Pohorska omlette • Ingredients (for 1 omlette): • Omlette Pastry : 2 egg yolks 3 egg whites 5 dag sugar 2-3 dag flour 1 vanilla sugar • Filling: 10 dag cranberry conserve (or other fruit) 1 dl fresh cream (whipped) 2 dag sugar 1 dag icing sugar tablespoons liquour
Instructions: • Whisk the egg whites until firm. • Slowly add the sugar and contuinue to beat well. • Gently add the egg yolks, vanilla sugar and sifted flour. • Grease a pan with some butter and lightly sprinkle with flour. • Pour the omlette mixture into the pan and place in the oven to bake. • Bake the omlette until golden on top. • While the omlette is still hot, spread on the warm cranberries and fold the omlette in half. • Fill the edge <strong>of</strong> the omlette with the whipped cream (add sugar as desired), and decorate with cranberries or other fruit. • Sprinkle the omlette with the icing sugar (and liquour if desired) and serve.
