3. Describe the breed of cattle called “Dexter”.
Ans. A small breed of Cattle originally from Ireland.
They first appeared in America in the 1930’s
in the northeastern states. Dexters are called the
“Back Yard Cow” because they are usually under
44” tall at the shoulders, have short legs and
are black, red, or dun colored. When butchered,
dress out not much over 600lbs. They require
a very small area to live in, eat about 1/3 what
the reg. cow or beef eats and do much better eat-
ing grass, brushy stuff and oat hay rather than alfalfa.
I know mine loved pomegranates, grapes
and mulberry leaves. I did spoil them a bit with
some barley, corn & molasses.
They are usually raised for beef but can be used
for milk, producing about two gallons per day.
4. What type of job would you be doing if the
position was called a “Postilion”?
Answer: From Old England - One who guides a
team drawing a carriage or other heavy vehicle
by riding the near (left) horse when one pair is
used or the near horse of the leaders when two
or more pairs are used. This job or position was
common with upper classes during the 1800’s in
