Cocoa butter is the perfect ingredient for adding<br />

a splash of colour to your chocolate, bakes and desserts.<br />

There are lots of ready-made coloured cocoa butters on the market,<br />

or you may choose to make your own, which has the added advantage<br />

of being able to create bespoke shades to suit your exact specifications.<br />

How to make your own cocoa butter colours<br />

Ingredients<br />

100g cocoa butter<br />

5-10% fat soluble colouring powder (depending on the brand,<br />

depth and intensity of colour required)<br />

Method<br />

■ Melt the cocoa butter in the microwave<br />

■ Add the fat soluble powder and blend to ensure<br />

fully incorporated<br />

■ Sieve the mixture<br />

■ Temper the mixture<br />

■ Probe the mixture to ensure it is at 31-32°C before you start<br />

Ready-made colours<br />

The Chocolatree coloured cocoa butter range is available<br />

in 200g bottles in 11 stunning shades: orange, black, brown,<br />

red, purple, yellow, pink, dark green, light green, dark blue<br />

and midnight blue. All contain natural colours and are free<br />

from E171.<br />

Simply, melt in a steamer or bain-marie at temperatures<br />

above 40°C but without exceeding 50°C and<br />

temper before use.<br />

Add to a spray gun, airbrush or paint directly into<br />

your moulds and shake before use.<br />

Using a ready-made cocoa butter <strong>product</strong>, such as<br />

Chocolatree one, is the key to consistency of colour. It can<br />

be time-consuming making your own colours and achieving<br />

the correct shade every time. Having said that,<br />

you can mix the different colours to create<br />

your own unique shades.<br />

Preparing your moulds for spraying<br />

■ Always start with a clean and dry mould<br />

■ Wash with warm soapy water and leave to air dry<br />

■ You can use the compressor to dry your moulds<br />

■ Polish with a lint free cloth<br />
