Symphonie Fantastique Dinner by Winsome Lane There was a brilliant full moon low in the sky when guests arrived for the wine dinner that culminated the LRC events held in conjunction with Le French May — the Symphonie Fantastique dinner. The carefully arranged combination of the best of French gastronomic art and some of the finest, but lesser known wines of the country added to the romantic quality of the occasion arranged by the notoriously unpredictable Hong Kong weather. This romance theme was personified delightfully by two of the wine-makers. Xavier Gonet and Julie Médeville grew up in the families of winemakers who had been in the business for generations. Julie’s family had produced a fine Bordeaux, Graves and Sauternes for four generations. Equally historic was the family of Xavier Gonet whose family had produced a Grand Cru and Premier Cru champagne for hundreds of years. As the children of neighboring vineyard families they met in the cradle. “Was it an arranged marriage?” I asked. Julie laughed. “Yes definitely,” she said, “We arranged it ourselves when we were both five years old.” It appears they had fallen in love at that age and never faltered in their affection for each other since. Now they have a son aged nine and a daughter aged 3, one of whom they hope will carry on the double tradition of the family. The young couple operate now under the name of Gonet- Médeville, producing comparatively small quantities of their wine under the title Vignobles Gonet-Médeville. In the vicinity of Julie’s historic family mansion, Chateau Respide. All harvesting and processing is done by hand and only a few thousand bottles of each wine is produced every year, It is always sold out with wine-merchants around the world keeping waiting lists. When they took over, the young couple decided to return to ancient growing methods and produce their grapes without any chemical fertilization or insecticides. “We let the good earth speak for itself and continue the wonders it has performed in our vineyards for many generations” said Xavier. He regretted the fact that these days, with five different wines being produced, there was a constant round of harvesting and processing going on practically non-stop and they also had to attend many wine fairs such as VinExpo in Hong Kong. While they are away, Julie’s parents Christian and Andrée Medeville take care of the children. “The Hong Kong VinExpo is particularly important to us” said Xavier, “Because Hong Kong is one of the most important markets for champagne in the world. It appears that the people who live here just love champagne and moreover they have the money to buy it. We do enjoy our visits here but we never get much sleep and are usually dizzy most of the time, I don’t know whether it is the champagne or the lack of sleep.” Loic Mary, another young French man who was a guest at the dinner, and who is a sales manager for wine merchants FICO concurred with what Xavier said about Hong Kong. “A good champagne sells itself here” he said, “It is always one of our best-selling items.” Each of the eight courses of the dinner of French nouvelle cuisine was introduced by one of the wines of winemakers who belong to an organization called Vignobles & Signatures, a society of longestablished makers of fine wine who make comparatively small quantities. Each of the courses was accompanied by a carefully chosen wine from this group of vineyards and each was introduced by the wine-maker concerned. The superb meal, carefully orchestrated by food and beverage manager Michael Soong and executive chef Sammy So began with oysters and caviar and included some classic French dishes in their more modern lighter form. The wines blended with them perfectly and most notable was a mellow sweet Sauterne vintage 1988 from Chateau Gillette which accompanied the cheese and dessert courses. The whole dinner was an artistic creation, the work of the magical team of Michael Soong and Sammy So who have been responsible for many outstanding culinary events in the Club this year. The week before the dinner at an event held at the Grand Hyatt Hotel in connection with VinExpo Michael was made a Chevalier of the Ordre Des Couteux de Champagne a high honour awarded by the Government of France. Also invested with the Ordre was Sharon White, vice-president of Human Resources for Hyatt International, who was a guest of honour at the LRC dinner. During the month of May many French-flavoured events were held at the Club including opportunities to meet the wine makers, lessons in French cooking, demonstrations of French dishes and wine tastings. French dishes and wines were featured on the dining room menus.
