Instructions:<br />
• Whisk the egg whites until firm.<br />
• Slowly add the sugar and contuinue to beat<br />
well.<br />
• Gently add the egg yolks, vanilla sugar and<br />
sifted flour.<br />
• Grease a pan with some butter and lightly<br />
sprinkle with flour.<br />
• Pour the omlette mixture into the pan and<br />
place in the oven to bake.<br />
• Bake the omlette until golden on top.<br />
• While the omlette is still hot, spread on the<br />
warm cranberries and fold the omlette in<br />
half.<br />
• Fill the edge <strong>of</strong> the omlette with the whipped<br />
cream (add sugar as desired), and decorate<br />
with cranberries or other fruit.<br />
• Sprinkle the omlette with the icing sugar<br />
(and liquour if desired) and serve.
