Quick & Nutritious Food During a Disaster
Potato Salad
Recipe & Photos courtesy of The Aichi Dietetic Association
When you’re in a disaster situation and you have to make do with what you have
in your emergency survival kit, you may need to get creative. In the coming months,
we’ll be presenting some interesting recipes you can use in these situations, which
make good use of canned and packaged long life foods.
Last month, we shared an easy to prepare flavoured tuna Casserole dish using
canned tuna.
In this month’s issue, we present a quick and easy potato salad recipe using a
popular potato snack called “Jagariko”.
Utensils: Plastic bag
Ingredients: 1 “Jagariko” potato snack (pictured), 80ml water (from your PET
bottle supply), 40g mayonnaise, 1 small can of corn kernels
How to make it:
1) Place the “Jagariko” into the plastic bag, add the water and when soft, mash
with your hands
2) Open the bag, add the mayonnaise and corn into the bag, and mix
• This potato salad recipe idea was conceived using a snack that our children like.
The “Jagariko” packaging is quite strong and sturdy so if you need to, you can also
soften the potato in the cup without using the plastic bag.
Cormorant Fishing on the Kiso River

Ukai is not conventional fishing with lines or nets, but
fishing using specially-trained cormorant birds to
catch, swallow, and regurgitate the fish. This unique
fishing technique has been passed down through the
generations and the first written record of ukai on the
Kiso River dates back to 702. Since 1909 it has been
one of the area’s premier tourist attractions. With the
exception of typhoons and river swell there are daily
ukai tours in Inuyama until the early autumn. Tours last
just under 2 hours and visitors are taken out on special
viewing boats to within close proximity of the fishing
boats. There are ukai tours in other parts of Japan, but
Inuyama is unique in that ukai fishing is done in the
day time as well as at night.
mailed out from the local ward office. For more information please contact your local ward office’s citizen’s section (shimin-ka ).
