The Gaggenau Magazine.

Edition 2010/2011.

The difference is Gaggenau.

Surrounding yourself with objects with which you’re

entirely satisfied has got to be one of life’s greatest privileges.

So often, finding them involves a lengthy search

where every detail constitutes knowledge gained. And

as your knowledge grows, so your demands increase.

At Gaggenau, our business is developing appliances

for the private kitchen and, in doing so, we make

no compromises in our attempt to attain the greatest

possible perfection. We’re guided by the experiences

and demands of professionals at all times, and this

applies as much to the features on our appliances as it

does to their appearance. We’ll show you features you’ll

wonder how you ever did without – new technological

innovations which make long-familiar problems a thing

of the past. Our practical masterpieces are crafted by

hand in a process involving numerous steps to create

objects of timeless beauty which, at the same time, are

endlessly robust.

If you come across specialist terminology with which

you’re not immediately familiar, we suggest you take a look

at the glossary we have put together for you at the back

of the magazine. There you’ll find more than 150 specialist

terms with detailed descriptions, arranged in alphabetical

order. Check out our website at www.gaggenau.com if

you require further information. However, the best point

of reference for Gaggenau is our appliances – because

they speak for themselves.

History.

Gaggenau was founded in 1683 and has been involved

in the manufacture of metal consumer durables from the

outset. Before long, the company came to specialise in

enamel products, and Gaggenau’s recipe for its sturdy

oven enamel became the basis for the success of its charcoal

and gas ovens, which it continued to manufacture

until well into the 20th century. In 1961, Gaggenau was

taken over by the visionary entrepreneur Georg von

Blanquet, under whose leadership it became a premium

international brand. Von Blanquet was excited by the

idea of custom-made fitted kitchens, something which

was revolutionary for that time. A passionate cook in his

spare time, von Blanquet accepted no compromises in

his quest to create professional appliances incorporating

a plain and functional design – a creed to which

Gaggenau has remained faithful to this day.

A variety of glass composites are used as raw materials

for the typical blue enamel of our ovens.

7

Craftsmanship.

Gaggenau appliances are crafted by hand in a process

involving many stages and assembled piece by piece in

our workshops. The most intricate assembly process is

the one for the large RY 491 fridge-freezer combination in

the Vario cooling 400 series. Manufacturing our ovens

also involves countless steps which can only be carried

out manually, such as the assembly of fronts and cable

looms. Even the control modules on our 200 series

ovens can only be polished manually, for instance. Our

philosophy demands loving attention to all details. This

enables us to keep hold of the things which are valuable

and dear to us.

Two control knobs from the 200 series ovens. The control

module is polished by hand and the knobs are attached

manually.

8

Quality.

Only the toughest, best-quality materials are suitable

for consistent use in a kitchen over a period of many

years. The grinding unit of our fully automatic espresso

machine is a good example – it operates almost without

wear, and its innovative design makes it unusually quiet.

These details, used in the selection of materials and

processes, may not be visible, but make a recognisable

difference to the taste. That’s because the grinding

unit’s three different grinding zones guarantee an ideal

grain size distribution and thus enable the aroma to

develop perfectly.

One of the two discs in our fully automatic espresso

machine’s grinding unit. It is made of high-quality

ceramic material and is extremely long-lived.

10

12

Innovations.

No other company has revolutionised common kitchen

practices as much as Gaggenau: built-in ovens, glass

ceramic cooktops, pyrolytic self-cleaning, the Combisteam

oven for the home and oven doors that can be

opened from the side. Or the AT 400 table ventilation

that can remove even large quantities of grease particles

from the air. Another unique product is the Vario

cooling 200 series, which features an enlarged interior

and the highest energy efficiency class. The list of our

achievements is remarkable. But that certainly doesn’t

mean we’re resting on our laurels. More than 30 staff in

research and development are already working on

further ideas.

A coil condenser from the Vario cooling 200 series. It

features a compact design and reduces the temperature

of the substances to be cooled in an extremely effective

manner. As a result, the net volume and the energy

efficiency can both be increased.

13

Design.

On the international stage, Gaggenau is a regular recipient

of design prizes. After all, engineers and designers

work hand-in-hand at Gaggenau. They create objects

that set the benchmarks with regard to functional and

aesthetic criteria. One successful example of this is

provided by the solid aluminium door racks of our Vario

cooling 400 series. They are purposefully recut in order

to create uniquely precise contours. As a result, simplicity

meets state-of-the-art design. Par for the course

at Gaggenau.

The metal cutter heads with which the aluminium is

reworked. This enhancement makes the material a

pleasure to see and touch.

17

Baking.

Very large ovens have traditionally been used in

gastronomy. Besides roasting, baking and grilling,

they are also used for preparation or to keep individual

meals warm while others are still cooking. It

is this wide range of requirements that provides the

inspiration for our domestic kitchens. This combination

of oven and Combi-steam oven enables all

conceivable culinary challenges to be mastered to

perfection. The best results are obtained when the

appliances are built in at eye level so that the cook

is provided with an ideal view. The high-visibility

glass frontages are made from high-quality transparent

glass capable of resisting temperatures

of up to 485°C, such as those that occur during

pyrolysis, the automatic self-cleaning. At the press

of a button, the current temperature inside the oven

appears on a temperature gauge. Other handy

features, the likes of which will delight even

professional chefs, are shown on the pages that

follow.

19

200 series ovens.

The distinct look of the appliances of the 200 series

ovens is defined by the compact LCD control module

with its simple use of menus, digital clock and timer.

The multiple-glazed doors can be opened at full height

from the side, either to the left or to the right depending

on how you choose to install them. Frontages are

made from glass and backed with stainless steel or

aluminium, while some models are also backed with

stainless steel, aluminium or anthracite colours. The

panorama view and halogen lighting ensure the cook is

provided with optimum visibility of the interior.

The series uncompromisingly brings ultra-modern professional

technology into private kitchens. Whether it’s

a combination of an oven, a Combi-steam oven and a

warming drawer one above the other or a side-by-side

combination of 45-centimetre-high appliances such as

a Combi-microwave oven, a fully automatic espresso

machine and a Combi-steam or steam oven – a multitude

of perfect-looking combinations is possible.

21

Combi-steam oven BS 281.

The BS 281 has a fixed inlet and outlet water connection.

• Gastronorm inserts (GN 2

⁄ 3): Perforated and unperforated,

made of hygienic stainless steel for cooking in the Combisteam

oven; smaller inserts (GN 1 ⁄ 3) are available as special

accessories. See pages 168/169 for more details.

Oven BO 281.

The BO 281 has the widest range of features of the

ovens in the 200 series – here with an aluminium-backed

glass frontage and a width of 76 cm. The same 60 cmwide

model is shown on pages 36/37, where you will

also find a detailed description.

Warming drawer WS 282.

The WS 282 has space for a dinner set for twelve

persons. The interior is food-safe.

• Frontage: Aluminium-backed glass frontage (also available

with stainless steel backing).

• Dimensions: 76 cm wide; 27 cm high; net volume of 56 litres.

• Temperatures: 40°C to 80°C. Ideal for defrosting, keeping

warm and using residual heat for cooking.

22

Oven BX 280.

The BX 280 consists of two ovens with a total of

17 different heating methods. This means that several

dishes can be prepared simultaneously. Overall, the

appliance has a net volume of 220 litres, which means

110 litres per cooking compartment.

• Frontage: Stainless steel-backed full glass door (also available

with aluminium backing).

• Dimensions: 76 cm wide; net volume of 110 litres per cooking

compartment.

• 17 heating methods: Electronic temperature control from

30°C to 300°C.

• Core temperature probe: Switches off the oven automatically

when a roast or fish has reached the desired temperature.

See pages 28/29 for more details.

• Rotisserie spit: For up to 6 kg of poultry, rolled roast or leg

of lamb. Ensures everything is crispy and brown.

• Pyrolytic system and Gaggenau enamel: Practically nothing

sticks to this special blue enamel surface. Any stubborn

stains are removed during automatic self-cleaning, after

which they can simply be wiped away.

• Baking stone: Special accessory for pizzas, bread or pastries.

See pages 38/39 for more details.

24

Pull-out system with roaster.

Baking trays, wire racks, pans and even the rotisserie

spit are fully extendable thanks to this effortless new

system. If you want to baste a roast, for example, one

simple move is enough. The pull-out system can be

used on every level and its cast iron frame can easily be

cleaned with the oven’s pyrolytic function. The Gaggenau

Gastronorm roaster (GN 2 ⁄ 3) is also directly incorporated

into the system. It is not only ideal for all ovens with a

roasting function, but also for Combi-steam and steam

ovens and induction cooktops. The roaster’s lid also

serves as a casserole dish or as a piece of cookware.

26

Core temperature probe.

The core temperature probe lets you cook meat, fish and

pastries or pies to perfection. Simply insert the tip

of the probe into whatever it is you are cooking and it

will measure the temperature in the centre, which will

then appear on the function display. As soon as the set

value for the inside temperature is reached, the heating

element switches itself off automatically. A signal will

then sound immediately and at intervals to inform you

that the core temperature has been reached. It is a

convenient device that can be used both for Gaggenau

ovens and for Gaggenau Combi-steam ovens.

28

Combi-steam oven BS 250.

The use of pressureless steam is one of the most effective

cooking methods there is. In the Combi-steam oven

BS 250, this can be combined with hot air, meaning that

these ovens can do everything: steaming, baking,

simmering, braising, regenerating, extracting juice.

• Frontage: Stainless steel-backed full glass door (also available

with aluminium backing or anthracite front).

• Dimensions: 60 cm wide; net volume of 43 litres.

• Cooking methods: Hot air from 30°C to 230°C, electronically

controllable, can be combined with steam at 0%, 30%,

60%, 80% or 100% humidity, as required.

See pages 38/39 for more details.

• Gastronorm roaster (GN 2

⁄ 3): Special accessory for searing

and braising with the roasting function. See pages 26/27 for

more details.

31

Combi-steam oven BS 274.

Unlike the BS 250, the BS 274 has a fixed inlet and

outlet water connection. Five humidity levels can be

combined with temperatures of up to 230°C, meaning

that these ovens can do everything: steaming, baking,

simmering, braising, regenerating, extracting juice.

• Frontage: Stainless steel-backed full glass door (also available

with aluminium backing or anthracite front).

• Dimensions: 60 cm wide; net volume of 44 litres (also available

in a width of 76 cm).

• Cooking methods: Hot air from 30°C to 230°C, electronically

controllable, can be combined with steam at 0%, 30%,

60%, 80% or 100% humidity, as required.

⁄ 3): Perforated and unperforated,

made of hygienic stainless steel for cooking in the Combisteam

oven; smaller inserts (GN 1 ⁄ 3) are available as special

accessories. See pages 168/169 for more details.

32

Combi-steam oven.

The use of pressureless steam is one of the healthiest

cooking methods and the best way to retain vitamins,

minerals, consistency and colour of food. Meat is tender

and succulent, while seafood is never too dry and vegetables

are turned into a delicacy. Everyday meals that

easily stick to the surface or disintegrate become easier

to make than ever. Steam is ideal for blanching spinach,

skinning tomatoes or gently reheating meals which have

already been cooked. The use of hot air in cooking is

ideal for crispy roasts and gratins – simply switch off

the steam shortly before the end of the cooking time to

allow everything to brown at a high temperature. The

result: the outside will be crispy and the inside succulent

– just like it should be.

35

Oven BO 271.

The BO 271 has the widest range of features of the

60 cm-wide ovens in the 200 series.

• Frontage: Aluminium-backed full glass door (also available

with a stainless steel backing or anthracite front).

• Dimensions: 60 cm wide; net volume of 76 litres. The largest

oven interior in its class (also available in a width of 76 cm).

Any stubborn

stains are removed during automatic self-cleaning, after which

they can simply be wiped away.

• Baking stone: Special accessory for pizzas, bread or pastries.

See pages 38/39 for more details.

• Gastronorm roaster (GN 2

⁄ 3): Special accessory for searing

and braising with the roasting function. See pages 26/27 for

more details.

36

Heated baking stone.

Commercial brick ovens are traditionally fired from

below, with the heat transmitted through the stone base.

The same principle is used here. A separate heating

element heats the compact ceramic stone from below

to temperatures of up to 300°C. There is no heating

from above with this oven, so that your pastries will taste

Danish, pizzas Italian and bread like it’s from the local

baker’s. The baking stone and heating element are

available as special accessories.

38

Combi-microwave oven BM 275.

With a design to match the 200 series ovens, the

BM 275 Combi-microwave oven, which offers the combination

of a microwave, a grill and an oven, includes

turning it into a real brick oven – here with an anthracite

glass frontage. The same model with a stainless steelbacked

full glass door is shown on pages 30/31, where

you will also find a detailed description.

40

Warming drawer.

Gourmets regard Gaggenau warming drawers as a

secret compartment which can do much more than

merely heat plates. The interior is made from hygienic

stainless steel and glass, and it’s food-safe. At temperatures

between 40°C and 80°C, they can be used for

browning roasts, getting pastries to rise or keeping

soups warm, and are also ideal for gentle defrosting.

Warming drawers are available in three different sizes

Coffee.

Of all the food and beverages of the modern age,

coffee has become the epitome of pleasure and

savoir vivre. Its bitter-sweet taste and exquisite

aroma have become a mainstay of our culture. It is

consumed in a dazzling array of varieties and at all

times of the day – and night. Meeting every individual

wish requires more than just an outstanding

coffee machine – it also calls for the instinctive

touch and years of experience of a professional

barista. Both of these qualities are united in our

new fully automatic espresso machine CM 250.

Without needing any sort of warm-up phase, it is

ready to produce all imaginable coffee specialities

– espresso, latte macchiato, cappuccino and milk

coffee – within a few seconds. Special requests

are no problem either. The CM 250 can even remember

your favourites – just as you’d expect from

your own personal barista.

52

Fully automatic espresso machine CM 250.

The CM 250 prepares every variation of espresso and

milk-mix drinks, as well as the classic cup of coffee,

warm milk and hot water for other beverages including

tea. The frontage design combines perfectly with the

appliances in the 200 oven series.

• Frontage: Stainless steel-backed glass frontage (also available

with aluminium backing or anthracite front).

• Dimensions: 60 cm wide; 45 cm high.

• Operation: The desired drink at the push of a button. Thanks

to the integrated milk system the cup need not be moved.

• Personalisation function: Makes it possible to automatically

prepare six individual beverages according to one’s personal

taste and save them to memory.

• Lighting concept: Up to seven different lighting scenarios.

• Grinding unit: The grinding unit with high-quality ceramic

discs is extremely long-lived. It grinds fresh coffee beans into

superfine powder almost silently.

• Heating system: A continuous flow heater ensures that the

appliance requires no warm-up phase. When needed, the water

reaches the optimal brewing temperature within seconds.

• Aroma brewing technology: Presses the coffee powder together

and whirls it during the brewing process so that all the

aromas can develop freely.

• Single portion cleaning: All water pipes are cleared of any

residual water after every cup.

• 2.5-litre water tank: Removable and transparent, with a water

filter.

• 0.7-litre milk container: With an insulated outer wall that

keeps milk fresh for hours.

Cooking.

Even professional chefs and gourmets have grown

to treasure our state-of-the-art induction technology,

not forgetting the classic gas cooktop. Induction

appliances react just as fast as gas appliances, while

generating much less ambient heat. That’s why

nowadays both technologies can be found side-byside

in many professional kitchens. The issue of

energy supply is often the crucial factor in deciding

which option to go for. The electricity needed for

glass ceramic cooktops or induction appliances is

available just about everywhere, whereas a gas connection

cannot be taken for granted. But help is at

hand, because all Gaggenau gas cooktops can also

be operated with bottled gas! This is a great way to

install a gas cooktop next to a large glass ceramic

cooktop. Use this chapter to read up on the countless

advantages of Gaggenau cooktops.

59

Vario cooktops 400 and 200 series.

The Vario series feature perfectly specialised appliances

for every conceivable cooking challenge: classic

glass ceramic, gas and induction cooktops and special

appliances for grilling, deep frying and steaming, as

well as suitable ventilation elements. What’s more, everything

can be combined.

Appliances from the professional 400 series are 38 cm

wide and made of brushed stainless steel. An illuminated

orange ring surrounds the knobs on the front.

Appliances from the 200 series are 28 cm wide and are

made of shot-blasted stainless steel. Here, the control

knobs are integrated into the panels of shot-blasted

aluminium or brushed stainless steel.

Flush-fitted gas cooktop CG 492.

Combining elegance and pragmatism with high performance

– the cast pan supports on this state-of-theart

gas- powered cooktop are on the same level as the

worktop. And if you have stainless steel worktops, the

CG 492 can be welded in directly. Hidden within this

beautiful exterior is up to 18 kW of power. There is no

other entirely flush-fitted gas cooktop on the market

that offers anything like such high performance.

• Width: 100 cm; made of sturdy stainless steel.

• Five burners: One large wok burner with three flame rings

for paella or wok pans, two high output burners and two

standard output burners.

• Brass burners: Made from especially robust and high-quality

material for long years of continual use across a wide range

of power settings.

• Three-part, smooth-surface cast pan supports: For the hasslefree

moving of cookware from the cooktop to the worktop on

a flush surface.

• One-hand control knobs: Just press and turn – the flame

ignites automatically.

• Electronic flame monitoring with automatic re-ignition: Automatically

reignites the burner’s flame, for example whenever

it is extinguished by a strong draught.

78

Flush-fitted induction cooktop CI 491.

An absolute delight to behold. When switched off, the

CI 491 blends into the worktop almost invisibly. The

visual elements are all reduced to the bare essentials –

the cooking zones, main switch and Gaggenau logo.

Such minimalistic design brings out the best in flushfitted

surfaces.

• Width: 90 cm; frameless to suit flush-fitting.

• Five cooking zones: Including a 28 cm zone that can be

switched on automatically – just the thing for oversized cookware.

• Frying sensor function: For healthier and uniquely delicious

frying. Perfect in combination with the stainless steel frying

sensor pan, available as a special accessory.

• Automatic pot detection: The heat develops directly at the

bottom of the pot and therefore doesn’t have to be transmitted

from the cooktop to the pot.

• Twist-Pad control: Convenient level control with a removable

magnetic knob. See pages 82/83 for more details.

• Quick boil timer: The selected cooking setting is raised to

the maximum level for between one and 20 minutes, depending

on the individual settings. The cooktop then automatically

reverts back to its initial temperature.

• Booster function: For intensive searing or heating up large

amounts of liquid in a flash. Temporarily increases the power

of any particular cooking zone by about 50 per cent. The

power of the large 28 cm zone can even be increased to

4.4 kW.

• Cooking timer: You can set the cooking zones to be automatically

switched off at any moment within the following

90 minutes. The integrated clock also acts as the timer.

80

Twist-Pad control.

With this system, the handling of a classic knob meets

cutting-edge technology. A type of magnetic stainless

steel puck takes on the role of a control element on a

digital control panel. All cooking zones can be triggered

and controlled with this element. Turn it to the right to

raise the temperature of the selected zone and turn it to

the left to lower it. The magnetic knob is removable and

can be cleaned under the tap.

82

Glass ceramic cooktop CE 481.

An aesthetic cooktop with a solid stainless steel frame.

Pots and pans of practically all shapes and sizes can be

combined here.

• Width: 80 cm; with a solid stainless steel frame.

• Four flexible cooking zones: Including two zones which can

be interconnected to form a large roasting zone and a 27 cm

three-ring zone.

• Super-Quick cooking zones: The desired heat can be quickly

attained and just as swiftly reduced. Ideal for quick roasting.

• Frying sensor function: For healthier and uniquely delicious

frying. Perfect in combination with the stainless steel frying

sensor pan, available as a special accessory.

• Cast roaster: Accessory designed specially for the 18 x 41.5 cm

roasting zone. Oval non-stick coated roasting tin made of

cast aluminium; the lid can also be used as stand-alone

cookware.

Ventilation.

Kitchen condensation doesn’t just contain odours

and damp, but also microscopic grease particles.

A truly effective ventilation system proves its mettle

by its ability to capture these fatty particles in

addition to eliminating odours. Nowadays, kitchens

are often integrated into the living area, meaning

that efficient ventilation systems are more important

than ever. We think it’s important to bear every

aspect of this bigger picture in mind. That’s why

Gaggenau offers an appropriate cooktop and

ventilation solution for virtually every setting and

to suit almost every taste. However, aesthetics and

atmosphere must not take a back seat to functionality.

That’s why we’re not just interested in purifying

the air, but also in enhancing your surroundings.

89

Vario ceiling ventilation AC 402.

Particularly appealing features of this ceiling ventilation

integrated into the kitchen architecture are the system’s

minimalist design and its high degree of modularity,

which enables a flexible configuration of the individual

ventilation elements. As a result, the AC 402 can be

perfectly adapted to fulfil individual needs and desires.

• Modularity: The ceiling ventilation system can be flexibly configured

to form a custom ventilation solution. It consists of

filter modules without motor and control and light modules.

• Dimensions: Filter module 80 cm wide, 40 cm deep; control

and light modules 80 cm wide, 14 cm deep; made of stainless

steel. Powerful and quiet with external remote fan unit

AR 400/401.

• Control unit: All functions can be conveniently controlled

using an infrared remote control.

• Dimmable lighting: When switched on/off, the light gently

fades in/out. It can also be dimmed manually.

• Four modes: Three output modes and an intensive mode,

which automatically reverts to the previously selected mode

after a few minutes.

• Run-on function: At the push of a button, the ventilation runs

on for about ten minutes and then automatically cuts out.

• Interval ventilation: To assist room ventilation, the AC 402

automatically switches on for five minutes every hour.

• Rim extraction filter: A visual treat that is extremely quiet and

efficient. The filters are extracted using a push-to-unlock

system that features a safety catch and can be conveniently

cleaned in the dishwasher. See pages 102/103 for more

details.

• Air extraction or recirculation: Both are possible.

90

Table ventilation AT 400.

The AT 400 is not just a ventilation system but also a

lighting system, while also providing additional workspace

for serving. The first highly effective air-recirculation

solution. Just the thing for open-plan kitchens

with an island and for areas where venting the air to

the outside is undesirable or impossible.

• Dimensions: 106 cm wide, 27 cm shelf depth; made of stainless

steel. For installation in worktops with a standard depth,

we recommend combining it with the 35 cm-deep cooktop

CI/CE 490. (The AT 400 is also available in a width of 136

cm, suitable for use with three Vario cooktops in a worktop

with a depth of 75 cm.)

• Integrated lighting: For glare-free illumination of the whole

cooktop.

• Four modes: Three output modes and an intensive mode,

which automatically reverts to the previously selected mode

after a few minutes.

• Run-on function: At the push of a button, the ventilation runs

on for about ten minutes and then automatically cuts out.

• Centrifugal grease filter: Removes grease and water from the

air and collects the droplets in a drop tray. The filter and tray

are easy to remove and can be cleaned in the dishwasher.

• Activated charcoal odour filter mat for recirculation: This is

located next to the blower motor in the bottom cabinet and is

easy to remove and replace.

• Air extraction: The AT 400 is also available in an air extraction

variant.

93

Downdraft ventilation VL 430 and VL 431.

During air extraction or air-recirculation operation, steam

and odours are quietly and effectively extracted downwards

directly from where they arise. The ideal solution

for kitchens where wall or island ventilation hoods cannot

be installed due to the presence of slanted ceilings

or windows. The perfect match for the Vario cooktops

400 series.

• Width: 9.3 cm; can be integrated between the cooktops to

save space.

Coanda hood AI 280.

The AI 280 is the latest version of Gaggenau’s exclusive

Coanda ventilation technology. Condensation is efficiently

trapped on both sides of the island and sucked

into the ventilation system. This means that the AI 280

produces a level of performance that conventional

systems only achieve when running at maximum speed.

To find out more about the Coanda effect, see the

next page.

• Dimensions: 120 cm wide, 70 cm deep; made of stainless

steel (also available with an aluminium coating).

• Quiet and economical: Highly effective, even when on a

low output level. This helps to conserve energy and lower the

noise level.

• Dimmable cooktop lighting: When switched on/off, the light

gently fades in/out. It can also be dimmed manually.

• Four modes: Three output modes and an intensive mode,

which automatically reverts to the previously selected mode

after a few minutes. Can be operated from both sides.

• Stainless steel grease filter: Easy to remove and dishwashersafe.

• Air extraction or recirculation: Both are possible.

96

Coanda effect.

Aerodynamic research led to the discovery of the

Coanda effect. The unique shape of the ventilation hood

leads to the emergence of an additional air current along

its front edge. This air current traps rising condensation

before it has a chance to escape over the edge of the

appliance, and drives it straight into the outlet. This

helps to save energy, while also siphoning off less temperate

air. Since it’s an astonishingly quiet system, it

makes working in the kitchen a much more pleasurable

experience. The Coanda effect kicks in on both sides

when using an island hood. One of Gaggenau’s many

innovations.

Freshness.

Freshness is one of the most important ingredients

when one is preparing dishes of the highest quality.

It’s also one of the most sensitive. Just one second’s

distraction is enough to irreparably overcook it. Baking

and cooking with steam is one of the gentlest preparation

methods. That’s because cooking with pressureless

steam largely retains the colour, vitamins and

minerals of vegetables. Meat and fish cannot dry out,

and the natural consistency is retained so it tastes just

the way it should. Further information on steam-baking

and cooking can be found on pages 34/35 and in our

glossary.

Flavour.

Both with storage and cooking, it is important to retain

the food’s unique flavour. With mushrooms for instance,

any soil or leaves should be removed using only a fine

mushroom brush before cleaning them with a damp

cloth. Afterwards, they should be cooked or prepared

as quickly as possible. To give them a more intense

taste for later consumption, they can also be dried – for

two hours on a baking tray at around 80°C with recirculation.

Dried mushrooms can be kept in airtight containers

for months on end, and even the smallest quantity is

enough to enliven soups and stews.

Recipes.

There are two types of cooks – on the one hand there are

the traditional types who prefer classic recipes from their

country’s national cuisine and, on the other, there are the

more experimental ones – the type who, for example,

don’t shy away from creating a delicacy from maize and

caviar, which they call “liquid ravioli”. The Vario series of

cooking appliances offer a wide range of cooktops for

both types of cook. These can be assembled entirely

according to individual requirements and added to at

any time – so you can switch from a classic gas cooktop

to Teppan Yaki or an induction wok. This makes

Vario cooktops the ideal option for all kinds of recipes.

Smells and odours.

The smell of baking cakes is generally a welcome aroma,

but other odours arise during cooking which are not so

pleasant. Many tips exist on this subject. In the case of

cabbage for instance, adding a bouquet of parsley or a

walnut to the water while cooking is recommended to

reduce the odour. This holds for all types of cabbage,

including Brussels sprouts, cauliflower or savoy cabbage.

However, confusion prevails when an odour is drifting

through the refrigerator and affecting other foods. Here,

there is no simple cure – only first-rate technology. For

this reason, many of our cooling appliances feature a

ventilation system with an activated charcoal air filter. The

appliances of the Vario cooling 400 series have been

additionally equipped with a stainless steel interior to

prevent the build-up of odours. This appeals to the eyes

as well as the nose.

Vitamins.

Herbs and spices such as parsley, dill, sweet basil and

garlic flowers refine every good meal. They are also

rich in vital vitamins, trace elements and minerals. The

importance of stable storage of these natural materials

is widely known. In order to create ideal conditions for

many different types of food, we’ve incorporated a variety

of climate zones inside our cooling appliances. These

enable temperatures and humidity to be individually

controlled and adjusted to meet the individual needs of

each type of food.

122

Cooling.

Professional chefs know that there are great differences

in how food needs to be stored. Some foodstuffs

require that little bit longer to mature, while

others favour a particularly cool environment. Exclusive

drinks are stored at cool temperatures, but need

to be brought up to drinking temperature with care

and precision. In order to meet the highest demands,

we’ve continued to develop our range of cooling

appliances unabated. We offer refrigerators with up

to five different climate zones that can be controlled

to the exact degree. Or specialised appliances for

professionally storing food close to the 0°C level

used in modern refrigerated warehouses. And the

finest wine climate cabinets, which are virtually vibration-free.

123

Vario cooling 400 series.

The Vario cooling series is the first modular system made

from fully integrated built-in appliances. Refrigerators,

freezers, fridge-freezer combinations and wine cabinets

can be combined in countless variations to form an elegant

cooling wall. For those who prefer stainless steel

or aluminium doors rather than the individual furniture

panels, these are available as an optional extra. The

interiors of Vario cooling appliances are stainless steel

throughout. Ample illumination is provided by the side

light ele ments and ceiling spots. Vario cooling appliances

also set new technical standards – they are the

quietest in their class and nearly all of them have been

awarded the energy efficiency class A+.

124

125

126

132

Stainless steel interior.

The interiors of all the appliances in our Vario cooling

400 series are panelled in stainless steel – a material

chosen for more than just its visual qualities. Stainless

steel also guarantees 100 per cent hygiene. Giving

off no harmful substances itself, when in contact with

oxygen and moisture it can work to neutralize odours.

This added benefit takes place at the molecular level

and – in the refrigerators at least – remains completely

invisible to the human eye. In the freezers, by contrast,

the stainless steel is covered by an extremely thin

sheen, resembling a frost pattern that provides visible

proof of the appliance’s functionality.

Bottle trays made from untreated beech.

At Gaggenau, wine storage is an art form in itself.

Sophisticated technology makes for almost vibrationfree

operation while providing an environment that

approaches the ideal conditions of a cool wine cellar.

The valuable bottles are stored in exclusive and prestigious

style on solid trays that can easily be extended.

These are made from aluminium and untreated beech,

thereby preventing any transfer of taste or aroma. Furthermore,

the beech rods are rounded. Apart from looking

good, this also helps to protect the delicate wine labels.

143

Vario cooling 200 series.

Every aspect of this series is new. Even though the

outer dimensions can be integrated into any standard

kitchen, the interiors offer significantly more space than

you would expect from appliances in the highest energy

efficiency class. On the one hand, part of the technology

has been moved into the plinth. On the other, the

concept is remarkably well thought out and flexible.

All of the shelves are fully extendable. No more delicacies

disappearing into the background. The space is

optimally used. An innovative aluminium stepped shelf

has been designed so that multiple Gastronorm inserts

of differing sizes can be hung from it as needed. The

shelf itself provides a comfortable amount of space for

items of different heights. Making room – room for new

standards.

Naturally, we don’t restrict such an innovative usage

concept just to built-in appliances. That’s why we’ve

extended the series to include a free-standing version

that fulfils all your requirements while enabling you to

take a flexible approach to the nature of your space.

144

145

Stepped shelf.

For those who appreciate the advantages of Gastronorm

inserts, the stepped shelf is another element in the

smooth operation of the kitchen. The practical inserts,

which are equally suitable for storage, preparation,

cooking and serving, can be rapidly and exactly stowed

in the refrigerator thanks to the stepped shelf. At the

same time, the steps enable the storage of items of

different heights.

Dishwashing.

Gaggenau’s dishwashers do the washing-up in the

best possible manner – efficiently, quietly, economically.

And they’re fast too. The new Vario dishwashers

take just 57 minutes to wash and dry a fully

loaded machine, which is a new world record. One

of the things responsible for this exceptional performance

is our innovative Zeolite technology. The

silicate material absorbs moisture and releases

heat in the process – something that the appliance

utilises in several different ways. Depending on the

option chosen, programme times can be shortened,

energy can be saved or drying performance can

be enhanced. Zeolite completely regenerates itself

after each wash cycle and lasts as long as the machine

itself, which means that this new technology

is also a quantum leap in terms of energy balance.

159

160

Vario dishwasher DF 460.

Maximum versatility thanks to the latest Zeolite technology

– depending on the programme chosen, it helps

to shorten programme times, save energy and enhance

drying performance. Six dishwashing programmes can

thus be combined with up to four options.

• Dimensions: 60 cm wide; 86.5 cm high (also available in a

height of 81.5 cm and with a flexible hinge for installation as

a built-in unit in any setting).

• Options: Six dishwashing programmes can be combined

with four different options:

• Power: This option washes and dries a complete load in

just 57 minutes.

• Intensive: Washes heavily soiled items in the lower basket

and sensitive items in the upper basket at the same time.

• Extra Dry: Even gets plastic perfectly dry.

• Energy Save: Ensures 15% less energy consumption while

using just ten litres of water.

• Lighting system: Bright interior lighting makes things easy

to find.

• Flex Plus basket system: Folding spines, foldable racks, glass

holders and a dividable cutlery basket combine to ensure

maximum flexibility with regard to the layout of the upper and

lower baskets.

• Glasscare Plus technology: Protects sensitive glassware by

preventing extreme temperature fluctuations. In addition,

Zeolite technology enables gentle drying at low temperatures.

• Fully extendable and smooth running baskets: For convenient

loading and emptying, even at the very back of the top basket.

• Rackmatic with three levels: Even when fully loaded, the

upper basket can be height-adjusted to three different levels.

For maximum flexibility when loading.

• Vario Flex drawer: Special accessory for accommodating

larger cutlery items, cooking utensils and espresso cups. This

adds a practical third loading level to the basket system.

• Special accessories: Stainless steel, aluminium-backed or

anthracite full glass door, matching the 200 series ovens. The

illustration shows a stainless steel-backed full glass door.

Accessories.

As with all forms of art, successful cooking is

dependent on the tools of the trade. Professionals

are loath to accept any compromise in this department.

Work processes have to flow smoothly into one

another without the cook having to think about it.

The Gastronorm system makes sure this is the case.

Fresh fish and vegetables as well as marinated foods

can be prepared for cooking in the hygienic stainless

steel inserts and kept in the refrigerator until they are

needed. These inserts can be placed directly in the

Combi-steam or steam oven for cooking; there’s no

need to transfer the food to different containers. This

leaves your head and hands free for the essentials:

inspiration, intuition and timing.

166

167

The Gaggenau online showroom.

All of the fascination of Gaggenau products can be

experienced all over the world – in unusual showrooms,

their spectacular mobile spin-offs and now – even more

easily – also in a multifaceted online world. The voyage

of discovery starts in the austere landscape of the

Mongolian steppe, taking the visitor via Bali’s untouched

nature and fascinating, modern New York to the aristocratic

grandeur of a Venetian palazzo. The range of

material and appliance combinations can be experienced

along the way. In the “Balinese Pagoda”, for example,

natural materials meet aluminium surfaces in a combination

as harmonious as the interplay between traditional

Balinese architecture and the exotic landscape. All of

the details of the Gaggenau products’ sophisticated

workings and their extensive range of functions can be

thoroughly examined in close-up. Take a look for yourself

at www.gaggenau.com/onlineshowroom.

173

Over 40 permanent exhibitions worldwide.

Almost every country on earth now has a Gaggenau

showroom, many of which were laid out by renowned

interior designers from the particular region. The flagship

showrooms are of particular interest here. They

tend to be larger and are situated in prime locations.

Their conceptual planning is carried out solely by

Gaggenau designers. In order to do full justice to the

brand, specific regional factors are perfectly intertwined

with the Gaggenau philosophy. All the exhibitions are

designed to enable people to experience the world of

the Gaggenau brand. You can find the addresses on

page 196 ff. and more detailed information, including

opening hours, at www.gaggenau.com. In the list on the

right-hand side, we’ve marked our flagship showrooms

with an asterisk.

The Gaggenau flagship showroom in Singapore.

There’s scarcely another spot in the world where so

many cultures come together as in Singapore. Chinese,

Indian, Malay and many other influences are all-pervasive

here. And that also goes for the cuisine of this

fascinating city-state. Traditional recipes are forever

being reinvented, providing an overwhelming cornucopia

of national dishes. Deep in the heart of this melting

pot, Gaggenau invites you to appreciate this culinary

diversity in an exclusive atmosphere. Special cooking

appliances such as the Vario Teppan Yaki can be presented

and tried out at live cooking events and individual

cookery courses. A generous lounge area is also

available for special occasions. The Heritage Wall is

another unusual highlight of the flagship showroom,

captivating the visitor with Gaggenau’s history and

showing the company’s most important milestones and

events. Made from the wood of an original Black Forest

hut, it builds a bridge between German tradition and

Singapore’s diversity.

Glossary.

Anti-clump ice system

This prevents ice cubes from

clumping together in the Vario

RF 413 and RF 463 freezers.

This involves moving the ice

cubes at regular intervals.

A

Activated charcoal air filter

In order to keep cooling appliances

and wine climate cabinets

free of odours, the air

circulates through an antibacterial

activated charcoal air filter

that removes and captures

odour particles. In ventilation

systems with recirculation, the

filter removes odours from the

cooking steam before the air is

recirculated into the kitchen.

Actual temperature display

Precise temperature control and

monitoring are especially important

when preparing certain

dishes. The actual temperature

display allows you to check the

temperature in the cooking compartment

whenever you want.

If, for example, you turn down the

temperature, it enables you to

see when the new desired temperature

has been reached in

order to get maximum benefit

from residual heat. Not even all

commercial appliances have

this unique Gaggenau feature,

which is highly appreciated by

discerning home chefs.

Air cleaning catalyst

A catalyst in the oven’s interior

rids the air of grease particles

and odours. This means that the

kitchen no longer smells of intensive

oven odours. The heated

catalyst also delivers optimal

performance at low tem pe ratures.

A unique Gaggenau

feature.

Air extraction/air circulation

Most Gaggenau ventilation

hoods are available as air extraction

or air circulation appliances.

In both cases the air,

which contains grease particles

and odours, passes through

a grease filter that protects the

inside of the hood and the

extraction pipes from deposits.

On the air extraction version,

the pre-filtered air is conducted

through the wall into the open

air or into a ventilation shaft. On

the recirculation version, the

odours are absorbed by an additional

active charcoal filter so

that nothing but odour-free air is

conducted back into the kitchen.

To ensure optimum efficiency,

the charcoal filter should be

changed twice a year.

Aluminium door racks

These adjustable racks offer

plenty of storage space and

have a variety of uses. Made

from solid anodised aluminium,

they are particularly hygienic

and easy to clean, while also

preventing odour transfer from

food.

Appliance cover

All 38 and 28 cm-wide cooktops

in the Vario cooktops series can

be fitted with a cover. This is

available as a special accessory

for all appliances with the exception

of the electric grill, which

includes the cover in its scope

of delivery. The covers of the

400 series are made of stainless

steel; those of the 200 series

are available in stainless steel

(ribbed) and aluminium (smooth).

Aqua sensor

This reduces the consumption

of fresh water without compromising

cleaning results. With

normal soiling, up to six litres of

water can be saved, depending

on the programme chosen. The

Aqua sensor detects whether

the water is clean enough for the

next wash cycle. If so, the water

change procedure is skipped.

Regardless of how cloudy the

water is, the system also detects

small dirt particles. To do so, it

uses an infrared sensor that

detects fats, oils and proteins,

as well as an additional green

light sen sor that recognises

substances such as tea residue

or bits of spinach.

Aquastop

A multi-active and networkindependent

system of protection

devices prevents damage

caused by water. With all our

dishwashers, users are no

longer required to manually turn

the water tap on/off (which is

otherwise necessary). Even if

the appliance is switched off,

the discharge pump is immedi-

178

ately activated if there is a leak

or flooding. All this with a lifelong

performance guarantee.

Aroma brewing technology

This technology ensures an

intense coffee taste. Regardless

of its quantity, the coffee

powder is perfectly pressed

together in the brewing chamber.

During the brewing operation,

the coffee powder is

swirled under high pressure to

wet all of the grains with water

and release all of the flavours.

Automatic cleaning and

descaling programme

The fully automatic espresso

machine has a computer-controlled

cleaning and descaling

programme. The most important

steps are shown on the display

screen and the rest is controlled

automatically. The only requirement

is to ensure the appropriate

cleaning or descaling agent

is used.

Automatic detergent

function

The dishwasher’s control system

automatically detects when detergent

tablets are being used

instead of individual de tergents.

The programme is adjusted to

suit the particular con centration

of components, thereby ensuring

optimal cleaning and drying

results. This function does not

have to be set manually and

guarantees great results regardless

of water hardness.

Automatic programmes

with weight specification

These provide excellent results

when cooking or defrosting

fresh or deep-frozen food in

the Combi-microwave oven or

the microwave. Simply select

the desired programme and

enter the weight of the meal.

B

Booster function

This is used for quick boiling on

induction cooktops. The booster

function increases the power

in each cooking zone by 50%

for a short period of time. Since

this additional power is taken

from an adjoining cooking zone,

the function is only used if the

adjoining cooking zone is not

being used.

Built-in appliance

Fully integrated appliances:

Can be fully integrated into a

built-in niche, flush-fitted with

the furniture elements on the

side, and covered with furniture

panels.

Integrated appliances: These

can be integrated in a built-in

niche where only the appliance

door protrudes. The air supply

and extraction system in the

plinth allows these appliances

to be fitted without any gaps at

the sides.

Appliance cover. All 38 and

28 cm-wide cooktops in the

Vario cooktops series can be

fitted with a cover. The covers

of the 200 series are available

in stainless steel (ribbed) and,

as shown here, in aluminium

(smooth).

Automatic defrosting in the

freezer compartment

See No-Frost technology.

Automatic defrosting with

evaporation of condensation

water

The cooling compartment evaporator

is defrosted automatically

at regular intervals. The temperatures

in the cooling compartment

remain virtually unchanged

during this process. The small

quantity of condensation water

is led via an outlet channel into

a container where it evaporates.

The minimum storage temperature

is kept constant in the 4-star

freezer compartment during

defrosting.

Baking stone

This accessory turns your oven

into a professional brick oven.

The baking stone is heated to

temperatures of up to 300°C

by a separate heating element.

Ideal for bread or pizza.

Baking tray spray head

For cleaning large items such

as baking trays, wire racks,

metal filters or vases in the

dishwasher. The upper basket

can be removed from the dishwasher

and the baking tray

spray head – which is supplied

as standard – can be fitted. The

even distribution of the water

jets ensures optimum washing

results.

C

Capacity display for filter

cartridge

See water filter.

Cast pan support with

special enamelling

With Vario gas appliances this

is one-piece, while with larger

gas cooktops it is two or threepiece;

prevents even small pots

and pans from toppling over.

Not suitable for cleaning in a

dishwasher.

Baking stone. It can transform

your oven into a professional

brick oven. A separate heating

element provides the necessary

heat.

179

Cellar compartment. Separate compartment for the storage of

foods which are sensitive to cold. The temperatures can be set to

between 6°C and 14°C as desired.

Cast roaster for glass

ceramic cooktops

A premium-quality, hand-cast

roaster made from non-stick

coated aluminium glass, developed

by Gaggenau specially for

the 18 x 41.5 cm roasting zone

on glass ceramic cooktops.

Since the roasting zone is covered

precisely, energy use is

optimal and the thick heat-conducting

base guarantees an even

heat distribution and optimum

heat conservation. The lid of the

roaster can also be used as

cookware, e.g. for roasting. The

non-stick coating enables lowfat

cooking and ensures easy

cleaning. Can also be used in a

76 or 90 cm-wide oven.

Catalytic special enamelling

The special enamelling at the

back of ovens means that ovens

without the pyrolytic system

are now easier to clean. During

the process of catalysis, dirt is

broken down by oxidation with

atmospheric oxygen at temperatures

upwards of 200°C. This

cleaning takes place while the

oven is in normal use. If the oven

is very dirty, you are advised to

clean the non-coated surfaces

by hand, and then heat the oven

up to about 200°C for a few

minutes. This is a particularly

good way of dissolving fatty

stains. The pyrolytic system is

the only system capable of

optimum oven cleaning.

Cellar compartment

Separate compartment for the

storage of foods which are

sensitive to cold, such as fruits

(pineapples, bananas, lemons,

avocados), potatoes or ready-tospread

butter and drinks such

as milk or beer at temperatures

which can be set to between

6°C and 14°C as desired.

Centrifugal grease filter

The air current from the table

ventilation system is rerouted

several times in this filter, thereby

ensuring that grease particles

are efficiently captured and

expelled. The filter elements can

be cleaned in the dishwasher.

Cleaning programme in the

Combi-steam oven

Soiling inside the oven is softened

with the help of steam. The

inside of the oven can then be

easily cleaned.

Climate class

The functions of a refrigerator

depend on the appliance’s

ambient temperature. An appliance’s

climate class indicates

the range of ambient temperatures

for which it is suitable:

SN: 10°C to 32°C, N: 16°C

to 32°C, ST: 16°C to 38°C,

T : 16 °C to 43°C.

Coanda effect

This aerodynamic technique

is used by Gaggenau to extract

the cooking fumes which occur

at the front of a cooktop

more efficiently. Part of the airflow

generated by the fan exits

through the top of the ventilation

hood and is guided downwards

over the rounded front

edge, intercepting fumes which

might otherwise get past the

front of the ventilation hood.

This new air conduction system

enables efficient air purification

even at lower power levels. As

a result, less energy is used and

less temperate air is removed

from the room. At the same

time, the noise level is considerably

reduced.

180

Coffee strength

The strength of the coffee can

be individually selected in five

steps ranging from “mild” to

“extra strong” (quantity of coffee

from 8 to 20 g). For the two

strongest settings, the double

shot function ensures even

stronger coffee without loss of

aroma. To create optimum

preparation conditions, both the

grinding and brewing processes

are repeated for double measures

of coffee or espresso. The

setting is shown in the LCD

function display.

Container for

second coffee type

In addition to fresh beans, a

second ground coffee type can

be used.

Continuous flow heater

The heating system of the fully

automatic espresso machine

consists of a continuous flow

heater. This ensures a constant

and optimal brewing temperature

of 90°C to 95°C and thus

guarantees a perfect aroma. It

also supplies hot water, e.g. for

brewing tea. The system only

heats when it is in use, and is

thus extremely energy-efficient.

It is ready for use in less than

30 seconds after switch-on.

Cooking timer

The time at which you want one

or more cooking zones to be

automatically switched off can

be selected up to 90 minutes

in advance. The integrated clock

can also be used as a shortterm

timer, irrespective of the

appliance’s other functions.

In the case of appliances from

the Vario cooktop 400 series,

the cooking timer is available as

an accessory via the connection

strip with timer. Each connection

strip can be used to operate

two appliances.

Cooled housing with

overheating protection

Gaggenau ovens have a temperature

protection system to

protect the appliance and the

fitted units from overheating, as

well as an automatically cooled

housing which continues to cool

down the appliance after the

oven has been used.

Core temperature probe

with automatic shut-off

The core temperature probe in

ovens and Combi-steam ovens

controls the temperature in

the centre of food. Appliances

switch themselves off once the

desired core temperature has

been attained. This ensures that

no matter what is being cooked,

it is always cooked just the way

it should be. The core temperature

probe can also be removed.

Cushioned door closing

system of the Vario cooling

200 series

This enables soft and controlled

closure of the door from a

20-degree door opening angle.

The system is integrated into

the door hinge.

D

Deep fryer

Basket hangers: Two baskets

can be inserted into the cover

for simultaneous draining.

Cleaning level (Vario 400):

Water for cleaning the deep

fryer can be brought to the

correct temperature of around

40°C in the appliance itself.

Fat melting setting: This gentle,

smoke-free heating method

enables fat to be used considerably

longer. It is equally suitable

for the use of oil or solid fat.

Swing-out heating element:

For easy cleaning of the stainless

steel vat, the heating

element can simply be pulled

out and up.

Three-zone, professional

kitchen design:

· Foam expansion zone: The

upper part of the frying basin

is widened to prevent the oil

from overflowing during the

deep-frying of food containing

water or which is deepfrozen.

· Deep-frying zone: Located

directly above the electro n-

ically controlled, swing-out

heating element.

· Cold oil zone: Food particles

which break off during

deep-frying sink into the cold

oil zone under the heating

element, where the oil temperature

is lower than in the

deep-frying zone. The particles

cannot burn and release

no flavour into the oil. This

means that fat can be used

for much longer.

Defrost assistance in the

freezer compartment

During defrosting, the bottom

drawer of the freezer serves as

a collector for the condensation

water.

Descaling programme

Downdraft ventilation

E

Downdraft ventilation. A highlyeffective

alternative to classic

ventilation hoods. Downdraft

ventilation is integrated into the

cooktop and it siphons off cooking

vapours right there where

they emerge.

The vaporiser container, which

is used to generate steam in the

interior of a Combi-steam oven

with a water tank, or a steam

oven, can be descaled effortlessly

using this programme.

Simply fill the water tank with a

descaling solution and the programme

takes around 30 minutes.

Door opening angle in

the Vario cooling 200 and

400 series

The wide-opening doors, which

open to a 115-degree angle, are

truly unique. It’s all thanks to

the particularly sturdy hinges.

Where necessary, these hinges

can also be fixed at 90 degrees.

Drawers and shelves can then

be fully extended.

Door panel

(special accessory)

Designed to match the 200 series

ovens, a stainless steel, aluminium-backed

or anthracite full

glass door panel is available for

all 81.5 cm and 86.5 cm-high

dishwashers.

Dosage assist

Integrated into the top basket,

the dosage assist ensures that

detergent tablets are fully dissolved

in a controlled manner.

This is a prerequisite for en suring

the best possible clean ing

results. Tablets can no lon ger

fall between plates or into the

cutlery basket. What’s more, the

dosage chamber is positioned

in a way that prevents scraps of

food from dropping into it during

loading. Yet another advantage:

the jet spray no longer

directly hits the inner door and

the appliance is quieter.

An interesting and highly-effective

alternative to classic ventilation

hoods. Downdraft ventilation

is integrated directly into

the cooktop and it siphons

off cooking vapours right there

where they emerge. Even the

steam from tall pots is effectively

removed if the lid is left

slightly open at the side towards

the ventilation. If you value clear

contours and unrestricted headroom

in your kitchen, downdraft

ventilation is definitely the

most unobtrusive solution. The

design of Gaggenau downdraft

ventilation units is the perfect

match for cooktops from the

Vario 200 and 400 series. All

downdraft ventilation units are

configured with separate remote

fan units for air extraction

or recirculation and can also be

installed in the lower cabinet

using flat ducts to save space.

Drying programme

With this function, the inside

of the Combi-steam oven can

be dried with hot air. The drying

procedure takes about 20 minutes

and is recommended after

each steaming or cleaning procedure.

Dynamic cold air distribution

A ventilator ensures an even

temperature distribution across

the whole cooling compartment,

thus ensuring longer food-storage

times. With dynamic cold

air distribution with Multi-Air-

Flow, an additional air channel

in the door and additional vents

in the cooling compartment ensure

faster and more constant

temperature distribution.

Eco

In this operating mode, all

energy-dependent functions of

the oven are optimised to make

them especially energy-saving.

For example, the light is switched

off or any available residual heat

is used for baking or roasting.

Electric grill

Independently controlled

heating elements: This enables

you to grill in the front section,

while the rear section is used

for keeping warm. Both glow

bars can be folded up for cleaning

the lava stone container.

With the 400 series wire rack, the

heating elements are covered

so that smoke emissions are very

low, since grease is prevented

from dripping onto the heating

elements.

Solid cast roaster: Practical

accessory for grilling and

cooking on a smooth surface,

e.g. shrimps or vegetables.

Also just the thing for preparing

egg-based dishes such as pancakes

or crêpes.

Stainless steel container

with lava stones: With a perforated

base so that grease

can drip into the removable drip

tray. The stainless steel container

and the grease drip tray

can be cleaned in the dishwasher.

The lava stones need to

be changed when they become

heavily soiled.

Electronic boiling point

detection

This calibration enables the

electronic system to detect the

boiling point automatically.

This enables the same cooking

results to be achieved regard-

182

less of the altitude of the installation

location above sea level.

Electronic flame monitoring

with automatic re-ignition

If a burner’s gas flame is extinguished

accidentally, it is reignited

immediately, and should the

automatic re-ignition of the flame

fail, the gas supply for all burners

is interrupted immediately:

Maximum safety due to the

principle of ionisation.

Electronic temperature

control

with the overall average. Particularly

economical appliances

are graded as energy efficiency

classes A and B – or even A++

and A+ for cooling appliances

and freezers. For dishwashers,

there is a further classification

alongside the energy efficiency

class – the so-called

Euro label rating also the cleaning

efficiency and drying efficiency

of different appliances.

All Gaggenau dishwashers bear

the AAA label. This is awarded

to appliances that are particularly

energy-efficient while deliver -

ing exceptional cleaning and drying

performance.

Fast freezing

This maximum power setting is

for the quick freezing of unfrozen

items, while also preventing already

frozen items from warming

up when new items are added to

the compartment. What’s more,

fast freezing has a beneficial impact

on the durability and quality

of frozen food after thawing.

This setting ensures that the

cell structure of frozen food is

not damaged by the freezing

process, thereby preserving the

food’s taste and freshness. The

appliance automatically reverts

to the standard mode.

Precise temperature control in

ovens, Combi-steam ovens and

Combi-microwave ovens prevents

temperature peaks which

might impair the cooking of

delicate dishes. With cooling

appliances, precise temperature

setting enables longer storage

times. Operation of all settings

and special functions is via the

keyboard, and the temperature

is displayed digitally.

Energy consumption

The energy consumption of a

cooling appliance is determined

according to the German DIN

EN 153 standard, at 220 V/50 Hz.

The annual energy consumption

is shown, as is the energy

consumption per 100 litres of

net volume per day. The latter

enables appliances of various

sizes to be compared; deviations

may occur during everyday

operation.

Energy label

This is a Europe-wide code for

the energy efficiency class

and provides information about

the energy consumption of appli

ances. The different classes

in dicate how economical a particular

appliance is compared

F

Fan unit

Downdraft ventilation units and

ventilation hoods are operated

via a separate fan. Fan units can

be installed, depending on the

construction type, in kitchen

furniture, in another adjoining

room, in the cellar, loft or outside,

on the wall or roof. As in

the case of an integrated fan,

the functions are controlled via

the control panel of the ventilation

unit. The remote fan units

can be supplied for air extraction

or recirculation. Flat ducts

that connect the remote fan unit

and ventilation system with one

another in a space-saving and

efficient manner are available as

accessories.

Fast cooling

Similar in function and effect to

the fast freezing function. Automatic

fast cooling generates the

maximum chilling power, thereby

minimising the warming up

of items already stored in the

refrigerator when new items are

added. The appliance auto ma t-

ically reverts to the standard

mode.

Fast ignition

Press the knob on the gas

cooktop, turn to the desired

setting and release – the electronics

immediately ignite the

flame and keep it burning without

the user having to keep the

knob pressed.

Fixed inlet and outlet water

connection

During installation, the Combisteam

oven is connected directly

to the water inlet and outlet.

This means that fresh water is

always available for all cooking

tasks and that you don’t have to

fill and empty a water tank.

Flexible hinge

Some of the fully integrated

dishwashers are equipped

with a flexible hinge. The hinge

prevents collisions between the

furniture panel and the appliance

plinth and enables, for example,

installation in tall units with a

one-piece furniture panel.

Solid cast roaster. Practical

accessory for grilling and

cooking on a smooth surface.

Flex Plus basket system. For great versatility and convenience

when loading and unloading.

Gaggenau enamel. Practically

nothing sticks to this special

blue enamel surface. To clean,

it usually suffices to wipe it

with a wet sponge and a little

washing-up liquid.

Flex Plus basket system

For greater versatility and convenience

when loading and

unloading. This system is parti c-

ularly flexible and can accommodate

plates with a diameter

of up to 33 cm. All dishwashers

with 6 programmes feature this

system as standard.

Flex Plus drawer: It is available

as a special accessory for all

dishwashers with 6 programmes.

Used as a third loading level

above the upper basket, it is

ideal for large items of cutlery,

cooking utensils or espresso

cups. When fitted with this drawer,

the dishwasher’s capacity

increases to 14 place settings.

Lower basket: With dividable

glass holders, folding spines,

foldable racks and a large

cutlery basket, this provides

plenty of leeway to load the

appliance as you see fit.

Upper basket: The extra

extendable, smooth running

pull-out rack and Rackmatic

mean there’s virtually no limit

to the possible loading combinations.

Thanks to its ball bearing

mounted telescopic rails,

the basket can be easily pulled

out – even when carrying a

heavy load. What’s more, dishes

and glasses are easy to access,

even when they are at the back

of the appliance. All folding

spines, foldable racks and glass

support bars can be fully folded,

thereby ensuring even greater

flexibility.

Freezing capacity

The maximum amount of unfrozen

goods that can be cooled

down to at least –24°C within

24 hours.

Fresh cooling

In order to preserve appearance,

taste and nutrients for

longer, the fresh cooling compartment

is kept up to 3°C

cooler. This means that fresh

meat, ham, salami and cheese

can be stored for almost twice

as long as in conventional cooling

systems.

Fresh cooling close to 0°C

Creates storage conditions for

fresh food similar to a professional

cold storage unit. The

temperature in the fresh cooling

zone is kept consistently at just

above 0°C. Unwanted decomposition

processes are slowed

down, food is kept fresh for an

average of twice as long as in

conventional cooling systems,

and there is no danger of food

being spoiled through overcooling.

Fridge-freezer combination

Bottom freezer: A classic

American design with the freezer

compartment at the bottom,

giving optimal access to the

wide storage area which is ideal

for cooling bulky items, such as

large serving platters or a whole

salmon.

Side-by-side combination:

A classic American design with

the refrigerator and freezer

sections positioned side-by-side.

Items that are needed on a regular

basis can be stored within

easy reach in either compartment.

Frying sensor

The frying sensor function lets

you make fried food that is

healthier and uniquely delicious.

This is because the frying sensor

ensures that the temperature

remains constant – enabling

the food to be browned

evenly on all sides. At the same

time, the constant temperature

prevents the pan from overheating.

This saves energy and is

184

healthy because no fumes are

produced and the fat doesn’t

burn. Once a particular cooking

zone has been selected, the

frying sensor function is activated

by touching the graphic

thermometer symbol on the

cooktop. As soon as the ideal

temperature has been reached

for starting to fry, there is an

audible signal. Apart from the

pre-set frying level “min”, three

other levels can be chosen –

“med”, “med+” and “max” depending

on the type of food you

want to fry.

Fully automatic rinse

programme

Whenever the fully automatic

espresso machine is switched

on or off, all water pipes – including

the coffee dispenser –

are rinsed. A big plus for both

hygiene and a full-bodied coffee

taste.

Fully electronic system

Depending on the power level

selected, it ensures flame sizes

can be set precisely and reproducibly.

The illuminated ring

signals that the gas cooktop is

switched on and so offers additional

protection against the gas

cooktop accidentally remaining

switched on.

Function display 300 series

ovens

All functions and the time are

shown clearly on the display

screen of the 300 series ovens.

The digital clock can also be

used as a short-term timer,

irrespective of the function set

for the appliance. The timer

functions allow both the length

of the cooking process and the

time at which the oven is to be

switched off to be programmed

up to 24 hours in advance.

G

Gaggenau enamel

Practically nothing sticks to this

special blue enamel surface.

A simple wipe with a wet sponge

and a little washing-up liquid

generally suffices for cleaning

after using the oven. Thanks to

their Gaggenau enamel surface,

the grill pan and oven tray can

also be cleaned easily in the

dishwasher.

Gastronorm

The Gastronorm system provides

the basis for cookware in

the professional kitchen. It enables

a smooth continuum from

the preparation and cooking

stages right through to serving

at the table and storage. The

Gastronorm elements from

Gaggenau have been designed

to match our cooktops, our

steam and Combi-steam ovens,

the pull-out system of our ovens,

and the Vario cooling appliances

of the 200 series.

Gastronorm inserts: These

high-walled, sturdy containers

made from hygienic stainless

steel are ideal for cooking in

steam and for serving at the

table or, in combination with the

appropriate covers, for storage

in the refrigerator. They are

dishwasher-safe and easy to

clean. For cooking several

meals simultaneously, the cooking

inserts for steam or Combisteam

ovens in the GN ⅔ format

can be combined as required

with smaller inserts that are

available as special accessories

in the GN ⅓ format with volumes

of approx. 1.5 litres. For practical

food preparation, the inserts

fit snugly into any Gastronorm

sink.

Gastronorm roaster: For searing

and braising on induction

cooktops and in Gaggenau

ovens with the roasting function,

insofar as they are equipped

with the pull-out system. The top

and bottom parts of the cast

aluminium Gastronorm roaster

in the GN ⅔ format can also

be used independently of one

another. The multi-layered material

ensures even heat distribution

and is easy to clean thanks

to the non-stick coating.

Gastronorm sink: For preparing

food in the sink with Gastronorm

inserts without any additional

transferring of sensitive

foodstuffs. The standardised

inserts turn the sink into a flexible

preparation area.

Glass basket

(special accessory)

This special basket prevents

cups and glasses from tilting

over during washing and can

accommodate up to twelve

long-stemmed wine or champagne

glasses, or 24 cups.

Glass care Plus technology

Prevents glass corrosion, even

when washing fragile glassware.

The constant temperature control

and lower drying temperature

protect glass and the de c-

orative elements of crockery.

Several components ensure

this: the heat exchanger immediately

balances out the temperature

peaks that can damage

glass. Furthermore, fresh water

is added as required to ensure

that the water’s hardness is

constantly held above 5°DH

during the wash cycle. This

prevents glasses from losing

their sheen due to the water

being too soft. This is coupled

with the Flex Plus basket system,

which ensures that glasses

drip-dry even more effectively

by holding them in an optimal

position, and Zeolite technology

Gastronorm inserts. These

high-walled, sturdy containers

made from hygienic stainless

steel are ideal both for baking

and cooking in the Combi-steam

oven and for preparation and

keeping fresh in the refrigerators

of the Vario cooling 200 series.

at the right humidity and ambient temperature.

for low temperature drying –

a procedure that delivers firstclass

drying results, even at

low temperatures that are gentle

on glass.

Grease filter

As with all Gaggenau ventilation

hoods, the air containing grease

and odour particles first passes

through a grease filter, which

removes up to 95 per cent of

the grease from the air. This

prevents any deposits forming

on the inside of the hood or

ventilation pipes.

Rim extraction filter: The

full-width mesh filter with its

integrated cover ensures a quiet

look as well as quiet operation.

The grease separation of 90 to

95 per cent is equivalent to that

of a mesh filter. The noise level

is, however, around three dB

quieter, and the optimised rim

design reduces condensation.

The filter can be removed as

a unit using the invisible pushto-unlock

system with safety

catch and can be cleaned in the

dishwasher.

Stainless steel grease filter:

The filter can be easily removed

for cleaning in the dishwasher.

filters are not as effective and

increase the noise level of the

ventilation system.

Grinding unit

Freshly ground coffee beans

are the essential starting point

for tasty coffee or espresso.

The grinding unit ensures a

perfect grain size distribution

and thus makes possible the

perfect aroma. The grinding

level can be individually set in

four steps from fine to coarse.

Thanks to its double-wall encapsulated

bean container, it is

extremely quiet in operation.

Ice and water dispenser. Glasses and large jugs can be filled up

with ice cubes, crushed ice or cooled drinking water while the

door is closed.

Grease filter in front of hot

air fan

The fumes which occur during

baking and frying are caught by

a removable grease filter, which

can be cleaned simply and easily

in the dishwasher. For ovens

with the pyrolytic system, no

filter is necessary since dirt in

the area around the hot air fan

can be removed by pyrolysis.

Grease filter saturation

indicator

A signal on the control panel

reminds you that the grease filter

needs to be cleaned. Soiled

Heat exchanger

During the dishwasher’s drying

cycle, the hot steam condenses

in the form of droplets on the

sides of the heat exchanger –

which is filled with cold water –

and the water then runs off. The

heat exchanger exploits the

residual heat for drying purposes

by siphoning off the water

into a container on the side.

Compared to conventional

appliances, this procedure

reduces energy consumption

by 15 per cent and results in

hygienic drying without any

additional energy or an external

air supply.

Humidity control

For calibrated control of humidity

in cooling appliances or

wine climate cabinets.

Refrigerators: A humidity

fleece or a regulator ensures

that the natural humidity is

retained. This creates ideal

storage conditions, particularly

for fruit and vegetables, salad

and fresh herbs. The appearance,

taste, vitamins and nutrients

are retained for much

longer.

Wine climate cabinets: The

defrost function of state-of-theart

refrigerators reduces humidity

in the interior. By switching

on the ventilator, humidity can

be retained in the appliance so

that drying out is avoided.

Humidor

Expensive cigars can be stored

and matured here at the right

humidity and ambient temperature.

The hand-crafted body is

made from finely-coordinated

exquisite wood to match the

interior of the wine climate cabinet

and holds up to 50 cigars.

The sophisticated humidity

element in the interior, coupled

with the storage of the humidor

in the temperate red wine compartment,

enable an optimum,

constant climate to be maintained.

Ice and water dispenser

This dispenser for ice cubes,

crushed ice and chilled water

can be removed while the door

is closed. Glasses, large jugs

or sports bottles can be filled

using the water dispenser.

The integrated ice dispenser is

located in the freezer compartment.

These appliances require

a fixed inlet water connection.

Induction cooktops

Induction is a method of heat

transfer that makes optimum use

of energy. Induction involves a

precise and responsive power

delivery via a magnetic field,

and also speeds up cooking

times – just like gas. Since the

induction method means that

only the bottom of the pot is

heated, there is no loss of unused

heat. Compared to glass

ceramic cooktops, induction

cooktops hardly heat up at all,

so that spilled food and liquid

hardly ever burn. Pots and pans

of all shapes and sizes are suitable

for use on a cooking zone –

the system automatically detects

the diameter of the pot’s

base and only heats the appropriate

area. Once the pot is

removed, the zone doesn’t emit

any more energy until the next

pot is placed on it. The booster

function provides more power –

raising the energy delivered to

a cooking zone by 50% for a

brief period. Pots and pans

which are suitable for induction

cooking can be identified either

by their labelling or by the fact

that a magnet placed on the

pan’s base sticks to the base.

With the must-have wok ring and

wok pan accessories, your induction

cooktop is transformed into

an induction wok. It is so powerful,

it is considered to be the

electric equivalent of the gas

wok. The heat is concentrated in

the middle of the wok and is

ideal for stir-frying in the classic

Asian style.

Info-Light

In fully integrated dishwashers,

a red dot of light projected onto

the ground indicates that a rinse

programme is in operation. The

tiny red light disappears when

the programme ends. This helps

to prevent the unintentional and

premature opening of very quiet

dishwashers.

Infrared grill

The grill temperature of a

Combi-microwave oven or a

microwave with infrared grill can

be chosen individually for the

meal you want to prepare; it’s

also ideal for “au gratin” dishes

and meals that require browning.

The selected temperature

or grill mode is visible on the

display.

Infrared remote control

All of the functions of the ceiling

ventilation system AC 402, from

the desired power level to the

lighting, can be conveniently

controlled using the infrared

remote control.

Innowave

This sophisticated feature,

which is also known as inverter

technology, offers microwave

power settings with variable

energy outputs. Compared to

conventional appliances, it

is a much more gentle way of

Induction wok. Use the wok ring

and wok pan special accessories

to transform your induction

cooktop into an induction wok

zone.

Presenters in aluminium for displaying single bottles. This accessory

is available as a set of three.

preparing food as users can

choose between high, medium

and low power settings. This

means fast and consistent

results when both cooking and

thawing. Since the heat penetrates

gently, food which is

overcooked at the top or on the

edges will become a thing of

the past – no more half-cooked

food which is still frozen in

the middle. In fact, your food

will both look and taste better.

Intensive mode

Three power settings and an

intensive mode can be activated

via individual control buttons

on the ventilation appliances.

Depending on the particular

model and setting, the intensive

mode automatically reverts to

the previously selected power

setting after three, five or ten

minutes of operation.

Interior light

A bright white light evenly illuminates

the interior from above,

meaning that users have a

better view of the appliance’s

contents.

Interiors for wine climate

cabinets

Bottle trays in beech and

aluminium: The untreated

beech ensures that no aroma

transfer can occur. The wood

is rounded off to protect the

Shelves in aluminium: The

perfect accessory for wine cabinets.

Ideal for accommodating

decanters, carafes, open bottles,

as well as the humidor.

Interval ventilation

When interval ventilation is

activated, the ventilation hood

automatically switches to the

preselected output level for five

minutes each hour. This means

that used or stale air can be

reg ularly extracted from the

room – also at night or during

long absences.

K

Knobs

Vario appliances of the 400

series: Since knobs need to

be both pressed and turned to

activate the corresponding

function, all appliances are protected

against unintentional

switching on. Before a knob can

be turned, it must be pushed

through a clearly perceptible

stop position. Active cooking

zones are indicated by an orange

illuminated ring. On gas

appliances which are not fully

electronic, ring illumination is

not possible – the knob can

only be turned in one direction

in this case.

Vario appliances of the 200

series: The gas appliances are

protected against unintentional

activation because their control

knobs have to be both pressed

and turned. The elegant solid

metal knobs draw on the design

of the 200 series ovens’ control

knobs.

L

LCD function display with

digital clock

The main functions activated via

the control knobs are always visible

on the bright LCD display in

ovens of the 200 series. The other

touch key functions – with their

188

convenient setting options – only

become visible when needed.

The digital clock can also be

used as a short-term timer, irrespective

of the function set for

the appliance. The timer functions

allow both the length of the

cooking pro cess and the time

at which the appliance is to be

switched off to be programmed

up to 24 hours in advance.

Load sensor

Ensures the optimal use of

water, thereby reducing expenditure

on water and electricity.

The system works with a rotation

sensor that measures the water

level in the pump well. It drops

as the load increases, because

more water is required for wetting

the dishes. This is detected

by the load sensor, which then

promptly triggers an appropriate

water intake. This prevents the

pump from running idle, thereby

avoiding the noise peaks that

would otherwise occur.

Long-term timer

This function can keep dishes

warm in the oven at a selected

temperature (such as 85°C) for

any period between 24 and 74

hours without the user having to

operate the appliance. The

interior lighting is switched off

while this function is in operation.

M

Memory function

All settings are stored for a

few seconds after the cooktop

is switched off. Consequently,

if the appliance is switched

off unintentionally, all previously

entered values can be easily

restored.

Memory recipes

This function, which is available

in both ovens and Combi-steam

ovens, allows you to save all

settings for a prepared dish so

that they can be easily retrieved

at any time. Six dishes can be

programmed, and up to five different

steps or settings can

be saved for each dish – at the

press of a button after every

successful cooking step. If the

core temperature probe is

used, the respective core temperatures

are saved instead of

the cooking times. This ensures

the same delicious outcome

every time, even if portion sizes

vary.

Microwave cooking

As connoisseurs know, microwaves

have become indispen s-

able – for everything from

heating up pre-prepared portions

of food to making hot

drinks in a glass, from bringing

food from the refrigerator to

serving temperature in no time

at all to the quick thawing of

frozen foods. The key element

of any microwave is the magnetron.

This creates magnetic

waves, the energy of which is

evenly spread out in the cooking

compartment by means of a

wave distributor. When the

microwaves hit the item being

cooked, they cause the water

molecules within the food to

oscillate at high speed. The

oscillating molecules create

friction, which in turn generates

heat. In microwaves, the heat

is therefore generated inside the

items being cooked – and not

from outside, as is the case in

conventional ovens.

Milk system

Every desired coffee variation

can be prepared at the touch of

a button using the milk system.

The milk system is integrated

into the coffee dispenser and is

used for hot milk and milk froth.

The milk nozzle ensures perfect,

fine-structured, creamy milk

froth. Its height can be adjusted

to accommodate glasses up to

15 cm in height. The milk container

is insulated and keeps the

milk cool and fresh for hours.

Both the milk nozzle and the

milk container are dishwashersafe.

Multiple glazing with

safety glass

The glazing in the oven door involves

up to four adjacent panes

of glass. The temperature of the

outer pane remains low, even

when the pyrolytic process is at

its maximum temperature.

N

No-Frost technology

If you own an appliance with

No-Frost technology, you can

say goodbye forever to the

tedious task of emptying and

defrosting the freezer compartment

– a job which has to be

Options for dishwashers

Energy Save: This option uses

Zeolite technology to reduce

electricity consumption, thereby

saving up to 15% of energy.

ture during the clear rinse and

an extended drying cycle.

Intensive: For washing heavily

soiled pots and pans in the bottom

basket while gently cleaning

fragile glasses in the upper

basket at the same time. By increasing

the spraying pressure

by 20%, as well as running additional

wash cycles and heating

phases, this option transforms

the entire lower basket into

an intensive zone. At the same

time, the water pressure and

tempe r ature in the upper basket

are consistent with the selected

programme.

Power: The main programmes

can be sped up considerably

with this option whenever items

– even those that are heavily

soiled – are needed again in a

hurry. When combined with

Standard Eco, the best performance

(washing and drying efficiency

class A according to

the Euro label) is produced in

a mere 57 minutes with Vario

dishwashers, and in 59 minutes

with Power dishwashers. That’s

equivalent to a time saving of

up to 60%. Auto programmes

run up to 30% faster.

Options menu

Specific functions, such as

switching to a certain cooking

zone, can be adjusted to suit

individual cooking habits. The

maximum power limit of the

cooktop can also be set via the

options menu, as can the child

lock, which completely deactivates

the control panel if required.

P

Personalisation function

The personalisation function

makes it possible to save up to

six personal favourite beverages

under a user-defined name. In

addition to cup size, brewing

temperature and coffee strength,

the coffee-milk ratio can also

be changed according to taste.

The individual beverages can

be selected quickly and conveniently

with the LCD function

display and prepared at the

touch of a button.

Pot detection

In induction cooking, only the

bottoms of pots and pans are

heated. The system detects the

diameter of the magnetic base

of each individual pot and only

that precise area is heated. This

means that you are free to use

pots and pans of all sizes without

wasting any energy. Once

the pot/pan is removed from the

activated cooking zone, the

zone won’t emit any more energy

until the next pot/pan is placed

on it.

Presentation light

In order to showcase their valuable

contents in the best possible

fashion, all the wine climate

cabinets include a presentation

light that can be optionally

activated. The use of cold light

prevents any temperature increase

in the interior.

Programmes

for dishwashers

Auto: Depending on the level of

soiling, this programme – with

the help of the Aqua sensor –

automatically selects the correct

temperature, length of the wash

cycle and amount of water needed

to deliver optimal results,

while also ensuring the efficient

consumption of water and energy.

You can choose between

different tem perature ranges:

65°C to 75°C for heavily soiled

pots and pans, 45°C to 65°C

for normally soiled dishes, or a

gentle 35°C to 45°C for glasses.

Pre-rinse: This programme

softens stubborn food stains

before the actual wash cycle,

thereby delivering the best

possible washing results.

Quick 45°C: This programme

omits the prewash and has

a shorter drying cycle. This

means that lightly soiled items

are practically dry and ready for

use within a mere 30 minutes.

Standard Eco: This wash

programme operates at a temperature

of 50°C to 55°C

instead of 60°C to 65°C, so

it consumes less water and

energy compared to regular

standard programmes.

Pull-out system

The pull-out system with pyro l-

ysis-safe cast iron frame allows

safe and easy access to the food

inside the oven. Thanks to its

fully extendable double telescopic

pull-out rack, it makes

light work of moving even heavy

and cumbersome food out in

front of the cooking compartment.

It makes no difference if

the food is on a baking tray, wire

rack or glass tray, skewered on

the rotisserie spit or braising in

the Gastronorm roaster. The

pull-out system can be installed

on every oven level. Only the two

easily detachable extension rails

need to be clean ed. The remaining

cast iron frame is easily

cleaned by the oven’s pyrolytic

system.

Pyrolytic system

The inevitable soiling of the

oven’s interior caused by grease

spatters when roasting or gril l-

ing is removed by this cleaning

programme, which operates

at 485°C. The length of the

programme is set by the manufacturer.

Needless to say,

the oven door is locked during

cleaning. Once the oven has

cooled down, all you need to do

190

is to wipe the interior with a

damp cloth. When the autopyrolytic

system is in operation,

the appliance automatically

gauges the level of soiling in the

oven’s interior. It then automatically

selects the optimum

cleaning time.

Q

Quick boil timer

This is used for heating up or

boiling quickly. The heat is increased

to the maximum level.

The duration can be individually

set to last between one and

20 minutes. If no specific duration

is selected, the glass

ceramic cooktop automatically

switches back to the cooking

setting after approx. three

mi nutes. Induction cooktops

switch back after approx. one

minute.

R

Rackmatic

Even when fully loaded, the

height of the dishwasher’s upper

basket can easily be adjusted

by up to 5 cm. This means that

larger items – such as tall

glasses in the upper basket or

plates in the lower one – can

be easily and flexibly accommodated

without having to rearrange

everything.

Regeneration

See Steaming.

Regeneration electronics

Instead of automatically regenerating

the water softening

system after each wash, regeneration

is only activated when

the need arises. This is calculated

by electronics that emit

a signal when the next dose of

salt solution has to be added

to the water softening system.

This means that the optimal

amount of water and salt required

to counteract the respective

water hardness is

used. This keeps costs down

and is kind to the environment.

Rim extraction filter

See Grease filter.

Roasting zone

Two cooking zones of a glass

ceramic cooktop can be

switched on so that they are

interconnected, thus enlarging

them to the dimensions of a

roasting tin. The Gaggenau cast

roaster is custom-made so that

it fits the 18 x 41.5 cm roasting

zone perfectly. On induction

cooktops, they are interconnected

automatically if appropriately

sized cookware is placed

on the roasting zone.

Rotisserie spit

Uniform grilling from all sides –

just the thing for poultry, a rolled

roast or a leg of lamb. The rotisserie

spit ensures that meat gets

crispy and brown on all sides.

For best results, select grilling

or top heat as the operating

mode. The spit is suitable for

meat weighing up to 6 kg.

Run-on function

Just the thing for effective room

ventilation. Once activated, the

function ensures that the ventilation

appliance runs on for up

to ten minutes after use on any

setting, before automatically

switching itself off.

S

Safety glass shelves

Glass is hygienic and ensures

good visibility. The shelves can

be adjusted in height to enable

the cooling compartment to be

segmented as required. Some

appliances also have a motorised

shelf.

Safety lock

The safety lock mechanism in

Gaggenau ovens terminates

any heating mode after 12 hours

of inaction on the part of the

user, assuming that the longterm

timer has not been activated.

Most cooktops and Vario

appliances switch themselves

off after a particular period of

inaction on the part of the user.

The trigger period depends on

the selected output level.

Sealing flaps

The suction vent in the downdraft

ventilation system in the

Vario 400 series is sealed when

the system is not in use. When

the ventilation is switched off,

the flaps remain open for a few

seconds until the fan comes to

a full stop. The flaps then close

automatically.

Sensor control

All the settings of the cooking

zones are easily adjusted with

one touch. The levels of the

individual cooking zones are

graphically displayed on the

glass ceramic surface and the

operating status is indicated

as well. And the cooktop is

secure against being switched

on accidentally by children or

while cleaning. The inadvertent

placing of objects on the control

panel is also not enough

to switch on the appliance. By

Safety glass shelves.

Glass is hygienic and

ensures good visibility.

191

Steamer. For the gentle steaming

of meat, fish and vegetables.

Two cooking inserts – one perforated

and one unperforated –

are part of the basic set.

touching the main switch during

operation, all the cooking zones

are immediately switched off.

If a cooking zone is switched on

unintentionally, it will automatically

switch itself back off after

20 seconds if no further buttons

are pressed.

Settings menu

Many settings for the oven,

Combi-steam oven and Combimicrowave

oven can be changed

here, depending on the model.

The time, display pro p erties

such as brightness and key

tones, and activation of the

Super-Quick function, can all be

set here. In the clearly arranged

menu, which has one control

level, options are displayed by

icons and, on some models,

using a clear text display. The

desired setting can be selected

conveniently at the press of a

button.

Side-opening oven door

The door of the appliance is

fitted with a thermally insulated

pane of clear glass so that you

can keep an eye on what is

cooking. The handle on the side

is protected against high temperatures.

The door itself swivels

open to a full 180 degrees,

thereby facilitating easy access

from the front. The direction in

which you want the door to

open must be specified when

ordering the appliance, since

the side on which the door

hinge is positioned cannot be

subsequently changed.

Silvercare cartridge

(special accessory)

This aluminium cartridge protects

silverware from corrosion

and gives oxidised silver back its

sheen thanks to ion exchange.

Simmering setting

The simmering setting of the

fully electronic gas cooktops of

the Vario cooktops 400 series

makes it possible to simmer

food on the lowest setting. The

low heat input is achieved by

automatically extinguishing the

cooktop flame every 30 seconds

and reigniting it after a further

30 seconds.

Single portion cleaning

The water pipes are rinsed

each time coffee is prepared,

and not just when the machine

is turned on or off. This means

no residual water, 100% hygiene

and a full coffee flavour.

Soft-Light

The uniform cooktop illumination,

which comes with ventilation

appliances, automatically

goes on and off gradually, and

it can be dimmed manually from

maximum illumination while

cooking to atmospheric background

lighting.

Spit

See Rotisserie spit.

Stainless steel cooking

interior

The seamless stainless steel

cooking interior of the Combisteam

or steam oven meets

the highest hygiene standards.

The 60 watt halogen lighting

provides a splendid light setting

for whatever you are cooking.

Stainless steel grease filter

See Grease filter.

Stainless steel interior

The warming drawer has a

hygienic stainless steel surface

for both preheating dinnerware

and keeping meals warm. All the

Vario cooling appliances of the

400 series are similarly lined

with stainless steel on the inside.

When combined with oxygen,

stainless steel also reduces the

formation of odours.

Star rating

The freezing capacity of freezer

compartments is indicated

using a star rating system:

· one-star compartment: –6°C

· two-star compartment: –12°C

· three-star deep-freeze compartment:

–18°C

· four-star deep-freeze compartment:

–18°C with a specified

minimum freezing capacity.

Steamer

Unlike the steam oven or Combisteam

oven, the steamer can

also be used for reducing stock

or wine. Not just water.

Boiling point detection: The

appliance automatically recognises

the boiling point, which is

dependent on the altitude above

sea level.

Cooking inserts: The basic

set comprises one perforated

and one unperforated cooking

insert. In this way, two meals

with different cooking times can

be staggered so that they are

ready at the same time.

Electronic steam control:

This ensures that only as much

steam is produced as is required

for the cooking process.

Electronic temperature

control: Temperature control

in increments of 5°C enables

cooking at a precisely set temperature

between 45°C and

95°C, or steaming at 100°C.

192

Delicate dishes such as fish are

kept at a constant temperature

below boiling point to prevent

them from disintegrating. Likewise,

meals can be defrosted,

heated up gently or kept warm

for a long period without any

loss of taste.

Glass cover: Enables the

cooking progress to be monitored

at all times. As Gaggenau

steam ers do not use pressure,

the glass cover can also

be removed during steaming.

Pasta basket: Cooks pasta

to perfection. To strain, simply

drain the water.

Steaming

Almost everything which is

normally boiled in water can be

cooked much more healthily

in steam, ensuring that vitamins

and minerals are preserved.

Whatever you are cooking, it

will taste more natural, have a

more intense taste and consistency,

and colour will be bet ter

preserved. Several Gastronorm

inserts containing different

foods to be steamed can be

inserted simultaneously into the

Combi-steam or steam ovens.

The steam prevents taste being

transferred between the individual

meals. By combining steam

with hot air, as in the Gaggenau

Combi-steam oven, the full

range of cooking options are

available:

Combi-steaming: Combining

steam with hot air between

30°C and 230°C ensures many

types of meat come out par -

ticularly succulent and tender.

In this operating mode, the interior

of the oven is hermetically

sealed and humidity prevents

the meat from becoming too dry.

A roast will cook in its own

juices at a very low humidity level.

Dough fermentation: The

correct conditions for getting

dough to ferment are a low

temperature of no more than

50°C with humid air.

Hot air: This corresponds to

the hot air in a conventional

oven. The interior of the oven is

ventilated by an opening which

allows any humidity to escape.

This is particularly important,

for instance, with cakes and

fresh fruit, which need to give

off humidity during baking to

prevent the pastry becoming

too soft.

Juice extraction: Juice from

berries and other fruits can be

conveniently extracted using a

perforated cooking insert. The

juice is caught in a non-perforated

insert positioned below it.

Low temperature cooking:

This is a professional method

for cooking meat to perfection.

It is initially browned, before

being cooked slowly and gently

over a long cooking time. A

large piece of roast beef, for

example, is better cooked this

way than with any other cooking

method – tender and pink

throughout, apart from a millimetre-thin

edge, and unbeatably

succulent. And after it is

cooked, the meat can also be

kept warm for a long time, so it

remains perfect.

Low temperature steaming:

Steaming with 100% steamsaturated

air at low temperatures

guarantees optimum heat

transfer without drying out and

is therefore ideal for cooking

fish. Protein is prevented from

either congealing or escaping.

As a result, fish is always ten der

and succulent with a natural protein

taste and its consistency

is retained.

Misting: At the press of a button,

a measured quantity of steam

is injected into bread or confectionery.

This is particularly useful

when baking bread, rolls and

pastries, or when baking bread

which has been frozen.

Regeneration: Steaming without

pressure is also the perfect

way to regenerate meals which

have been prepared beforehand

without impairing the quality.

It beats all other reheating methods

hands down.

Steam-baking: Steam and hot

air at higher temperatures can

also be used for baking and

braising. The humidity prevents

meat from drying out, particularly

with poultry, bread or pastries,

and browns the surface to

make it crispy. The hot steam

transfers the heat twice as

effectively as hot air and also

reaches the interior of whatever

you are cooking, so your meals

taste more professional than

ever.

Steam removal: At the press

of a button, the inside wall of

the appliance is cooled down

with cold water and the steam

vapour condenses within around

20 seconds. This reduces the

emission of steam when the door

is opened.

Thawing: Steam and low temperatures

are ideal for the gentle

thawing of deep-frozen food.

Stepped shelf

The stepped shelf enables the

practical integration of the most

widely used Gastronorm inserts

in the cooling appliance. The

form of the shelf itself makes it

possible to store items of different

heights.

Storage time after a

malfunction

It indicates the time needed for

the temperature in a fully loaded

freezer compartment to rise

to –9°C in the event of a malfunction.

Shorter times apply

when the freezer compartment

is not full.

Stepped shelf. The stepped shelf

enables the practical integration

of the most widely used Gastronorm

inserts in the cooling

appliance. The form of the shelf

itself makes it possible to store

items of different heights.

193

Twist-Pad control. A manoeuvrable magnetic knob makes control

particularly easy. The knob is removed to facilitate cleaning the

smooth-surface cooktop.

Super-Quick cooking zones

Once switched on, the desired

heat is quickly attained and just

as swiftly reduced. Super-Quick

ensures an even heat release

and is easy to regulate. What’s

more, a red light which increases

in size allows you to monitor

the heating progress.

T

Temperature regulation

control.

Teppan Yaki

For roasting and cooking Japanese

style, directly on the smooth

metal surface – a more precise

cooking procedure than with a

pan or grill. With an adjustable

surface temperature control –

either across the whole surface

or, as is the case with the

Vario 400, just half of it.

Cleaning setting: The water

for cleaning the Teppan Yaki

VP 230 can be heated up to the

desired temperature of about

40°C directly on the appliance

itself.

Hard-chromed cooking

surface (Vario cooktops 400

series): Just like a good cast

pan, it will show signs of use, but

the surface will always remain

easy to clean and does not wear.

Stainless steel sandwich

cooking surface (Vario cooktops

200 series): For the maximum

cooking area with even

heat distribution in the compact

dimensions of the 200 series.

When used, this surface will

also take on an individual look

but this will in no way impact

on its operation.

Warming stage: Regulated

setting, keeps meals warm with

greater precision than in a pot.

Thermoelectric flame

monitoring

Automatic ignition of the flame

on operating the knob. The knob

must be held for a short time,

until the thermo-element has

reached the required temperature

for a stable flame. Should

the gas flame go out unintentionally,

the gas supply to all burners

is automatically interrupted.

Time delay

The electronic timer allows you

to specify when the wash

programme is to begin – up to

24 hours in advance.

Twist-Pad control

The manoeuvrable magnetic

knob on the Twist-Pad makes

cooktop control particularly

easy. To activate a particular

cooking zone, briefly move the

knob towards the zone in question

and then turn it to select

the desired power setting. LED

displays in the cooktop show

the selected setting. The magnet

always returns the knob to its

idle position in the middle of

the Twist-Pad. The knob can

be removed to facilitate cleaning

the smooth-surface cooktop.

The main switch – along with

additional functions such as the

timer, frying sensor or booster –

are activated using sensor

buttons.

U

Universal pan

This pan for collecting meat

juices completes the microwave

set. It is also suitable for

194

cooking or defrosting. It includes

an accessory attachment

for grilling.

UV protection

In order to prevent daylight from

altering the bouquet of wine,

the glass doors of the wine

climate cabinets also include

UV protection.

V

Vacation mode for

refrigerators and freezers

An energy-saving programme

can be activated in order to

keep your foodstuffs cooled or

frozen while you are away for

longer periods.

W

Water filter

The water filter offers freshly

filtered and optimally prepared

water at all times. It reduces the

hardness of the mains water

and thus protects the entire

system from deposits. A display

provides a reminder of when a

filter change is due. The change

itself is easy to carry out.

Combi-steam ovens: If a

descaling system is integrated

into the water inlet then the filter

must be changed at specific

intervals. The appliance electronics

calculate the capacity

according to the water hardness

entered.

Fully automatic espresso

machines: The water filter

ensures that the coffee aroma

can optimally unfold. In addition,

it also guarantees a long

service life, even brewing temperature

and constant pump

pressure during the brewing

process.

Cooling appliances: A water

filter for the integrated water

filter system with saturation

indicator can also be retrofitted

as a special accessory to the

cooling appliances with ice

makers.

Water level warning

An acoustic signal is emitted

when the water tank in the steam

oven is empty. The display will

show a tap symbol. The heating

process is then interrupted. The

water tank has to be filled and

reinserted in order to continue

cooking.

Water tank

With a capacity of 1.3 litres,

the water tank in Combi-steam

and steam ovens ensures a

sufficient supply of water in the

absence of a fixed inlet and

outlet water connection. Since

the steam is generated in the

cooking compartment, the water

tank is protected against calcification

to the greatest possible

degree. The tank is easy to

handle and transparent, meaning

that the water level can be

checked at a glance. Due to

hygiene considerations, the tank

has to be emptied after every

cooking session. It should not

be cleaned in the dishwasher.

Wine and champagne rack

For the practical and convenient

storage of champagne, wine

and other bottles in a horizontal

position. When not in use, the

rack can easily be folded away

to save space.

Wok burner

With three flame rings which

are arranged in a circle, and a

power spectrum between 300

and 5000 W which can be precisely

regulated (150 to 6000 W

for the fully electronic gas cooktops).

Ideal for quick braising in

a large wok, or for big pots and

pans.

Z

Zeolite technology

Thanks to this state-of-the-art

technology, the Vario dishwasher

supports a huge range of options.

Zeolite is a silicate material

which, thanks to its porous

structure and special properties,

absorbs moisture very quickly.

This releases heat which can

be used for several purposes –

such as shortening programme

times, enhancing drying performance

or conserving energy.

Zeolite completely regenerates

itself after each wash cycle and

has a service life as long as that

of the appliance.

Water tank. With a capacity of

1.3 litres, a sufficient supply of

water is assured in Combi-steam

ovens and steam ovens in the

absence of a fixed connection.
