HOW MANY RACES HAVE YOU<br />

GOT UNDER YOUR BELT?<br />

I haven’t done many yacht races<br />

in my life. I started sailing in Italy<br />

10 years ago with my cousin. We<br />

took part in several winter series<br />

at the local yacht club and a few<br />

national championships. My career<br />

as a professional sailor started in<br />

2006 on a Farr 70’ racer cruiser.<br />

I’ve done the Rolex circuit in the<br />

Mediterranean, the Giraglia, the<br />

Trofeo Zegna and the Maxi World<br />

Series in Sardinia, among others.<br />

After that, I crossed the Atlantic,<br />

Panama and the Pacifi c where<br />

I landed in New Zealand at the<br />

end of 2007. For three and a half<br />

years I raced regularly on a couple<br />

of 50-footers in the fi rst division<br />

doing inshore and off shore races.<br />

WHAT’S YOUR STRATEGY TO WIN<br />

The fl eet seems competitive. A<br />

good strategy would be to stay<br />

ahead from the start and keep<br />

I’ve long been a fan of Red<br />

Lantern, Sydney’s edgiest<br />

Vietnamese restaurant run<br />

by brother and sister Luke<br />

& Pauline Nguyen and Pauline’s<br />

partner, chef Mark Jensen. I knew<br />

Nguyen to say ‘hi’ to but had never<br />

sat down with him for a long chat,<br />

so I was delighted to pin him<br />

down recently at MasterChef Live<br />

to learn a little more about his life<br />

and various projects. His story<br />

is fascinating and his natural,<br />

enthusiastic manner is contagious.<br />

As he talked, I found myself<br />

immersed in his discovery of his<br />

parents’ homeland, a country he<br />

didn’t even set foot in until he was<br />

19 years old.<br />

In 1978, Nguyen’s parents fl ed<br />

southern Vietnam along with<br />

thousands of others, and shortly<br />

afterwards his mother gave birth<br />

to him in a Thai refugee camp.<br />

A year later, the family made it<br />

to Australia, ultimately settling<br />

in Cabramatta in south-western<br />

Sydney, where his parents ran<br />

a restaurant.<br />

Nguyen recalls that in those<br />

early years “it was impossible<br />

to even fi nd lemongrass — but<br />

slowly, as other Vietnamese<br />

refugees were drawn to the area,<br />

a community developed and soon<br />

sounds, smells, language and<br />

produce that my parents had left<br />

behind. When I left, at the age of<br />

17, and moved to Surry Hills, it<br />

was like leaving Vietnam.”<br />

After school, Nguyen headed<br />

to university to study computer<br />

science as his parents expected.<br />

“I lasted a week,” he admits. “It<br />

wasn’t for me; I always knew I<br />

wanted to open a restaurant.” He<br />

explains: “My parents had worked<br />

so hard in their restaurant out<br />

of necessity; they didn’t think it<br />

was a worthwhile thing for their<br />

children to do. They said I was<br />

‘wasting my education’, but in<br />

Australia we have choices and<br />

options — here you can follow<br />

your passions.”<br />

Nguyen also knew that once<br />

he opened his own restaurant<br />

it would be hard to get away for<br />

holidays and travel, so fi rst he set<br />

off to see the world, back-packing<br />

through 14 countries, fi nishing<br />

up in Vietnam. He was the fi rst of<br />

his family to ‘return’ to Vietnam.<br />

“Of course, for me it wasn’t<br />

returning,” he explains. “I was<br />

born in Thailand, but even so, it<br />

felt like coming home. But it was<br />

only once I arrived in Vietnam<br />

and met aunties and uncles and<br />

grandparents that I started to<br />

understand my own parents;<br />

things suddenly made sense — the<br />

strictness and the work ethic. Dad<br />

would always say, ‘We risked our<br />

lives coming to this free country —<br />

you can’t waste the opportunities.’<br />

They were always working in the<br />

restaurant, and so were we; while<br />

our friends were off playing, we<br />

were working.”<br />

“When I was researching my<br />

second book, Songs of Sapa, I met<br />

a young girl at a fruit stall in a<br />

market in Hoi An; she was peeling<br />

mangoes and mixing them with<br />

condensed milk and ice to make the<br />

classic fruit shakes. She was tiny,<br />

only about 10 years old, and such<br />

a perfectionist I said ‘Gee, your<br />

mum’s taught you well’, looking<br />

at the older lady at the stall, and<br />

she said ‘Oh she’s not my mum,<br />

she’s my boss.’ I said: ‘What do you<br />

mean she’s not your mum? Why<br />

are you working here — why aren’t<br />

you at school?’ and she said ‘I don’t<br />

go to school — it costs $100 a year<br />

and I can’t aff ord it.’ I was like wow,<br />

I just never thought that there’d be<br />

10-year-olds that weren’t at school.<br />

I felt guilty — I’d bought jeans for<br />

$100 and that’s a kid’s education<br />

for a year. So Suzanna Boyd, my<br />

partner, and I set up The Little<br />

Lantern Foundation in conjunction<br />

with Reach, a charity in central<br />

Vietnam, to train disadvantaged<br />

youth in hospitality.<br />

“As I was researching Songs<br />

of Sapa, which is about regional<br />

Vietnamese cuisine, I was<br />

intrigued to learn about the<br />

ingredients the French had<br />

introduced. Before the French<br />

came, beef wasn’t used in<br />

Vietnamese cooking — buff alo<br />

were working animals so they<br />

weren’t eaten. Then the French<br />

arrived and said ‘Look at all<br />

these cattle — why aren’t you<br />

eating them?’. Coff ee, asparagus,<br />

artichokes, dill, tomatoes, beer...<br />

We didn’t drink beer — now I<br />

think we’re the second biggest<br />

beer-drinking nation. Baking’s<br />

probably the best example: I used<br />

to take a baguette to school in my<br />

lunch box every day with pâté and<br />

cold cuts and pork terrine — to me<br />

this was Vietnamese food.<br />

“So I started researching<br />

my latest book, Indochine. I<br />

travelled around the country and<br />

interviewed 90-year-olds who had<br />

lived through the colonial times<br />

— they were so full of stories. In<br />

every home I visited there was an<br />

old cabinet called a garde manger,<br />

which was used to store food<br />

before the days of refrigerators. If<br />

you ask any Vietnamese kid what<br />

it is they’ll tell you it’s a garde<br />

manger — and they assume it’s a<br />

Vietnamese word — but of course<br />

it’s French. We don’t have a word<br />

for it in Vietnamese — we’ve just<br />

adopted the French word.”<br />

And what’s next in Nguyen’s<br />

discovery of his ancestral<br />

homeland? “I fell in love with the<br />

Mekong the fi rst time I went to<br />

Vietnam. So my next television<br />

show, Luke Nguyen’s Greater<br />

Mekong, follows the Mekong<br />

from its origin in China, through<br />

Myanmar then northern Thailand<br />

into Laos and Cambodia then<br />

fi nally into Vietnam — along the<br />

way I discovered the diff erent<br />

cuisines and cultures and also the<br />

diff erent landscapes that it fl ows<br />

through. Next year, I’ll also start<br />

taking boutique culinary tours to<br />

Vietnam. Culinary tours seemed<br />

the next logical step. There’s so<br />

much to see and experience all<br />

over the country — I want to<br />

showcase the ‘real’ Vietnam.”<br />

known locally as Tay Ho,<br />

and now this unique, up and coming<br />

Tay Ho has world-class food<br />

and cocktails. Canadian chef<br />

Donald Berger was one of the fi rst<br />

operators to recognise the area’s<br />

potential. He says that when he<br />

established Vine restaurant there<br />

in 2003 there was little in the<br />

way of development; the area was peppered<br />

with water-fi lled bomb craters and people<br />

said he was “crazy” to open a fi ne-dining<br />

restaurant in a Vietnamese residential area.<br />

Today, Vine Restaurant and its sister<br />

wine and cigar shop Vine Cellar Door have<br />

built a solid reputation. Berger left Vine<br />

to start his own business in 2007, and<br />

the four-storey, glass-fronted<br />

Don’s, set on the lake opposite<br />

the Sheraton Hotel, has become<br />

synonymous with fantastic<br />

international cuisine, from pizzas<br />

and sandwiches to French cuisine<br />

and fi ne wines. Don’s rooftop oyster<br />

bar is a particularly popular haunt<br />

Literally meaning ‘Independence<br />

Building’, the art deco-styled<br />

Gedung Merdeka was the venue for<br />

On the same street is Bandung’s<br />

oldest hotel. Originally built in<br />

1870 as Societeit Concordia, the<br />

Homann. Featuring Dutch art<br />

deco-colonial architecture, the<br />

Gedung Sate (Satay Building). This<br />

iconic building has a mix of neoclassical<br />

pinnacle evokes the shape of<br />

Indonesia’s satay dish. In 1925, it<br />

was the only big building in the<br />

Flowers owing to her beautiful landscape.<br />

On our way to Lembang, the highest<br />

point of Tangkuban Perahu Mountain, we<br />

visit Dago Tea House. This cultural park<br />

is basically a tea plantation featuring a<br />

restaurant serving authentic Sundanese<br />

(West Javanese) cuisine and its own tea.<br />

While enjoying the beauty of the<br />

panoramic landscapes, we have Sundanese<br />

teh po ci (hot tea from a clay teapot),<br />

bandrek and bajigur. The last two are<br />

traditional drinks made from various local<br />

ingredients that warm your body. The<br />

drinks are also best paired with fried corn,<br />

which you can buy from street vendors on<br />

the way to Lembang.<br />

En route, The Peak Resort Dining<br />

sits on the highest hill of Girindah and<br />

off ers European dishes. The restaurant is<br />

surrounded by the beautiful spectacle of<br />

the mountains of Tangkuban Perahu and<br />

Burangrang during the day and the sparkle<br />

Bandung off ers foodies a fantastic choice,<br />

from food stalls to fi ne-dining eateries. The<br />

locals we encounter tell us there are more<br />

than 500 places serving a wide array of<br />

cuisines, from traditional Bandung fare to<br />

Chinese and European cuisine.<br />

There are also dozens of Chinese food<br />

restaurants spread over the city. One of the<br />

most famous is Queen, a semi fi ne-dining<br />

eatery that serves a variety of authentic<br />

Chinese dishes. And those in search of<br />

upscale Western dining should reserve a<br />

place at either The Wind Chime or<br />

The Peak.<br />

Coff ee lovers should not leave Bandung<br />

without paying a visit to Kopi Aroma.<br />

Located on the corner of Banceuy Street in<br />

the city’s old Chinatown, this art deco-style<br />

shop produces and sells what people say<br />

is arguably one of the best coff ee blends<br />

in Bandung — if not the archipelago. “We<br />

produce our own coff ee blends, using the<br />

same grinder machine and roasting tools<br />

that my father used since he fi rst opened<br />

the shop in 1933,” says Widya Pratama, the<br />

shop’s second-generation owner.<br />

Cihampelas Street is the city’s<br />

oldest centre of factory outlets,<br />

selling everything from jeans,<br />

shoes, T-shirts, accessories and<br />

other apparel.<br />

Many of Bandung’s factory<br />

outlets have gone upmarket.<br />

Locals tell us there are now as<br />

many as 50 outlets spread over<br />

the city. But note: the quality is<br />

variable. “Some of the sales items<br />

may be rejects, having fallen short<br />

of export quality, but there are so<br />

many of good quality,” says Andre,<br />

a local who comments that many<br />

visitors are fi nding these outlets in<br />

Bandung a great bargain.<br />

Rumah Mode seems to be the<br />

hottest factory outlet and sells a<br />

broad range of men’s and women’s<br />

clothes. Andre says those seeking<br />

to buy kids’ clothes should visit<br />

Victoria and “for handbags and<br />

shoes, you should go to Toko Diaz”.<br />

touching the land where my<br />

ancestors roamed. The only<br />

connection to Cambodian<br />

culture I had was through<br />

the food my mum cooked and<br />

the wat my family and I would<br />

visit at New Year. One day, my<br />

dream became reality and I<br />

touched down at the Phnom<br />

Penh airport with my mother,<br />

grandfather and boyfriend Peter,<br />

to be greeted by the humid air. The<br />

best time to travel to Cambodia is<br />

between November-March when<br />

temperatures are merely warm;<br />

otherwise it can be too hot to see<br />

Angkor in its full glory.<br />

We arrived in the afternoon but<br />

still managed to try some babar<br />

(a type of porridge with chicken,<br />

pork or fi sh) at Psar Thmei,<br />

Phnom Penh’s central market, and<br />

taro, banana and sticky rice. Later<br />

that day, I indulged in prawns<br />

barbecued to perfection with<br />

banchau (omelette with pork and<br />

My style is to mix it all up in a<br />

big porcelain bowl and drench<br />

the mixture in the peanut fi sh<br />

sauce — this is one of my absolute<br />

favourite meals of all time. This<br />

one was even better than my<br />

mum’s version and that is pretty<br />

hard to beat.<br />

When night descended, I found<br />

myself lingering along the Tonle<br />

Sap footpath. Here, I found heaps<br />

of food stalls and tried everything<br />

I could fi t in my hands. Phnom<br />

Penh really comes to life at night;<br />

we drove along Sisowath Quay<br />

towards the Naga Casino. I was

Phnom Penh appeared surreal,<br />

eccentric and fl amboyant — a<br />

complete contrast from the Pol<br />

Pot years. My mum, Peter and I<br />

stopped at Naga and had a couple<br />

of fancy cocktails.<br />

A tour is the best way to cover<br />

a lot of ground in a short time.<br />

Venture out to the Killing Fields<br />

situated 15km from central<br />

Phnom Penh. Here at Choeung<br />

Ek, thousands fell during the<br />

Khmer Rouge regime. While<br />

here, remember to keep your<br />

voice down and wear appropriate<br />

clothing to demonstrate respect.<br />

We visited Phnom Tamao, a<br />

wildlife sanctuary with native sun<br />

bears and went to Wat Phnom,<br />

which is situated in an area fi lled<br />

with rugged bush overgrowth,<br />

romantic old temples and stray<br />

told me when she was younger<br />

there used to be hundreds of<br />

monkeys here. She emphasised<br />

that Cambodian monkeys are<br />

mischievous and very naughty in<br />

character but still valued among<br />

Khmers. She told me a story of<br />

a monkey (swar) that set her<br />

neighbour’s house on fi re. It got<br />

hold of a lighter and that was the<br />

end of the house and the monkey.<br />

After dinner, we headed out to<br />

The Heart of Darkness nightclub,<br />

which plays the latest English<br />

tunes until the early hours of the<br />

morning with the DJ fusing the<br />

latest ’90s dance hits of Britney<br />

Spears and Lady Gaga with<br />

traditional Khmer music. Locals<br />

love the fl aming shots (I had fi ve).<br />

had booked us bus tickets for<br />

Battambang, 290km from Phnom<br />

Penh. It’s best to take the day<br />

buses. Battambang is worth<br />

a visit because it captures the<br />

essence of everyday life in rural<br />

Cambodia. It is the second largest<br />

city in Cambodia and where my<br />

family is from, so it holds strong<br />

connections to my roots for me.<br />

Battambang has several famous<br />

sites, including Wat Ek, an 11thcentury<br />

temple. In the last century,<br />

Phnom Sampeu (phnom means<br />

‘hill’) housed the Killing Caves of<br />

the Khmer Rouge, and the Lang<br />

La’Coun (Punishment Cave) was<br />

used for torture. The summit<br />

of Wat Ek has breathtaking<br />

views, including one of Crocodile<br />

Mountain — once a stronghold of<br />

line. Cambodia is home to cobras,<br />

sun bears and leopards; you, too,<br />

MY EPIPHANY<br />

I found myself lost in wonder<br />

at children kicking their shoes<br />

around; contented with the<br />

simplest of games. We get lost<br />

in a materialistic world, where<br />

the meaning of happiness is big<br />

brands, fl ashy cars and more<br />

zeros in your bank account. To the<br />

Cambodians, happiness is peace<br />

and not war. These are a few<br />

lessons in life we all can learn from.<br />

We headed to Siem Reap on<br />

the fi fth day — the pinnacle of<br />

our trip. When we arrived, we<br />

went shopping at Psar Chaa, the<br />

old market, where there were<br />

souvenirs galore.<br />

Angkor Wat should have been<br />

one of the wonders of the world;<br />

it is unlike anything else you will<br />

ever see in your lifetime. It’s hard<br />

to believe that this inspirational<br />

structure, built between the 9th and<br />

13th centuries, was once lost, only to<br />

be rediscovered in the late 1960s by<br />

archaeologist Henri Mouhot.<br />

Here lie untold stories and<br />

magic, a strong testament to the<br />

mysterious Angkorian history.<br />

design and an infectious beauty<br />

with unprecedented history and<br />

culture, and this is refl ected in the<br />

In a leap of faith, Teo Ying Hui ditched her offi ce job<br />

and “dumped all her savings into a fashion course”<br />

at Raffl es Design Institute. Shortly after graduating,<br />

she presented her fi rst runway collection in 2007 and<br />

was immediately snapped up by Front Row, Singapore’s<br />

cutting-edge emporium for local designers. “It was<br />

almost surreal for a new designer like me to be given this<br />

opportunity at that time,” she says. “I was still fi nding<br />

my way within the industry, and before I knew it, I was<br />

preparing my garments for the sales fl oor.<br />

“My label, demisemiquaver, is slowly evolving,”<br />

she explains. “In every new collection, I aim to put<br />

more thought and imagination into the<br />

shapes, fi t, proportions and fabrications.”<br />

Alfi e Leong was exposed to clothes making from an<br />

early age as his mother sewed the family’s clothes.<br />

Watching her awakened in him his own ideas for<br />

fashion and a love of tailoring. In school, however, he<br />

signed up for a diploma in electronics — but ditched it to<br />

become a fashion designer.<br />

In 1995, a coveted scholarship to Raffl es La Salle<br />

International Design school off ered Leong the<br />

opportunity to get some formal fashion training under<br />

his belt after several years of working in the trade.<br />

“After that, I went on to win several awards, which<br />

assured my place in fashion,” he says. “I set up my fi rst<br />

offi cial label — FLAGS — and opened shops<br />

in The Heeren, Bugis Junction and Isetan.<br />

My asymmetrical, draping style was slowly<br />

accepted by the mainstream. Eight years<br />

ago I started Mu and, to bring my garments<br />

to an international platform, AWOL.”<br />

Carolyn Kan designs jewellery that is fun, clever and<br />

versatile. Her collections, such as Reborn, which<br />

turns everyday objects like safety pins into arty<br />

jewellery, and Grit, which integrates a material’s fl aws<br />

into beautiful designs, can be worn equally well with<br />

evening wear, rocker jeans or boho outfi ts.<br />

Kan won ELLE Awards’ Jewellery Designer of<br />

the Year in 2010 and launched her<br />

atelier in October <strong>2011</strong>. When fashion<br />

designer Harry Halim opened Paris<br />

Fashion Week in <strong>2011</strong>, he paraded his<br />

Carrie K. Magma ring.<br />

She is planning to reveal a new line<br />

of jewellery for men, as well as bling for<br />

furry pets, and will be inviting guest<br />

artisans and designers to showcase their<br />

collections there too. “I have experimented with diff erent<br />

design styles and techniques but fi nd myself gravitating<br />

back towards simple, organic forms that look seemingly<br />

One of the most well respected Singapore fashion<br />

labels, Reckless Ericka (named after a fi ctional<br />

character in a short story by Paul Arden),<br />

comprises trio Afton Chen, Ruth Marbun and<br />

Louis Koh.<br />

“The three of us met at Raffl es Design Institute,” says<br />

Chen. “Ruth and I are fashion designers while Louis is<br />

in charge of the company’s marketing<br />

and operations. For Ruth and me, it has<br />

always been our dream to set up our<br />

own label.”<br />

Reckless Ericka’s debut fashion show<br />

at the Audi Singapore Festival in 2009<br />

saw them present alongside fashion<br />

bigwigs Vivienne Westwood, Christian<br />

Lacroix and Gareth Pugh.<br />

A pop-up store in Stamford House in January 2010<br />

was followed by their fi rst stand-alone boutique there<br />

in June that year. Their clientele includes singer Adam<br />

Lambert and American Idol fi nalist David Archuleta.<br />

Jo Soh has always wanted to be a fashion designer.<br />

“At the age of 12, I decided to pursue fashion design<br />

as a career and have never looked back,” she says.<br />

“I was heavily infl uenced by my very fashionable<br />

mother who had a huge wardrobe. ”<br />

Besides designing for her own label, she also designed<br />

the outfi ts for the Singapore disabled sports contingent<br />

that competed in the Asean Para Games in Thailand.<br />

Interestingly, she broke onto the scene in Australia<br />

fi rst, with her debut collection at the Mercedes<br />

Australian Fashion Week in Melbourne, Australia in<br />

2003. She sold the entire collection immediately after<br />

to a boutique in Melbourne. She’s taken her label to the<br />

US, Japan, Hong Kong and Malaysia. And Katy Perry<br />

has worn her sequinned bustier dress from the spring/<br />

summer 2010 collection.<br />

In Singapore, Soh’s label Hansel fl ourishes at her own<br />

store in Mandarin Gallery and she has plans to secure<br />

a second shop next year. Her sister label, Hello Hansel,<br />

focuses on bright and cheerful casual wear.<br />

YU SHENG — SINGAPORE<br />

The tradition of eating yu sheng<br />

originated during Singapore’s<br />

nation-building days. For Chinese<br />

migrants, the dish was a reward<br />

for a year’s hard work and<br />

initiated the Chinese New Year<br />

festivities. “It was created by the<br />

‘Four Kings of Chinese Cuisine’<br />

in the 1960s,” explains master<br />

chef Steven Ng of Shang Palace in<br />

the Shangri-La Hotel, Singapore.<br />

“These Cantonese chefs from<br />

China thought it would be good<br />

to have an auspicious dish to start<br />

the year.”<br />

They missed their provincial<br />

appetiser of sliced raw fi sh mixed<br />

with oil, ginger, sliced spring<br />

onion and light soy sauce that goes<br />

well with porridge, so together<br />

they devised a dish that added<br />

shredded vegetables and other<br />

condiments to the raw fi sh slices.<br />

Yu means fi sh, and pronounced<br />

explains: “The type of ingredients<br />

in our yu sheng will symbolise the<br />

current animal year. Since next<br />

year is the Dragon year, we will be<br />

having lobster meat in addition to<br />

the popular salmon.”<br />

Traditionally, each ingredient is<br />

given its own auspicious greeting<br />

as it is added to the dish. When<br />

they are all assembled, everyone<br />

gathers around and tosses the<br />

dish seven times while shouting<br />

auspicious phrases, before<br />

south to the rustic and charming Margaret River.<br />

The highlight of our trip undoubtedly was Caversham<br />

Wildlife Park, a friendly farm that’s home to many animals<br />

unique to Australia, and where you can feed kangaroos,<br />

pet wombats and pose with koalas.<br />

It was more than fi ve years ago since<br />

I’d last visited Taipei. When Jetstar<br />

posted its weekly Friday sale for<br />

Taiwan, I jumped at the opportunity<br />

and booked myself a trip I will<br />

never forget.<br />

Despite this being my second<br />

trip to Taipei, I decided to extend<br />

my holiday by starting with the<br />

breathtaking Taroko National Park.<br />

I booked myself into one of the<br />

luxurious hotels nestling within the<br />

national park, and was totally blown<br />

away by the magnifi cence of the<br />

park during the car ride up to the<br />

hotel. Never before throughout my<br />

countless travels have I ever been<br />

so overwhelmed by such serenity<br />

— woods are juxtaposed against<br />

awe-inspiring mountains and the rush<br />

of mountain streams.<br />

Totally invigorated by the magic<br />

of the national park, I headed back<br />

to Taipei city to soak up the vibrancy<br />

of the colourful city. Needless to say,<br />

eating, shopping and experiencing<br />

the best karaoke only Taiwan can<br />

offer ended my week-long trip on<br />

a high.<br />
