Broccoli and<br />

cauliflower salad<br />

with feta<br />

INgrEdIENTS<br />

1 head small cauliflower,<br />

cut into small pieces<br />

1 large head broccoli,<br />

chopped into small pieces<br />

1 punnet cherry tomatoes<br />

185 pitted black olives<br />

220g feta cheese, crumbled<br />

Italian salad dressing, to taste<br />

METhOd<br />

1. In a large bowl, combine the<br />

cauliflower, broccoli, cherry<br />

tomatoes, olives and feta. Add<br />

enough dressing to coat, toss and<br />

refrigerate overnight.<br />

NOTE<br />

This recipe calls for crisp, raw broccoli and<br />

cauliflower. If you prefer, steam or boil the<br />

broccoli and cauliflower first. Combine<br />

with remaining ingredients when at room<br />

temperature.<br />

(15 mins prep)<br />

INgrEdIENTS<br />

3 tablespoons reduced-fat mayonnaise<br />

1 tablespoon coarse-grained<br />

Dijon mustard<br />

2 flour tortillas (20 cm)<br />

1 medium ripe avocado, stoned, peeled<br />

and cut lengthways into thin slices<br />

250g thinly sliced cooked turkey breast<br />

1 jar (270g) roasted red capsicums,<br />

drained and cut into strips<br />

METhOd<br />

2. Combine mayonnaise and mustard in<br />

a small bowl. Lay tortillas on a work<br />

surface. Spread mayonnaise mixture<br />

evenly over each one.<br />

3. Place the avocado slices on top,<br />

leaving a small border around the<br />

edge. <strong>Top</strong> with turkey and capsicum<br />

strips.<br />

4. Roll up each tortilla tightly and place,<br />

seam side down, on a cutting board.<br />

<strong>Tri</strong>m the ends of the wraps evenly<br />

with a serrated knife. Cut each wrap<br />

into 6 equal pieces and place, cut<br />

side down, on a serving platter.<br />

Guacamole<br />

INgrEdIENTS<br />

2 avocados<br />

½ lemon, juiced<br />

2 tablespoons chopped onion<br />

½ teaspoon salt<br />

2 tablespoons extra virgin olive oil<br />

METhOd<br />

1. Cut the avocados into halves.<br />

Remove the stones, and scoop out<br />

the pulp into a small bowl. Use a fork<br />

to mash the avocado. Stir in lemon<br />

juice, onion, salt and olive oil. Cover<br />

the bowl, and refrigerate for up to 1<br />

hour before serving.<br />

NOTE<br />

Avocados have lots of protein, beta<br />

carotene and vitamin E. <strong>The</strong>y are also high<br />

in monounsaturated fat - a 'good' fat!<br />

Combined with the olive oil in this dip,<br />

which is about 75% monounsaturated fat,<br />

it's clear that you'll definitely benefit from<br />

a lot of dipping.<br />

Gingerbread People<br />

Ready in: 35 minutes<br />

INgrEdIENTS<br />

350g plain flour<br />

1 tsp bicarbonate of soda<br />

2 tsp ground ginger<br />

100g butter<br />

150g brown sugar<br />

4 tbsp golden syrup<br />

1 egg<br />

Currants, choc chips and/or nuts<br />

to decorate<br />

METhOd<br />

1. Preheat oven to 190 degrees. Sift<br />

together the flour, ginger and bicarb.<br />

Chop the butter and rub into the<br />

flour mixture until it resembles fine<br />

bread crumbs. Stir in the sugar.<br />

2. Beat together the syrup and the egg,<br />

and stir into flour mixture. Knead<br />

with floured hands to form a<br />

smooth dough.<br />

3. Roll out on a floured surface till<br />

it's about 0.5 cm thick. Using a<br />

gingerbread man cutter, cut shapes<br />

until all of the dough has been used,<br />

rerolling the trimmings. Lay these on<br />

lined baking trays.<br />

4. Decorate with currants, choc chips,<br />

nuts or however for the eyes and<br />

buttons.<br />

5. Bake at 190 degrees for 15 mins, until<br />

golden brown. Cool on a wire rack.<br />
