Crab Stuffed Mushrooms<br />

20 each large mushrooms<br />

1 italian dressing<br />

8 oz crabmeat, well picked<br />

3/4 cup fresh breadcrumbs<br />

2 each eggs, beaten<br />

1/4 cup mayonnaise<br />

1/4 cup onion, minced<br />

1 teaspoon lemon juice<br />

Marinate mushrooms in Italian dressing; drain. Combine crabmeat, a<br />

half-cup of breadcrumbs, eggs, mayonnaise, onion and lemon juice. Fill<br />

mushrooms. Top with remaining breadcrumbs; bake at 375 for 15 minutes.<br />

Yields 20 appetizers or 4 main course servings.<br />

Crab Stuffed Prawns With Tomato Butter<br />

1 tablespoon olive oil<br />

1/4 cup onions; finely minced<br />

1/4 cup celery; finely minced<br />

1/4 cup green bell peppers; finely minced<br />

2 tablespoon red bell peppers; finely minced<br />

1 tablespoon shallots; finely minced<br />

4 teaspoon garlic; finely minced, in all<br />

4 teaspoon essence in all<br />

1 teaspoon salt<br />

1 teaspoon pepper<br />

1 lb lump crabmeat; picked over for shells an<br />

1 egg; slightly beaten<br />

1/4 cup parmigiano-reggiano cheese; grated<br />

1 tablespoon creole mustard<br />

1/4 cup bread crumbs<br />

16 prawns; peeled except for tails a
