Bell peppers vary in color and flavor depending on the variety of the plant and the stage of the ripeness. For example, a red bell pepper is simply a mature green bell pepper. As bell peppers age, the flavor becomes increasingly sweeter and milder. Bell peppers provide a powerful dose of vitamin C, an antioxidant that may be effective in preventing certain cancers. In fact, green bell peppers contain roughly twice as much vitamin C as oranges while red bell peppers have three times as much vitamin C as the green varieties. Bell peppers also Camp Hansen provide vitamin B6, phytochemicals such as lycopene and beta-carotene, folate, potassium and plenty of fiber. When purchasing bell peppers, look for well-shaped, firm and glossy peppers that feel heavy for their size and are free of soft or wrinkled areas, cracks, slashes or black spots. Unwashed bell peppers can be stored in a bag in the refrigerator for about a week. There are numerous ways to increase the color and variety in your diet with the addition of bell peppers. Try adding bell peppers to salads, pastas, omelets, stir fry and casseroles. Hit the farmer’s markets or commissary and buy a variety of bell peppers to eat at home and work as a healthy snack.
