Live happy and healthy this New Year!<br />

Each new year many of us vow to make<br />

changes in our diet and physical activities.<br />

Count me in on th<strong>at</strong> one! Have you gotten off<br />

to a good start? I have asked friends to share<br />

their comments on wh<strong>at</strong> they feel works for<br />

them. They all agree, if you don’t work out <strong>at</strong><br />

the gym, walk, run or work out <strong>at</strong> home. And<br />

<strong>at</strong> meal time, use portion control.<br />

Donna Thompson has always had her exercise<br />

routine, but <strong>was</strong> never been too keen on<br />

running. However, with the incentive of a<br />

buddy and the purchase of a gre<strong>at</strong> lightweight<br />

pair of running shoes, she now has added running<br />

a few times a week to her<br />

routine and enjoys it.<br />

At dinner time, use portion<br />

control. Try pl<strong>at</strong>ing up the<br />

right sized portions, instead of<br />

family members serving themselves.<br />

and veggies! E<strong>at</strong> an apple for a snack instead<br />

of th<strong>at</strong> candy bar.<br />

Christine Carlson works out early in the<br />

morning, before there is anything to cause<br />

distraction. If you wait until l<strong>at</strong>er in the day,<br />

things may come up th<strong>at</strong> need your <strong>at</strong>tention<br />

and exercise does not take priority.<br />

Find a group of people th<strong>at</strong> will hold you<br />

accountable. Chris runs with a group of<br />

friends and always looks forward to seeing<br />

them. Th<strong>at</strong> helps motiv<strong>at</strong>e her to go run.<br />

Last but not least, if Chris doesn’t get to the<br />

gym, she uses the Time Warner cable Fit TV<br />

on Demand. There are longer and shorter videos<br />

and most do not need equipment. These<br />

can be done right in your own living room and<br />

work for her and can work for you, too!<br />

A Mystics Garden, owned by Jan Petri-<br />

Kolleda and Dawn Prior, is a shop<br />

like none other in <strong>Fuquay</strong>-<strong>Varina</strong>.<br />

Loc<strong>at</strong>ed <strong>at</strong> 601 Broad St., the<br />

shop offers handmade and specialty<br />

jewelry, prints and decor<strong>at</strong>ive<br />

fountains. Mostly, it offers a calm<br />

haven of <strong>well</strong>-being. In addition<br />

to items for sale, there are classes<br />

th<strong>at</strong> include topics such as medita-<br />

tion, how to be happy and candle<br />

making.<br />

The newest offering <strong>at</strong> A<br />

Mystics Garden is massage.<br />

Adolfo Lunardi is a massage therapist<br />

who will be <strong>at</strong> A Mystics Garden<br />

every Tuesday and Thursday and every<br />

other S<strong>at</strong>urday from 11 a.m. to 3 p.m. At<br />

just $40 per hour massage before gr<strong>at</strong>uity,<br />

it is a bargain. Adolfo agrees with Jan<br />

and Dawn’s philosophy of making things<br />

affordable for as many people as possible<br />

so th<strong>at</strong> people can enjoy themselves without<br />

breaking the bank.<br />

Adolfo Lundari <strong>was</strong> born and raised<br />

on St<strong>at</strong>en Island, NY, and received his<br />

associ<strong>at</strong>es degree from the College of<br />

St<strong>at</strong>en Island. Adolfo transferred<br />

to New York Restaurant School<br />

due to his love of cooking, hospitality,<br />

and belief th<strong>at</strong> n<strong>at</strong>ural<br />

foods help to heal the body. He<br />

and his wife Laura and their two<br />

children moved to <strong>Fuquay</strong>-<strong>Varina</strong><br />

four years ago. They wanted to<br />

give their children a chance of<br />

growing up in a good environment<br />

and <strong>Fuquay</strong>-<strong>Varina</strong> <strong>was</strong> a<br />

good fit.<br />

Adolfo also works as a waiter<br />

and cook <strong>at</strong> Carrabbas Restaurant<br />

in Cary. He worked for Carrabbas in New<br />

York and <strong>was</strong> able to transfer here when<br />

his family moved. His wife is a teacher <strong>at</strong><br />

Lufkin Middle School. Some of his hobbies<br />

include cooking, organic gardening,<br />

continuous self-improvement and community<br />

service through his affili<strong>at</strong>ion with<br />

the Knights of Columbus. He is also the<br />

only male member of his children’s PTA<br />

<strong>at</strong> school.<br />

Tom<strong>at</strong>oes<br />

Place tom<strong>at</strong>oes in a shallow casserole dish.<br />

Add a few sprinkles of Balsamic vinegar, salt<br />

and pepper, if desired. Cook <strong>at</strong> 350 degrees<br />

for 15 minutes. These can be e<strong>at</strong>en warm as a<br />

side dish or added to a salad when they cool.<br />

This can also be done in a toaster oven.<br />

1 cup quick-cooking grits<br />

1 (7 oz.) package garlic cheese spread (such<br />

calorie creamy cheese option<br />

2 T. butter<br />

2 t. olive oil<br />

1 ½ lbs. fresh shrimp, shelled and deveined<br />

without tails<br />

1 large tom<strong>at</strong>o, diced<br />

In a saucepan, bring the w<strong>at</strong>er and salt to<br />

a boil. Stir in the grits and reduce the he<strong>at</strong>.<br />

Cook slowly for 5 minutes. Remove from he<strong>at</strong><br />

and stir in the garlic cheese until melted. Let<br />

sit for 2 to 4 minutes; keep warm.<br />

In a skillet, he<strong>at</strong> the butter and oil over<br />

medium he<strong>at</strong>. Sauté the shrimp until pink.<br />

Stir in diced tom<strong>at</strong>o and cook until tom<strong>at</strong>o is<br />

he<strong>at</strong>ed through. Remove from he<strong>at</strong>; salt and<br />

pepper to taste.<br />

Spread the cheese grits on a warm pl<strong>at</strong>ter.<br />

Top with shrimp mixture.<br />

Quinoa Salad with<br />

Black Beans and Sweet<br />

Pot<strong>at</strong>oes<br />

¾ c. and 2 teaspoons quinoa<br />

¼ c. olive oil<br />

4 medium sweet pot<strong>at</strong>oes, peeled land cut<br />

into ½ inch cubes<br />

4 scallions, chopped<br />

1 teaspoon dried red chili flakes<br />

4 cups w<strong>at</strong>er<br />

2 teaspoons salt<br />

3 cups canned black beans, rinsed<br />

4 limes, juiced<br />

½ cup chopped fresh cilantro<br />

Place quinoa in a small mesh sieve and<br />

rinse thoroughly.<br />

He<strong>at</strong> oil over medium he<strong>at</strong> in a medium<br />

skillet with a tight-fitting lid. Add sweet pot<strong>at</strong>oes,<br />

scallion, and chili. Sauté until fragrant,<br />

about 2 minutes.<br />

Add quinoa; toast for 2 minutes. Add w<strong>at</strong>er<br />

and salt. Bring to a boil, reduce he<strong>at</strong> to<br />

medium low and cover. Simmer until quinoa<br />

and sweet pot<strong>at</strong>o are tender, about 10 to 12<br />

minutes. If liquid remains unabsorbed in the<br />

pan, raise the he<strong>at</strong> to high and cook for 2<br />

minutes, until it boils off.<br />

Stir in black beans and lime juice. Serve<br />

warm or chilled. Sprinkle with cilantro.<br />
