Co-Owned by Two of <strong>Williamsburg</strong>’s<br />

Own Talents<br />

Chef Ken Brown grew up with a love of<br />

seafood. As a young boy he developed a love<br />

of fishing in freshwater and saltwater and also<br />

enjoyed crabbing with his family.<br />

He discovered his niche for cooking as<br />

a teenager in a local family-owned Italian<br />

restaurant in upstate New York. While<br />

working as a prep cook there, Ken decided to<br />

pursue culinary arts as a career.<br />

He began his culinary career by attending<br />

the Culinary Institute of America in Hyde<br />

Park, N.Y., and interning at the Four Seasons<br />

Hotel in London. After his internship, he<br />

began work at the Kingsmill Country Club.<br />

Chef Ken has also worked at Kiln Creek,<br />

Deer Run Golf Course, Austin Creek<br />

Grill, Hatteras, N.C., and the Chesapeake<br />

Convention Center. As a chef he has<br />

combined his love of fishing and cooking to<br />

perfect the art of preparing and presenting<br />

seafood.<br />

Victor Minichiello’s experience in preparing<br />

fresh foods and his focus on customer<br />

satisfaction will be par for the course at Fat<br />

Tuna. Victor also owns the Italian restaurant,<br />

Sal’s by Victor, and co-owns Rocco’s<br />

Smokehouse Grill with Rocco Colafrancesco.<br />
