KAI Shun Damascus Steel Knives<br />

High-quality Japanese knives are harder than<br />

similar European ones and can therefore be<br />

ground to a more acute angle. For this reason,<br />

the Japanese knives are also thinner. Because<br />

they are thinner and ground to a smaller angle,<br />

they glide easily through produce. Damascus<br />

steel is forged in several layers laid over one<br />

another. The various layers are can be seen in<br />

the finished blade as a type of grain. This production<br />

method is not for decorative purposes.<br />

The outer, softer layers are forged around a<br />

particularly hard centre and the finished blade<br />

is therefore flexible and suitable for all purposes.<br />

These kitchen knives from the Shun range<br />

by the leading Japanese cutler KAI are made<br />

from Damascus steel with 32 layers. The inner<br />

layer is made of V-Gold-10 steel. This steel is<br />

extremely resistant to corrosion, very hard (61±<br />

1 HRC, 1.0% carbon, 1.5% cobalt) and makes<br />

the blade uniquely sharp and retains the sharpness<br />

of the blade. Every knife is hand-ground.<br />

The techniques used come from the Japanese<br />

Samurai art of sword making. The handles are<br />

made from laminated Pakka wood with a light<br />

cross section for a safe grip. The blade is anchored<br />

within the handle along its whole<br />

length, which allows for a high level of stability<br />

and control when cutting.<br />
