gently touching over the surface
of water with the fan in my hand. I had to try hard to fathom
and find the feelings. If I just listen to others’ interpretation, it’s
not mine. Then I can’t express the authentic feelings in my dance.”
Two years later, she won gold again, this time in the adult division
of the same competition. But she was surprised when she
was favoured by the judges. “I still felt stressful after winning the
prizes — I felt I had to do better in the future,” she says. “My
preparation for the competition was a natural process. I just kept
practicing, finding problems and correcting them every day, and
honed my skill for the dance piece, step by step. Actually, that’s

dance — you have to work hard all the time. At last, it’s
just a natural presentation on the stage.”
Not only did she bring home gold, the two competitions
provided Lin with a deeper understanding of classical
Chinese dance. “What I felt improved was mainly
coherence,” she says. “The most difficult part for dance
is the connections between different movements, and it’s
especially important for classical Chinese dance. We often
say: the beauty is in the process. Individual movements
and combinations are similar. The difference lies in the
connection of two movements. When dancers express the
subtle feelings from one movement to another, you can
really feel rich connotation inside it.”
When all the internal and external components of
dance work together, the experience is powerful, for Lin
and the audience. During Shen Yun’s 2014 tour, she
played a little girl in a program called The Steadfast Lotus,
a story about the persecution of the meditation group
Falun Dafa in China.
“The girl was left alone because her parents were
arrested for practicing Falun Dafa,” she says. “I was born
in Taiwan and did not personally experience such brutal
persecution, so I searched many photos and stories on
the Internet to help myself imagine if I were a child, how
I would feel losing my parents and how I would make
myself strong and sturdy again.”
Her research and training paid off, leaving a lasting
impression on everyone watching. “I remember when I
danced the piece, I shed tears for eight out of the ten
performances. The audience members might not be able
to see my tears, but I could see them wiping their eyes
from the stage. I knew they were really moved.”
A single intention
Looking back at her dance career of so many years, Lin
feels deep gratitude for the opportunity to be a part of
such a unique company as Shen Yun. “Our environment
is very simple,” she says. “Everyone has just one common
goal: reviving authentic traditional Chinese culture. With
this aim, teachers teach us wholeheartedly. They hope we
can learn everything. We have very few conflicts between
classmates, so we can focus all our efforts on dance. In
other places, people might waste a lot of energy dealing
with interpersonal relationships.”
It seems as though they aren’t just preserving a traditional
art form, they’re practicing it too.

“I’ve read many articles and poems from ancient Chinese
people, such as Su Shi, Du Fu,” Lin says. “I found that many
of them have been demoted because they gave straightforward,
truthful advice to the emperors. But when they suffered
personally, they still just wrote about their worries for the
common people and the emperor being cheated by treacherous
court officials. In short, they never thought about themselves.
Since we’re promoting traditional Chinese culture, we should
first have these qualities ourselves.” A seriousness overcame
Lin’s typical light demeanor as she discussed Shen Yun’s mission
to revive 5,000 years of divinely inspired Chinese culture.
“China had been such a good country with such a splendid
culture,” she says. “It was a country of etiquettes. But all these
were destroyed under the rule of the Chinese Communist
Party through many movements such as the Great Cultural
Revolution. The modern-day Chinese people don’t know what
their own ancestors were like, and people in other countries
know even less. Isn’t it sad? Whenever I think about it, I feel
my responsibility is great.”
Every year, Shen Yun produces a new program, planning
and preparing for six months, then touring the second half of
the year, for 100 performances.
“Sometimes it’s really a test,” Lin says. “It’s not performing for
one or 10 performances but about 100. I have felt tremendous pain
some time. However, I seemed to let go of it all of a sudden last
year. I thought the key point for doing one thing is the process. It’s
always about 100 performances that I have to perform whether
I’m happy or unhappy, so why don’t I make myself happy? I think
what I do is such a meaningful job. I’m actually quite lucky.”
Lin told us that Shen Yun has toured almost every part of the
world since its inception 10 years ago. “We’ve even performed
in some small cities in the U.S.,” she says. “The local people
probably hadn’t seen so many Chinese people in their whole
lives, nor know anything about classical Chinese dance.”
Lin thinks that every Chinese person can be proud of
Shen Yun. “I think Shen Yun is opening up a new market
for Chinese culture around the whole world,” she says. “It’s a
pioneer reviving traditional Chinese culture. When I go back
to Taiwan, I always tell my relatives and friends that the target
audience of Shen Yun is all countries and all ethnic groups
around the world. The live orchestra blends both Eastern
and Western instruments in a performance that extracts the
essence of art from all of mankind, accentuating traditional
Chinese culture. We are really one-of-a-kind.”

The first thing you must know about furniture atelier
Living Divani: it’s an Italian company. Not only in the
name, divani being Italian for sofa, but in the way it does
business. In its dedication to its craft. In its idea of what
constitutes good design. In its aesthetic of what’s pleasing to
the eye and the touch. In its soul, in other words.
Carola Bestetti wouldn’t have it any other way. As the
studio’s current president, and daughter of its two founders,
Bestetti wears her heritage with pride: the craftsmanship,
the traditions, and the years of know-how embodied in the
community of artisans, designers, suppliers, and manufacturers
who have lived in the area north of Milan for generations.
And of course, the family. “I always say Living Divani is in
my DNA,” Bestetti says, smiling as she leans back and settles
into one of her company’s immensely stylish, immensely

Living Divani’s wares. “I spent more time in the company
when I was little — because my parents had to sometimes
work on the weekend, so I would walk around and be there.
And it grows on you.”
Growing is something that Living Divani has been doing
for a while now. The company started almost 50 years ago,
producing fine, mostly leather Italian upholstery. Gradually,
that grew into an entire
line of chairs and sofas,

Bestetti says emphatically of the sofas, pressing and pushing
the cushions she’s sitting on to drive home her point. “The one
thing that I always like to say is that whatever piece of furniture
you put in an environment, it might change the look of
the environment, but it’s who’s living within the environment
that makes it alive. It’s not what you put inside. It’s how you
live with it.”
To that end, Bestetti is hard at work expanding the studio’s
work beyond its traditional expertise in upholstery. In doing
so, she has also expanded the company’s stable of designers,
and invited up-and-coming talent to contribute to the studio’s
work. “I decided to focus on emerging designers,” she says. “I
thought that [would be] a good choice for us, to be able to

have fresher ideas on certain levels, [and] to give a chance to
other designers to be seen and known.”
As new designers come on board, Bestetti has worked
hard to ensure there’s a coerenza (coherence) among the various
pieces. No matter what the company puts its name on
— sofas and armchairs, obviously, but more recently, beds,
shelving, tables, carpets, and other furnishings — it will display
a sense of refined,
elegant minimalism:
clean, lightweight
designs that are luxurious
without being
ostentatious. Indeed,
looking through the
catalogue, you get the
sense that for Living
Divani, everything
there has a purpose,
and there is nothing
that doesn’t need to be there.
“We’re very straight in our path,” Bestetti says with confidence.
“This is what we are. We do not follow trends as much.
We listen to the market and what the market asks for — but if
you do that [too much], it would be a mess because we would
have to jump from one side to the other every other month.
So we try to pick on what the market and the clients are looking
for, but within our philosophy.”
It helps that the studio’s art director and lead designer is the
world-renowned Piero Lissoni, who first started collaborating
with Living Divani in 1988. “My parents found in Piero the
person who could give form to their ideas,” Bestetti says.
Responsible for literally dozens of Living Divani’s best-known
and best-selling pieces over the years, as well as the design
and architecture of the company’s headquarters in Anzano del
Parco, Lissoni lends a sense of continuity and “house style” for
the studio. “His mark on the collection is very visible.”
As Bestetti explains, that style might be best described
as “silent” design. “Our products represent sophistication
which is not shouted out. Our pieces could fit in any kind

of environment because they’re silent. You can put [one] in
a 19th-century building, or a postmodernist building or an
industrial building, and it can fit, because it blends in. It’s
somehow in the background but it stands out at the same time.”
Take the frog chair, for example. In a catalogue that spans
hundreds of items, it remains one of Bestetti’s favourites. “It’s
one of the pieces that always stays with me, maybe because
I was little when it was launched,” she says. The elegantly
curved, casual-yet-chic Lissoni design is classic Living
Divani — minimalist and graceful, yet practical at the same
time. “Even after 20 years, I think it’s very [relevant] still. It’s
another of our characteristics: our pieces are kind of timeless,
because they can last for a long time without disrupting or
changing the idea.”
She’s smiling as she talks, describing the form and function
in a way that reveals not only her feelings for great design, but
for the business that created it. And on that score, Bestetti is
unapologetic; she’s attached to her company in a way that goes
far beyond business.
“But that’s what makes the difference; it’s a passion,” she
says. “This is the very Italian part of me, the passion you put
into what you’re doing.”

James Tufenkian realized early on that his family’s survival
of the Armenian Genocide was a gift not to be taken for
granted. With a heart to help — and heal — the world, he
founded a business that not only gave him and others purpose,
he invented an entirely new market, breaking barriers in more
ways than one.
“I was raised in a Christian family in which I was taught
that Christians are called to follow Jesus’ example and to serve
others with their lives and work,” says Tufenkian, founder of
the luxury fashion carpetmaker Tufenkian Artisan Carpets.
As a 14-year-old, he knew clearly his life plan — “get a
great education, make a lot of money as fast as possible, and
then use that money and the rest of my life to make the world
better.”
While a grand vision may have been set, the details of the
journey would take unexpected twists and turns. On course to
be a civil rights or poverty law attorney, Tufenkian took a step

few do until it’s too late. “Midway through my second year, I
looked myself in the mirror and said, ‘In one and a half years,
you will go out into the world pretending that you are competent
to handle the big problems of real people when all you
have done your whole life was study,” he says. “You can’t take
yourself seriously as a lawyer and trusted adviser until you get
some real world experience.”
So he graduated from New York University School of Law,
but with one caveat — he wouldn’t become a lawyer, at least not
right away. At the time, he was paying for law school by buying
and selling Persian rugs, a trade he’d learned earlier working
in the San Francisco warehouse of a rug importer, where he’d
fallen in love with the beauty of traditional carpets. “The individual
points of colour, each of which was meaningless, but
when taken together, were amazing works of art, embedded
with many thousands of hours of human labour,” he says.
His new plan? “Spend a few years travelling the world, buying
and selling rugs to make money, and experience the world
through business in “strange” places before returning to the
law later,” he says. As fate would have it, the inspiration he
received on his sabbatical would propel him to do something
no one had even conceived of yet.
In the early ’80s, the rug industry was dominated by Iranian
carpets, with no high-end niche tailored for fashion. Although
the world leader, Iran had lost its respect for traditional craftsmanship
and quality, “caring little about the yarn and dyes that
were the building blocks of the carpets — the focus was instead
on knots per inch,” says Tufenkian. The carpets looked as
though they were machine-made, and “lifeless.” He says, “My
vision was to bring back the lost virtues of antique carpets and
the ‘feel of the hand,’ which made them so endearing.”
Tufenkian was determined to pioneer the industry, marrying
traditional materials and craftsmanship with fresh designs that
architects and interior designers would love. But to bring his new
vision to life, he needed a production partner who shared his
same standard for quality, where he could also control design.
“Finally one day I was introduced to a Tibetan refugee who
had a small production of the finest carpets in Nepal,” says

the entrepreneur. “I told him about my vision for developing
and dominating the U.S. market, and asked him if he
would partner with me.” After a simple handshake in 1986,
Tufenkian Artisan Carpets was born, along with the highend
fashion carpet industry. “That simple agreement and the
intellectual and emotional commitment that stood behind it
lasted for 25 years.”
But the 5,000 employees in its Nepalese factories and 150
distributors around the world only illustrate part of Tufenkian
Artisan Carpets’ success today.
“What is the point of making money? What is the point of a
life?” Tufenkian asks rhetorically. “The more important question
was how would I feel on my deathbed, looking back on my life,
and asking how I had spent this one chance on earth. My upbringing
and beliefs convinced me that I had to live for others.”
While Tufenkian’s heart was in the right place, his idea of
a fast exit selling his carpet business to then dedicate his life
to philanthropy wasn’t looking realistic. So, he flipped the
model of “giving back later” and decided to just start making
a difference right away — with a lasting impact that trumps
that of even much larger companies.
“Inspired by the example of my Tibetan partner, who had
started several micro projects in Nepal to help the needy, I
decided that I should make the business serve some social
purpose besides just providing honest work to the poor of
Nepal,” he says. “So together we set out to provide health
care facilities, a school, and environmental protections for our
thousands of workers, their families, and the communities in
which we worked. I started to sleep a little better.”
Always looking to do more — for others and in business
— Tufenkian came across a rare opportunity in the early ’90s,
with the fall of the Soviet Union.
“Immediately after declaring independence, Armenia found
itself blockaded on two sides, its people cold and hungry with
no energy and freezing winters, and at war with neighbouring
Azerbaijan,” the founder says. “I had to do something.”
Tufenkian then started a new segment of his business,
manufacturing luxury handmade Armenian carpets designed
with their own authentic, local flavour. “Armenia to me is all
about the ruggedness of the mountains, the life and landscape,
the ruggedness of historic materials of stone, wood and metal,
which were the basic components of craft, without trying to
make them overly refined,” he says.
With the success of his Armenian branch of luxury rugs
came much more opportunity to develop his ancestral homeland,
such as building hotels and establishing the Tufenkian
Foundation, which tackles more than 25 sustainable charitable
projects in Armenia and Nepal. His work there only
further proves that his philosophy is as alive today as ever
— “working in business to serve the twin goals of making
money, and making the work itself improve lives and alleviate
suffering, and committing to measure how well you are doing
by the degree to which you accomplish both.”

Design is, ultimately, about vision: what the designer wants
to “say,” expressed in the language of scale and proportion,
colour and texture.
As Anna Simone of Toronto-based Cecconi Simone Inc.
explains, the vision for Kishti Blackgarden on the Caribbean
island of Anguilla was as simple as it gets: stay quiet and let
Mother Nature do the talking.
“When you have a landscape like [this], why would you want
to visually pollute it — to distract the eye from what is really
important, which is the view of the ocean?”
To call this villa a dream home would be an understatement.
Perched on a small outcrop of volcanic rock on the north side
of the island, the 15,000-square-foot home is situated just a few
feet from the blue waters of Blackgarden Bay. The home opens
like a fan in three distinct sections that hug the shape of the
coast: master suite to the east, guest villas to the west, living area
in the centre.

add a bit of personality and a subtle nod to the homeowners’ love of travel.

Simone’s firm was involved with nearly all elements of the
build, from project management to interior decorating to the
purchase of furnishings and finishings. Her work was as much
about bringing the building to life — with interior and exterior
sight lines, cross-ventilation, entrances and exits, and so on — as
it was about picking the right furniture and accessories. “People
immediately think of just the cosmetic component of it, [but]
interior design is really interior architecture,” she says. “And this
[project] is a perfect example.”
The most notable part of Simone’s design is what you don’t
see: colour, for one, or visual clutter of any kind. “I’m glad you
noticed that,” she says. “Because a lot of what we do is designing
the architecture to be the canvas, in order to support everything
within it.”
To that end, Simone’s firm worked with a neutral palette of
tans, off-whites, and greys, along with simple, natural materials:
travertine, weathered wood, large panes of glass. Furniture is
modern and unadorned, with simple horizontal lines and a
minimum of fuss. Accents and flourishes are few — but their
scarcity makes them stand out all the more, lending rooms a
distinct visual punch: a pot of vividly-coloured orchids, a handcarved
Balinese sculpture, Tibetan singing bowls.

The result is a quiet, understated elegance where every element
present lends a sense of easy, natural calm to the entire space.
“The design is very minimal, and very detailed. We wanted a
balance of the two.”
While the aesthetic may be minimal, the effort involved to
bring it to life was anything but. As Simone explains, situating
the home a stone’s throw from the ocean brought distinct design
challenges. “The salt water is so close to the house, so your
[design] choices, and the durability and maintenance of even
equipment... are things that you think about,” she says. “TVs
don’t last more than three years once the salt water gets in. You
don’t bring veneers — everything has to be done in solid wood,
and the woods have to be very conducive to the tropical climate.”
Of course, visitors don’t see any of that. Instead, what they see
is the ocean, preferably from the spacious, airy great room in
the centre of the house. The room is the showcase for Cecconi
Simone’s vision, with 15-foot-high ceilings that vault gently
outward to the floor-to-ceiling windows. Open those windows,
stroll onto the expansive deck, and you step into a vivid panorama
of sea and sky — the kind of vista that belongs in dreams.
“I have seen more people walk through that [room], and have
their breath taken away,” Simone says. “It really is magnificent. I
just wish I could take that experience and bottle it.”

An inextricable part of the lantern-lit magic that
surrounds Chinese New Year celebrations is its rich
symbolism, rooted in millennia-long tradition and the
wisdom of an ancient culture. Some of the Lunar New
Year’s most meaningful rituals revolve around food and
the theme of prosperity. In particular, specially prepared
sweet delights are traditionally consumed during the
holiday, promising prosperity and fortune.
Sharing a spread of delicacies with family and friends is a
joyful tradition, a gesture of spreading wealth and abundance
along with good wishes. Each dish and ingredient in these
edible offerings is chosen with purpose, based on its symbolic
value and the message it brings for the year ahead. With the
number eight carrying lucky meaning in Chinese culture, it
is common to present a boxed tray filled with eight types of
sweet fruit or nuts, for a fortune-filled year to come.
In this version, we use glass jars instead, to present a sugared
treat of candied orange peel, or kumquats, if preferred. Their
round shape symbolizing infinity, oranges and mandarins
are a New Year staple, while kumquats signal prosperity, as
the word kum resembles the Chinese word for “gold.” For
a meaningful set of eight, these homemade confections can
be paired with other symbolic sweets: lotus roots standing
for abundance, lotus seeds for family prosperity and fertility,
longan for happy and plentiful children, jujube for hope,
peanuts for a long life, melon seeds for joy and happiness, and
coconut for togetherness.

peel of 4 organic oranges (with pith, the white
part) or kumquat
granulated cane sugar
water

Slice the peel, thinly or thickly depending on your
preference. If using kumquats, they may be left
whole.
Place the peel in a pot of water, enough to cover,
and bring to a boil. Simmer for 5 minutes and strain.
Repeat the above step 2 more times, except during
the final time, let the peel simmer for 30 minutes.
Strain the peel, reserving the water. Depending
on the amount of water, measure out an equal
amount of sugar (for example, 400ml to 400g) and
add into the mixture. Return the peel and sugar
mixture to the pot and let it simmer for 30 to 45
minutes, until peel is translucent and soft. Do not
stir the mixture or it will crystallize; if necessary,
swirl the pot briefly.
Turn off the heat and allow the peel and syrup to
cool. Remove the strips with a fork or strainer and
put them in a single layer on a wire baking rack,
set on a baking tray lined with baking paper. Place
into an oven preheated to its lowest temperature
setting, and let sit for about 45 minutes or until dry.
Remove the peel from the oven and immediately
toss it in granulated sugar. Let cool completely
before storing in airtight container.

SLOPES: With only eight lifts and predominantly
challenging terrain, Aspen Mountain is the smallest
and toughest on our list. It’s ideal for expert skiers
who don’t want to worry about sharing the hill with
those learning their technique. Luckily, Buttermilk
and Snowmass mountains are nearby to offer
beginners and intermediates some excellent slopes.
VILLAGE: Aspen Village is the glitziest on our list.
You can pop into Prada or Louis Vuitton to spend
some serious cash before inevitably spotting someone
famous at the glamorous Matsuhisa for sushi, but
you’ll find the real foodies over at Ajax Tavern
indulging in their decadent burgers and truffle fries.
ACCOMMODATIONS: The Little Nell is the place to
be in Aspen and constantly comes out on top in all of
Colorado. Tucked away at the base of the mountain,
it’s great for those wanting to put their skis on first
thing, and for off-the-slopes enrichment.
FAMILY/ACTIVITIES: Not only is there worldclass
shopping in the village, but Aspen has its
own ballet company and modern art museum for
those looking for enrichment off the slopes.

the highest peak being 436 metres above the valley.

SLOPES: The slopes of pristine Deer Valley are
for skiers only (snowboarders are relegated to Park
City down the road), and are known for their
miles of well-groomed corduroy — the pattern in
the snow left by the grooming cats. Deer Valley
invented the luxury ski experience, with tissues
and sunscreen at every lift, hot chocolate, and a ski
butler who runs out to collect and store your skis as
soon as you get to the bottom of the hill.
VILLAGE: Gone are the days where blue laws
made après-ski tippling difficult in the Utah town
of Park City. These days, all you need to do is order
an appetizer with your mountaintop suds and take
in the stunning vistas. Head to the Buvez bar at
The Chateaux for cocktails, with views of both the
mountain and the village.
ACCOMMODATIONS: The Stein Eriksen Lodge is
quintessential ski luxury. Rooms are spacious and
well-appointed, but the staff, who consistently go
above and beyond, make this hotel one you can’t
wait to get back to at the end of a day on the slopes.
FAMILY/ACTIVITIES: For 10 days every January,
Park City is overrun with celebs and Hollywood
types as they invade for Robert Redford’s Sundance
Film Festival. While dinner reservations can
be a hassle during this time, the parties, pop-up
nightclubs, and of course movies, add to the fun.
Plus, everyone’s worried about the film festival,
leaving the slopes nearly empty!

SLOPES: With 150 trails of varied terrain, Beaver
Creek appeals to all levels of skiers. The popular
run Centennial offers three miles of corduroy-blue
perfection, but for the dare devils out there, the
off-piste areas (outside the designated slopes) offer
acres of terrain that’s never skied off.
VILLAGE: The village at Beaver Creek is small,
but offers some serious shopping. Beano’s gets all
the attention for mountaintop dining, but insiders
opt for Zach’s Cabin, which serves game and
hearty fare in a beautifully adorned mountain
lodge accessible only by snowcat. So cuddle up
under the blankets and be ready to be blown away
by a starry night.
ACCOMMODATIONS: The Ritz is the best game
in town in Beaver Creek and is the focal point of
the nightlife. It’s the best place for an après-ski
cocktail, and it even has little s’mores kits to use
with its fire pit for the kids — or those of us who
still eat like one.
FAMILY/ACTIVITIES: At the top of the
Strawberry Park lift, kids can pop into the Candy
Cabin to indulge in confectionary delights to
power them through the ski day.

The true flavours of Mexico have often been overshadowed
by depictions of American spring
breakers overrunning beaches as MTV film crews record
the hedonism for the world. But this belies the
enchanting country that has significantly more to offer
to those in the know — with millennia of indigenous
history to explore, sophisticated cities that rival any in
Europe, and quaint countryside villages that feel like
you’re going back in time. Mexico deserves another
look, and most definitely a visit.
MEXICO CITY
According to legend, Huitzilopochtli, the sun and war
god, told the people of Aztlán to pilgrimage until they
saw an eagle perched on a prickly pear cactus devouring
a snake, and there they would thrive and build a powerful
empire. After centuries of searching, the Aztecs
finally saw such an eagle on an island in Lake Texcoco
in 1325, and founded the ancient city of Tenochtitlán.
They built a city that became the most important in Mesoamerica
for centuries, with more than 70 temples and
structures around this lake, which has today become El
Zócalo, the main square, of Mexico City. And the eagle
the Aztecs saw has become the symbol of the country,
emblazoned on the Mexican flag.
Today, Mexico City is a teeming city of 8.8 million,
offering modern luxury, international cuisine, and
world-class amenities. Relax in the artistic Las Alcobas
hotel in the fashionable Polanco district with the
trendsetters, and follow those in the know (or reach out
over Facebook) to get into Hanky Panky cocktail bar in
La Juarez, whose namesake cocktail features vermouth,
gin, and a splash of herbaceous Fernet Branca.

The first city in Mesoamerica, Teotihuacán, is thought
to have been home to more than 100,000 people at its
peak, in 600 CE. When you visit today, the landscape is
dominated by the Pyramid of the Sun and the Pyramid
of the Moon, which can be found along the Street of
the Dead.
The Pyramid of the Sun was named by the Aztecs, who
came centuries after the city was abandoned. It stands
as the third highest pyramid in the world, at 71 metres
tall. Atop the Moon Pyramid sits an altar used in the
worship of the Great Goddess, whose domain included
the underworld, creation, darkness, earth, water, and war.
Both pyramids and surrounding temples at one point were
covered in plaster and bright murals of significant religious
iconography. Although none of this decoration remains, if
you visit at night, they illuminate the facades with light to
recreate the vibrant adornments of centuries past.
When you visit today, make sure you’re ready to climb
some stairs, as the pyramids contain many, but the hike
is worth it — the view from the top is not to be missed.
Also, remember there is very little shade, so protect
yourself from what can be intense sun, year round.

Taxco de Alarcón is referred to as one of Mexico’s
“Pueblos Mágicos,” or magical towns, and as soon
as it comes into view, you can see why. Situated on a
precipitous hill and containing steep and winding
streets, its breathtaking colonial gothic style will make
you feel as if you’ve gone back to a simpler time. The
magnificent centrepiece of the town is the pink-stone,
18th-century Santa Prisca church, which sits on the east
side of the Plaza Borda, and you’ll be able to find your
way around by looking for its twin spires amidst the
Spanish red-tile roofs.
Until very recently, Taxco was known for its silver
mining, but today it relies on tourism and its worldfamous
silver jewellery and silverware. Take an evening
to get lost in the winding narrow streets, dining late, as
is the local custom, and immersing yourself in the quiet,
otherworldly town.

ACAPULCO
Once the playground of old Hollywood, with
Frank Sinatra, Judy Garland, Elizabeth Taylor and
Elvis Presley frequenting the resorts and sandy
beaches, Acapulco gained the nickname “the pearl
of the Pacific.” Now it’s making a comeback for the
jet set, with luxe spots to hang your hat, such as
the Banyan Tree Cabo Marqués, in the exclusive
Punta Diamante. This cliffside resort offers private,
stilted villas with spectacular views, fine dining,
horseback riding, surfing, and even the renowned
cliff diving.
Although this oasis is known for beaches and
relaxation, you can find some attractions to get you
off the sand. The world-class Acapulco Botanical
Garden is worth a visit when you need to see some
greenery. You can tour the Mercado Municipal and
see the petroglyphs set in a beautiful forest. Then
you can explore the nightlife, a sight to see with
its teeming nightclubs and bars, before making it
back to the quiet hillsides.
