Soup is one of the best foods we can eat. Here is a<br />
recipe for a quick warming soup for the person on the<br />
go:<br />
Ginger Sweet Potato Soup<br />
Ingredients:<br />
2 medium sweet potatoes<br />
2 quarts of water (or 1 qt vegetable broth and 1 qt<br />
water)<br />
½ tsp salt<br />
1/8 tsp ground white pepper<br />
¼ cup rice wine or dry sherry<br />
2 TB chopped fresh ginger (or 6 thin 1” diameter<br />
slices)<br />
chopped cilantro<br />
Directions:<br />
Peel the sweet potatoes and cut into 1‐1/2” rounds,<br />
then cut in half again.<br />
Place with all the other ingredients (except the<br />
cilantro) in a soup pot and simmer until the potatoes<br />
are soft but not mushy. Sprinkle with a little bit of<br />
chopped cilantro and red bell pepper before serving.<br />
Note: some people like to add a bit of honey or brown<br />
sugar to this soup.<br />
Yield: serves 6‐8 people<br />
