BAKERY
Drive is something of an
Encinitas secret treasure,
tucked away on the grounds of
Sunshine Nursery, just off
Encinitas Boulevard.
In February, Harris and
her crew of five will celebrate
the second anniversary of baking
her Classic American
desserts in that spot.
Elizabethan Desserts
offers home-baked pies and 15
kinds of cupcakes in many oneof-a-kind
flavors, like
Chocolate Coffee Crunch,
topped with semi-sweet chocolate
and espresso beans. A true
purist, all her creations are
made from scratch — right
down to the peanut butter and
the marshmallows. Even the
sugar cookie icing is made with
butter, never shortening.
To offer absolute freshness,
whole cakes are only
made to order, never made
ahead. But if your sweet tooth
strikes, you can drop by for
but I had a rough plan.”
Back in the rainforest, Frank
heard the search party and began
to yell. He couldn’t see them and
vice versa,so he stumbled through
thick growth toward the searchers’
sounds.
“Suddenly, a hand reached
through the leaves and pulled me
on the trail,” Frank said. “I was
about 300 yards from it.Ten young
Costa Ricans, with machetes and
rubber boots,half carried me back
and … radioed that I was OK. I
leaped up and hugged the lead
searcher, crying ‘mucho gusto, gra-
mini-pies, cupcakes, cookies or
a S’more bar, a Lemon Pie bar
or a Gooey Buttercake bar. She
is continually creating new flavors
like the Black Beauty, a
blackberry buttercream, with
blackberry chocolate ganache,
dipped into semi-sweet Belgian
chocolate, or the Monkey
Business with banana and
caramel drizzle.
She even created a cupcake
to honor her friend Colin
Wagschal, who was killed in a
traffic accident on Encinitas
Boulevard in 2008. They had
worked together during her
cias, vaya con Dios’ — anything in
Spanish to say thanks.”
Once in the lobby, Frank and
Heidi hugged and wept.
“He was a mess — soaked
and covered in mud,” she said.
“He was disoriented and shaking
and hardly able to walk.”
Heidi managed to get Frank
in the shower — clothes and all —
then treated his cuts, bites and
dehydration.He fell into bed.Both
agreed that was the longest three
hours of their lives.
Lessons learned?
“Now we don’t take each
other for granted,” Heidi said.
“We say ‘I love you’ every day.”
And never go off alone, Frank
Delicias Restaurant and knowing
his nickname and his
favorite flavors, she created
Colin’s Peanut Butter Wags.
A San Diego native and
always a prolific baker, Harris
first took a job as a waitress at
Delicias. After then-owner
Kevin Mabbutt began tasting
the baked goods Harris
brought in from home to share,
he made her his pastry chef.
When she left in 2001, her
many customers followed her,
as she searched for a kitchen
where she could create the volume
she required.
Harris chose the scenic
spot in the nursery that had
once been a coffee house and
delicatessen. She learned of
the site from a friend, when
she was looking for just the
right spot to start her own bakery.
“It had this great kitchen.
It was perfect,” she said.
Things were baking along
beautifully until the flood
swamped the bakery during
the rain storms one week
before Christmas. Cleanup
took until Jan. 9, but all is well
now.
“We just want everyone to
know we are back in full
swing,” she said.
added. “Let someone know where
you’re going and when you expect
to return.”
While leaving the lodge,
Frank asked for a trail map and
received the same inaccurate one.
“We don’t know if they ever
changed the map, but we don’t
think so,” he said. “Unless someone
never returns or really dies,
they probably won’t bother. They
don’t seem to take these things
that seriously if the person is
found.”
speakers,” said Andrew, a
freshman from Rancho Santa
Fe. “I didn’t like their views on
politics. It was cool to see the
inauguration, but they booed
(George W.) Bush. You shouldn’t
boo a president.”
“I just was shocked at how
rude people could be to a president,”
added Brandon, a sophomore
who attended Bush’s
second inauguration in 2005.
Some of the students were
also put off by the commercialism.
They said vendors
were selling everything from
T-shirts to Obama hot sauce.
Negative experiences
aside, all the students said
they would encourage anyone
to attend a future inauguration.
“I would definitely go
again,” said Lauren, a senior
from Santaluz. “Whether it’s a
president you support or not,
it’s still really important. To
have the opportunity to see the
next leaders of our country is a
really cool experience. I would
definitely recommend it.”
To Your
Health
By the physicians and staff
It’s important
to take care of
your feet
By Ronald Lieberman
D.P.M., SCRIPPS MEMORIAL HOSPITAL
ENCINITAS
The feet are body parts
that get little respect despite
the repeated pounding and
daily use forced upon them.
Most people simply take their
feet for granted. That is, until
they don’t function at their best
and send painful signals of
their neglect. Imagine how
much pressure and wear and
tear each of those 26 bones, 33
joints, and more than 100 tendons,
muscles, and ligaments
endure with each and every
step we take. By their unique
structure, your feet simultaneously
support your weight, balance
and propel you, and safely
absorb the shocks of your
motion.
When we wear improper
footwear and shirk our hygienic
responsibility, signs of trouble
can occur and should be
taken seriously. Pain, excessively
dry skin, thickened or discolored
nails, swelling, redness,
and unusual sensations are not
something to ignore or hide in
shoes every day. Instead, you
should seek treatment for what
may be the start of something
brewing much deeper than the
surface reveals.
One of the best ways to
support your feet so that they
can support you back is to practice
good hygiene. With more
than 250,000 sweat glands, the
mixture of sweat and bacteria
in our shoes and socks can not
only increase the possibility for
odor, but also lead to fungal
infections. Washing your feet
daily is as important as washing
your hair, hands and other body
parts, and doing so with a wash
cloth or similarly abrasive product
— between each toe and on
all surfaces — also helps to
exfoliate the dead skin and bacteria
away. Keeping your feet
clean and dry will help to lower
the risk of infection. And when
the feet become dry, applying
lotion after proper cleaning
will help keep dry, itchy skin in
check.
Trimming nails the right
way can also ensure that your
personal support system stays
strong and infection free.
According to the California
Podiatric Medical Association,
nails should always be trimmed
straight across and not too
short. If salon pampering is
what you fancy, make sure that
your nail technician properly
disinfects his or her equipment
to insure that you are not
exposed to the possible germs
and infections of those who had
the treatment before you. With
so much in the news about the
cleanliness of nail salons, this
should be important research
for any salon-goer, especially of
those salons that offer pedicures
in a bath-type basin.
Now let’s talk shoes. As
stylish as they may be, high
heels and shoes that squeeze
the feet are linked to a host of
foot problems. Painful bunions,
which are misaligned toe joints,
are much more common in
