Dining This Month’s Recipe 4 WEDNESDAY NIGHT PASTA PLUS is our Traditional Pasta Buffet (with whole wheat pasta available), sauces, vegetables, plus weekly specials. The fabulous ice cream bar for all ages ends the evening. $16.95 Adults, $7.95 Kids 10 and under. Happy Hour - 4:30-6:30 pm. THURSDAY NIGHT is Prime Rib Night. Start out with a salad, followed by a 12 oz. Cut of prime rib, accompanied with a baked potato, vegetable and bread. $18.95 Adults. Happy Hour is from 4:30-6:30. Live entertainment starts at 7:00 pm. FRIDAY NIGHT is Surf & Turf Night. Enjoy a delicious filet mignon with shrimp scampi, or lobster tails. Little Skipper’s child care is available from 6:00-10:00. Happy Hour is from 4:30-6:30 pm, and live entertainment begins at 7:00 pm. Remember, our regular dinner menu is available on these evenings as well. Carry-out menu We are now offering a Carry-Out menu for the dining room, and you may pick up one in the Club lobby. This is a great opportunity to have Chef Rudy’s delicious cuisine when you are unable to be at the Club! SUNDAY BRUNCH Our fabulous Sunday Brunch is available from 11:00am- 2:00 pm. We also have an Ala Carte menu with breakfast and lunch items available for your dining pleasure. Dixieland Brunch January 11 and February 8 $18.95++. CHOCOLATE GINGERBREAD SQUARES (Serves 15) 3 Tbsp Melted Butter ¼ Cup Unsweetened Cocoa Butter ¾ Cup All-Purpose Flour 1 Tsp Ground Ginger ½ Tsp Ground Cinnamon ½ Tsp Baking Soda ½ Cup Brown Sugar (Dark) ¼ Cup Molasses 1 Egg 1/3 Cup Sour Cream ½ Cup Chocolate Chips METHOD Heat Oven to 350. Butter square baking pan. Whisk together cocoa, flour, ginger, cinnamon and baking soda in a bowl. In a separate bowl mix together butter, brown sugar, molasses, egg, and Sour cream until smooth. Add flour mixture into creamy mixture and stir until moistened. Add in Chocolate chips. Place mixture into baking pan and bake for 30-35 minutes. Let cool and cut into squares Beverage Corner December was certainly a busy time for the lounge. Holiday cheer was spread far and wide. The Santa hats showed plenty of wear by the time they were put away for the season. We would like to thank everyone who helped make College Game Day on Saturday’s a big success and look forward to continuing this tradition next season. The next new tradition is “Cigar &Cognac” on the patio. We hope to host this event at least once a month. The trial run took place on December 12th. It was a BYOC plus an extra cigar or two to share or trade. Look for the next “Cigar & Cognac” event on either January 16th or the 31st. There will be representatives from a local cigar shop in attendance to offer discounts and special pricing. We will have single-malt Scotches, Cognacs and Ports available from our bar to enjoy with your favorite smoke. See you there.
