Cru de Cao-Chocoladen sind vom Ursprung an <strong>et</strong>was Besonderes.<br />
Was die Chocolatiers der kleinen, aber feinen <strong>Confiserie</strong> <strong>Coppeneur</strong><br />
anders machen, ist mit einem Wort gesagt: Alles! Und das erklärt sich so:<br />
Bei coppeneur werden chocoladige Genüsse von der Bohne an aus<br />
handverlesenen Cacaobohnen hergestellt. Dafür wählt der Chocolatier<br />
die bestgeeign<strong>et</strong>e Plantage im Ursprungsland selbst aus und<br />
erwirbt Anteile der Ernte, entsprechend dem Bedarf.<br />
Die Zahlung eines fairen und angemessenen Preises ist allein schon<br />
durch die knappe Verfügbarkeit des Cacaos gegeben. Es passierte<br />
schon des Öfteren, dass aus diesem Grund eine Warenverfügbarkeit<br />
stark eingeschränkt war, ja sogar über Monate hinweg ausblieb.<br />
Jedoch garantieren diese vertrauensvollen Partnerschaften zu den<br />
Farmern am Cacao-Ursprungsort, dass dann auch ausschließlich<br />
allerfeinste sortenreine Qualitäten aus natürlichem Anbau zu coppeneur<br />
gelangen. Die einzelnen Chargen sind vergleichsweise sehr<br />
klein und die selektierten Bohnen dementsprechend äußerst wertvoll.<br />
„Cacao von höchster Qualität ist ein sehr rares Gut. Nur wenige<br />
Cacao-Farmer beherrschen alle hierfür notwendigen Arbeitsschritte in<br />
Vollendung, vom Anbau über die Ernte, die Fermentierung bis hin zur<br />
Trocknung. Jedoch ist es unabdingbar, sämtliche Disziplinen in Gänze<br />
abzudecken, um einen Rohstoff zu erzeugen, der den Qualitätserfordernissen<br />
von Cru de Cao entspricht“, b<strong>et</strong>ont Oliver <strong>Coppeneur</strong>, der<br />
international zu den Spitzen-Chocolatiers zählt und ausschließlich<br />
in seinem Atelier im Rheinland produziert. Hier stellt er exquisite<br />
Chocoladen her, wobei die meisten seiner Creationen auf sorten-,<br />
ernte- und herkunftsreinem Cacao basieren.<br />
Das Besondere daran: Die Cacaobohnen einer Plantage bleiben<br />
von der Ernte bis hin zum höchsten Veredelungsniveau unter<br />
ihres Gleichen, reifen sozusagen in einer geschlossenen Qualitäts-<br />
Gemeinschaft, bevor sie schonend zu edelsten Chocoladen verarbeit<strong>et</strong><br />
werden. Chocoladige Creationen, für die Cacaobohnen einer<br />
und derselben Farm verwend<strong>et</strong> wurden, nennen sich „Grand Cru de<br />
Plantation“ bzw. „Grand Cru d’origine“, wenn sie dieselbe Heimat<br />
haben.<br />
Handverlesene Spitzenqualität aus kontrollierter Herkunft in kleinsten<br />
Erntemengen gilt bei coppeneur als unabdingbare Vorauss<strong>et</strong>zung für<br />
authentischen Hochgenuss. Zusätzlich wird jede ausgewählte Charge<br />
in Kleinstmengen geröst<strong>et</strong>, so dass beim Röstgrad individuell auf<br />
jede einzelne Einheit eingegangen wird, die meist in Jutesäcken zu<br />
60 kg geliefert werden. Für das Conchieren nehmen sich die Chocolatiers<br />
von coppeneur dann zehn bis zwanzig Mal mehr Zeit, als es in<br />
der Industrie üblich ist; das kann bis zu 128 Stunden dauern!<br />
Ob sich der Mehr-Aufwand am Ende lohnt? Gewiss! Der Unterschied<br />
ist der Geschmack.<br />
Cru de Cao chocolates are som<strong>et</strong>hing special from their origins. What<br />
the chocolatiers of the small but classy <strong>Confiserie</strong> <strong>Coppeneur</strong> do different<br />
is said in a word: everything! And that can be explained as<br />
follows: Starting with the bean, the chocolate delights at coppeneur<br />
are manufactured from hand-picked cocoa beans.<br />
the chocolatier himself selects the most suitable plantation in the<br />
country of origin and acquires shares in the harvest, corresponding<br />
with his need. Payment of a fair and appropriate price is given simply<br />
by the scarce availability of the cocoa. it has happened many a time<br />
that the availability of the goods has been severely restricted for this<br />
reason, or has even failed to materialize over months.<br />
However, these trustworthy partnerships with the farmers at the<br />
cocoa’s place of origin guarantee that exclusively the very finest and<br />
single-vari<strong>et</strong>y qualities from natural cultivation reach coppeneur.<br />
the individual batches are comparatively small and the selected beans<br />
correspondingly extremely valuable. “Cocoa in premium quality<br />
is a very rare commodity. Only very few cocoa farmers master all<br />
necessary working steps to perfection, from cultivation to the harvest,<br />
fermentation and all the way to drying. it is, however, indispensible,<br />
to cover all disciplines in total to produce a raw material which me<strong>et</strong>s<br />
the quality requirements of a CRu De CAO”, emphasises Oliver<br />
<strong>Coppeneur</strong>, who is one of the international top chocolatiers and who<br />
produces exclusively in his workshop in the Rhineland.<br />
Here, he manufactures exquisite chocolates, where most of his creations<br />
base on vari<strong>et</strong>ally pure, single harvest and single origin cocoa.<br />
the special thing about this: the cocoa beans of one plantation stay<br />
among their peers from the harvest all the way to the premium refinement<br />
level, ripen so to say in a closed quality community, before they<br />
are gently processed to the finest chocolates. Chocolate creations, for<br />
which cocoa beans of one and the same farm were used, are called<br />
“Grand Cru de Plantation” resp. “Grand Cru d’origine”, when they<br />
have the same country of origin.<br />
At coppeneur, handpicked premium quality from controlled origins<br />
in the smallest harvest quantities is considered as indispensible prerequisite<br />
for authentic delectation. in addition, each selected batch is<br />
roasted in minimal quantities, so that each individual unit, usually<br />
delivered in 60 kg jute bags, is taken into consideration for the degree<br />
of roasting. For the conching step, the chocolatiers at coppeneur take<br />
ten to twenty times more time than is usual in the industry; that can<br />
take up to 128 hours! Does the extra effort pay off in the end? Of<br />
course! the difference is the taste.<br />
