TRULLI<br />

Ancient Dwellings<br />

Trullo were originally<br />

temporary dwellings built<br />

without mortar. Some<br />

say this was to evade<br />

tax collection since they<br />

could be dismantled when<br />

the inspector came! Still<br />

today they are used as<br />

temporary dwellings, albeit<br />

vacation homes.<br />

PIZZA MAKING<br />

The Art of the Stone Oven<br />

Making pizza in a stone oven is a historic<br />

activity in this part of Italy. The oven first<br />

heats with olive wood fire for a full day.<br />

Then the pizza is carefully handmade<br />

from classic ingredients. No pizza stones.<br />

No fast food. This is local food at its<br />

pinnacle of perfection.<br />
