BENTLEIGH RSLChallenging the traditional modelWhen career chef and café owner Michael Hoyle openedSalute@Bentleigh RSL in April 2010, he was keen toreinvigorate the concept of an RSL restaurant andappeal to new customers.Mike has focused on attracting regular customers by modernisingthe restaurant menu, offering family-friendly dining and specials,investing in the Salute@Bentleigh RSL brand by advertising inlocal newspapers and communicating regularly with regularcustomers and friends. Key to Michael’s approach has beencommunicating that both non-members and members arewelcome.Changes to the menu have included mixing up traditionalfavourites with modern inclusions such as zucchini fritters; Thaivegetable salad; wild mushroom risotto with parmesan and truffleoil; Wagyu, chicken and vegie burgers and curries.
