your mum had AMD?<br />
She was diagnosed in her<br />
60s but refused to let it get<br />
her down. I know it was<br />
frustrating that as her sight<br />
deteriorated mum couldn’t<br />
do as much of the sewing and<br />
embroidery that she loved,<br />
but she always remained very<br />
physically active. She loved<br />
going on cruises and would<br />
win competitions onboard for<br />
her accomplishments – even<br />
in her mid 60s she could leap<br />
off tables straight into the<br />
splits!<br />
Did you know what<br />
AMD was?<br />
no, I’d never heard of it. I<br />
knew that our eyesight often<br />
deteriorates as we grow older,<br />
but I wasn’t aware that AMd<br />
was so common, and that in<br />
some cases it could also lead<br />
to blindness.<br />

AMD can be hereditary<br />
and is more common in<br />
women – especially if they<br />
have blonde hair and<br />
blue eyes. Has that made<br />
you concerned about<br />
your own sight?<br />

sunglasses regularly in the<br />
past – I always saw them as a<br />
fashion accessory rather than<br />
a health necessity. That’s a<br />
big regret, as I’m much more<br />
aware now of the damage<br />
that the sun can do to our<br />
eyes. I’ve never smoked,<br />
which is fortunate as that’s<br />
been linked in a number of<br />
studies to the development<br />
of the condition.<br />

mackerel<br />
curry<br />
This is a gorgeous curry from<br />
Chennai, full of flavours that are<br />
then tamed by the coconut. It<br />
is a coastal dish and proud of<br />
it. Mackerel is very popular in<br />
the south of India and is used<br />
regularly in coconut curries with<br />
tamarind to balance the flavours.<br />
Cut it into steaks as these keep the<br />
fish together and the bones add<br />
flavour to the gravy. Serve with<br />
rice – nothing else is needed.<br />

3 tbsp vegetable oil<br />

/2 tsp fenugreek seeds<br />
1 tsp cumin seeds<br />
25 curry leaves, torn<br />
2 medium onions, peeled and<br />
roughly chopped<br />
2 medium tomatoes, roughly chopped<br />
5 large cloves of garlic, peeled<br />
and roughly chopped<br />
8g fresh ginger, peeled and<br />
roughly chopped<br />
1 tsp turmeric<br />

/4 - 1 1 /2 tsp red chilli powder<br />
1 tbsp coriander powder<br />
350ml water<br />
450g-500g whole mackerel,<br />
cleaned and cut into steaks<br />
2.5cm thick<br />
3-5 green chillies, left whole<br />
1 1 /2 tsp tamarind paste, or<br />

250ml coconut milk<br />
Salt, to taste<br />

1. Heat the oil in a large non-stick<br />
saucepan. Add the fenugreek,<br />
cumin seeds and 10 of the<br />
curry leaves and fry for<br />
10 seconds. Add the onions and<br />
cook for about 6-8 minutes<br />
until golden.<br />
2. Meanwhile, puree together the<br />
tomatoes, garlic, ginger and<br />
powdered spices. Add to the<br />
pan and cook for 8-10 minutes<br />
over a high heat or until you<br />
can see little droplets of oil on<br />
the sides of the masala. Add a<br />
splash of water at any point,<br />
if necessary.<br />
3. Add the water, bring to the boil<br />
and then add the fish, green<br />
chillies and remaining curry<br />
leaves. Bring back to the boil<br />
and cook for 3-4 minutes. Stir<br />
in most of the tamarind paste,<br />
but leave a little to add later.<br />
4. Once the fish is cooked, add<br />
the coconut milk. Stir in well,<br />
taste and adjust the seasoning<br />
and sourness (adding the<br />
remainder of the tamarind<br />
paste if necessary) and then<br />
add more water if you prefer a<br />
thinner curry.<br />

1. Heat the oil and pan-fry the onions<br />
and garlic over a low heat until<br />
softened – approximately<br />
5 minutes. Remove the garlic<br />
clove. Pre-heat oven to 180 o<br />
(350 o F/gas 4).<br />
2. Remove the pan from the heat and<br />
stir in the breadcrumbs, mustard,<br />
chopped parsley, egg yolk and<br />
ricotta cheese. Stir in the juice of<br />
2 lemons and season to taste.<br />
3. Using a teaspoon, fill the sardines<br />
with the stuffing. Lay a large piece<br />
of aluminium foil in an ovenproof<br />
dish and place the sardines on top.<br />
Add the remaining lemon juice and<br />
zest, fold the edges of the foil<br />
over and pinch to seal. Bake for<br />
30 minutes.<br />

To find your natural arch<br />
brush your brows upwards<br />
with a brow brush & comb<br />
and study the shape: the<br />
highest point should peak<br />
at the outer edge of your iris<br />
and the brow should taper<br />
off at the outer corner of<br />
your eye.<br />

“never pluck out the very<br />
long hairs, as these give your<br />
brows shape - if you alter the<br />
natural shape your brows<br />
will be out of sync with your<br />

below the arch, between the<br />
brows and tidy up all the<br />

spent years over-plucking?<br />

their natural shape so you<br />
need to use an eyebrow<br />
