History.
Gaggenau was founded in 1683 and has been involved
in the manufacture of metal consumer durables from the
outset. Before long, the company came to specialise in
enamel products, and Gaggenau’s recipe for its sturdy
oven enamel became the basis for the success of its charcoal
and gas ovens, which it continued to manufacture
until well into the 20th century. In 1961, Gaggenau was
taken over by the visionary entrepreneur Georg von
Blanquet, under whose leadership it became a premium
international brand. Von Blanquet was excited by the
idea of custom-made fitted kitchens, something which
was revolutionary for that time. A passionate cook in his
spare time, von Blanquet accepted no compromises in
his quest to create professional appliances incorporating
a plain and functional design – a creed to which
Gaggenau has remained faithful to this day.
A variety of glass composites are used as raw materials
for the typical blue enamel of our ovens.

Craftsmanship.
Gaggenau appliances are crafted by hand in a process
involving many stages and assembled piece by piece in
our workshops. The most intricate assembly process is
the one for the large RY 491 fridge-freezer combination in
the Vario cooling 400 series. Manufacturing our ovens
also involves countless steps which can only be carried
out manually, such as the assembly of fronts and cable
looms. Even the control modules on our 200 series
ovens can only be polished manually, for instance. Our
philosophy demands loving attention to all details. This
enables us to keep hold of the things which are valuable
and dear to us.

Quality.
Only the toughest, best-quality materials are suitable
for consistent use in a kitchen over a period of many
years. The grinding unit of our fully automatic espresso
machine is a good example – it operates almost without
wear, and its innovative design makes it unusually quiet.
These details, used in the selection of materials and
processes, may not be visible, but make a recognisable
difference to the taste. That’s because the grinding
unit’s three different grinding zones guarantee an ideal
grain size distribution and thus enable the aroma to
develop perfectly.

Innovations.
No other company has revolutionised common kitchen
practices as much as Gaggenau: built-in ovens, glass
ceramic cooktops, pyrolytic self-cleaning, the Combisteam
oven for the home and oven doors that can be
opened from the side. Or the AT 400 table ventilation
that can remove even large quantities of grease particles
from the air. Another unique product is the Vario
cooling 200 series, which features an enlarged interior
and the highest energy efficiency class. The list of our
achievements is remarkable. But that certainly doesn’t
mean we’re resting on our laurels. More than 30 staff in
research and development are already working on
further ideas.

Design.
On the international stage, Gaggenau is a regular recipient
of design prizes. After all, engineers and designers
work hand-in-hand at Gaggenau. They create objects
that set the benchmarks with regard to functional and
aesthetic criteria. One successful example of this is
provided by the solid aluminium door racks of our Vario
cooling 400 series. They are purposefully recut in order
to create uniquely precise contours. As a result, simplicity
meets state-of-the-art design. Par for the course
at Gaggenau.

Baking.
Very large ovens have traditionally been used in
gastronomy. Besides roasting, baking and grilling,
they are also used for preparation or to keep individual
meals warm while others are still cooking. It
is this wide range of requirements that provides the
inspiration for our domestic kitchens. This combination
of oven and Combi-steam oven enables all
conceivable culinary challenges to be mastered to
perfection. The best results are obtained when the
appliances are built in at eye level so that the cook
is provided with an ideal view. The high-visibility
glass frontages are made from high-quality transparent
glass capable of resisting temperatures
of up to 485°C, such as those that occur during
pyrolysis, the automatic self-cleaning. At the press
of a button, the current temperature inside the oven
appears on a temperature gauge. Other handy
features, the likes of which will delight even
professional chefs, are shown on the pages that
follow.

200 series ovens.
The distinct look of the appliances of the 200 series
ovens is defined by the compact LCD control module
with its simple use of menus, digital clock and timer.
The multiple-glazed doors can be opened at full height
from the side, either to the left or to the right depending
on how you choose to install them. Frontages are
made from glass and backed with stainless steel or
aluminium, while some models are also backed with
stainless steel, aluminium or anthracite colours. The
panorama view and halogen lighting ensure the cook is
provided with optimum visibility of the interior.
The series uncompromisingly brings ultra-modern professional
technology into private kitchens. Whether it’s
a combination of an oven, a Combi-steam oven and a
warming drawer one above the other or a side-by-side
combination of 45-centimetre-high appliances such as
a Combi-microwave oven, a fully automatic espresso
machine and a Combi-steam or steam oven – a multitude
of perfect-looking combinations is possible.

Combi-steam oven BS 281.
The BS 281 has a fixed inlet and outlet water connection.
Five humidity levels can be combined with temperatures
of up to 230°C, meaning that these ovens can
do everything: steaming, baking, simmering, braising,
regenerating, extracting juice.

Warming drawer WS 282.
The WS 282 has space for a dinner set for twelve
persons. The interior is food-safe.
• Frontage: Aluminium-backed glass frontage (also available
with stainless steel backing).
• Dimensions: 76 cm wide; 27 cm high; net volume of 56 litres.
• Temperatures: 40°C to 80°C. Ideal for defrosting, keeping
warm and using residual heat for cooking.

Oven BX 280.
The BX 280 consists of two ovens with a total of
17 different heating methods. This means that several
dishes can be prepared simultaneously. Overall, the
appliance has a net volume of 220 litres, which means
110 litres per cooking compartment.

Pull-out system with roaster.
Baking trays, wire racks, pans and even the rotisserie
spit are fully extendable thanks to this effortless new
system. If you want to baste a roast, for example, one
simple move is enough. The pull-out system can be
used on every level and its cast iron frame can easily be
cleaned with the oven’s pyrolytic function. The Gaggenau
Gastronorm roaster (GN 2 ⁄ 3) is also directly incorporated
into the system. It is not only ideal for all ovens with a
roasting function, but also for Combi-steam and steam
ovens and induction cooktops. The roaster’s lid also
serves as a casserole dish or as a piece of cookware.

Core temperature probe.
The core temperature probe lets you cook meat, fish and
pastries or pies to perfection. Simply insert the tip
of the probe into whatever it is you are cooking and it
will measure the temperature in the centre, which will
then appear on the function display. As soon as the set
value for the inside temperature is reached, the heating
element switches itself off automatically. A signal will
then sound immediately and at intervals to inform you
that the core temperature has been reached. It is a
convenient device that can be used both for Gaggenau
ovens and for Gaggenau Combi-steam ovens.

Combi-steam oven BS 250.
The use of pressureless steam is one of the most effective
cooking methods there is. In the Combi-steam oven
BS 250, this can be combined with hot air, meaning that
these ovens can do everything: steaming, baking,
simmering, braising, regenerating, extracting juice.
• Frontage: Stainless steel-backed full glass door (also available
with aluminium backing or anthracite front).
• Dimensions: 60 cm wide; net volume of 43 litres.

Combi-steam oven.
The use of pressureless steam is one of the healthiest
cooking methods and the best way to retain vitamins,
minerals, consistency and colour of food. Meat is tender
and succulent, while seafood is never too dry and vegetables
are turned into a delicacy. Everyday meals that
easily stick to the surface or disintegrate become easier
to make than ever. Steam is ideal for blanching spinach,
skinning tomatoes or gently reheating meals which have
already been cooked. The use of hot air in cooking is
ideal for crispy roasts and gratins – simply switch off
the steam shortly before the end of the cooking time to
allow everything to brown at a high temperature. The
result: the outside will be crispy and the inside succulent
– just like it should be.

The BO 271 has the widest range of features of the
60 cm-wide ovens in the 200 series.

Heated baking stone.
Commercial brick ovens are traditionally fired from
below, with the heat transmitted through the stone base.
The same principle is used here. A separate heating
element heats the compact ceramic stone from below
to temperatures of up to 300°C. There is no heating
from above with this oven, so that your pastries will taste
Danish, pizzas Italian and bread like it’s from the local
baker’s. The baking stone and heating element are
available as special accessories.

Combi-microwave oven BM 275.
With a design to match the 200 series ovens, the
BM 275 Combi-microwave oven, which offers the combination
of a microwave, a grill and an oven, includes
various possible modes of operation.
• Frontage: Anthracite full glass door (also available with stainless
steel or aluminium backing).
• Dimensions: 60 cm wide; 45 cm high; net volume of 36 litres.
• Microwave operation: In five output levels of 1000, 600, 360,
180 and 90 watts.
• Full surface grill: Can be regulated in three levels of intensity,
with a maximum output of 2000 watts; ideal for gratin dishes.
• Oven operation: It offers hot air operation at 40°C and from
100°C to 250°C, hot-air grilling from 100°C to 250°C, and
convection grilling from 100°C to 250°C. All heating methods
are electronically regulated.
• Combined operation: The three heating methods can be
freely combined with the microwave output levels of 600, 360,
180 and 90 watts.
• 15 automatic programmes: For ideal results when steaming
or defrosting.
Warming drawer WS 221.
The WS 221 has space for six dinner plates including
soup dishes. The interior is food-safe.
• Frontage: Anthracite glass frontage (also available with stainless

• Temperatures: 40°C to 80°C. Ideal for defrosting, keeping
warm and using residual heat for cooking.

turning it into a real brick oven – here with an anthracite

Warming drawer.
Gourmets regard Gaggenau warming drawers as a
secret compartment which can do much more than
merely heat plates. The interior is made from hygienic
stainless steel and glass, and it’s food-safe. At temperatures
between 40°C and 80°C, they can be used for
browning roasts, getting pastries to rise or keeping
soups warm, and are also ideal for gentle defrosting.
Warming drawers are available in three different sizes
and can be combined with the oven, Combi-steam oven,
Combi-microwave oven or a fully automatic espresso
machine, as required. The WS 221 model shown here is
in the 200 series design and is ideal for combination
with a Combi-microwave oven as shown on pages 40/41.

Professional oven EB 388.
Top chefs love this Gaggenau classic. Though you
wouldn’t know it from looking at it, the EB 388 is our
oldest model. The design has been so timeless for the
past 20 years that it still sets standards. And now as
then, it’s manufactured almost entirely by hand – a real
professional appliance.
• Dimensions: 90 cm wide; net volume of 78 litres; space for
three to four joints, large-sized game or a small lamb.
• Eleven heating methods: Electronic temperature control from
50°C to 300°C. A special feature of the EB 388 is that top
heat can be combined with 1 ⁄ 3 bottom heat, and bottom
heat with 1 ⁄ 3 top heat. Ideal for finishing off a roast, or when
baking or making gratins.

Of all the food and beverages of the modern age,
coffee has become the epitome of pleasure and
savoir vivre. Its bitter-sweet taste and exquisite
aroma have become a mainstay of our culture. It is

to treasure our state-of-the-art induction technology,
not forgetting the classic gas cooktop. Induction
appliances react just as fast as gas appliances, while
generating much less ambient heat. That’s why
nowadays both technologies can be found side-byside

Vario cooktops 400 and 200 series.
The Vario series feature perfectly specialised appliances

With this system, the handling of a classic knob meets

Particularly appealing features of this ceiling ventilation
integrated into the kitchen architecture are the system’s
minimalist design and its high degree of modularity,

Coanda effect.
Aerodynamic research led to the discovery of the
Coanda effect. The unique shape of the ventilation hood
leads to the emergence of an additional air current along
its front edge. This air current traps rising condensation
before it has a chance to escape over the edge of the
appliance, and drives it straight into the outlet. This
helps to save energy, while also siphoning off less temperate
air. Since it’s an astonishingly quiet system, it
makes working in the kitchen a much more pleasurable
experience. The Coanda effect kicks in on both sides
when using an island hood. One of Gaggenau’s many

Freshness.
Freshness is one of the most important ingredients
when one is preparing dishes of the highest quality.
It’s also one of the most sensitive. Just one second’s
distraction is enough to irreparably overcook it. Baking
and cooking with steam is one of the gentlest preparation
methods. That’s because cooking with pressureless
steam largely retains the colour, vitamins and
minerals of vegetables. Meat and fish cannot dry out,
and the natural consistency is retained so it tastes just
the way it should. Further information on steam-baking
and cooking can be found on pages 34/35 and in our
glossary.
Flavour.
Both with storage and cooking, it is important to retain
the food’s unique flavour. With mushrooms for instance,
any soil or leaves should be removed using only a fine
mushroom brush before cleaning them with a damp
cloth. Afterwards, they should be cooked or prepared
as quickly as possible. To give them a more intense
taste for later consumption, they can also be dried – for
two hours on a baking tray at around 80°C with recirculation.
Dried mushrooms can be kept in airtight containers
for months on end, and even the smallest quantity is
enough to enliven soups and stews.
Recipes.
There are two types of cooks – on the one hand there are
the traditional types who prefer classic recipes from their
country’s national cuisine and, on the other, there are the
more experimental ones – the type who, for example,
don’t shy away from creating a delicacy from maize and
caviar, which they call “liquid ravioli”. The Vario series of
cooking appliances offer a wide range of cooktops for
both types of cook. These can be assembled entirely
according to individual requirements and added to at
any time – so you can switch from a classic gas cooktop
to Teppan Yaki or an induction wok. This makes
Vario cooktops the ideal option for all kinds of recipes.
Smells and odours.
The smell of baking cakes is generally a welcome aroma,
but other odours arise during cooking which are not so
pleasant. Many tips exist on this subject. In the case of
cabbage for instance, adding a bouquet of parsley or a
walnut to the water while cooking is recommended to
reduce the odour. This holds for all types of cabbage,
including Brussels sprouts, cauliflower or savoy cabbage.
However, confusion prevails when an odour is drifting
through the refrigerator and affecting other foods. Here,
there is no simple cure – only first-rate technology. For
this reason, many of our cooling appliances feature a
ventilation system with an activated charcoal air filter. The
appliances of the Vario cooling 400 series have been
additionally equipped with a stainless steel interior to
prevent the build-up of odours. This appeals to the eyes
as well as the nose.
Vitamins.
Herbs and spices such as parsley, dill, sweet basil and
garlic flowers refine every good meal. They are also
rich in vital vitamins, trace elements and minerals. The
importance of stable storage of these natural materials
is widely known. In order to create ideal conditions for
many different types of food, we’ve incorporated a variety
of climate zones inside our cooling appliances. These
enable temperatures and humidity to be individually
controlled and adjusted to meet the individual needs of
each type of food.

Professional chefs know that there are great differences
in how food needs to be stored. Some foodstuffs
require that little bit longer to mature, while
others favour a particularly cool environment. Exclusive
drinks are stored at cool temperatures, but need
to be brought up to drinking temperature with care
and precision. In order to meet the highest demands,
we’ve continued to develop our range of cooling
appliances unabated. We offer refrigerators with up
to five different climate zones that can be controlled
to the exact degree. Or specialised appliances for
professionally storing food close to the 0°C level
used in modern refrigerated warehouses. And the
finest wine climate cabinets, which are virtually vibration-free.

The Vario cooling series is the first modular system made
from fully integrated built-in appliances. Refrigerators,
freezers, fridge-freezer combinations and wine cabinets
can be combined in countless variations to form an elegant
cooling wall. For those who prefer stainless steel

panels, these are available as an optional extra. The
interiors of Vario cooling appliances are stainless steel

The interiors of all the appliances in our Vario cooling
400 series are panelled in stainless steel – a material
chosen for more than just its visual qualities. Stainless
steel also guarantees 100 per cent hygiene. Giving
off no harmful substances itself, when in contact with
oxygen and moisture it can work to neutralize odours.
This added benefit takes place at the molecular level
and – in the refrigerators at least – remains completely
invisible to the human eye. In the freezers, by contrast,
the stainless steel is covered by an extremely thin
sheen, resembling a frost pattern that provides visible

outer dimensions can be integrated into any standard
kitchen, the interiors offer significantly more space than
you would expect from appliances in the highest energy
efficiency class. On the one hand, part of the technology

concept is remarkably well thought out and flexible.
All of the shelves are fully extendable. No more delicacies
disappearing into the background. The space is

Activated charcoal air filter
In order to keep cooling appliances
and wine climate cabinets
free of odours, the air
circulates through an antibacterial
activated charcoal air filter
that removes and captures
odour particles. In ventilation
systems with recirculation, the
filter removes odours from the
cooking steam before the air is
recirculated into the kitchen.
Actual temperature display
Precise temperature control and
monitoring are especially important
when preparing certain
dishes. The actual temperature
display allows you to check the
temperature in the cooking compartment
whenever you want.
If, for example, you turn down the
temperature, it enables you to
see when the new desired temperature
has been reached in
order to get maximum benefit
from residual heat. Not even all
commercial appliances have
this unique Gaggenau feature,
which is highly appreciated by
discerning home chefs.
Air cleaning catalyst
A catalyst in the oven’s interior
rids the air of grease particles
and odours. This means that the
kitchen no longer smells of intensive
oven odours. The heated
catalyst also delivers optimal

Air extraction/air circulation
Most Gaggenau ventilation
hoods are available as air extraction
or air circulation appliances.
In both cases the air,
which contains grease particles
and odours, passes through
a grease filter that protects the
inside of the hood and the
extraction pipes from deposits.
On the air extraction version,
the pre-filtered air is conducted
through the wall into the open
air or into a ventilation shaft. On
the recirculation version, the
odours are absorbed by an additional
active charcoal filter so
that nothing but odour-free air is
conducted back into the kitchen.
To ensure optimum efficiency,
the charcoal filter should be
changed twice a year.
Aluminium door racks
These adjustable racks offer
plenty of storage space and
have a variety of uses. Made
from solid anodised aluminium,
they are particularly hygienic
and easy to clean, while also
preventing odour transfer from
food.
Appliance cover
All 38 and 28 cm-wide cooktops
in the Vario cooktops series can
be fitted with a cover. This is
available as a special accessory
for all appliances with the exception
of the electric grill, which
includes the cover in its scope
of delivery. The covers of the
400 series are made of stainless
steel; those of the 200 series
are available in stainless steel
(ribbed) and aluminium (smooth).
Aqua sensor
This reduces the consumption
of fresh water without compromising
cleaning results. With
normal soiling, up to six litres of
water can be saved, depending
on the programme chosen. The
Aqua sensor detects whether
the water is clean enough for the
next wash cycle. If so, the water
change procedure is skipped.
Regardless of how cloudy the
water is, the system also detects
small dirt particles. To do so, it
uses an infrared sensor that
detects fats, oils and proteins,
as well as an additional green
light sen sor that recognises
substances such as tea residue
or bits of spinach.
Aquastop
A multi-active and networkindependent
system of protection
devices prevents damage
caused by water. With all our
dishwashers, users are no
longer required to manually turn
the water tap on/off (which is
otherwise necessary). Even if
the appliance is switched off,
the discharge pump is immedi-

ately activated if there is a leak
or flooding. All this with a lifelong
performance guarantee.
Aroma brewing technology
This technology ensures an
intense coffee taste. Regardless
of its quantity, the coffee
powder is perfectly pressed
together in the brewing chamber.
During the brewing operation,
the coffee powder is
swirled under high pressure to
wet all of the grains with water
and release all of the flavours.
Automatic cleaning and
descaling programme
The fully automatic espresso
machine has a computer-controlled
cleaning and descaling
programme. The most important
steps are shown on the display
screen and the rest is controlled
automatically. The only requirement
is to ensure the appropriate
cleaning or descaling agent
is used.
Automatic detergent
function
The dishwasher’s control system
automatically detects when detergent
tablets are being used
instead of individual de tergents.
The programme is adjusted to
suit the particular con centration
of components, thereby ensuring
optimal cleaning and drying
results. This function does not
have to be set manually and
guarantees great results regardless
of water hardness.
Automatic programmes
with weight specification
These provide excellent results
when cooking or defrosting
fresh or deep-frozen food in
the Combi-microwave oven or

This is used for quick boiling on

Catalytic special enamelling
The special enamelling at the
back of ovens means that ovens
without the pyrolytic system
are now easier to clean. During
the process of catalysis, dirt is
broken down by oxidation with
atmospheric oxygen at temperatures
upwards of 200°C. This
cleaning takes place while the
oven is in normal use. If the oven
is very dirty, you are advised to
clean the non-coated surfaces
by hand, and then heat the oven
up to about 200°C for a few
minutes. This is a particularly
good way of dissolving fatty
stains. The pyrolytic system is
the only system capable of
optimum oven cleaning.
Cellar compartment
Separate compartment for the
storage of foods which are
sensitive to cold, such as fruits
(pineapples, bananas, lemons,
avocados), potatoes or ready-tospread
butter and drinks such
as milk or beer at temperatures
which can be set to between
6°C and 14°C as desired.
Centrifugal grease filter
The air current from the table
ventilation system is rerouted
several times in this filter, thereby
ensuring that grease particles
are efficiently captured and
expelled. The filter elements can
be cleaned in the dishwasher.
Cleaning programme in the
Combi-steam oven
Soiling inside the oven is softened
with the help of steam. The
inside of the oven can then be
easily cleaned.
Climate class
The functions of a refrigerator
depend on the appliance’s
ambient temperature. An appliance’s
climate class indicates
the range of ambient temperatures
for which it is suitable:
SN: 10°C to 32°C, N: 16°C
to 32°C, ST: 16°C to 38°C,
T : 16 °C to 43°C.
Coanda effect
This aerodynamic technique
is used by Gaggenau to extract
the cooking fumes which occur
at the front of a cooktop
more efficiently. Part of the airflow
generated by the fan exits
through the top of the ventilation
hood and is guided downwards
over the rounded front
edge, intercepting fumes which
might otherwise get past the
front of the ventilation hood.
This new air conduction system
enables efficient air purification
even at lower power levels. As
a result, less energy is used and
less temperate air is removed
from the room. At the same
time, the noise level is considerably

Coffee strength
The strength of the coffee can
be individually selected in five
steps ranging from “mild” to
“extra strong” (quantity of coffee
from 8 to 20 g). For the two
strongest settings, the double
shot function ensures even
stronger coffee without loss of
aroma. To create optimum
preparation conditions, both the
grinding and brewing processes
are repeated for double measures
of coffee or espresso. The
setting is shown in the LCD
function display.

Drying programme
With this function, the inside
of the Combi-steam oven can
be dried with hot air. The drying
procedure takes about 20 minutes
and is recommended after
each steaming or cleaning procedure.
Dynamic cold air distribution
A ventilator ensures an even
temperature distribution across
the whole cooling compartment,
thus ensuring longer food-storage
times. With dynamic cold
air distribution with Multi-Air-
Flow, an additional air channel
in the door and additional vents

In this operating mode, all

cell structure of frozen food is
not damaged by the freezing
process, thereby preserving the
food’s taste and freshness. The
appliance automatically reverts
to the standard mode.
Precise temperature control in
ovens, Combi-steam ovens and
Combi-microwave ovens prevents
temperature peaks which
might impair the cooking of
delicate dishes. With cooling
appliances, precise temperature
setting enables longer storage
times. Operation of all settings
and special functions is via the
keyboard, and the temperature
is displayed digitally.
Energy consumption
The energy consumption of a
cooling appliance is determined
according to the German DIN
EN 153 standard, at 220 V/50 Hz.
The annual energy consumption
is shown, as is the energy
consumption per 100 litres of
net volume per day. The latter
enables appliances of various
sizes to be compared; deviations
may occur during everyday
operation.
Energy label
This is a Europe-wide code for
the energy efficiency class
and provides information about
the energy consumption of appli

Fan unit
Downdraft ventilation units and
ventilation hoods are operated
via a separate fan. Fan units can
be installed, depending on the
construction type, in kitchen
furniture, in another adjoining
room, in the cellar, loft or outside,
on the wall or roof. As in
the case of an integrated fan,
the functions are controlled via
the control panel of the ventilation
unit. The remote fan units
can be supplied for air extraction
or recirculation. Flat ducts
that connect the remote fan unit
and ventilation system with one
another in a space-saving and
efficient manner are available as
accessories.
Fast cooling
Similar in function and effect to
the fast freezing function. Automatic
fast cooling generates the
maximum chilling power, thereby
minimising the warming up
of items already stored in the
refrigerator when new items are
added. The appliance auto ma t-
ically reverts to the standard
mode.
Fast ignition
Press the knob on the gas
cooktop, turn to the desired
setting and release – the electronics
immediately ignite the
flame and keep it burning without
the user having to keep the
knob pressed.
Fixed inlet and outlet water
connection
During installation, the Combisteam
oven is connected directly
to the water inlet and outlet.
This means that fresh water is
always available for all cooking
tasks and that you don’t have to
fill and empty a water tank.
Flexible hinge
Some of the fully integrated

with a flexible hinge. The hinge
prevents collisions between the

meat, ham, salami and cheese
can be stored for almost twice
as long as in conventional cooling
systems.

Creates storage conditions for

temperature in the fresh cooling
zone is kept consistently at just
above 0°C. Unwanted decomposition
processes are slowed
down, food is kept fresh for an

The frying sensor function lets

high-walled, sturdy containers

steel are ideal for cooking in
steam and for serving at the
table or, in combination with the
appropriate covers, for storage
in the refrigerator. They are
dishwasher-safe and easy to

meals simultaneously, the cooking

Rim extraction filter: The
full-width mesh filter with its
integrated cover ensures a quiet
look as well as quiet operation.
The grease separation of 90 to
95 per cent is equivalent to that
of a mesh filter. The noise level
is, however, around three dB
quieter, and the optimised rim
design reduces condensation.

Induction cooktops
Induction is a method of heat
transfer that makes optimum use
of energy. Induction involves a
precise and responsive power
delivery via a magnetic field,
and also speeds up cooking
times – just like gas. Since the
induction method means that
only the bottom of the pot is
heated, there is no loss of unused
heat. Compared to glass
ceramic cooktops, induction
cooktops hardly heat up at all,
so that spilled food and liquid
hardly ever burn. Pots and pans
of all shapes and sizes are suitable
for use on a cooking zone –
the system automatically detects
the diameter of the pot’s
base and only heats the appropriate
area. Once the pot is
removed, the zone doesn’t emit
any more energy until the next
pot is placed on it. The booster
function provides more power –
raising the energy delivered to
a cooking zone by 50% for a
brief period. Pots and pans
which are suitable for induction
cooking can be identified either
by their labelling or by the fact
that a magnet placed on the
pan’s base sticks to the base.
With the must-have wok ring and
wok pan accessories, your induction
cooktop is transformed into
an induction wok. It is so powerful,
it is considered to be the
electric equivalent of the gas
wok. The heat is concentrated in
the middle of the wok and is
ideal for stir-frying in the classic
Asian style.
Info-Light
In fully integrated dishwashers,
a red dot of light projected onto
the ground indicates that a rinse
programme is in operation. The
tiny red light disappears when
the programme ends. This helps
to prevent the unintentional and
premature opening of very quiet

The grill temperature of a
Combi-microwave oven or a
microwave with infrared grill can

This function can keep dishes
warm in the oven at a selected
temperature (such as 85°C) for
any period between 24 and 74
hours without the user having to
operate the appliance. The
interior lighting is switched off
while this function is in operation.

All settings are stored for a
few seconds after the cooktop
is switched off. Consequently,
if the appliance is switched
off unintentionally, all previously
entered values can be easily
restored.
Memory recipes
This function, which is available
in both ovens and Combi-steam
ovens, allows you to save all
settings for a prepared dish so
that they can be easily retrieved
at any time. Six dishes can be
programmed, and up to five different
steps or settings can
be saved for each dish – at the
press of a button after every
successful cooking step. If the
core temperature probe is
used, the respective core temperatures
are saved instead of
the cooking times. This ensures
the same delicious outcome
every time, even if portion sizes
vary.
Microwave cooking
As connoisseurs know, microwaves
have become indispen s-
able – for everything from
heating up pre-prepared portions
of food to making hot
drinks in a glass, from bringing
food from the refrigerator to
serving temperature in no time
at all to the quick thawing of
frozen foods. The key element
of any microwave is the magnetron.
This creates magnetic
waves, the energy of which is
evenly spread out in the cooking
compartment by means of a
wave distributor. When the
microwaves hit the item being
cooked, they cause the water
molecules within the food to
oscillate at high speed. The
oscillating molecules create
friction, which in turn generates
heat. In microwaves, the heat
is therefore generated inside the
items being cooked – and not
from outside, as is the case in
conventional ovens.
Milk system
Every desired coffee variation
can be prepared at the touch of
a button using the milk system.
The milk system is integrated
into the coffee dispenser and is
used for hot milk and milk froth.
The milk nozzle ensures perfect,
fine-structured, creamy milk
froth. Its height can be adjusted
to accommodate glasses up to
15 cm in height. The milk container
is insulated and keeps the
milk cool and fresh for hours.
Both the milk nozzle and the
milk container are dishwashersafe.
Multiple glazing with
safety glass
The glazing in the oven door involves
up to four adjacent panes
of glass. The temperature of the
outer pane remains low, even
when the pyrolytic process is at
its maximum temperature.

with this option whenever items
– even those that are heavily

Standard Eco, the best performance
(washing and drying efficiency
class A according to
the Euro label) is produced in
a mere 57 minutes with Vario
dishwashers, and in 59 minutes
with Power dishwashers. That’s
equivalent to a time saving of
up to 60%. Auto programmes
run up to 30% faster.
Options menu
Specific functions, such as
switching to a certain cooking
zone, can be adjusted to suit
individual cooking habits. The
maximum power limit of the
cooktop can also be set via the
options menu, as can the child
lock, which completely deactivates
the control panel if required.

Personalisation function
The personalisation function
makes it possible to save up to
six personal favourite beverages

addition to cup size, brewing
temperature and coffee strength,
the coffee-milk ratio can also

Pot detection
In induction cooking, only the
bottoms of pots and pans are
heated. The system detects the
diameter of the magnetic base
of each individual pot and only
that precise area is heated. This
means that you are free to use
pots and pans of all sizes without
wasting any energy. Once
the pot/pan is removed from the
activated cooking zone, the
zone won’t emit any more energy
until the next pot/pan is placed
on it.
Presentation light
In order to showcase their valuable
contents in the best possible
fashion, all the wine climate
cabinets include a presentation
light that can be optionally
activated. The use of cold light
prevents any temperature increase
in the interior.
Programmes
for dishwashers
Auto: Depending on the level of
soiling, this programme – with
the help of the Aqua sensor –
automatically selects the correct
temperature, length of the wash
cycle and amount of water needed
to deliver optimal results,
while also ensuring the efficient
consumption of water and energy.
You can choose between
different tem perature ranges:
65°C to 75°C for heavily soiled
pots and pans, 45°C to 65°C
for normally soiled dishes, or a
gentle 35°C to 45°C for glasses.
Pre-rinse: This programme
softens stubborn food stains
before the actual wash cycle,
thereby delivering the best
possible washing results.
Quick 45°C: This programme
omits the prewash and has
a shorter drying cycle. This
means that lightly soiled items
are practically dry and ready for
use within a mere 30 minutes.
Standard Eco: This wash
programme operates at a temperature
of 50°C to 55°C
instead of 60°C to 65°C, so
it consumes less water and
energy compared to regular
standard programmes.
Pull-out system
The pull-out system with pyro l-
ysis-safe cast iron frame allows
safe and easy access to the food
inside the oven. Thanks to its
fully extendable double telescopic
pull-out rack, it makes
light work of moving even heavy
and cumbersome food out in
front of the cooking compartment.
It makes no difference if
the food is on a baking tray, wire
rack or glass tray, skewered on
the rotisserie spit or braising in
the Gastronorm roaster. The
pull-out system can be installed
on every oven level. Only the two
easily detachable extension rails
need to be clean ed. The remaining
cast iron frame is easily
cleaned by the oven’s pyrolytic
system.
Pyrolytic system
The inevitable soiling of the
oven’s interior caused by grease
spatters when roasting or gril l-
ing is removed by this cleaning
programme, which operates
at 485°C. The length of the
programme is set by the manufacturer.
Needless to say,
the oven door is locked during
cleaning. Once the oven has
cooled down, all you need to do

is to wipe the interior with a
damp cloth. When the autopyrolytic
system is in operation,
the appliance automatically
gauges the level of soiling in the
oven’s interior. It then automatically
selects the optimum
cleaning time.
Q
Quick boil timer
This is used for heating up or
boiling quickly. The heat is increased
to the maximum level.
The duration can be individually
set to last between one and
20 minutes. If no specific duration
is selected, the glass
ceramic cooktop automatically
switches back to the cooking
setting after approx. three
mi nutes. Induction cooktops
switch back after approx. one
minute.

Rackmatic
Even when fully loaded, the
height of the dishwasher’s upper
basket can easily be adjusted
by up to 5 cm. This means that
larger items – such as tall

Regeneration electronics
Instead of automatically regenerating
the water softening
system after each wash, regeneration
is only activated when
the need arises. This is calculated
by electronics that emit
a signal when the next dose of
salt solution has to be added
to the water softening system.
This means that the optimal
amount of water and salt required
to counteract the respective
water hardness is
used. This keeps costs down
and is kind to the environment.
Rim extraction filter

Roasting zone
Two cooking zones of a glass
ceramic cooktop can be
switched on so that they are
interconnected, thus enlarging
them to the dimensions of a
roasting tin. The Gaggenau cast
roaster is custom-made so that
it fits the 18 x 41.5 cm roasting
zone perfectly. On induction
cooktops, they are interconnected
automatically if appropriately
sized cookware is placed
on the roasting zone.
Rotisserie spit
Uniform grilling from all sides –
just the thing for poultry, a rolled
roast or a leg of lamb. The rotisserie
spit ensures that meat gets
crispy and brown on all sides.
For best results, select grilling
or top heat as the operating
mode. The spit is suitable for
meat weighing up to 6 kg.
Run-on function
Just the thing for effective room
ventilation. Once activated, the
function ensures that the ventilation
appliance runs on for up
to ten minutes after use on any
setting, before automatically
switching itself off.

Safety glass shelves
Glass is hygienic and ensures
good visibility. The shelves can
be adjusted in height to enable
the cooling compartment to be
segmented as required. Some
appliances also have a motorised
shelf.
Safety lock
The safety lock mechanism in
Gaggenau ovens terminates
any heating mode after 12 hours
of inaction on the part of the
user, assuming that the longterm
timer has not been activated.
Most cooktops and Vario
appliances switch themselves
off after a particular period of
inaction on the part of the user.
The trigger period depends on
the selected output level.
Sealing flaps
The suction vent in the downdraft
ventilation system in the
Vario 400 series is sealed when
the system is not in use. When
the ventilation is switched off,
the flaps remain open for a few
seconds until the fan comes to
a full stop. The flaps then close
automatically.
Sensor control
All the settings of the cooking
zones are easily adjusted with
one touch. The levels of the
individual cooking zones are
graphically displayed on the
glass ceramic surface and the
operating status is indicated
as well. And the cooktop is
secure against being switched
on accidentally by children or

Side-opening oven door
The door of the appliance is
fitted with a thermally insulated
pane of clear glass so that you
can keep an eye on what is
cooking. The handle on the side
is protected against high temperatures.
The door itself swivels
open to a full 180 degrees,
thereby facilitating easy access
from the front. The direction in
which you want the door to
open must be specified when
ordering the appliance, since
the side on which the door
hinge is positioned cannot be
subsequently changed.
Silvercare cartridge
(special accessory)
This aluminium cartridge protects
silverware from corrosion

Simmering setting
The simmering setting of the
fully electronic gas cooktops of
the Vario cooktops 400 series
makes it possible to simmer
food on the lowest setting. The
low heat input is achieved by
automatically extinguishing the
cooktop flame every 30 seconds
and reigniting it after a further
30 seconds.
Single portion cleaning
The water pipes are rinsed
each time coffee is prepared,
and not just when the machine
is turned on or off. This means
no residual water, 100% hygiene
and a full coffee flavour.
Soft-Light
The uniform cooktop illumination,
which comes with ventilation
appliances, automatically
goes on and off gradually, and
it can be dimmed manually from
maximum illumination while
cooking to atmospheric background

Boiling point detection: The
appliance automatically recognises
the boiling point, which is
dependent on the altitude above
sea level.
Cooking inserts: The basic
set comprises one perforated
and one unperforated cooking
insert. In this way, two meals
with different cooking times can
be staggered so that they are
ready at the same time.
Electronic steam control:
This ensures that only as much
steam is produced as is required
for the cooking process.
Electronic temperature
control: Temperature control
in increments of 5°C enables
cooking at a precisely set temperature
between 45°C and
95°C, or steaming at 100°C.

Delicate dishes such as fish are
kept at a constant temperature
below boiling point to prevent
them from disintegrating. Likewise,
meals can be defrosted,
heated up gently or kept warm
for a long period without any
loss of taste.
Glass cover: Enables the
cooking progress to be monitored
at all times. As Gaggenau
steam ers do not use pressure,
the glass cover can also
be removed during steaming.
Pasta basket: Cooks pasta
to perfection. To strain, simply
drain the water.
Steaming
Almost everything which is
normally boiled in water can be
cooked much more healthily
in steam, ensuring that vitamins
and minerals are preserved.
Whatever you are cooking, it
will taste more natural, have a
more intense taste and consistency,
and colour will be bet ter
preserved. Several Gastronorm
inserts containing different
foods to be steamed can be
inserted simultaneously into the
Combi-steam or steam ovens.
The steam prevents taste being
transferred between the individual
meals. By combining steam
with hot air, as in the Gaggenau
Combi-steam oven, the full
range of cooking options are
available:
Combi-steaming: Combining
steam with hot air between
30°C and 230°C ensures many
types of meat come out par -
ticularly succulent and tender.
In this operating mode, the interior
of the oven is hermetically
sealed and humidity prevents
the meat from becoming too dry.
A roast will cook in its own
juices at a very low humidity level.
Dough fermentation: The
correct conditions for getting
dough to ferment are a low
temperature of no more than
50°C with humid air.
Hot air: This corresponds to
the hot air in a conventional
oven. The interior of the oven is
ventilated by an opening which
allows any humidity to escape.
This is particularly important,
for instance, with cakes and
fresh fruit, which need to give
off humidity during baking to
prevent the pastry becoming
too soft.
Juice extraction: Juice from
berries and other fruits can be
conveniently extracted using a
perforated cooking insert. The
juice is caught in a non-perforated
insert positioned below it.
Low temperature cooking:
This is a professional method
for cooking meat to perfection.
It is initially browned, before
being cooked slowly and gently
over a long cooking time. A
large piece of roast beef, for
example, is better cooked this
way than with any other cooking
method – tender and pink
throughout, apart from a millimetre-thin
edge, and unbeatably
succulent. And after it is
cooked, the meat can also be
kept warm for a long time, so it
remains perfect.
Low temperature steaming:
Steaming with 100% steamsaturated
air at low temperatures
guarantees optimum heat
transfer without drying out and
is therefore ideal for cooking
fish. Protein is prevented from
either congealing or escaping.
As a result, fish is always ten der
and succulent with a natural protein
taste and its consistency
is retained.
Misting: At the press of a button,
a measured quantity of steam
is injected into bread or confectionery.
This is particularly useful
when baking bread, rolls and
pastries, or when baking bread
which has been frozen.
Regeneration: Steaming without
pressure is also the perfect
way to regenerate meals which
have been prepared beforehand
without impairing the quality.
It beats all other reheating methods
hands down.
Steam-baking: Steam and hot
air at higher temperatures can
also be used for baking and
braising. The humidity prevents
meat from drying out, particularly
with poultry, bread or pastries,
and browns the surface to
make it crispy. The hot steam
transfers the heat twice as
effectively as hot air and also
reaches the interior of whatever
you are cooking, so your meals
taste more professional than
ever.
Steam removal: At the press
of a button, the inside wall of
the appliance is cooled down
with cold water and the steam
vapour condenses within around
20 seconds. This reduces the
emission of steam when the door
is opened.
Thawing: Steam and low temperatures
are ideal for the gentle
thawing of deep-frozen food.
Stepped shelf
The stepped shelf enables the
practical integration of the most
widely used Gastronorm inserts
in the cooling appliance. The
form of the shelf itself makes it
possible to store items of different
heights.
Storage time after a
malfunction
It indicates the time needed for
the temperature in a fully loaded
freezer compartment to rise
to –9°C in the event of a malfunction.
Shorter times apply
when the freezer compartment
is not full.
Stepped shelf. The stepped shelf

Twist-Pad control
The manoeuvrable magnetic
knob on the Twist-Pad makes

always returns the knob to its

Fully automatic espresso

Cooling appliances: A water

Water level warning
An acoustic signal is emitted
when the water tank in the steam
oven is empty. The display will
show a tap symbol. The heating
process is then interrupted. The
water tank has to be filled and
reinserted in order to continue
cooking.
Water tank
With a capacity of 1.3 litres,
the water tank in Combi-steam
and steam ovens ensures a
sufficient supply of water in the
absence of a fixed inlet and
outlet water connection. Since
the steam is generated in the
cooking compartment, the water
tank is protected against calcification
to the greatest possible
degree. The tank is easy to
handle and transparent, meaning
that the water level can be
checked at a glance. Due to
hygiene considerations, the tank
has to be emptied after every
cooking session. It should not
be cleaned in the dishwasher.
Wine and champagne rack
For the practical and convenient
storage of champagne, wine
and other bottles in a horizontal
position. When not in use, the
rack can easily be folded away
to save space.

With three flame rings which
are arranged in a circle, and a
power spectrum between 300

Zeolite is a silicate material
