County Commissioners met in<br />
regular adjourned session with<br />
Charles R. Loiseau, Chairman;<br />
Robert S. Connell and Thomas<br />
K. Holle members; and Sonya<br />
L. Stohs, County Clerk present.<br />
The meeting was called to<br />
order at 9:00 a.m.<br />
The Board opened the meeting<br />
with the flag salute.<br />

meat thermometer should not<br />
be taken for granted if you want<br />
to keep your family safe and<br />
have a juicy, great tasting eating<br />
experience.<br />
Meat thermometers are<br />
available every where and<br />
come in different forms. From<br />
the dial instant read meat thermometer<br />
to a digital instant<br />
read thermometer to a disposable<br />
temperature indicator, they<br />
all provide consumers with the<br />
information to make sure food<br />
is cooked to the proper temperature.<br />
It is important to<br />
research what type of thermometer<br />
is right for you and<br />
your family. When doing your<br />
research don’t forget that your<br />
local Extension office is a great<br />
place to go for information.<br />

The USDA has recently<br />
announced the new temperatures<br />
for safely cooking pork,<br />
steak, roasts, and chops.<br />
USDA recommends cooking<br />
all whole cuts of meat to 145o<br />
F as measured with a food thermometer<br />
placed in the thickest<br />
part of the meat, then allowing<br />
the meat to rest for three minutes<br />
before carving or consuming.<br />
Ground meats including<br />
ground beef, veal, lamb and<br />
pork should be cooked to an<br />
internal temperature of 160o F<br />
and do not require a rest time.<br />
The safe cooking temperature<br />
for all poultry products, including<br />
ground chicken and turkey<br />
remains at 165o F.<br />
These new changes will<br />
hopefully make it easier for<br />
consumers to remember the<br />
internal temperatures for the<br />
different meats they are cooking;<br />
145o F for whole meats,<br />
160o F for ground meat, and<br />
165o F for all poultry.<br />
Rest time is the other change<br />

Specialist to ask about the road<br />
and he says that if it has been<br />
used as a road and maintained<br />
as a road then it is a road.<br />

“rest time” is the amount of<br />
time the product remains at the<br />
final temperature after it has<br />
been removed from a grill,<br />
oven, or other heat source.<br />
During the three minutes after<br />
meat is removed from the heat<br />
source, its temperature remains<br />
constant or continues to rise<br />
which destroys pathogens. The<br />
USDA’s food Safety and<br />
Inspection Services has determined<br />
that it is just as safe to<br />
cook cuts of pork to 145o F<br />
with a three minute rest time as<br />
it is to cook them to 160o F the<br />
previously recommended temperature<br />
with no rest time.<br />
The new cooking recommendations<br />
clarify long held<br />
perceptions about cooking<br />
pork. Historically, consumers<br />
have viewed the color pink in<br />
pork to be a sign of undercooked<br />
meat. If raw pork is<br />
cooked to 145o F and allowed<br />
to rest for three minutes, it may<br />
still be pink but is safe to eat.<br />

remain pink after cooking.<br />
The color of meat is not a<br />
reliable indicator of whether or<br />
not meat is cook to its proper<br />
temperature. Only by using a<br />
food thermometer can consumers<br />
determine if meat has<br />
reached a sufficient temperature<br />
to destroy pathogens of<br />
public health concern. Any<br />
cooked, uncured red meats,<br />
including pork, can be pink,<br />
even when the meat has<br />
reached a safe internal temperature.<br />
So, when asking yourself the<br />
question “is it done yet?” think<br />
to yourself where is my food<br />
thermometer. Remember, it is<br />
only safe to bite when the temperature<br />
