Try our tasty “Schlutzkrapfen”:<br />

Schlutzkrapfen<br />

Ingredients:<br />

Dough: 250g rye flour, 250g wheat flour, 2 eggs, 2 tbsp oil, lukewarm water, pinch<br />

of salt.<br />

Filling: 800g spinach, 4 tbsp parsley, 1 small onion, 40g butter, 1 tbsp flour, 1/4 l milk,<br />

1 tbsp parmesan cheese, salt, pepper, nutmeg.<br />

Knead the flour, eggs, oil, salt and lukewarm water to a smooth dough, working the<br />

mixture with your hands. Cover the dough and leave for 1 hour. Meanwhile, prepare<br />

the filling: chop the onion and fry in some butter until it turns golden. Add the flour<br />

and hot milk as well as the washed, boiled and finely chopped spinach and the finely<br />

chopped parsley. Then add grated parmesan, salt, pepper and nutmeg to taste. Roll<br />

the dough thinly, cut into pieces and put some filling on each one. Push the edges<br />

together to form crescent shapes. Boil the Schlutzkrapfen for 5 minutes in salted<br />

water, then sprinkle with grated parmesan cheese and finally drizzle with hot butter.<br />
