The National Final of Australia’s largest Apprentice Chefs competition was<br />
held in October, at Canberra Institute of TAFE.<br />

Following Regional and State Finals, the 38<br />
top Apprentices and Commercial Cookery<br />
trainees qualified to compete for the trophy<br />
of National Champion.<br />
Colin Wilson, a 2nd year apprentice chef<br />
from Chateau Yering in Victorias’ Yarra<br />
Valley, was crowned the overall winner of<br />
the ‘Ernst Schwab Perpetual Trophy’, named<br />
after the founder of the competition.<br />
Competitors from all eight states and<br />
territories challenged each other for<br />
the three individual section trophies.<br />
Colin Wilson, winner of Section 2, won<br />
the National Trophy by a fraction of a<br />
percentage point.<br />
The atmosphere was electric and all<br />
competitors enjoyed themselves immensely;<br />
the second and first year entrants looking<br />
forward to enter the competition next year.<br />
Ernst Schwab, founder and chairman of the<br />
competition, declared the competition the<br />
most successful so far. He congratulated<br />
the host institute, CIT Canberra, for their<br />
effort. “The Tourism & Hospitality staff and<br />
students put on a faultless show” he said.<br />
At the awards presentation, Ernst expressed<br />
his gratitude and a special thank you to<br />
the four sponsors: <strong>Fonterra</strong> <strong>Foodservices</strong>,<br />
the major sponsor, and Simplot Australia,<br />
Unilever Australia and Moffat Equipment.<br />
