CHOCOLATE HERITAGE<br />

Based in Erembodegem, just west of Brussels, Belgium,<br />

Belcolade is part of the international Puratos Group.<br />

Back in the 1980s, when many of Belgium’s large<br />

flagship chocolate companies were taken over by<br />

foreign groups, Puratos decided to protect one of<br />

the most precious elements of Belgium’s culinary<br />

heritage: real Belgian chocolate. Everything was built<br />

from scratch: from the brand itself to the flavour<br />

profiles and the factory.<br />

A SUSTAINABLE FUTURE FOR CHOCOLATE<br />

Belcolade has pioneered Cacao-Trace, a sustainable<br />

cocoa sourcing programme that is redefining the<br />

standard for chocolate. Cacao-Trace was launched<br />

in 2013 after the company decided to develop its<br />

own approach for better control of the cocoa chain.<br />

The programme – which is validated by independent,<br />

third-party certification – focuses on taste<br />

improvement rather than <strong>product</strong>ivity, and adds<br />

to the typical industry standards of training cocoa<br />

farmers and fair pricing.<br />

‘FERM’ FOUNDATIONS<br />

Proper fermentation is the key to great tasting<br />

chocolate. Belcolade’s team of experts work closely<br />

with cocoa farmers to help them to produce cocoa<br />

beans of superior quality. Traditionally in chocolate,<br />

different quality cocoa beans are bulk-blended to get<br />

a standardised quality and taste, but Cacao-Trace takes<br />

a different approach. Instead, cocoa beans are selected<br />

for their character and their quality is carefully checked.<br />

EXPERT HELP<br />

The beans are fermented in post-harvest centres close to the farmers in Ivory Coast, Mexico, Papua New Guinea,<br />

Philippines and Vietnam. This way, the natural taste potential of the beans can fully develop and can eventually be<br />

expressed in the final chocolate. By adapting the fermentation criteria, it even allows them to adapt the flavour from<br />

the same beans to personal preferences. Delivering wet beans to the post-harvest centres (instead of fermenting and<br />

drying themselves) also gives cocoa farmers more time to spend on other activities on their plantation.<br />

WIN WIN<br />

The end result is great tasting chocolate which earns<br />

the cocoa farmers more money. They also receive an<br />

additional <strong>Chocolate</strong> Bonus (of 10 cents) for every kilo<br />

of chocolate sold, which can add up to one or two months<br />

of additional salary. Chocolatiers benefit by having access<br />

to chocolate of the highest quality - so it’s a win-win for<br />

everyone. The Cacao-Trace programme also runs projects<br />

to improve local communities in cacao-growing regions.<br />

HAZELNUT, CINNAMON<br />

AND CHERRY PRALINE<br />

Ingredients<br />

■ 250g Sosa hazelnut praline<br />

■ 50g roasted chopped hazelnuts<br />

■ 35g Sosa cherry crispies (crushed slightly)<br />

■ 100g Belcolade vegan milk-a-like chocolate<br />

■ 2g ground cinnamon<br />

SHELL<br />

Ingredients<br />

■ Belcolade vegan milk-a-like chocolate<br />

■ Roasted hazelnuts<br />

■ Wrights of Lymm edible gold leaf<br />

■ Belcolade cocoa butter<br />

Method<br />

■ Temper the vegan chocolate<br />

■ Slightly heat the praline and add to the chocolate<br />

mix to combine<br />

■ Add in the hazelnuts, cherry crispies and ground<br />

cinnamon<br />

■ Place mixture into a piping bag and pipe into shells<br />

leaving 2mm from the top of the mould to allow<br />

for a cap<br />

Method<br />

■ Temper the vegan chocolate and mould a shell<br />

■ Fill the shell with the praline and leave<br />

to crystallise. Cap the bars and turn out.<br />

Place on to a wire rack<br />

■ Temper 300g vegan milk chocolate and<br />

100g cocoa butter<br />

■ Add the roasted and chopped hazelnut pieces<br />

(more for extra texture)<br />

■ Place the mixture into a piping bag and pipe over<br />

the top of the bars, ensuring all corners and sides are<br />

covered. For an extra crunchy texture, allow the bars<br />

to set and repeat<br />

■ Once completely set you can garnish<br />

with edible gold<br />

Valentine’s raspberry<br />

and rose pâte de fruits<br />

Ingredients<br />

■ Tempered white chocolate<br />

■ Tempered coloured cocoa butter<br />

■ 1kg Leonce Blanc raspberry puree<br />

■ 1kg caster sugar<br />

■ 30g Sosa fruit pectin<br />

■ 300g Sosa liquid glucose<br />

■ 5g Sosa citric acid powder (add a touch of water<br />

to make a solution)<br />

■ 30g Sosa rose water<br />

Method<br />

■ Mix together the pectin and the sugar in a bowl<br />

In a pan heat the puree and glucose to 40°C<br />

■ Once the puree mixture has reached 40°C, slowly<br />

start pouring in the sugar and pectin constantly<br />

whisking to avoid lumps<br />

■ Bring the mixture up to boil, until it reaches 106°C<br />

■ Once at 106°C remove from the heat and add the<br />

citric acid solution followed by the rose water<br />

■ Mix thoroughly, pour the mixture out into a cling<br />

film lined gastro tray and leave to chill and set<br />

■ Finally, once set, blend the jelly to a smooth paste<br />

and adjust with some raspberry puree if needed<br />

Assembly<br />

■ Decorate the heart mould with tempered coloured cocoa butter<br />

■ Flood the mould with tempered white chocolate then pour out and tap to create the shell<br />

■ Fill the mould with the raspberry and rose pâte de fruits, leaving a 2mm gap from the top<br />

■ Cap the mould with more tempered chocolate, allow the chocolate to set and contract away from the mould then<br />

turn out the chocolates<br />

Ingredients<br />

■ 115g Leonce Blanc pineapple puree<br />

■ 40g Sosa liquid glucose<br />

■ 30g Sosa granulated sorbitol<br />

■ 300g Belcolade white chocolate<br />

■ 30g Belcolade cocoa butter<br />

■ 50g Malibu<br />

Method<br />

■ Melt together the cocoa butter and white<br />

chocolate to 45°C<br />

■ In a separate pan melt together the sorbitol, glucose<br />

and pineapple puree until the mixture reaches 40°C<br />

■ Combine the two mixtures and blend with a hand<br />

blender to create emulsion<br />

■ Once emulsified leave the mixture to cool to 29°C<br />

before placing into a piping bag and piping into the<br />

chocolate shells leaving 2mm from the top of<br />

the chocolate<br />

Assembly<br />

■ Start with a polished mould<br />

■ Taking the tempered yellow cocoa butter, spray<br />

only one end of each cavity<br />

■ Let that set for a couple of minutes<br />

■ Next take the tempered orange cocoa butter and<br />

spray the rest of the mould creating the ombre effect<br />

■ Leave the cocoa butter to set for 5 minutes<br />

■ Next flood the mould with tempered white<br />

chocolate and tap to remove any air bubbles<br />

■ Turn the mould over and tap again to remove<br />

all excess chocolate and create a thin and even<br />

chocolate shell<br />

■ Prepare the ganache as above<br />

■ Pipe the ganache into each cavity making sure<br />

to leave a 2mm gap from the surface<br />

■ Leave to crystalise overnight in a chocolate fridge<br />

■ Once the ganache has been left to crystallise,<br />

you can then cap the chocolates<br />

■ After capping place the mould back into<br />

the chocolate fridge for 30 minutes<br />

■ Turn out the chocolates and enjoy<br />

Barbara Luijckx was founded in Poland in 1991<br />

with a mission to create high-end chocolate decor<br />

to service artisan and industrial professionals in<br />

the confectionery and foodservice sectors.<br />

The business was set up by four young graduates,<br />

none of whom had worked with chocolate before,<br />

but their passion and determination triumphed<br />

In 2014, Barbara and Ryszard Borowicz took<br />

over 100% of the shares in the company, and<br />

Barbara Luijckx became a family business.<br />

Their daughter, Paulina, and her husband<br />

Mathieu joined the management team,<br />

along with her sister Kasia.<br />

PRECISION TECHNOLOGY<br />

The founders harboured a fascination with using pure<br />

chocolate as a raw material and using technology that<br />

wouldn’t look out of place in the Silicon Valley, set<br />

about producing innovative, premium chocolate decor<br />

using precision technology, helping pastry chefs and<br />

INVESTING IN INNOVATION<br />

In 2012, the company expanded its <strong>product</strong>ion facility and launched a chocolate printing technology which enabling the<br />

<strong>product</strong>ion of multicolour decorations. The company also runs an ‘Academy of Skills’ hosting workshops and training<br />

sessions for professionals from all over world.<br />

SENSORY SKILLS<br />

A long heritage<br />

Callebaut has been bringing great chocolate<br />

to professional chefs, bakers and chocolatiers<br />

for over 100 years.<br />

It all started in 1911, in a small town in Belgium called<br />

Wieze. Octaaf Callebaut, grandson of a local brewer,<br />

had secretly been working on his first chocolate<br />

recipe. Very soon, small shops in the surrounding villages<br />

and their customers became fond of this new chocolate,<br />

and in the subsequent years, as the recipes were refined<br />

and passed down the generations, the brand grew<br />

to enjoy the global success we see today. In 1996,<br />

the company merged with French brand Cacao Barry,<br />

but Callebaut remains a 100% Belgian brand.<br />

Octaaf used all of his sensory skills to perfect his recipes<br />

and the present-day Callebaut master chocolate makers<br />

rely on the same techniques. They need few words – just<br />

the ingredients list – to ‘understand’ chocolate with all<br />

their senses.<br />

CHOCOLATE DROPS<br />

Callebaut launched the first Callets in 1988. These small,<br />

solid drops of coverture were created to help chefs to<br />

dose, melt and temper the chocolate more accurately,<br />

thereby improving the workability of chocolate and<br />

supporting chefs to obtain great end results.<br />

GROWING GREAT CHOCOLATE<br />

The Growing Great <strong>Chocolate</strong> programme was launched in 2012 to support cocoa farmers in West Africa. For every<br />

pack of Finest Belgian chocolate purchased, Callebaut reinvests a part in sustainable cocoa cultivation and community<br />

programs in the West African cocoa growing communities. Callebaut has partnered with the Cocoa Horizons Foundation<br />

which works directly with farmer groups, supporting farmer training and empowering young farmers and women farmers<br />

to excel in their craft. The initiative empowers West African farmers to shift their smallholder farms into profitable<br />

cocoa farms, motivate new generations to stay in cocoa farming and nurture their ambition. The aim is to make farmers<br />

financially independent so they can take care of their families. In addition, Callebaut has formulated a plan of action –<br />

built on full traceability and transparency – to stop any form of child labour by 2025 and make it something of the past.<br />

EXCELLENCE IS ACADEMICAL<br />

The flagship Callebaut <strong>Chocolate</strong> Academy opened in<br />

Wieze in 2014, providing a base for chefs and chocolatiers<br />

to find inspiration, learn about chocolate techniques and<br />

exchange experiences.<br />

The Academy hosts a small plantation, a Beanology-room,<br />

a chocolate library, a tasting ritual room, plus four<br />

fully-equipped work spaces where bakers, pastry chefs,<br />

confectioners and restaurant chefs can bring their<br />

chocolate skills to the next level.<br />

SMOOTH OPERATOR<br />

In 2015 Callebaut launched its first range of Belgian<br />

ground chocolate, allowing bars and baristas to enjoy<br />

the great taste of Callebaut in liquid form.<br />

FULL HOUSE<br />

Cargill opened its House of <strong>Chocolate</strong> in Mouscron,<br />

Belgium, in May 2022, to provide training and inspiration<br />

for professional chocolatiers. The 200 square metre<br />

complex is built alongside the company’s existing chocolate<br />

<strong>product</strong>ion plant and includes a state-of-the-art chocolate<br />

experience centre, a unique pilot plant with sensory<br />

expertise, and creative workspace for the company’s<br />

European R&D team of chocolate engineers.<br />

Crafted at origin<br />

Casa Luker is a Colombian family-owned chocolate<br />

manufacturer founded in 1906, basing their business<br />

ethos on crafting fine chocolates at origin.<br />

For many years, the company’s founders pioneered<br />

the development of what is considered today as<br />

one of Colombia’s main food staples. Through the<br />

<strong>product</strong>ion of a consistently high-quality chocolate,<br />

created for hot beverages, Casa Luker led the growth<br />

of the cocoa industry in Colombia. Today their<br />

<strong>product</strong>s are sold in more than 40 countries.<br />

THE FINEST BEANS<br />

Just 8% of the world’s cacao bean harvest is honoured<br />

with the prestigious Cacao Fino de Aroma label -<br />

and these are the only beans that Casa Luker will use.<br />

They work exclusively with Cacao Fino de Aroma,<br />

a particular type of cocoa classified by the International<br />

Cocoa Organization (ICCO) for its fruity, flowery, and<br />

nutty malt notes. Their chocolate ingredients have a unique<br />

flavour that is given by the pureness of their origins. Made<br />

from selected beans from the different Fino de Aroma<br />

Cocoa growing regions where we work, their flavour<br />

reflects the cocoa variety and the richness of the soil.<br />

CARBON NEUTRAL<br />

As of 2021, Casa Luker chocolate is carbon neutral<br />

across all owned operations, including its farms.<br />

As part of these efforts, Luker achieved a reduction<br />

of 52% in refrigerant CO2 emissions from 2020<br />

to 2021, due to modifications made to chocolate<br />

<strong>product</strong>ion equipment.<br />

The next stage is to become carbon neutral<br />

with outside providers by the end of 2027.<br />

THE CHOCOLATE DREAM<br />

Through its plan “The <strong>Chocolate</strong> Dream”, Casa Luker is achieving a positive impact on its chocolate-producing<br />

communities through education, entrepreneurship, art and culture, agricultural development and job creation in the<br />

countryside. The company provides quality education to motivate children and young people to stay in the countryside<br />

Tumaco ganache<br />

Ingredients<br />

■ 250g Casa Luker Tumaco chocolate (65%)<br />

■ 165g heavy cream with 35% butterfat<br />

■ 35g invert sugar<br />

■ 50g dry Butter with 82% butterfat, soft<br />

Method<br />

■ Soften the butter to room temperature<br />

■ Combine the cream and invert sugar in a sauce pan<br />

■ Warm the chocolate over bain-marie or microwave until<br />

melted (between 35°C & 45°C)<br />

■ Transfer the chocolate to a plastic bowl<br />

■ Warm the cream and invert sugar to 40-45°C<br />

■ Using a rubber spatula, pour 1/4 of the warm cream<br />

mixture onto the chocolate and stir to start to emulsify.<br />

Repeat with the rest of the cream<br />

■ Once all the cream is incorporated, use a hand blender<br />

to creat a tight emulsion. Be careful not to add any air<br />

into your ganache<br />

■ Add the warm butter and emulsify again until glossy<br />

smooth (about 30 seconds). When adding the butter,<br />

the ganache should be between 35°C<br />

■ Immediately transfer the ganache to a frame.<br />

■ Crystallise at 15°C for 48 hours<br />

■ Pallette knife a thin layer of tempered chocolate to the<br />

base of the ganache before cutting on a guitar cutter<br />

■ Ensure that ganache pieces have come to room<br />

temperature before enrobing<br />

■ Once the ganache pieces are enrobed dust with<br />

a fine coating of cocoa powder<br />

PUT A STAMP ON YOUR CREATIONS<br />

Chocolatree uses screen printing to produce their chocolate decorations, a technique which uses a combination of<br />

stencils and colours to print patterns. This colouring compound consists of cocoa butter and a natural food colouring.<br />

Once the design has been printed onto the transfer sheet, it can then be applied directly to a creation such as a dessert,<br />

Unlike most chocolate factories, Chocolat Madagascar’s<br />

factory is very close to the cocoa plantations, which<br />

means they’re able to craft and optimise the fermented<br />

and dried cocoa into chocolate in a matter of days.<br />

the chocolate are preserved, whilst also boosting<br />

Due to the unique rainforest soil and climate environment, the cacao speciate and develop their own unique fruity<br />

■ Sprinkle the caster sugar layer by layer into a saucepan until it all melts, then continue heating until a golden caramel<br />

colour is reached<br />

■ Once at the desired colour, very carefully and slowly add the heated Pear William liqueur and glucose<br />

■ Bring back up to the boil again to ensure all sugar is completely dissolved and the mixture is smooth<br />

■ Once the mixture has reached 30°C the caramel is ready to pipe into desired chocolate shell<br />

PEAR MILC CHOCOLATE<br />

Ingredients<br />

■ 200g Leonce Blanc pear puree<br />

■ 400g Chocolat Madagascar milc chocolate<br />

■ 50g Sosa liquid glucose<br />

Method<br />

■ Heat together the pear puree and the glucose and bring to the boil<br />

■ Pour over the chopped milc chocolate and blend to emulsify<br />

■ Leave the mixture to cool to 30°C before placing it into a piping bag<br />

and piping into the mould<br />

TO SERVE<br />

■ 100g Casa Luker cocoa butter<br />

■ 5g Sosa gold colouring powder<br />

Method<br />

■ Decorate the mould with gold and bronze cocoa butter using a sponge<br />

■ Line the mould with tempered milc chocolate<br />

■ Pipe and fill 1/3 of the mould with the Pear William caramel and place in the fridge to firm up<br />

■ Pipe the rest of the cavity with the pear ganache leaving 2mm from the top of the mould<br />

■ Leave chocolates to crystallise overnight<br />

■ Finally cap the mould with more tempered chocolate and place into the chocolate fridge to set<br />

■ Using a hand blender, blend all ingredients together until well incorporated<br />

■ Leave the mixture for at least 30 minutes to allow the Gelcrem to hydrate into the liquid<br />

■ After the 30 minutes has passed, blend the mixture again to achieve the glossy finish and final consistency<br />

■ Adjust if needed<br />

■ Place mixture into a piping bag<br />

PISTACHIO PRALINE<br />

Ingredients<br />

■ 150g Sosa Pralicroc crunchy pistachio praline<br />

■ 50g Sosa green pistachio flavour paste<br />

■ 150g Chocolat Madagascar undeodorised<br />

Madagascan white chocolate (37%) bar<br />

Method<br />

■ Temper the white chocolate<br />

■ Add the pistachio paste and the Pralicroc and mix well<br />

■ Ensure the temperature of the mixture is between 29°C and 30°C<br />

■ Place the mixture into a piping bag<br />

ASSEMBLY<br />

■ To achieve this finished design, temper cocoa butter in desired colours and use a paint brush to build layers of colour in<br />

the mould.<br />

Method<br />

■ Take your coloured and shelled mould<br />

■ Pipe a layer of rhubarb gel into each of the<br />

cavities and vibrate slightly to allow the gel to flatten off<br />

■ Pipe a praline layer on and pipe to the top<br />

leaving 2mm from the surface<br />

■ Leave to crystallise overnight between 14-16°C<br />

■ Once crystallised, temper some more dark chocolate<br />

■ Use a heat gun or hairdryer to very gently warm<br />

the edges of each of the bars<br />

■ Pipe a layer of chocolate on top of each bar and<br />

tap to remove any air bubbles<br />

■ Scrape over the whole mould and ensure a flat<br />

finish<br />

■ Leave the mould to crystallise and set<br />

■ Turn out the bars once completely contracted<br />

from the mould<br />

includes six single origin and one blended chocolate,<br />

The chocolate is produced locally using only Latin<br />

American ingredients combined with the most<br />

Ecuador’s unique equatorial climate<br />

HOW IT ALL BEGAN<br />

República del Cacao started in 2005 when its Ecuadorian<br />

founders, the Chiriboga brothers, walked into a chocolate<br />

store in Paris and asked to try their finest chocolate. The<br />

assistant in the store brought them their most prized<br />

chocolate, telling them that it was the finest chocolate<br />

in the world. They were astounded to discover the cacao<br />

came from the Guayaquil region, the largest city in<br />

Ecuador. In that moment República del Cacao was born<br />

- with one mission: to locally produce the most authentic<br />

Latin American chocolate, by protecting sustainable fine<br />

cacao <strong>product</strong>ion.<br />

Since then, the company has gone from strength to<br />

strength, launching a consumer range in 2007 and<br />

professional range in 2014. The brand is now distributed<br />

■ 500g Leonce Blanc raspberry fruit puree<br />

■ 500g caster sugar<br />

■ 15g Sosa pectin<br />

■ 150g Sosa liquid glucose<br />

■ 2.5g Sosa powdered citric acid (add a touch of water<br />

to make a solution)<br />

Method<br />

■ Mix together the pectin and the sugar in a bowl<br />

■ In a pan heat the puree and glucose to 40°C<br />

■ Once the puree mixture has reached 40°C, slowly start pouring in the sugar and pectin constantly whisking<br />

to avoid lumps<br />

■ Bring the mixture up to boil until it reaches 106°C<br />

■ Once at 106°C remove from the heat and add the citric acid solution followed by the rose water. Mix thoroughly<br />

■ Pour mixture out into a cling film lined gastro tray and leave to chill and set<br />

■ Once set, place the jelly into thermomix and blend back to a smooth consistency (additional raspberry puree may<br />

be required to loosen)<br />

■ Once at a pipeable consistency place into a piping bag ready for filling<br />

VANILLA GANACHE<br />

Ingredients<br />

■ 300g double cream<br />

■ 70g Sosa liquid glucose<br />

■ 645g República del Cacao Ecuador<br />

Method<br />

■ Heat the cream, glucose and vanilla pod and leave<br />

to infuse for 1 hour<br />

■ Bring the mixture back up to the boil and pour<br />

■ Allow the mixture to sit for a few moments to<br />

melt the chocolate<br />

■ Slowly start to work the mixture together with<br />

a spatula<br />

■ Once the mixture starts coming together, mix<br />

with a hand blender to create emulsion<br />

■ Once the mixture reaches 35°C, add the softened<br />

butter and blend to emulsify<br />

■ Cool to 29°C before placing in the mould.<br />

■ Allow to crystalise for 24 hours<br />

ASSEMBLY<br />

■ Always start with a clean and polished mould<br />

■ Temper the cocoa butter and apply your chosen design<br />

■ Temper 1kg of the white chocolate and create fine even<br />

shells. Allow the shells to set before filling<br />

■ Pipe the raspberry pâte de fruits into the shell up to half<br />

way. Leave this for 30 minutes to settle before moving on<br />

■ Pipe the vanilla ganache on top of the jelly, leaving a 2mm<br />

gap from the top of the chocolate<br />

■ Allow the mould to sit at 14-16°C overnight to allow<br />

to fully crystallise<br />

■ Once fully crystallised, temper some more chocolate<br />

and cap the chocolates<br />

PASSION FRUIT CARAMEL<br />

Ingredients<br />

■ 250g Leonce Blanc passion fruit puree<br />

■ 250g caster sugar<br />

■ 25g Sosa glucose DE40<br />

■ 210g República del Cacao Peru milk chocolate 38%<br />

■ 75g unsalted butter<br />

Method<br />

■ Heat the puree, sugar and glucose to 104°C<br />

■ Stop cooking and allow the temperature to fall<br />

to 75-80°C<br />

■ Slowly pour the hot liquid onto the melted<br />

chocolate and stir in the centre to start creating<br />

an emulsion<br />

■ Take care to preserve this texture throughout,<br />

gradually adding the remaining liquid<br />

■ Always start with a clean and polished mould<br />

■ First take a clean and dry toothbrush and place the bristles of the toothbrush into the red colour and use the back of<br />

a knife to pull across the bristles to create a light flick at the mould. Let this set for 5 minutes<br />

■ Next take the yellow cocoa butter and using an airbrush, spray directly into the centre of each cavity without moving<br />

to create the yellow centre<br />

■ Let this set for 5 minutes before moving on<br />

■ Next take your purple cocoa butter and spray all around the outsides of each cavity (try to avoid going over the<br />

yellow too much). Leave this colour to set before moving on<br />

■ Move on to making the chocolate shell. Take approximately 1kg of chocolate and temper using your chosen method<br />

■ Fill each cavity with tempered chocolate and tap hard to remove any air bubbles that are caught in the mould, turn<br />

over and tap again to remove all excess chocolate<br />

■ Once it has stopped dripping, scrape the mould whilst still upside down to prevent chocolate going back into the<br />

cavities. Turn mould back up the right way and scrape again to remove all remaining excess chocolate<br />

■ Place the mould face down on to greaseproof paper and leave to set at room temperature for 10 minutes before<br />

moving into the chocolate fridge for 30 minutes<br />

■ Take a piping bag with some of the passion fruit jam and pipe a small amount into the centre of each cavity<br />

■ Take the piping bag of passion fruit ganache and fill each cavity, leaving 2mm from the top<br />

■ Leave the mould to crystallise overnight between 14-16°C<br />

■ Once the mould has been left to fully crystallise, now it is time to cap the mould. Take a heat gun and very gently go<br />

over the surface of the mould<br />

■ Take more tempered chocolate and pipe on to the top of each cavity, tap to ensure chocolate is completely sealing<br />

each chocolate<br />

■ Scrape over the surface of the mould to create a smooth, flat finish<br />

■ Place mould into the chocolate fridge to allow to set<br />

Shaping the future<br />

of chocolate<br />

Like most foodstuffs, chocolate is an ever-evolving<br />

ingredient, and its flavour profiles and applications<br />

are constantly being adapted and updated.<br />

For operators, it’s important to keep ahead of<br />

the curve so that you can incorporate the latest<br />

trends where appropriate in your business.<br />

Here, Belcolade’s parent company Puratos,<br />

examines the five big trends that are shaping<br />

chocolate in 2023…<br />

1.<br />

NOSTALGIA<br />

Research shows that nostalgia will be a big<br />

shaping factor of the chocolate industry.<br />

People became nostalgic during the pandemic<br />

and wanted familiar flavours, causing them to<br />

return to traditional favourites. As economic<br />

uncertainty remains, this trend will continue.<br />

However, scarcity, sustainability and the need for<br />

novelty encourages some customers to explore<br />

exotic flavours and ingredients. Classics are<br />

being reinvented, to include creative designs<br />

and experimental flavour combinations.<br />

2.<br />

PLANT-BASED<br />

Plant-based is the strongest growing trend.<br />

Chocolatiers and confectionery manufacturers<br />

have been developing great tasting alternatives<br />

to traditional milk chocolate that can be<br />

enjoyed as part of a plant-based diet, also<br />

enticing traditional milk chocolate lovers.<br />

In 2022, 23% of consumers bought plant-based<br />

food weekly, up from 13% in 2018. Increasingly,<br />

consumers are replacing ingredients with plantbased<br />

alternatives, if there’s no compromise on<br />

taste.<br />

3.<br />

SUSTAINABLE<br />

Consumers are becoming increasingly conscious about their decisions,<br />

especially in regard to understanding how food impacts the planet,<br />

the wellbeing of others and animals.<br />

In 2022 upcycling food became topical: from a desire to minimise waste,<br />

around concerns of overconsumption and resource use in the food chain.<br />

Social media posts discuss melting old chocolate to use in cakes, highlighting conscious consumption. Whilst there has<br />

been an increase in launches of new <strong>product</strong>s, such as Caroboo bars, which are vegan, gluten and dairy free, contain no<br />

refined sugar, and have home compostable packaging.<br />

Consumers claim that fair prices and wages for farmers are the most important information on packaging, while 73% of<br />

consumers say they would be willing to pay more for sustainably sourced ingredients.<br />

4.<br />

HEALTHIER<br />

Social media trends in 2022 highlighted that food<br />

could conjure emotive responses, acting to manage<br />

mood and mental health. Sweet treats such as chocolate<br />

are prominent within this category, as the flavour is<br />

enjoyable and is associated with the release of endorphins.<br />

In addition, taste can be paired with function in offerings<br />

such as chocolate or caramel flavoured protein bars.<br />

Consumers believe that the term ‘organic’ associates<br />

something as healthier and is used by consumers as a<br />

shortcut to make healthy, ethical decisions when it<br />

comes to food, with chocolate being a favourite<br />

amongst organic <strong>product</strong>s.<br />

5.<br />

ORIGINS<br />

Stories behind <strong>product</strong>s are becoming increasingly<br />

important for consumers. According to Puratos data,<br />

50% of consumers want to be informed about where<br />

their food comes from and how it is made.<br />

Transparency remains important; in the UK 83% of<br />

consumers who read packaging information search for<br />

different factors, including the origin of the <strong>product</strong><br />

(41%). Consumer knowledge of single origin chocolate is<br />

quite low with just over a third of consumers currently<br />

understanding the term, so there are opportunities to<br />

entice consumers by enhancing their understanding and<br />

awareness of its availability.<br />

Temper, temper...<br />

shares her top tips<br />

for tempering chocolate<br />

Tempering chocolate is an important technique<br />

for chocolatiers to master, and one which requires<br />

patience, skill, concentration – and a good<br />

thermometer!<br />

Achieving that all-important shine and ‘snap’<br />

when the chocolate is broken is a reward in itself.<br />

It is all about getting the crystal structure correct<br />

in order to avoid fat bloom (where white streaks<br />

appear on the top of chocolate). This occurs<br />

because the cocoa butter crystallisation is<br />

uncontrolled and uneven. When chocolate is<br />

melted, the molecules separate but, when you<br />

temper chocolate, those molecules are bonded<br />

back together so that the chocolate will harden<br />

with a glossy, crisp finish.<br />

The three key factors in tempering chocolate are<br />

TIME, TEMPERATURE and MOVEMENT.<br />

MARBLE TEMPERING<br />

1. Melt the chocolate to 45°C<br />

(microwave, dry bain marie, warming cabinet)<br />

2. Pour 2/3 of the chocolate out onto a marble slab<br />

3. Move the chocolate round the marble slab constantly<br />

with a palette knife and scraper<br />

4. You will see the chocolate start to get thicker<br />

and start to crystallise<br />

5. Remove the chocolate from the marble slab to a clean<br />

dry bowl and add the remaining hot chocolate to bring it<br />

back up to correct working temperature<br />

6. Mix together until all completely at one temperature<br />

7. Check the temperature is correct for<br />

the chocolate that you are working with<br />

8. Always test the temper before filling the moulds<br />

9. Place the chocolate into a piping bag and fill bar moulds<br />

or chocolate moulds as required<br />

SEEDING METHOD<br />

1. Melt 2/3 of your total chocolate to 45°C<br />

2. Add the remaining 1/3 of chocolate to your melted chocolate<br />

and stir continuously until all the chocolate is visibly smooth<br />

3. Check the temperature of your chocolate. If it’s a little cold,<br />

use the heat gun to warm gently. If the chocolate is above 35°C,<br />

add a few more buttons and stir again<br />

4. Once you have reached your working temperature,<br />

do a test on your chocolate<br />

Working temperature of chocolate (always refer to the brand for specifics)<br />

Dark chocolate 31-32°C Milk chocolate 30-31°C White chocolate 29-30°C<br />

MICROWAVE TEMPERING<br />

1. Add the desired amount of chocolate to a plastic bowl<br />

2. Place the bowl in the microwave for 20-second<br />

bursts at a time until three-quarters melted<br />

3. After each burst, remove from the microwave<br />

and mix the chocolate with a spatula<br />

4. Once the chocolate is three-quarters melted,<br />

remove from the microwave completely<br />

5. Using the spatula, mix and work the chocolate to melt<br />

the remaining lumps and to get one consistent temperature<br />

6. If needed, use the heat gun to gentle apply heat<br />

to melt away the last lumps<br />

Have a nice spray!<br />

Cocoa butter is the perfect ingredient for adding<br />

a splash of colour to your chocolate, bakes and desserts.<br />

There are lots of ready-made coloured cocoa butters on the market,<br />

or you may choose to make your own, which has the added advantage<br />

of being able to create bespoke shades to suit your exact specifications.<br />

How to make your own cocoa butter colours<br />

Ingredients<br />

100g cocoa butter<br />

5-10% fat soluble colouring powder (depending on the brand,<br />

depth and intensity of colour required)<br />

Method<br />

■ Melt the cocoa butter in the microwave<br />

■ Add the fat soluble powder and blend to ensure<br />

fully incorporated<br />

■ Sieve the mixture<br />

■ Temper the mixture<br />

■ Probe the mixture to ensure it is at 31-32°C before you start<br />

Ready-made colours<br />

The Chocolatree coloured cocoa butter range is available<br />

in 200g bottles in 11 stunning shades: orange, black, brown,<br />

red, purple, yellow, pink, dark green, light green, dark blue<br />

and midnight blue. All contain natural colours and are free<br />

from E171.<br />

Simply, melt in a steamer or bain-marie at temperatures<br />

above 40°C but without exceeding 50°C and<br />

temper before use.<br />

Add to a spray gun, airbrush or paint directly into<br />

your moulds and shake before use.<br />

Using a brand new toothbrush (strictly for chocolate) dip<br />

run down the bristles to create a fine, flecked look.<br />

Sponges<br />

Using a range of different textured sponges can create<br />

amazing looks. Simply dab into coloured cocoa butter then<br />

press into your moulds. This technique can also be used<br />

to build up multiple colours. Let the first colour set before<br />

adding the next one.<br />

Gloved finger<br />

Using your fingers to create a smeared effect.<br />

As with sponges, this technique can be used to build up<br />

eye-catching layers of different colours.<br />

Toothbrush technique into the mould<br />

Piping bags<br />

We can also pipe in different designs, for example<br />

alternate chocolate lines.<br />

Brushes<br />

Brushes are a great way to create brush lines and smeared<br />

effects. Experiment with different brush widths for a variety<br />

Using an airbrush or a spray gun will give you a clean<br />

solid colour effect. Spraying only one end of the mould<br />
