Summer Sausage Pasta Casserole<br />

8 ounces fettuccine, penne or your favorite sturdy pasta<br />

1 pound prepared <strong>Hi</strong> <strong>Mountain</strong> Summer Sausage, any blend<br />

1/4 cup chopped onion<br />

1 cup sliced mushrooms<br />

2 teaspoons <strong>Western</strong> Style Cajun Cowboy Seasoning<br />

2 cups shredded Cheddar cheese<br />

1 cup marinara sauce<br />

grated Parmesan cheese<br />

Preheat oven to 350°. Cook fettuccine as directed on package, rinse and drain well. Remove<br />

sausage from casings and cut into small pieces. Cook the sausage in a skillet with the<br />

chopped onion and mushrooms until onion is tender. Drain off excess grease. Toss the noodles,<br />

sausage, onion, mushrooms, Cajun Cowboy, 1 3/4 cups of the Cheddar cheese, and the<br />

marinara sauce. Put the mixture into a casserole and bake for 25 minutes, or until cheese<br />

melts and casserole is thoroughly heated. Sprinkle with the remaining Cheddar cheese and<br />

the Parmesan cheese the last 10 minutes of baking. Serves 4 to 6.<br />

2 to 3 lb London Broil Roast<br />

Marinade: Grill 3 whole Poblano peppers until skin bubbles<br />

and turns black. Put peppers in a zip lock bag to steam for 10<br />

min. Remove skin, stem and seeds. At the same time grill<br />

until soft, one large onion that has been sliced to 1/4"<br />

rounds. Spray onion slices with non-stick spray before grilling.<br />

Add peppers, grilled onion,1 Tbsp. chopped garlic, 1 tsp.<br />

each of Garlic Pepper Rub and Cajun Cowboy and a squeeze<br />

of lime to a food processer. Drizzle in the olive oil as you<br />

puree until smooth.<br />

Place marinade in a zip lock bag with roast. Massage marinade into meat. Marinade 1/2 hour<br />

or longer. Before cooking, remove roast from bag and bring close to room temperature. Place<br />

roast on hot charcoal grill. Plan on cooking for 5 to 10 minutes per side and then cooking over<br />

cooler coals for another 10 minutes or until the internal temperature reaches at least 145<br />

degrees. Do not pierce roast with forks—this allows the juices to run out of roast. Remove<br />

roast from grill, cover with foil and let rest for 15 minutes (this allows the juices to move to<br />

the inside of the roast, infusing the flavors throughout the meat). To serve, slice at an angle.<br />

Serve with prepared <strong>Hi</strong> <strong>Mountain</strong> Guacamole and grilled tomatoes, garnish with cilantro and<br />

sliced lime.<br />

1 lb chicken tenders<br />

Wind River Sweet Honey Marinade prepared using rice wine vinegar, canola oil and<br />

1 teaspoon of sesame oil.<br />

1/4 cup soy sauce<br />

1 teaspoon corn starch<br />

1 1/2 cup snow peas, rinsed with ends snapped off<br />

1 1/2 cup quartered roma tomatoes<br />

Marinate the chicken at least one hour or overnight in a resealable bag or covered in a non<br />

metallic dish. Reserve 3 tablespoons of marinade.<br />

Stir fry chicken in 2 tablespoons of canola or vegetable oil until lightly browned. Add snow<br />

peas and stir fry about three minutes. Add tomatoes and stir fry another 5 minutes.<br />

Whisk together the reserved marinade, soy sauce and corn starch. Add to the stir fry and toss<br />

until thickened slightly, making a glaze.<br />

Just about any vegetable can be used in this recipe, so use what you like.<br />

Hunters know that wild game such as deer, elk, buffalo<br />

and antelope are much leaner than beef. The lower fat<br />

content means a tough steak if cooked too long.<br />

The best grilling or broiling steaks are cut from the<br />

grill, cook hot and fast. This sears the meat to hold in<br />

the juices and keep it tender.<br />

When oven broiling, move your broiler rack away from<br />

the heat about a notch lower from where you normally<br />

broil your beef steaks. Your steak will cook about onethird<br />

faster than would a beef steak. Wild game is best<br />

when cooked rare to medium to maintain the moisture<br />

and flavor of the meat. If you prefer your steak to be<br />

well done, be aware that it may lose some of its desirable<br />

Italian Sausage with Tomato<br />

Garlic Sauce<br />

1 lb prepared and cooked <strong>Hi</strong> <strong>Mountain</strong> Italian Sausage<br />

8 cups roma tomatoes peeled, seeded and rough chopped<br />

1/4 cup extra virgin olive oil<br />

3 Tbs. thinnly sliced garlic<br />

1/4 cup fresh basil leaves, torn (tear at the last minute)<br />

Salt and pepper to taste and a pinch of red pepper flakes if desired<br />

Parmesan, Romano or Asiago cheese for sprinkling on each plate<br />

1 package of your favorite pasta cooked per package instructions<br />

Peeling and seeding the tomatoes: Cut a small piece off each end<br />

of the tomatos. Using a potato peeler, place the blade on the cut<br />

end and peel down the length of the tomato, moving the blade back<br />

and forth slightly. Cut in half legthwise and scrape out seeds with<br />

your thumb or a small spoon.<br />

The Sauce: This sauce is very simple but absolutely delicious when<br />

using fresh romas from your garden or a farmer's market. Heat the<br />

olive oil in a large skillet over medium heat, add the tomatoes and<br />

garlic and let simmer, stirring occasionally for about 15 minutes. The<br />

tomatoes will release their moisture, let most of the moisture cook<br />

off, add the basil and cook a few more minutes. Toss the sauce with<br />
