Ingredients<br />

■ 250g cream<br />

■ 75g granulated sugar<br />

■ 100g deZaan Terra Rossa cocoa powder<br />

Suggested Cocoa Powders<br />

■ Recipe can be used with all 7 cocoa powders<br />

(75g Carbon Black cocoa powder)<br />

Suggested uses<br />

■ Tart fillings, dessert additions, cake fillings<br />

Method<br />

■ In a saucepan, add cream. Bring to a soft boil<br />

■ In a bowl, add together the sugar and Terra Rossa<br />

cocoa powder<br />

■ Add hot cream to the dry mixture. Blend with an<br />

immersion blender<br />

■ Store in an air-tight container until ready to use<br />
