In 1818, Nicolas François Billecart <strong>and</strong> his spouse Elisabeth Salmon founded their Champagne House in<br />

Mareuil-sur-Ay, where the Billecart family had been established since the 17 th century .At this time, they reclaimed<br />

the coat <strong>of</strong> arms <strong>of</strong> their ancestor, Pierre Billecart, counselor, to the parliament <strong>of</strong> the King <strong>of</strong> France.<br />

The Billecart Salmon Brut is a round, harmonious <strong>and</strong> balanced Champagne. Its blend has remained unchanged<br />

since 1945; grapes from three different years, Pinot Noir, Chardonnay <strong>and</strong> Pinot Meunier, from the best sites <strong>of</strong> the<br />

Marne<br />

Pale gold in colour, this cuvee displays a mousse that is both fine <strong>and</strong> delicate. Mineral <strong>and</strong> citrus fruits initially,<br />

This excellent cuvee was created in 1964 as a tribute to the house‟s founder. It results from the blending <strong>of</strong> Gr<strong>and</strong><br />

Crus from the classified Cotes de Blancs vineyards (Chardonnay) <strong>and</strong> the Montagne de Reims (Pinot Noir).Its<br />

vinification, partially in traditional casks, underpins de generous character <strong>of</strong> this fine, elegant <strong>and</strong> rich wine.<br />

Since 1982, the Billecart Salmon Gr<strong>and</strong>e Cuvee has revealed all its character to a following <strong>of</strong> informed wine lovers.<br />

This great wine, produced from the finest sites <strong>of</strong> selected Gr<strong>and</strong> Crus, comes into its own after spending 10 years in<br />

our traditional cellars. This cuvee deserves its title <strong>of</strong> „Gr<strong>and</strong> Cru‟ thanks to the meticulous blend <strong>of</strong> grapes exclusively<br />

from the Pinot Noir <strong>and</strong> Chardonnay Gr<strong>and</strong> Crus<br />

The magic <strong>of</strong> the soil added to human skills has produced an exceptionally pure wine sourced exclusively from Pinot Noir.<br />

To enable this great wine to mature in typical single cru style, the House chooses to add very little dosage.<br />

This cuvée unveils a subtle aroma leading to an elegant, delicate bouquet <strong>of</strong> fine notes <strong>of</strong> red fruits <strong>and</strong> zest <strong>of</strong> citrus<br />

fruits. On the palate its special method <strong>of</strong> vinification gives this cuvee a light, elegant flavor, followed by a fresh finish<br />

with a taste <strong>of</strong> raspberry.<br />

Created in 1988 as a tribute to the co-founder Elisabeth Salmon, this cuvee is elaborated from an equal blend <strong>of</strong> Pinot<br />

Noir <strong>and</strong> Chardonnay, vinified as white wine, to which some Pinot Noir from Mareuil-sur-Ay, vinified as red wine, has<br />

Domaine Prieure Roch<br />

Owner <strong>of</strong> the Domaine which bears his name, Henry-Frédéric Roch embarked on his great wine adventure when<br />

he was twenty-six. This was in 1988, when the young man took the path which led to "biological" cultivation by<br />

personal conviction, the reasoned yield <strong>of</strong> which is a token <strong>of</strong> vitality for the pinot noir grape <strong>and</strong> <strong>of</strong> excellence for<br />

the wine. This ambition is also present in the ageing cellar, where the skills <strong>of</strong> man are applied to "leaving nature<br />

to get on with it". Inspired by his gr<strong>and</strong>father, Henry Leroy, one <strong>of</strong> the most highly esteemed figures in Burgundy,<br />

Henry-Frédéric Roch has blended tradition with modernity right from the start, <strong>and</strong> given life to some supremely<br />

authentic wines.<br />

Domaine de La Pousse d’Or<br />

A famous old domaine in Burgundy that has been revitalized since changing ownership in 1997. Owned by Patrick<br />

L<strong>and</strong>anger, Domaine de la Pousse d'Or st<strong>and</strong>s as one <strong>of</strong> the most recognized names in Volnay. Originally called<br />

Bousse d'Or in the 18th Century - which translates as 'golden earth'; the domaine is located a few miles from<br />

Beaune, <strong>and</strong> the 13 hectares <strong>of</strong> vineyards are spread among the communes <strong>of</strong> Volnay, Pommard <strong>and</strong> Santenay.<br />

Impressively there are three Premier Cru Volnays from privately owned vineyards: 'Clos de la Bousse d'Or', 'Clos<br />

des 60-Ouvrees' <strong>and</strong> 'Clos l'Audignac'. This is the epitome <strong>of</strong> fine Pinot Noir.<br />

Pommard. Its subtle <strong>and</strong> delicate perfume makes it typical <strong>of</strong> the Côte de Beaune. Outst<strong>and</strong>ing for its complexity <strong>and</strong><br />

refinement.<br />

An area <strong>of</strong> 2.39 ha, in traditional measurement around 60 "ouvrées" with a yield <strong>of</strong> 11,000 bottles. This magnificent wine,<br />

powerful <strong>and</strong> highly-bred, ranks with Burgundy's greatest. It takes time to reach its fullest flowering <strong>and</strong> is at its best only<br />

after several years.<br />

FPSR03 Volnay 1 er Cru en Caillerets 2004<br />

Claude Courtépée, the 18th-century Dijon historian wrote, “Whoever has no vines in Caillerets cannot know the value <strong>of</strong><br />

Volnay.” These 2.27 ha. <strong>of</strong> vines with an average annual yield <strong>of</strong> 10,000 bottles produce a highly-bred <strong>and</strong> elegant wine<br />

which can attain rapid maturity.<br />

FPSR04 Pommard 1 er Cru Jarollorieres 2006<br />

The vineyard is situated on the borders <strong>of</strong> the commune <strong>of</strong> Volnay next to the famous climate Les Rugiens. An area <strong>of</strong><br />

1.44 ha. produces some 7,000 bottles a year. The wine is powerful <strong>and</strong> full-tasting, rich in colour <strong>and</strong> in tannin. The better<br />

vintages need long ageing to attain their wonderful best.<br />

FPSR06 Corton Bress<strong>and</strong>es Gr<strong>and</strong> Cru 2004<br />

This 0.48 ha. plot <strong>of</strong> red earth combines a power <strong>and</strong> delicacy which come from the soil. It yields 1,500 bottles <strong>of</strong> a gr<strong>and</strong><br />

cru with aromas <strong>of</strong> ripe fruit enhanced by a touch <strong>of</strong> spice. The mouth is full, generous <strong>and</strong> rich, the body superbly<br />

concentrated <strong>and</strong> cloaked in well-melted tannins.<br />

FPSR05 Corton Clos du Roi Gr<strong>and</strong> Cru 2004<br />

A 1.5 ha. plot <strong>of</strong> white soil which produces well-built red wines which, with age, develop wild animal notes. Yield is around<br />

4,000 bottles per year.<br />

FRANCE - CHABLIS<br />

Simonnet-Febvre was founded in 1840 by Jean Febvre. The domain comprises approximately 9 acres, crowned by<br />

a two-third acre plot in the Gr<strong>and</strong> Cru vineyard <strong>of</strong> Les Preuses with 3.5 acres <strong>of</strong> 1er Cru Mont de Milieu <strong>and</strong> 4.7<br />

acres <strong>of</strong> communal Chablis vineyards. Simonnet-Febvre was purchased by Louis Latour in 2003. The first release<br />

under the management <strong>of</strong> Louis Latour is the 2004 Chablis AC with full range <strong>of</strong> premiers <strong>and</strong> gr<strong>and</strong> crus. , that has<br />

been modernizing the winemaking facilities, installing new stainless steel tanks <strong>and</strong> pneumatic presses. The<br />

vineyards have been reworked using the same sustainable vineyard practices utilized in Latour‟s 125 acre domain<br />

in the Côte d‟Or.<br />

Domaine Paul Blanck represents an exemplary synthesis <strong>of</strong> history <strong>and</strong> tradition flawlessly combined with<br />

The Blanck are Environment Conscious. The 36 hectares <strong>of</strong> the Domaine are farmed with traditional cupper <strong>and</strong><br />

sulphur treatment, <strong>and</strong> no fertilizer. All the vineyards are ploughed several times in the year. Indigene grass is<br />

growing to develop the biodiversity <strong>of</strong> the fauna.<br />

ITALY – TOSCANA<br />

Castello Romitorio winery is made up <strong>of</strong> three separate properties <strong>of</strong> which the<br />

flagship is the 187-hectare estate in Montalcino, Italy. The two other properties<br />

are: Poggio di Sopra with 8 hectares <strong>of</strong> vineyards, also in Montalcino <strong>and</strong><br />

Scansano with 11 hectares <strong>of</strong> vineyards.<br />

Castello Romitorio is owned by the renowned artist S<strong>and</strong>ro Chia, who spent<br />

years carefully restoring the property after acquiring it in 1984, with art <strong>and</strong><br />

wine being created simultaneously <strong>and</strong> inseparably one from the other. The<br />

Chia family‟s winemaking philosophy has evolved into a strict adherence to<br />

the pursuit <strong>of</strong> excellence at any cost <strong>and</strong> an absolute belief in quality over<br />

quantity. This philosophy has led the family to embrace only the great<br />

D.O.C.G.‟s <strong>and</strong> D.O.C.‟s <strong>of</strong> the estates.<br />

The best example <strong>of</strong> this is the 2006‟s 3000 square meter cantina located<br />

within the castle. The cantina unites the two great interests <strong>of</strong> wine <strong>and</strong> fine art<br />

in a totally unique <strong>and</strong> fascinating setting. Monolithic sculptures st<strong>and</strong> next to<br />

barrels <strong>and</strong> barriques from which the Castle‟s wine flows. Chia in fact says<br />

that the wine is meant to reflect the owner‟s dedication to artistic perfection.<br />

pleasant herbaceousness. Temperature controlled fermentation in stainless steel allows these varietals to<br />

maintain <strong>and</strong> showcase their natural characteristics.<br />

microclimates. A nose <strong>of</strong> fresh flowers, earth <strong>and</strong> distinct notes <strong>of</strong> plum. On the palate, bitter cherries open into a round<br />

<strong>and</strong> steady finish.<br />

Dark raspberry fruits <strong>and</strong> just a hint <strong>of</strong> saddle on the nose. On the palate strong earthy(that typically appears in the wine<br />

drying dusty tannins. As the components <strong>of</strong> the wine take shape, a synergy <strong>of</strong> flavors <strong>and</strong> textures is released that<br />

beautifully complements most savoury foods. Balanced <strong>and</strong> s<strong>of</strong>t this wine retains a distinct taste <strong>of</strong> tradition.<br />

ageing. This “adolescent” is a mature <strong>and</strong> fruity Port with a complex <strong>and</strong> delicate character. Its finish is perfectly balanced,<br />

giving it a flavoursome delicateness.<br />

Orange-red in colour with a touch <strong>of</strong> green. A well-rounded, generous aroma with balance <strong>and</strong> a hint <strong>of</strong> wine. Fruit aromas<br />

include orange, apricot <strong>and</strong> plum. Vanilla <strong>and</strong> old Port wine casks make up its woody aromas. This is a fruity tawny variety.<br />

In the mouth, one can still taste the fresh fruit surrounded by the ageing in wood. A good structure <strong>and</strong> perfect balance<br />

between fruit <strong>and</strong> alcohol. The attack on the palate is smooth <strong>and</strong> full-bodied. Following the initial oily feel, a fresh, s<strong>of</strong>t<br />

fruitiness appears which finishes with a slightly acidic, woody note.<br />

<strong>Wine</strong>making by Diana Cullen <strong>and</strong> Kevin Cullen on the Cullen property in Margaret River wine region <strong>of</strong> Western<br />

Australia since 1966. Studies in the early 1960‟s showed that the climate <strong>of</strong> Margaret River was similar to that <strong>of</strong><br />

Bordeaux, particularly Pomerol, in which to grow the finest quality grapes. Vanya Cullen, the daughter <strong>of</strong> Diana<br />

<strong>and</strong> Kevin, has been responsible for winemaking at her family's Wilyabrup winery since 1989. She has been<br />

rigorously experimenting in the vineyard (especially with soil <strong>and</strong> trellis management) <strong>and</strong> in the winery all the<br />

while looking to give her wines greater complexity. Cullen <strong>Wine</strong>s while remaining family owned has since evolved<br />

making quality wine from biodynamically grown grapes sourced exclusively from The Cullen Estate Vineyard <strong>and</strong><br />

Mangan Vineyard.<br />

ACW01 Cullen Margaret River White 2010 Margaret River<br />

This wine is essentially a replacement for the Ellen Bussell White wine <strong>and</strong> is made entirely from fruit grown on Cullen own<br />

vineyards. As it is made predominantly from the traditional Bordeaux blend <strong>of</strong> Sauvignon Blanc <strong>and</strong> Semillon, it is bottled<br />

in a Bordeaux bottle. However, the wine does contain a small amount <strong>of</strong> Chardonnay <strong>and</strong> this has added complexity <strong>and</strong> a<br />

touch <strong>of</strong> richness to the middle palate, without changing the basic structure <strong>of</strong> the wine.<br />

ACW02 Cullen Mangan Vineyard Semillon 2008 Margaret River<br />

The Semillon fruit was picked at Baumés ranging from 10 to 13º, which has ensured that the wine has an excellent<br />

balance <strong>of</strong> rich fruit <strong>and</strong> good acidity <strong>and</strong> an ideal alcohol level <strong>of</strong> 12%. Twenty two percent <strong>of</strong> the wine was fermented <strong>and</strong><br />

matured in French oak.<br />

ACW03 Cullen Vineyard Sauvignon Blanc Semillon 2010 Margaret River<br />

The fruit for this wine was picked at 9.7 to 12.2˚ Baumé <strong>and</strong> comprised 66% Sauvignon Blanc <strong>and</strong> 34% Semillon, with all<br />

<strong>of</strong> the former variety being matured in new French oak for five months.<br />

ACW04 Cullen Mangan Vineyard Semillon Sauvignon Blanc 2009 RP 91 Margaret River<br />

Excellent pale straw colour, with a touch <strong>of</strong> green. Attractive combination <strong>of</strong> cut grass, lime <strong>and</strong> white flower bouquet. On<br />

the palate, very focused. The mineral characters blend perfectly with the lovely lemon flavours that are a feature <strong>of</strong> high<br />

quality Semillon <strong>and</strong> which, in turn, are backed by very good acidity. The palate is integrated <strong>and</strong> has great length.<br />

ACR01 Cullen Margaret River Red 2008 Margaret River<br />

This delicious wine was made from 35% Cabernet Sauvignon, 27% Malbec, 25% Merlot, with small amount <strong>of</strong> Petit Verdot<br />

<strong>and</strong> Cabernet Franc. On the nose, attractive bouquet <strong>of</strong> black fruits, plums <strong>and</strong> violets. The palate is medium weight <strong>and</strong><br />

containing an abundance <strong>of</strong> delicious fruit <strong>and</strong> ripe cherry flavours.<br />

ACR02 Cullen Cabernet Sauvignon Merlot 2008 Margaret River<br />

Excellent medium red. On the nose, strong <strong>and</strong> rich black berry characters, with a touch <strong>of</strong> pepper <strong>and</strong> violets. Great depth<br />

<strong>of</strong> flavour, with the delicious Merlot filling out the middle palate <strong>and</strong> thus complimenting the clean <strong>and</strong> classical Cabernet<br />

component <strong>of</strong> the wine. The wine is tied together perfectly by the s<strong>of</strong>t tannins <strong>and</strong> given structure by the good oak.<br />

ACR03 Cullen Mangan 2009 Margaret River<br />

This wine consisted <strong>of</strong> 63% Malbec, 27% Petit Verdot, 10% Merlot. The wine was naturally fermented <strong>and</strong> then aged for<br />

12 months in French oak, which had previously been used <strong>and</strong> thereby helped retain the fruit freshness.<br />

ACR04 Cullen Diana Madeline 2008 WS 93 RP 91 Margaret River<br />

Cullen flagship red wine, which was made from 86% Cabernet Sauvignon <strong>and</strong> 14% Merlot, is a particularly elegant<br />

example <strong>of</strong> this renowned wine style. Part <strong>of</strong> the reason for this elegance stems from the benefits <strong>of</strong> using biodynamic<br />

viticulture as this has led to a marked improvement in the structure <strong>and</strong> oxygenation <strong>of</strong> the soil. This in turn has enhanced<br />

passion fruit <strong>and</strong> flintiness gives a full mouthful with stylish length.<br />
