through the red tape of the <strong>South</strong> <strong>Africa</strong>n w<strong>in</strong>e <strong>in</strong>dustry, managed to reg<strong>is</strong>ter 26<br />

Topaz Street as a farm (yes, they do <strong>in</strong>deed have a farm number for their 400m 2 of<br />

land) and as a producer of w<strong>in</strong>e. As far as they know, they are the smallest<br />

reg<strong>is</strong>tered producer and bonded warehouse <strong>in</strong> <strong>South</strong> <strong>Africa</strong>. 11<br />

In 2010 they made 4368 litres of w<strong>in</strong>e, up from 684 litres when they started out.<br />

These w<strong>in</strong>es are all made from fruit bought <strong>in</strong> from the Stellenbosch region, ma<strong>in</strong>ly<br />

from the Simonsberg and Bottelary areas. Topaz w<strong>in</strong>es are handcrafted and made<br />

totally naturally <strong>in</strong> their garage. No sprays or mach<strong>in</strong>es are used. Grapes are<br />

handpicked, carefully hand sorted and bucketed <strong>in</strong>to an open-top b<strong>in</strong>, where they<br />

cold-soak for five days. Fermentation occurs spontaneously and colour <strong>is</strong> extracted<br />

gently, with wooden plungers. After fermentation <strong>is</strong> complete, the sk<strong>in</strong>s are lightly<br />

pressed <strong>in</strong> a basket press and run off <strong>in</strong>to new French oak barrels. After 14 months,<br />

the w<strong>in</strong>es are bottled directly from the barrel, us<strong>in</strong>g gravity only. Topaz w<strong>in</strong>es are<br />

unfiltered, to reta<strong>in</strong> maximum flavour, and therefore may need decant<strong>in</strong>g. These<br />

hand-crafted w<strong>in</strong>es are made with love and passion to reflect the true essence of th<strong>is</strong><br />

f<strong>in</strong>e product. 12<br />

With the <strong>in</strong>spiration and motivation of Torr and Beutler, many garag<strong>is</strong>tes are now<br />

produc<strong>in</strong>g their own w<strong>in</strong>es. “Often these are professionals with a passion for w<strong>in</strong>e. I<br />

believe to make it as a garag<strong>is</strong>te it takes passion the first year and guts to do it a<br />

second year! Every w<strong>in</strong>e created <strong>is</strong> unique, special and <strong>in</strong>dividual. These w<strong>in</strong>es are<br />

made with the outmost care and attention to detail,” says Beutler. 13<br />

The number of operations grew and a desperate need for technical guidance and<br />

a structured market<strong>in</strong>g and sales plan emerged. Torr and Beutler spearheaded the<br />

convergence and The Garag<strong>is</strong>te Movement was formed <strong>in</strong> July 2002. Tanja Beutler<br />

expla<strong>in</strong>s, “We got together for an <strong>in</strong>formal tast<strong>in</strong>g one night and were simply stunned<br />

by the awesome standard of product.” The movement supplies technical and moral<br />

support to aspirant garag<strong>is</strong>te w<strong>in</strong>emakers, as well as a network of grapes for sale,<br />

dry goods and equipment. 14<br />

Co-operation made sense. The shar<strong>in</strong>g of resources amongst producers of these<br />

boutique volumes <strong>is</strong> fundamental. A lot of the members have other full time jobs and<br />

have let their hobby take over a little bit more than expected. Beutler elaborates,<br />

“Log<strong>is</strong>tics are a nightmare and the pool<strong>in</strong>g of equipment and dry goods would<br />

streaml<strong>in</strong>e operations for members. The Association also sees itself support<strong>in</strong>g<br />

members <strong>in</strong> their accreditation applications to SAWIS and compliance with customs<br />

and exc<strong>is</strong>e regulations. Ultimately, the com<strong>in</strong>g together of like-m<strong>in</strong>ded producers <strong>is</strong><br />

about market<strong>in</strong>g. Plans <strong>in</strong>clude promot<strong>in</strong>g the members and their products to the<br />

local and <strong>in</strong>ternational w<strong>in</strong>e trade by ga<strong>in</strong><strong>in</strong>g access to w<strong>in</strong>e events such as <strong>Cape</strong><br />

W<strong>in</strong>es, The Johannesburg W<strong>in</strong>e Show, etc.” 15<br />

Whilst never fail<strong>in</strong>g to appreciate the importance of commercial considerations,<br />

Beutler adamantly ma<strong>in</strong>ta<strong>in</strong>s, “We have to carry the passion forward, extend the love<br />
