It was with great pride that I attended the National<br />
Finals of the 2009 <strong>Fonterra</strong> <strong>Foodservices</strong> AUS-TAFE<br />
Culinary Challenge in Canberra and witnessed the<br />
dedication, passion and skills of so many talented<br />
apprentice chefs from Australia. The overall standard<br />
was amazing and we would like to congratulate all<br />
participants who represented their states. We also<br />
extend our thanks to all team managers, judges and<br />
event co-ordinator, Ernst Schwab, for putting on<br />
such an excellent event and making the programme<br />
possible.<br />

<strong>Fonterra</strong> <strong>Foodservices</strong> AUS-TAFE<br />
The National Final of Australia’s largest Apprentice Chefs competition was<br />
held in October, at Canberra Institute of TAFE.<br />

Following Regional and State Finals, the 38<br />
top Apprentices and Commercial Cookery<br />
trainees qualified to compete for the trophy<br />
of National Champion.<br />
Colin Wilson, a 2nd year apprentice chef<br />
from Chateau Yering in Victorias’ Yarra<br />
Valley, was crowned the overall winner of<br />
the ‘Ernst Schwab Perpetual Trophy’, named<br />
after the founder of the competition.<br />
Competitors from all eight states and<br />
territories challenged each other for<br />
the three individual section trophies.<br />
Colin Wilson, winner of Section 2, won<br />
the National Trophy by a fraction of a<br />
percentage point.<br />
The atmosphere was electric and all<br />
competitors enjoyed themselves immensely;<br />
the second and first year entrants looking<br />
forward to enter the competition next year.<br />
Ernst Schwab, founder and chairman of the<br />
competition, declared the competition the<br />
most successful so far. He congratulated<br />
the host institute, CIT Canberra, for their<br />
effort. “The Tourism & Hospitality staff and<br />
students put on a faultless show” he said.<br />
At the awards presentation, Ernst expressed<br />
his gratitude and a special thank you to<br />
the four sponsors: <strong>Fonterra</strong> <strong>Foodservices</strong>,<br />
the major sponsor, and Simplot Australia,<br />
Unilever Australia and Moffat Equipment.<br />

This year AUS-TAFE expanded nationally<br />
and 29 TAFE Institutes from all eight<br />
states & territories were involved.<br />
38 Finalists were selected from over<br />
1000 trainees.<br />
SA team<br />
Competitors travelled from every corner<br />
of the country, from Hobart to Darwin<br />
and Townsville to Bunbury.<br />
VIC team<br />
They won a total of 5 Gold, 14 Silver<br />
and 13 Bronze medals.<br />
Former Fitter and Turner Wins First<br />
Second year apprentice chef, Colin Wilson of Chateau Yering in the Yarra Valley, Victoria has<br />
won the national final of the 2009 <strong>Fonterra</strong> <strong>Foodservices</strong> AUS-TAFE Culinary Challenge.<br />
From a pool of around 1000 apprentice<br />
chefs from all over Australia, Colin<br />
competed against 35 finalists in Canberra<br />
on 15 October, receiving the highest<br />
overall score for his Boudin a la Richelieu<br />
with butter poached chicken breast, pea<br />
puree, potato foam and baby vegetables.<br />
Colin, a former fitter and turner by trade<br />
for more than 15 years, said winning the<br />
<strong>Fonterra</strong> <strong>Foodservices</strong> AUS-TAFE Culinary<br />
Challenge trophy was very encouraging,<br />
giving him a great deal of confidence as<br />
he continues with his apprenticeship.<br />
“When I started I knew very little about food<br />
other than the enjoyment I got out of eating<br />
it,” said Colin.<br />
“It was quite a career change moving from<br />
fitting and turning to food, but I think<br />
I’ve been able to use some of the skills I<br />
learned in my previous trade like attention<br />
to detail and discipline – and you need<br />
plenty of both to be good with food.<br />
“I’ve learnt a huge amount about food over<br />
the past 16 months of my apprenticeship,<br />
and want to continue expanding my<br />
knowledge, and one day, I hope to open<br />
my own family-run restaurant,” he said.<br />
In addition to his gold medal, Colin also<br />
receives a wild card entry into the 2010<br />
<strong>Fonterra</strong> <strong>Foodservices</strong> Proud to be a<br />
Chef competition.<br />
<strong>Fonterra</strong> <strong>Foodservices</strong> Proud to be a Chef is<br />
designed to publicly recognise and reward<br />
the dedication and commitment of Australian<br />
apprentice chefs, giving 30 lucky third or<br />
fourth year apprentices the opportunity to<br />
participate in two days of master classes<br />
conducted by top Australian and international<br />
chefs, produce experts and sommeliers.<br />
This year’s line up includes celebrity<br />
chef Eric Teo, from Mandarin Oriental,<br />
Singapore; Melbourne’s Shane Delia,<br />
owner of iconic Maha Bar and Grill; and<br />
Peter Howard, one of Australia’s most<br />
recognised food and wine experts.<br />
Of his opportunity to take part in <strong>Fonterra</strong><br />
<strong>Foodservices</strong> Proud to be a Chef next year,<br />
Colin said “It will be a great opportunity for<br />
me and I’m going to take as much experience<br />
away from the master classes as possible.”
