HOW HAS THE EVENT EVOLVED<br />
SINCE IT STARTED IN 1997?<br />
Sculpture by the Sea began at Bondi<br />
as a one-day event with the aim of<br />
creating a major free-to-the-public<br />
event for the people of Sydney and<br />
its visitors. The exhibition quickly<br />
grew to become the largest annual<br />
sculpture exhibition in the world<br />
featuring over 100 sculptures and<br />
attracting 500,000 visitors. In 2005,<br />
Sculpture by the Sea went across<br />
Australia to Perth where last<br />
year’s exhibition attracted over<br />
200,000 visitors.<br />
WHY CHOOSE THE BEACH<br />
AS THE VENUE?<br />
The beach is quintessentially<br />
Australian and where we like to<br />
play. It’s also a site of natural<br />

It feels a bit easier this time<br />
around. The 2010 festival marked<br />
its 50th anniversary, so there<br />
were quite large expectations. I<br />
feel that with this festival I have<br />
an opportunity to focus on the<br />
content for its own sake, and I’m<br />
very happy with the results.<br />
WHY MAKE THE ADELAIDE<br />
FESTIVAL AN ANNUAL EVENT?<br />
Both of our partner events, the<br />
Adelaide Fringe and WOMAD,<br />
have been annual for a number<br />
of years, with great success.<br />
There was a feeling that having<br />
the festival remain biennial<br />
meant that it was in a sense out<br />
of sync with its environment.<br />
WHAT’S NEW THIS YEAR?<br />
The revamped Writers’ Week,<br />
which has a much broader focus,<br />

HOW HARD IS IT BEING A<br />
STAND-UP COMEDIAN?<br />
My dad is a farmer. That job is<br />
hard. Comedy is indoor work with<br />
no heavy lifting. I get paid to tell<br />
people jokes, share a night of joy<br />
with them, and I can drink while I’m<br />
at work. They don’t let you do that<br />
as a pilot.<br />
WHAT DO YOU DO WHEN PEOPLE<br />
DON’T LAUGH AT YOUR JOKES?<br />
Write better jokes. The thing about<br />
comedy is that you’re only as funny<br />
as your last joke. You can’t rest on<br />
your laurels. Rich Hall described<br />
stand-up as a “joke-by-joke job<br />
application”. If an audience doesn’t<br />
laugh, you can’t say: “But hey, I’ve<br />
won awards!”<br />
HOW DO YOU COME UP WITH<br />
NEW MATERIAL?<br />
If you write a hit song you can sing<br />
it forever. Comedy is all about new<br />
material. No one comes to gigs and<br />
yells out: “Do your ‘klim is milk<br />
spelled backwards’ joke from 1998!<br />
We all know the words to that one!”<br />
I have a simple way of coming up<br />
with new material: I sit alone in a<br />
dark room and I remember that I<br />
have a hideous mortgage and no<br />
other skills. That does the trick!<br />

seven; a huge star in France; one<br />
of the most enduring talents<br />
of our time. But you could<br />
also start a piece on Arena<br />
highlighting she’s one of the<br />
nicest, most giving, honest, funny women<br />
Australian showbiz has ever seen.<br />
Born Filippina Lidia Arena to Sicilian<br />
immigrant parents Giuseppe and<br />
Franca in East Keilor, Victoria, 44<br />
years ago, Tina clearly had a natural<br />
knack for entertaining from an early<br />
age. She made her TV debut on an<br />
Australian talent show called Young<br />
Talent Time (YTT) at the tender age of<br />
“seven and a half”.<br />
Arena recalls: “Our time<br />
wasn’t as complicated as it<br />
is today; we were much<br />
more happy-golucky,<br />
nonchalant<br />
kids. It wasn’t<br />
a generation<br />
of high<br />
technology<br />
and internet,<br />
so we didn’t<br />
have all those<br />
‘stumbling blocks’.<br />
It was a very<br />
innocent time.”<br />

“Tiny Tina” (as she was dubbed)<br />
today? “Ah, interesting! What<br />
would I tell that girl? Be very<br />
aware of what lies ahead. Good<br />
and bad, absolutely.”<br />
Indeed, her fame on the<br />
defunct show — recently revived<br />
and spectacularly re-booted on<br />
Channel TEN with Arena now<br />
a judge and mentor — didn’t<br />
automatically mean an easy ride<br />
for the girl who left YTT at age 16<br />
(the show’s offi cial “graduation”<br />
age). She launched into club gigs<br />
until landing a recording contract<br />
in 1988 at age 21. Her fi rst solo<br />
album, Strong As Steel, included<br />
the hit “I Need Your Body”. Watch<br />
it back now and it seems<br />
miles away from who<br />
she is today. Arena<br />
happily puts it all<br />
in perspective.<br />
“I don’t look at<br />
that and think,<br />
‘Oh I’ve come so<br />
far!’ I look at it as a<br />
tapestry; it’s like a<br />
blanket or a piece of<br />
work that has evolved<br />
with time. It was never<br />
going to stay the same. The<br />
most interesting aspect of it has<br />
been the reinvention. Looking<br />
back — without knowing back<br />
then that reinvention was such<br />
an integral part of what it is that<br />
I do, and anybody in the music<br />
business who wants to have a<br />
career has to continue to reinvent<br />
and evolve — it all makes complete<br />
sense now.”<br />
Arena’s next step in her<br />
evolution was to release the wellreceived<br />
second album Don’t<br />
Ask, which became Australia’s<br />
biggest selling album of 1995 and<br />

spawned many country music<br />
covers of songs she’d penned. But<br />
it was the next step which proved<br />
to be the most life-changing<br />
for Arena. After collaborating<br />
with Marc Anthony on “I Want<br />
To Spend My Lifetime Loving<br />
You” from The Mask of Zorro<br />
soundtrack, the song — and Arena<br />
— caught the attention of new<br />

She explains: “The Mask of<br />
Zorro’s appeal prompted Sony<br />
Music Australia and Sony France<br />
to collaborate on releasing my<br />
next solo record — In Deep — in<br />
France. We’d recorded a couple<br />
of French songs for it, too. At that<br />
point there were no internationals<br />
in France that were courageous<br />
enough to sing in French.<br />
“We demoed a song called<br />
‘Aller Plus Haut’, my fi rst French<br />
single, and it was so well received<br />
it was then released. It opened up<br />
another world for me. When the<br />
French realised that I’d made the<br />
eff ort to do that and explore that so<br />
profoundly they instantaneously<br />
embraced it.”<br />
So embraced in fact, that<br />
Arena recently became the<br />
fi rst Australian to receive the<br />
Knighthood of the Order of<br />
National Merit. She describes it<br />
as “terrifi c recognition; it wasn’t<br />
anything I ever expected”.<br />
After marrying, divorcing,<br />
singing at the Sydney 2000<br />
Olympics, meeting new partner<br />
Vincent Mancini and together<br />
having a son called Gabriel, now<br />
six, Arena went on to put in<br />
some acclaimed performances<br />

joy of performing.”<br />
She’s preparing to kick off her<br />
national tour starting in June in<br />
Sydney at the Opera House with<br />
the Sydney Symphony Orchestra.<br />
“Everything I’ve ever musically<br />
done has an emotional link to<br />
it. Everything for me is about<br />
instinct, what feels right, the<br />
people around you. Sometimes<br />
they are woeful decisions, but they<br />
are all part of that journey.”<br />

Darwin is not like the rest of Australia. I<br />
get a few hints of that on my fi rst morning<br />
in town: the taxi driver talks about 10m<br />
crocs in a nearby billabong, there’s a<br />
UFO story on the front of the paper and a<br />
guy standing in the middle of the mall is<br />
wearing three hefty snakes.<br />
I’m in the Top End for the fi rst time to escape winter.<br />
The dry season up here runs from April to October<br />
and I soon discover it’s true to its name. Every day<br />
dawns blue skies and warmth, builds up to a baking<br />
heat by mid-afternoon and fi nishes with a textbook red<br />
golden sunset. The locals move around slowly in the<br />
heat and you soon fi nd yourself doing the same.<br />
There’s plenty to do in Darwin. It’s got a rollicking<br />
history and there are indigenous art galleries on<br />
every corner. Blocks of open-air cafés and bars on<br />
Mitchell Street get rowdy most nights. But it can wait<br />
— I’m keen to see the Northern Territory’s outback.<br />

I hire a car and point it down the long, straight<br />
Stuart Highway. An hour-and-a-half south of<br />
Darwin is Litchfi eld National Park. The country<br />
is parched and the trees in the red dirt are fi reblackened.<br />
But water runs through it, cascading<br />
off waterfalls and carving out glorious, unexpected<br />
swimming holes. Litchfi eld is a showcase of these<br />
swimming holes, termite mounds, wildlife and<br />
pockets of rainforest on an easy driving circuit.<br />
Florence Falls is particularly majestic, with a<br />
basin almost surrounded by sheer cliff s and thick<br />
greenery. The water is surprisingly cool, crystal<br />
clear and completely invigorating. Families splash<br />
around happily. I dive under the waterfall and all I<br />
can hear is the roar as I peer through a window of<br />
white water.<br />
Getting out of the water is almost as good as<br />
getting in. You don’t need a towel when you can wait<br />
a couple of minutes for the same eff ect.<br />
After eight swims in eight diff erent waterholes<br />
and creeks, I camp at Walker Creek campsite, where<br />
each site has its own private swimming hole. I cook<br />
a simple dinner over the fi re and kill dozens of<br />
mosquitoes, which get busy under bright stars.<br />

Only in Darwin would you find<br />
hundreds of crocs penned up in<br />
the heart of town<br />
warns. “Crocodiles look like a bit of debris or a log,<br />
but they can see, hear and smell everything with 99%<br />
of their body underwater.”<br />
Within 15 minutes we see three large salties<br />
and a freshwater crocodile swimming or sunning<br />
themselves on the bank. The second one takes a good<br />
look at us with yellow eyes before launching into<br />
the water and swimming straight under the boat.<br />
Everyone slides away from the edge.<br />
The half-day tour is a kaleidoscope of wetland<br />
wildlife — a pair of iconic jabirus stalk the shallows, a<br />
water buff alo appears for a drink, a sea eagle and kite<br />
fi ght over a fi sh and “Jesus” birds appear to walk on<br />
water as they skip across the lilies.<br />
Only in Darwin would you fi nd hundreds of crocs<br />
penned up in the heart of town and Crocosaurus<br />
Cove is a great place to see and learn a bit more about<br />
the leathery reptiles. This is where I fi nd myself in a<br />
small perspex cage being slowly lowered into a pool<br />
with a 5.5m croc called Chopper. I’ve just been told<br />
Chopper’s bite power is the same as a 3.5 tonne truck<br />
landing on your foot. Except the croc has teeth —<br />
there are bite marks all over the cage.<br />
The Cage of Death, as it’s known, is suitable for<br />

I join a sleepy group clambering aboard before<br />
dawn and slurp the coff ee provided. We drop our<br />
lines as the red morning sun eases over the silhouette<br />
of Darwin, but our luck is not as good as the scenery.<br />
We try about fi ve spots, without landing anything<br />
of note. But just when it seems the only thing we’re<br />
going to get is a lesson in patience, I hook a spotted<br />
cod. He’s no monster, at just a foot long, but tastes<br />
delicious when we cook it up at the hotel for lunch.<br />
When you’re ready to beat the heat, head to<br />
Darwin’s new Waterfront Precinct. It includes a<br />
netted swimming beach and some man-made swell<br />
at the 4,000m 2 Wave Lagoon which churns out one<br />
to three footers that are a hit with kids on boogie<br />
boards. Afterwards, replenish at the eateries here.<br />
Darwin’s steamy, throbbing markets are full of<br />
buskers, arts and crafts, tropical fruits and Asian<br />
fl avours. Parap Village Market comes to life under<br />
tents and trees every Saturday morning while<br />
Mindil Beach Markets are on Thursday and Sunday<br />
evenings from late April onwards. The Mindil Beach<br />
markets are part-hippy, part-Aboriginal and parttourist<br />
attraction and at sunset, people crowd the<br />
beach eating laksa or ice cream and watching the sun<br />
inch into the ocean. It’s just another winter evening in<br />

For two young Australian actors, the opportunity to bring a<br />
much-loved animation to life is almost overshadowed by<br />
the chance to work with a clutch of captivating critters<br />

t’s hard to believe they’re not real.<br />
Two of the “stars” of the upcoming<br />
production How To Train Your Dragon<br />
Arena Spectacular walk, blink, roar and<br />
breathe fi re. Actors Sarah McCreanor<br />
and Rarmian Newton still enjoy the<br />
response these gigantic creatures cause<br />
when someone sees them for the fi rst time.<br />
“Everyone has the same reaction,”<br />
says 18-year-old Rarmian. “It’s a mixture<br />
of hypnosis and shock. Even one of the<br />
smallest dragons, which barely fi ts in a TV<br />
studio, everyone went, ‘wow’. A group of<br />
school kids who lined up to touch it didn’t<br />
even talk — they were mesmerised.”<br />
For the next month, audiences around<br />
Australia will travel to another world, one<br />
where vikings battle fi erce dragons who<br />

But for all the technical<br />
wizardry, it will be the<br />
dragons that will amaze<br />
threaten their homes. A world<br />
where a teenage boy, Hiccup<br />
Horrendous Haddock III, wounds<br />
and then befriends a dragon,<br />

his people and these unknown<br />
creatures forever.<br />
Rarmian and Sarah are two<br />
in a human cast of 23. Director<br />
Nigel Jamieson looked at 2,000<br />
potential actors in 13 cities around<br />
the world before giving this duo<br />
the nod in August, along with<br />
hip-hop dancers, acrobats and<br />
parkour practitioners.<br />

aspects of the roles, both Sarah<br />
and Rarmian will share their<br />

For anyone who’s seen the animated<br />
fi lm, it’s hard to imagine how some scenes<br />
— of dragons swooping over oceans and<br />
spiralling to earth, breathing fi re and<br />
smoke — can be re-created in a stage show.<br />
“It’s seriously going to be the world’s most<br />
ambitious show, using the most cuttingedge<br />
technology,” says Rarmian.<br />
But for all the technical wizardry, it<br />
will be the dragons that will amaze, and<br />
each of them has been built in a workshop<br />
in Melbourne. Global Creatures is the<br />
company behind the incredibly successful<br />
Walking With Dinosaurs show. One person<br />
to see that show was head of DreamWorks<br />
Animation, Jeff rey Katzenberg. “At the time,<br />
we were fairly far into making How to Train<br />
Your Dragon,” he says. And just as Global<br />
Creatures were wondering what production<br />
would showcase their technology next,<br />
Katzenberg came over for a visit.<br />
According to creature designer Sonny<br />
Tilders, each of the 24 dragons appearing on<br />
stage takes about three months and 25 people<br />
to build. The largest, Red Death, has a 12m-high<br />
head and a tail that stretches for 20m.<br />

cause muscles to move under<br />
the skin when it fl aps its wing, and<br />

says Sarah. “Every aspect of the<br />

Cummings. I’ve never heard of<br />
her before, but within minutes<br />
we’re introduced to her, and<br />
gallery director Randi Linnegar<br />

Randi explains monoprint to us —<br />
the technique which Cummings<br />
has used for the still lifes in<br />
this exhibition.<br />
Isobel’s tours are based around<br />
a number of diff erent precincts,<br />
but each tour is unique. Isobel<br />
explains: “We cover a range<br />
of diff erent spaces, a range of<br />
diff erent work. You might come<br />
away having seen one or two<br />
pieces you really like, or one or<br />
two pieces you really hate —<br />
and that’s fi ne. It’s about feeling<br />
comfortable with the art.”<br />
Each precinct has its own<br />
feel, Isobel explains. “In the St<br />
Peters-Newtown area, you have<br />
a lot of street art and graffi ti. In<br />
Paddington, you’ll have more<br />
high-end artists that appeal to<br />
private collectors.”<br />

The highlight, however, is a visit to<br />
the Darlinghurst studio of Robert Eadie,<br />
which doubles as his house. We spend over<br />
an hour talking to him about his art and<br />
his hobbies — including a series of cane<br />
sculptures he’s working on. He even shows<br />
us his workbooks — journals fi lled with<br />
thoughts and sketches that lead to<br />
his paintings.<br />
I’m amazed that an artist would be happy<br />
to spend so much time with a bunch of<br />
strangers, but Isobel says that’s the joy of<br />
the art world. “Gallerists and artists are<br />
very generous with their time. They want<br />
you to engage, talk about work, with them.”<br />

darkest Fiji, it’s good to feel<br />
like you’re in safe hands. First<br />
impressions are encouraging. My guide’s<br />
name is Moses.<br />
Moses works for<br />
Rivers Fiji and I’m on<br />
their Upper Navua<br />
rafting trip, an all-day<br />
adventure that follows<br />
the river as it slices<br />
through a chasm of black<br />
volcanic rock in the<br />
remote highlands of Viti<br />
Levu island. At times,<br />
the sheer-sided walls<br />
of the canyon narrow<br />
to just seven metres<br />
wide while waterfalls<br />
tumble down through<br />
a dense canopy of ferns<br />
and bamboo. All around<br />
is the unmistakable<br />
background music of<br />
the jungle.<br />
Rivers Fiji has been running this trip<br />
for 12 years after negotiating leases on a<br />
narrow strip of land along the river from<br />
local landowners. By leasing the land, they<br />
have stopped the logging that is threatening<br />
to decimate much of the rainforest in this<br />
area. It’s Fiji’s fi rst land-lease conservation<br />
project and the initiative has won them<br />
several accolades, including three<br />
eco-tourism awards.<br />
Getting to the river involves a 6am start,<br />
a bumpy two-hour drive up a logging track<br />
and a strenuous 30-minute hike along<br />
a jungle path that provides tantalising<br />
glimpses of the river. But it’s a small price to<br />
pay for the privilege of rafting through this<br />
spectacular wilderness.<br />

The seven guides on the trip are all from<br />
local villages and the camaraderie and<br />
banter between them is a joy to watch. All<br />
day Moses entertains us with anecdotes<br />
about his childhood and the characters he’s<br />
met since working on the river.<br />
It’s a reminder of how simple life can be<br />
in the less accessible parts of the island.<br />
Until he started working for Rivers Fiji,<br />
Moses had never seen a sandwich. The fi rst<br />
time he tried to make one, he put everything<br />
on the table in it, including a cookie.<br />
Twelve years on, he’s guiding the likes<br />
of Bill Gates, Jessica Simpson and Chuck<br />
Norris down the same river he used to play<br />
in as a kid. It’s a compelling demonstration<br />
of how tourism can help both local<br />
communities and the environment.<br />
While the rapids are on the tame side,<br />
Moses spices them up by going through them<br />
backwards or spinning the raft midway. Each<br />
one is celebrated with a whooping cheer and a<br />
clattering high-fi ve of paddles that echoes off<br />
the ancient canyon walls.<br />
Nearby is Massage Waterfall where the<br />
more adventurous take it in turns to be<br />
pummelled by a torrent of water cascading<br />
from the rocks high above. Others choose<br />
to lie back on the beach and gaze in wonder<br />
at the towering canyon walls fringed with<br />
dense jungle foliage. It’s a scene you simply<br />
couldn’t see any other way.<br />
After an early start and<br />
n four hours of paddling, almost<br />
s everyone falls asleep on the bus<br />
on the way back. Some people<br />
still have a two-hour transfer back to Nadi but<br />
the rest of us are returning to a nearby town<br />
that has become known as the adventure<br />
capital of Fiji — Pacifi c Harbour.<br />

ADRENALINE<br />
Pacifi c Harbour represents the “other”<br />
side of Fiji — outside the all-inclusive resorts<br />
for which the country is so well known. If<br />
you want to interact with the locals and have<br />
access to a wide range of adventure activities,<br />
this is the place to come.<br />
I’m staying at Uprising Beach Resort,<br />
a laidback property in Pacifi c Harbour<br />
that looks out over one of Fiji’s fi nest<br />
beaches. White-water rafting, shark diving,<br />
horse-riding, jet-skiing, surfi ng, sailing,<br />
golf, game fi shing, hiking, kite boarding<br />
and even zip-lining can all be done nearby.<br />
I spoke to a guy who has dived all over the<br />
world and he said the shark dive here was<br />
the best he’s done. No cage, just you sitting<br />
on the ocean fl oor while fi ve-metre tiger<br />
sharks slowly circle above.<br />
The following morning, I try my hand at<br />
zip-lining. Zip Fiji has built a one-kilometre<br />
course comprising eight zip lines that range<br />
from 15 to 220m. What’s impressive is that<br />
the platforms are suspended from the trees,<br />
not bolted into them, and the pathways for<br />
the lines were cleared by gently pulling the<br />
trees apart, not cutting them down.<br />
While Pacifi c Harbour is primarily<br />
known for its adventure activities, it’s not<br />
a complete cultural void. The nearby Arts<br />
Village is a large integrated shopping centre<br />
and cultural hub that contains more than 50<br />
stores and 14 restaurants. From Wednesday<br />
to Saturday, there’s a daily program of<br />
tours and shows that includes a canoe ride<br />
through ancient Fiji and a tour around a<br />
chief’s house. Particularly compelling is the<br />
show by the legendary Beqa fi rewalkers,<br />
who walk barefoot across white-hot coals<br />
and perform a series of war dances.<br />
It’s a reminder that as recently as 100<br />
years ago, Fijian tribes were still killing<br />
and eating their enemies. Now that’s one<br />
adventure activity I’m happy to pass on.<br />

The nation’s fi rst commercial crops of cocoa<br />
are proving a hit with growers, consumers<br />
and restaurateurs in tropical Queensland<br />
Back in the 1960s it was<br />
a radical idea. Now it’s<br />
a reality — the idea of<br />
cocoa grown in Australia<br />
and used to produce our<br />
very own fi rst origin chocolate.<br />
We all know chocolate is said<br />
to be an aphrodisiac, but what<br />
could be more romantic than<br />
cocoa grown in the foothills of the<br />
world-heritage listed Daintree<br />
Rainforest — a place where rare<br />
fauna and fl ora are constantly<br />
being discovered?<br />
Just a few small plantations<br />
in this unique region are now<br />
home to 2m-tall cocoa trees that<br />
are producing Australia’s only<br />

commercial crops. And although<br />
Daintree Estates chocolate was<br />
only launched in November 2011,<br />
the company is already having<br />
trouble keeping up with demand.<br />
Cocoa was an experimental crop<br />
at a research station in the Cairns<br />
hinterland in the 1960s and was<br />
grown by individual farmers<br />
who imported seeds from Papua<br />
New Guinea to learn whether it<br />
could be viable. Some of those<br />
fi rst trees still produce pods. But<br />
things got serious in 1997 when<br />
Cadbury Schweppes (Australia)<br />
approached government agencies<br />
in Queensland, the Northern<br />
Territory and Western Australia<br />
about the feasibility of a cocoa<br />
industry in northern Australia. A<br />
research project started in 1999,<br />
trialling cocoa in three northern<br />
Australian growing regions and<br />
mechanisation opportunities.<br />
Trials in Far North Queensland<br />
(FNQ) excelled, with good yields<br />
and quality, and no major pest or<br />
disease problems.<br />
However, that is where the<br />
concept ground to a halt — until<br />
Daintree Cocoa Pty Ltd (DCPL)<br />
came on the scene in mid-2010<br />
with a new business model that<br />
didn’t rely on the need to compete<br />
on a world commodity cocoa bean<br />
price. This, together with ensuring<br />

viable cocoa industry in FNQ.<br />
Daintree Estates has developed<br />
innovative nursery processes<br />
to produce healthy seedlings<br />
as well as eco-friendly and<br />
environmentally sound<br />
farming practices that result<br />
in superior yields.<br />
The company has also designed<br />
and built an automatic pod splitter<br />
and wet bean remover, a specially<br />
adapted fermentation process,<br />
and solar driers that cope with the<br />
changeable rainfall conditions in<br />
the region.<br />
In the process, Daintree Estates<br />
has developed its own community.<br />

family bonding time,” the thirdgeneration<br />
Mossman farmer says.<br />
Puglisi, who was one of the fi rst<br />
to take a punt on the new crop<br />
in addition to the sugar cane his<br />
family had grown on the farm for<br />
70 years, says the business is a<br />
win-win in every sense. “It’s a big<br />
investment and it’s very labour<br />
intensive, but growers are paid not<br />
only for their crop, but as they’re<br />

also shareholders, they benefi t<br />
from chocolate sale profi ts as<br />
well,” Puglisi says. “We think it’s<br />
an exciting thing to be part of —<br />
we’re pioneers in the Australian<br />
chocolate industry.”<br />
In fact, both his crops are used<br />
in the production of Daintree<br />
Estates chocolate, with Daintree<br />
Gold — raw sugar produced by<br />
Mossman Central Sugar Mill —<br />
an important ingredient in the<br />
chocolate. And apart from his<br />

1% of that. “All the chocolate we<br />
consume in Australia is made<br />
from cocoa grown overseas,<br />
but now in FNQ we’re growing<br />
and making Australia’s fi rst<br />
chocolate,” Durrant says. Just four<br />
farmers are currently supplying<br />
the new enterprise and although<br />
they only launched in November,<br />
Durrant says they’re already<br />
desperately seeking more growers<br />
in the region.<br />

and 70% cocoa respectively. It’s<br />

services. In fact, FNQ’s prestigious<br />

after moving to Palm Cove I’ve<br />

Darryl Kirk is living the<br />
ultimate paddock-to-plate<br />
dream, being a pastry chef at<br />
the internationally renowned<br />
Sheraton Mirage Resort at Port<br />
Douglas and a cocoa farmer as<br />
well. With his wife, he farms<br />
about 1,400 cocoa trees and says<br />
he loves growing something<br />
that’s transformed into beautiful<br />
quality chocolate.<br />
His labour of love begins every<br />
day at 2.45am, when he heads to<br />
the resort’s restaurant, after which<br />
he spends several hours among<br />
the trees each day. “It means I<br />
have to put in long hours but I still<br />
reckon my two jobs are a perfect<br />
match,” says Kirk.<br />

Jetstar’s has achieved another fi rst, taking out the<br />
Best Business Class White Wine at the Cellars in<br />
the Sky Awards in February. Cellars in the Sky is<br />
an international award program run by Business<br />
Traveller Magazine. The awards recognise the<br />
quality of wine available on long-haul fl ights.<br />
The winning white, a 2010 Waipara Hills<br />
Sauvignon Blanc from New Zealand (NZ), achieved<br />
a total of 95 points from a possible 100. Judges<br />
described the wine as: “Crisp, fresh and herby with<br />
a hint of celery. Not too acidic and not too much<br />
residual sugar. A good core — balanced, focused<br />
and intense.”<br />
Jetstar formed a dedicated wine panel in 2011 to<br />
design and update Jetstar’s wine list. Expert Matt<br />
Skinner, who sits on the panel, said Jetstar were<br />
proud to be showcasing good value Australian and<br />
NZ wines. “These awards are not only a testament<br />
to Jetstar’s Business Class service, but to the<br />
outstanding talent and professionalism of the<br />
winemakers based Australia and New Zealand,”<br />
said Skinner.<br />

One Year On<br />
This month marks the anniversary of the devastating<br />
earthquake and tsunami in Japan and one year on,<br />
World Vision is still helping communities recover<br />
Without warning, the<br />
earth jolted. A vast<br />
wall of water engulfed<br />
homes, cars and<br />
buildings. Desperate families<br />
searched for missing loved ones.<br />
Many were never found. And then,<br />
a nuclear emergency. Freezing<br />
weather conditions. No food, power<br />
or running water. Destruction.<br />
Devastation. Japan, one year ago.<br />
QUICK ACTION IN A CRISIS<br />
World Vision responded<br />
immediately to provide relief.<br />
Thanks to the support of StarKids<br />
and the Australian and international<br />
community, World Vision assisted<br />
more than 84,000 people in the<br />
most severely affected areas in<br />
northern Japan.<br />
For people who had lost<br />
everything, essential items like<br />
blankets, clothing, nappies, hygiene<br />
kits, bottled water, kitchen utensils<br />
and bedding brought some much<br />
needed relief. World Vision also<br />
provided food through community<br />
kitchen projects.<br />
Mrs Saijo and her 16-monthold<br />
daughter Kouka stayed in an<br />
evacuation centre supported by<br />
World Vision. “We adults can bear<br />
going without meals and clean<br />
clothes for a couple of days,” she<br />
said. “But it’s really diffi cult for<br />
small children without milk and<br />
nappies. So it was very helpful that<br />
nappies were supplied in<br />
this centre.<br />
“Thank you very much. I lost my<br />

house, possessions and everything<br />
else, but I am so grateful to<br />
everyone who is helping us,”<br />
she said.<br />
PROTECTING CHILDREN<br />
Following the disaster, many<br />
children who lost family, friends,<br />
homes and schools showed signs of<br />
stress and sleeping problems.<br />
World Vision set up seven Child<br />
Friendly Spaces to support children<br />
affected by the disaster. Children<br />
could play and learn in a safe<br />
environment and were reassured<br />
by a normal routine. World<br />
Vision also helped schools with<br />
educational supplies, uniforms,<br />
gym equipment, temporary<br />
classrooms and a school bus to help children return<br />
to school.<br />
Tokura Primary School was washed away by the<br />
tsunami. A World Vision Child Friendly Space gave the<br />
evacuated children a place to play games, study and do<br />
art and craft activities. When classes fi nally resumed<br />
the students were given notebooks and pencils. Mr<br />
Asokawa, the school’s head teacher, was glad the<br />
children could move on. “This is a really big step for<br />
